00:06for over 30 years john tapper has traveled the country saving hundreds of bars from failure and
00:13ruin now he's heading to bowling green kentucky to attempt to rescue alley cat bar and grill
00:21either you are lazy or you're a total fool i'll find out tomorrow in april 2024 chase martin and
00:30his business partner bought alley cat bar and grill as a favor to the previous owner the previous owner
00:36came to us let us know that she was selling the bar you know she was going through some health
00:40issues initially chase was hands off as his partner ran the day-to-day operations when we looked at it
00:47we're like well it's not doing great right now but we think there's has a lot of potential but
00:51chase's plan for passive ownership would soon come to an end so my uh partner that i had when we
00:59first
00:59started the bar he had some issues and he just asked me to purchase his share out of it now
01:05it's
01:05just me becoming the sole proprietor wasn't the only problem with chase's new ownership status
01:11as a business owner i have experience as a bar owner no i've never worked at a bar
01:16so chase turned to his manager becca trusting her to run the business in his absence check this
01:25i got it are you sure well then we take the ice i do enjoy being manager i like seeing
01:30things run
01:31smoothly when it can it's good for most part but some days are just hell making matters worse
01:37the bar staff don't agree with becca's management style i have to go over becca a lot there was a
01:43night
01:43that becca said no we're just gonna shut the bar down i said well that's dumb because it's the day
01:48before fourth of july like who would shut a bar down for all night if you're a manager that's money
01:53lost and the situation in the kitchen has its own problems i'm far back security and the cook the cook
02:02we had was a drunk so they kind of just threw me in there and i just figured it out

02:08probably probably not but it's pretty much sink or swim and i'm pretty good at swimming with the
02:14bar's distressed operations chase is over a hundred and eighty thousand dollars in debt
02:19and struggling to balance his failing business and demanding home life i have a three-year-old son
02:26and i also take care of both my parents i've got to know some really great staff part of them
02:31and become family you don't give up on family if chase can't get everything purring this bar he
02:38adopted will be all out of lives so in an effort to get the alley cat landing on its feet
02:44he's decided
02:45to pull back the doors bust open the books and make a call for help to bar rescue instead of
02:52giving up
02:52and just throwing away the keys i hope i can fix it

03:11alley cat this bar was bought by a gentleman named chase and his partner how long have you had this
03:17place a little over a year and how much you have in it about 180 how much you lose in
03:22a month now
03:22uh between five and ten thousand a month a lot of money yeah chase's partner had to leave now chase
03:28is operating the bar from two and a half hours away what i want to do is i want to
03:32go into my master

03:37appreciate it since chase is an absentee owner i'm going to bring him with me to watch recon i want
03:43him to see his bar in action so this community is a median age of 24. income is about 34

03:58a cool front of your bar yeah this is not exactly the hippest place i've ever seen and these college
04:03kids they want some place to go to that's relevant that's sort of cool but we got to come up

04:26his father got sick and um unfortunately he didn't make it and therefore he had to step away
04:31gotcha is it putting you under some financial pressure absolutely absolutely it's it's either
04:37close up and move on because uh i can't financially afford to do it forever who's running it now uh

04:43the main manager that we have here come on is that becca in the kitchen right there yep pull it

04:57been with you she was here with the original owner uh she wasn't the manager then she just was picking
05:02up the slack so you made her manager win uh day one and is she doing a good job she's

05:08trustworthy um but yet you're losing six thousand dollars a month yeah begging we getting queso in
05:15today who is that that's bj he does cooking security security he still is security on the weekends
05:22mostly okay i don't have the fancy meal cups so and who's that that's ozzy she's been here a month
05:30after we opened it okay and then the last one then would be chevy yep are we doing more shots
05:35guys what are we doing you know the personality of your bartender seems nice they seem all very
05:40friendly so let me ask you a question you want to protect your investment do you think the place
05:43is clean you think it's organized um no do you have disorganized the shelf is behind the bar there
05:53yeah i'm not quite sure if it's all food cleaning supplies what it is everything is just a mess
05:59everywhere but you own it are you too easy on them my problem with this is i've gone relax with
06:06them because i'm afraid that if i get too hard then everybody quits and what do i do okay so

06:30sit down they're gonna order some food and we can get a professional's review do you have margarita on

07:40smash burger it says with fries he didn't want fries but there was no other option so you don't
07:44have to put fries on it but so what is he doing he's washing dishes now so nick and nick's

07:50in but they have to clean dishes to be able to make it it's just complete disorganization look at
07:55the grease that's not the temperature i don't think they turn the fryer on he's turning it up but he
08:01already put the product in it's destroyed oh my god so look at this so this is store-bought chicken
08:06strips so they went to a supermarket to buy this now he just opened that milk container with the
08:11chicken juice all over his hand so we have cross-contamination going on here you got a real
08:16problem here chase he does not understand what he's doing or he doesn't care got now he's gonna
08:21take the gloves off he uses that same dirty rag with the raw chicken on it you know so we
08:25got raw
08:26chicken all over the place now and becca's not managing anything you see that she's just doing
08:30stuff yeah she has not gone to the front of the house or checked her bar she's just staying back
08:34there look at him there he's pouring that sauce into a dirty bottle yeah how disgusting is that
08:40and then look he's gonna do another one watch yeah would you want to eat that no and then he's
08:47gonna date it today it isn't fresh on that date is it it's not this is as bad as i've

08:53the kitchen the staff training management a little bit of everything yeah listen to me you're in a bad

16:05he needs somebody who he can count on to be a leader in this building and everything that i've seen
16:11tells me you're not it with limited resources you can only do so much i mean the that's that's that
16:21you call him chase i'm in trouble can i get somebody to help me clean the bar i'm worried i

16:26flies coming in has she ever called you and said i need some help no that in that regards no

16:43didn't come through for yourself and this guy got screwed totally and it's a result of your management
16:49style or lack of she cannot have this position because she is never going to push herself to do
16:56better she's always going to come up with an excuse to fail that's who you are i got it while

17:03think becca is a bad person i think a lot of things that needed to be said were said you

18:21and she's agreed with me and she just said shut it down when was this decision made that night bingo

18:36night why wasn't that resolved a month earlier why weren't decisions made schedules made planning made
18:43why aren't you running this i'm the easiest gate group because i'm the most vulnerable nobody is

29:41hipness to it if you will last night's stress test that was tough you were working in your bubbles
29:48we need to work on teamwork the way i'm going to be setting it up for you guys is going

29:52bulletproof this dish i'm really excited for guys dry chicken how's our bar a little rough so
29:58they're dealing with just one station over here and then we're looking for another kegerator well
30:04if we can do that they'll make a lot more money on the draft beer than it will the bottled

30:12half ounce apple liqueur one and a half ounce apple whiskey add ice
30:19we're going to get our chicken into the bowl oil some salt pepper paprika we're going to mix
30:26everything up right into the oven 350 for about an hour we can't do music because we're so close to
30:33nashville everything is about country music let's do something different okay poured into a lovely coupe
30:39glass and garnish with a dehydrated apple chip this is our whiskey appletini
30:47what i don't like is the entryway laura i think we need some kind of a wall or something here
30:51to create a formal entryway so we're going to start working on teamwork don't be scared to be
30:57shoulder to shoulder don't be scared to talk we've got really nice texture on that this is our comeback
31:02sauce and this is a bourbon honey glaze and that is your bowling green fried chicken
