04:29And that gives the acidity behind a great hollandaise.

04:38We're starting to cook the eggs slowly.
04:40Now, the reason why I chose this big balloon whisk is because it makes it easier to incorporate

04:44You could do this with a small whisk.

04:48Whisk with one hand, and then just slowly drip clarified butter in.
