Yudofu is a Japanese hot tofu recipe that gently warms soft tofu in a light dashi broth, then pairs it with a rich spicy sesame sauce for extra flavor. This simple dish focuses on keeping the tofu tender and delicate while the broth adds clean umami from kombu or dashi without overpowering the mild soybean taste. The spicy sesame sauce can bring depth with sesame paste, soy sauce, chili oil, vinegar, garlic, ginger, or green onion, creating a nutty and savory contrast against the smooth tofu. As the tofu heats slowly, it becomes silky and comforting, ready to absorb sauce in each bite. The final yudofu is light, warm, and satisfying, working well with rice, vegetables, mushrooms, or pickles for an easy Japanese-style meal with soft texture and balanced heat.

00:00Udofu is a simple yet surprisingly comforting dish made with cubes of silken tofu gently
00:05simmered in a konb dashi broth.
00:07My recipe includes a little twist with a drizzle of delicious homemade spicy sesame sauce.

00:21First, place 5 grams of dried kelp in a pot and add 1 liter of water.
00:30Let the soak for at least 30 minutes to make a konb dashi.
00:34If you have time, soak it for up to 12 hours.
00:38In the meantime, I'm going to show you how to make the spicy sesame sauce.
00:42Take a bowl and add half teaspoon of sugar, one tablespoon of rice vinegar, one teaspoon
00:48of chilli oil, two tablespoons of water, one tablespoon of soy sauce, and one and a half
00:54tablespoon of sesame paste.
00:56If you can't get Japanese sesame paste, then tahini or even peanut butter would be delicious
01:01too.
01:02Adjust the water amount if used in substitutes though.
01:05Whisk it until it's well combined.
01:07I use a milk frother, but it's also fine to mix vigorously by hand.

01:17Yudofu is traditionally served with simple condiments like soy sauce, ponzu, green onions,
01:22and sesame seeds.
01:24For a bit of a twist, my recipe introduces this spicy sesame sauce, adding a small kick
01:28to the mild flavour of the tofu.
01:31Once it's all mixed, set aside for later.
01:34Ok, my konb dashi is ready and the konbu has rehydrated, so place the pot on the stove
01:41and heat on medium until almost boiling.
01:45While we wait, let's cut the tofu.
01:48I'm using 350g of block of silken tofu, cut into squares or rectangles depending on the
01:54dimensions.
01:55I'm cutting six.
01:57Make sure they're quite big.
01:59Small or thin pieces are prone to breaking.
02:06Let's check on the dashi.
02:08Ok, it's almost boiling, so remove the konbu.
02:11You can throw it away or repurpose it to make konbu tsukudani rice ball filling.
02:16I have a recipe for that on my channel if you're interested.
02:19Add quarter teaspoon of salt to the konbu dashi and give it a brief mix before carefully placing
02:26the tofu into the pot.
02:27How much you add depends on the size of your pot, but make sure they're submerged in the
02:32broth.
02:33I'm adding four because my pot is quite small, but you can cook them in batches.
02:37Now, all we do is simmer the tofu until it's warmed through.
02:41This will only take a few minutes.
02:44Once it's warm, place it in a small serving bowl.
02:55And drizzle with the spicy sesame sauce.
03:01Add a sprinkle of green onions and that's it.
03:04Delicious yudofu.
