Japanese style carrot dressing is a silky smooth salad dressing recipe that blends fresh carrots with savory seasonings for a bright and flavorful sauce. This dressing usually combines carrot, onion, ginger, rice vinegar, soy sauce, sesame oil, neutral oil, and a little sugar or honey to create a balanced mix of sweetness, acidity, and umami. Blending the ingredients until very smooth gives the dressing its creamy texture without needing heavy cream. The carrot adds natural sweetness and color, while ginger brings fresh aroma and gentle warmth. The final dressing works well over green salad, cabbage, cucumber, tomato, tofu, grilled chicken, rice bowls, noodles, or Japanese-style side dishes, making it a simple homemade sauce with clean flavor and a smooth finish.

00:00Hi, I'm Yuto and today on Sudachi, I'm going to show you how to make a delicious and smooth Japanese
00:05-style carrot dressing.
00:06Let's get straight to it.
00:08Start by grabbing a heatproof bowl. I recommend a glass bowl like this.
00:13Add one small chopped carrot and quarter of a medium onion cut into the rough pieces,
00:18or in one tablespoon of water, then cover the bowl with plastic wrap and microwave for about 2-3 minutes
00:25at 600W,
00:26or until you can pierce the carrot with a fork.
00:30I tried 2 minutes first but the carrot was still a little hard so I added another minute.
00:36It depends on the strength of your microwave and how small the pieces are cut.
00:41If you don't have a microwave, you can steam it for about 6-8 minutes instead.
00:46While we wait for them to cool, let's prepare the rest of the ingredients.
00:50Here I have the container for my mini food processor.
00:54I'm adding 3 tablespoons of soy sauce, 3 tablespoons of olive oil, 3 tablespoons of apple cider vinegar,
01:022 tablespoons of honey and 2 tablespoons of apple juice.
01:06Now the carrot and onion.
01:08This dressing is a great way to add bonus vegetables to your salad.
01:12It's pretty healthy, the flavour is quite sweet and fruity from the vinegar, apple juice and honey.
01:18I've tried making it without cooking the vegetables and I didn't like the fibrous texture.
01:23Cooking them ensures the end result is smooth.
01:27Okay, once they're all in, seal the container and blitz until smooth.
01:40You might need to shake it or scrape the sides down once or twice to make sure all the pieces
01:45are incorporated into the dressing.
01:47Keep blitzing until it looks like this, then chill it in the refrigerator for at least 20-30 minutes before
01:54using.
01:56And that's it, delicious, smooth and creamy Japanese style carrot dressing.
