00:00:13to celebrate the return of better homes and gardens.
00:00:16Many of us have enjoyed some beautiful relaxing time off
00:00:19over the summer holiday,
00:00:20but meanwhile there have been thousands of volunteers
00:00:23who have dedicated their summer to keeping us safe.
00:00:26So we thought the best way to kick-start a new year
00:00:28was to say thank you to the army of surf lifesavers
00:00:32all around this island nation.
00:00:41So you ready for another massive year?
00:00:44Yes!
00:00:45But don't forget...

00:01:11Today I'm elevating all my recipes with a new ingredient.
00:01:14It's called a Graham.

00:01:24I do have it on good authority that this one has gone to the dogs.
00:01:30As they say in the classics, you've got to fight for your right to make this.
00:01:35It doesn't matter if you've got no space, your place can still be the life of the party.

00:01:55I'm going to make a Yuzu meringue pie.
00:01:59And Dr. Harry's horsing around at Australia's biggest Stockman's competition.

00:02:14Couldn't think of a better place to be.
00:02:20Thinking of where we are.
00:02:21Lobster.

00:02:24We're going to do a sausage.
00:02:27Rather than sausage in a bun, I'm just going to do like a smashed patty.
00:02:31You know the way burgers are trendy at the minute?
00:02:33Smashed patties.
00:02:34Very, very.
00:02:34With a little bit of a sauce of a chilli number.
00:02:38So the first thing to do, I've preheated the pot.
00:02:41So in here, I have got six bird's eye chillies chopped.
00:02:45A rather large five centimetre block of ginger, which I've grated.
00:02:50And about two cloves of garlic chopped.
00:02:53That's garlic.
00:02:54Garlic.
00:02:54You like that?
00:02:55Yeah.
00:02:56That's worse than my joke.
00:02:58So it's not garlic, it's garlic.
00:03:00And what I'm going to do is very lightly give that a quick sweat.
00:03:04So if you want to pour some olive oil into the pan.
00:03:06So just a little drizzle, just to get it moving.
00:03:09All ingredients into the pan.
00:03:11Will you smell this?
00:03:14Whoo!
00:03:16That'll clear your lungs out mate.
00:03:19It's a match made in heaven, it's like you and me.
00:03:23You're right.
00:03:23It's kicking in now.
00:03:25So if you stir that, and I'll chop some capsicums.
00:03:28I can do this.
00:03:29So four capsicums, roughly chopped.
00:03:33So we get our capsicums in.
00:03:35If you want to add the 500 mils of white wine vinegar.
00:03:40Yep.
00:03:40So what we're doing is we're adding the vinegar to the chilli, garlic and the ginger and we're forming a
00:03:44very acidic base.
00:03:46So it's full of vinegar.
00:03:47Then we're going to sweeten that up with the sugar.
00:03:49So that's where the jam starts to come into play.
00:03:52So we're going to need 800 grams of sugar.
00:03:58So stir that in.
00:04:02So that's good.
00:04:03We let that tick along.
00:04:04You can add the lime now.
00:04:05So what you do is, you just microplane the zest in.
00:04:10So once you zest it, smell that.
00:04:12Yeah.
00:04:13Yeah, it's beautiful.
00:04:14So rather than waste the actual zest, if you want to do that.
00:04:18So what's the tips to growing limes?
00:04:21Well, you can have a pee on them at night.
00:04:23Lots of fertiliser.
00:04:25And watch out for all the different bugs that come in.
00:04:27Spray them with a horticultural oil on a regular basis.
00:04:31Certainly during this time of the year and right through to the end of autumn.
00:04:35And that'll keep the bugs at bay and you'll have beautiful citrus.
00:04:38What I took away from the whole conversation was you pee on your trees at night time.
00:04:44So we'll keep the juice for when we've finished cooking the actual jam.
00:04:48So obviously to make the putty, we need the mince.
00:04:51So the pork mince, about 500-600 grams.
00:04:55So to that, I'm going to flavour the pork.
00:04:57So think of a herb that goes really well with pork.
00:04:59Sage.
00:05:00Correct.
00:05:01Give the man a prize.
00:05:02Yeah.
00:05:03So a bunch of sage, sage, pork.
00:05:05Goes really well together.
00:05:12Into our pork mince.
00:05:16A little bit of salt and pepper.
00:05:24Then I'm going to add...
00:05:26Oh, yes.
00:05:27I love capers on a whole heap of things.
00:05:30In a sandwich, but in a bun.
00:05:32Even better.
00:05:33Yeah.
00:05:34And I'm just going to chop the capers.
00:05:36So the capers are going to add that little saltiness, a little bit of acidity.
00:05:40Yeah.
00:05:41All right, roughly chopped capers into the bowl.
00:05:44Yep.
00:05:45So what I'm going to do is I'm going to mix that.
00:05:47But if you want to fry some garlic, which is here.
00:05:51Oh, yeah.
00:05:51I've pre-chopped a few because I'm helping you out today.
00:05:53Yeah, cool, man. Thank you.
00:05:54So you're just going to fry it on the edge of the barbecue.
00:05:57You don't want not too much colour because we're going to add the garlic to the mix.
00:06:01Oh, okay.
00:06:04I'll just pick out the black bits.
00:06:06I'll do the mixing bit.
00:06:08So basically incorporate all our ingredients.
00:06:15This has been on all that time where we've been prepping.
00:06:19So have a look at the consistency of that now.
00:06:22Oh, yeah.
00:06:22It's reduced by half and it's got really jammy.
00:06:25I'll just have a little...
00:06:27Good.
00:06:28Concentrate in flavour.
00:06:29So I think all it needs now is a little blast of lime juice.
00:06:32So if you want to cut the limes in half there.
00:06:35And we'll add the lime juice to the mix.
00:06:38When it gets reduced down.
00:06:39Yeah.
00:06:40It loses some of that heat, doesn't it?
00:06:41Oh, a little bit.
00:06:42A little bit?
00:06:43Oh, not a lot. Okay.
00:06:45Let's get on to our patties.
00:06:47So what I'm thinking is,
00:06:49onions obviously go really well with that piece of meat.
00:06:52So what I'm going to do is put them on the grill,
00:06:54smash the burger on top of it,
00:06:55so it sort of indents into the meat.
00:06:57Beautiful. Okay.
00:07:00Sort of cover it.
00:07:04And what I'm going to do now is get the burger,
00:07:07start smashing them on.
00:07:09I'll add a little bit of paper.
00:07:16Like that?
00:07:18Yes.
00:07:23That's just oven paper, is it?
00:07:25Yeah, just a non-stick.
00:07:27Yep.
00:07:32Move that to there.
00:07:35Keep going on our onions.
00:07:38And these cook in seconds.
00:07:40Yeah, I can see that.

00:07:54Because being thinner,
00:07:55they're going to cook really quickly, aren't they?

00:08:02So the onions are not overly cooked.
00:08:07Still a little bit crisp and crunchy.

00:08:11So that's how simple it is.

00:08:15Right, we'll get them off,
00:08:16rest them in a tray.
00:08:18Keep them warm.

00:08:41So if you want to grab that iceberg lettuce,
00:08:42a little bit of parsley in there.
00:08:44Yep.
00:08:44A little splash of mayonnaise,
00:08:46just to moisten it up.
00:08:48So I've got some brioche buns,
00:08:49any buns you want.
00:08:50Milk buns, brioche buns,
00:08:52bread buns.
00:08:53I'm just going to gently warm these.
00:09:03All right, so these are just softened up a little bit.
00:09:06And now it's basically just time to build.

00:09:16You can see the way the onion, like it's not overly cooked.

00:09:19Some's cooked, some's a little bit caramelised,
00:09:20bit of texture.

00:09:48So we've elevated the humble sausage in a bun to a smashed sausage patty with a chilli jam,

00:12:10And if you're too far back, it's like harder to paddle and the nose will come up too much.

00:12:14And then with your strokes, make sure you've got like long, smooth strokes one at a time.

00:14:52The showgrounds at Marirundi.
00:14:54In the upper 100 of New South Wales.
00:14:56It's nestled in the foothills of what are the mountain ranges behind.
00:15:01It's a fabulous little township.
00:15:03Churches, pubs, some wonderful old buildings.
00:15:05Normal population, only about 900 people.
00:15:08But come showtime, it swells to well over 5,000.
00:15:12And what brings them here?
00:15:14Horses.

00:15:18It's what this place is all about.
00:15:32This is classic, isn't it?
00:15:33This is the cross-country event.
00:15:36And it's having quite a big area right out the back of the showground and part way up the hill

00:15:41Basic quality riding on Australian horses with Australian stock men and women.
00:15:48And a lot of the youngsters too.
00:15:51Boy, can some of them ride.
00:15:52That's what it's all about.
00:15:54Dinky, die, Aussie, bush skills, bushcraft and horsemanship.

00:16:19We're trying to keep our heritage going.
00:16:21It's about a four-day pack for a stockman or a boundary fence rider for him to go out.
00:16:26He's got his shoeing gear.
00:16:27He's got his traps if you need something to catch to eat.

00:16:31And he's got his horse feed and he's got his little bed roll and he's awake.
00:16:35And it's not just the blokes either.
00:16:37Rebecca has 16 minutes to pack, run the course, then unpack.
00:16:42If I could buy a house on memory lane.
00:16:46So as she's coming up to those tyres, she's got to stand in between the two big tractor tyres.
00:16:50Yeah.
00:16:51Then she has to send her horse around 360 degrees going over each tyre without her riding horse moving.
00:16:57It's very unnatural, but it's showing what your horse can do.
00:17:01And they're coming up to this ramp, yeah.
00:17:02Okay, this ramp, it's replicating hollow ground.
00:17:08You've got to square him up.
00:17:09She'll go back, she'll start again.
00:17:10Her riding horse is wanting to go off the hollow ground, but she's holding him back.
00:17:22And then straight over to here.

00:18:16So, this is the stock whip competition.
00:18:18So, what's involved?
00:18:20Well, any stockman uses the stock whip all the time.
00:18:23What's he use it for?
00:18:24Two things.
00:18:25One, the cracker at the end of the whip actually makes this sound.
00:18:28And it's the sound that helps control the animals he's working, usually cattle.
00:18:35So, it's all about using the stock whip properly while you're still riding the horse.
00:18:39This competition, there's all little obstacles all around the arena.
00:18:43You get points from everyone, you cut, and it's all about time as well.
00:18:52And that's a great round.
00:19:01And here at the Rundle this weekend, we are celebrating the Australian stockmen and the stock women.

00:23:05Well, I think for many reasons.
00:23:06I think one of your main reasons why it's so important is so they know about beach safety,
00:23:11where to go when you come to the beach, to look out for signs such as rips and currents,
00:23:14and just to grow that confidence in the water.
00:23:17And what about the fun?
00:23:18Oh, well, we have heaps of that here at Monavow.
00:23:20We do boards, we do flags, and then also just making friends as you go.
00:23:24I think that's one of the most fun parts about nippers, and everyone should do it.
00:23:28It's not only competition, it's family and community, isn't it?

00:25:01For years, Kendall was one of the faces of Seven News in Queensland.
00:25:05So up and running.
00:25:05Now the mum of two has a new role as a Marta Homes Ambassador.

00:26:00Not surprisingly, the first room that I have come to check out is the kitchen.
00:26:03I love being in the kitchen.
00:26:05I love cooking and entertaining.
00:26:06And this is pretty much entertainer's paradise.
00:26:17We have seen some seriously impressive primary suites in Mata-Prize homes and this one definitely
00:26:23fits the bill.
00:26:34And then what about this walk-in robe?
00:26:37If I'm being really honest, this is actually bigger than my bedroom at home.
00:26:47How do you actually say that you're living in a home that is full of just complete luxury
00:26:52without saying the words out loud?
00:26:54Well, I would suggest it would be sitting in a room like this, enjoying a movie, surround
00:26:59sound, a 90-inch projection screen.
00:27:02Looking about that night, halfway to heaven, really lost my life, lost, but I found it
00:27:09My goodness, Kendall, this home is so stunning.
00:27:12It's spectacular.
00:27:13I'm a little bit distracted by what's going on behind you.
00:27:15Yes, Jo, because we know that Mata-Prize home helps fund vital medical research, patient

00:27:26So I've brought Lynn, Kat and Gina here to introduce you to some special friends.
00:27:30So tell me why you guys actually got involved with the pet therapy program.
00:27:34So this is Tilly.
00:27:35She's turning seven in a couple of weeks' time and she's been at the Mata Hospital for four
00:27:40and a half years now.
00:27:42So she started just when she was about two.
00:27:44It's a source of joy for us as humans, but I think as the dogs, they really enjoy it as
00:27:49well.
00:27:49This is Hunter.
00:27:50He's my border collie.
00:27:52He'll be three in January and we started in June.
00:27:55I guess my journey with Mata goes back to when my daughter was diagnosed.
00:27:59I was a newly single mum and found out she had a rare condition.
00:28:03She had the rarest form of it, which would require surgery at the Mata.
00:28:06We weren't living in Brisbane at the time, but yeah, it involved basically having her skull
00:28:11removed and replaced and it was just something that was the most daunting thing to be going
00:28:16through by myself as well.
00:28:19But knowing that I was going through it with the Mata, it's a hospital that doesn't just
00:28:23treat you.
00:28:23It actually takes genuine care of you.
00:28:25And she was just this tiny baby, completely covered in tubes.
00:28:28And there was one patch of skin I was able to touch and just said to her, stay, Danny,
00:28:32I need you.
00:28:33And she had to go after the CT scan and I just had to hope she would come back.
00:28:38And she did.
00:28:38The Mata literally saved my daughter's life.
00:28:41Do you think the dogs themselves know as well?
00:28:42Oh, 100%.
00:28:43She picks up on people.
00:28:46She will know which ones want to see her, which don't, which ones need more love.
00:28:51She can reach the ones that can't reach her.
00:28:53She'll always get a little bit closer.
00:28:55She backs into people so that they can reach her just right.
00:28:58It's just amazing.
00:29:01Well, Kendall, this has been such a special day to see where some of the funds raised
00:29:05from this Mata Prize home are actually going to.

00:31:00And today, they're using modern technology.

00:31:13Now, if I'm not wrong, this is a drone, right?
00:31:16This is a drone.
00:31:16It's a UAV or an uncrewed aerial vehicle.
00:31:19Wow, that's a mouthful, isn't it?
00:31:21So what do you do with this?
00:31:22In particular at Surf Life Savvy New South Wales,
00:31:24we use it to patrol off the break of the waves
00:31:26for marine wildlife out there.
00:31:28OK, so I guess the main thing is looking for sharks
00:31:30and things like that, is it?
00:31:31That is the core of what we do, yes.
00:31:33We work with New South Wales government
00:31:34and they fund a program across the whole New South Wales coastline
00:31:37at 50 locations, two flights every hour, every single day,
00:31:40to patrol mainly for sharks and those target species.
00:31:43So it does a lot of other things?
00:31:44It can do a range of things.
00:31:46It's got a speaker on top there,
00:31:47so we can alert the swimmers to any particular hazards
00:31:49that are out there and it carries really well across the water.
00:31:51It can have thermal imagery, these drones, as well.
00:31:54The camera and gimbal moves around
00:31:55and you can get different levels of these drones.
00:31:57They're exceptional little tools.
00:31:59We use it for search and rescues with the New South Wales police.
00:32:01They're very good at detecting heat signatures,
00:32:03you know, for koala spotting in the wilderness as well.
00:32:06There's all sorts of things.
00:32:07There's not too many koalas going swimming though, are there?
00:32:08Not out here, no, but there's a whole lot of marine wildlife,
00:32:11that's for sure.
00:32:12There's whales and dolphins and we saw a penguin the other day,
00:32:15which was interesting.
00:32:16You're pretty excited about this, aren't you?
00:32:17I love this stuff and I could talk all day about it.
00:32:28About there.
00:32:29Then we can do a bit of a control check.
00:32:31Back and forth, making sure it's all responsive.
00:32:34Yeah.
00:32:35We'll go left and right a little bit.
00:32:37Forward and backwards.
00:32:38We'll go up higher.
00:32:42And then off we can kind of go.
00:32:44You can see at the moment we're up at about 50 metres.
00:32:46See the hawk flying out?
00:32:47Yeah.
00:32:48Just sussing out his backyard.
00:32:49Who else is up there in the airspace with him?
00:32:53What about the wind?
00:32:54You've got a lot of equipment.
00:32:55How does it handle that?
00:32:56Being on the coast, we're exposed to a lot of salt and wind
00:32:59and those kind of harsh environments.
00:33:00But these drones, to their credit, do very well to hold up.
00:33:04You can see straight down.
00:33:05We can see the board riders out there below us.
00:33:07Yeah.
00:33:08So you can see straight through that water column.
00:33:10So anything that pops up is very easy to detect.
00:33:13But as you can imagine and as you can see there,
00:33:15we see a lot of marine wildlife out there.
00:33:17It's very easy to kind of pick things up.
00:33:20What amazes me is that this tool can save lives
00:33:23in your hands at a beach in Sydney.
00:33:27Fantastic.
00:33:28What a great tool.
00:33:29And what a good operator.
00:33:34While this balcony may be little,
00:33:36it doesn't mean that Oni's party spirit matches.
00:33:39So I'm going to build a drinks cabinet
00:33:41and an entertaining hub
00:33:42which will make this little balcony
00:33:44the hottest spot in town.
00:33:46Now it all starts with me removing this clothesline
00:33:49because they don't use this area
00:33:50to dry their clothes anymore.
00:34:09The key to this drinks cabinet
00:34:11is to keep the design simple and achievable.
00:34:14Now I'm going to be using some dressed pine to make it
00:34:16and the best thing is that's easy to work with
00:34:18but also affordable.
00:34:20The first thing I'm going to be doing
00:34:21is cutting all my pieces to size.
00:34:29The size of our drinks cabinet
00:34:31is 900 high, 560 wide and 185 deep.
00:34:36But if you want the detailed plans
00:34:37and all the measurements,
00:34:39make sure you send us an email.
00:34:45Oh, so this is the overall shape of our cabinet.
00:34:48Now to hold it together,
00:34:49I'm going to be using some PVA glue
00:34:51and these 50mm screws.
00:34:53But what I will be doing
00:34:54because we're screwing into this end grain,
00:34:56I'll be pre-drilling it
00:34:57before I put the screw in
00:34:58and that's going to stop this timber from splitting.
00:35:00Spare me all the stories of how
00:35:23Now you will notice
00:35:25that this middle shelf
00:35:26is actually stepped down by 5mm
00:35:28and that's because
00:35:29I'm going to be sitting a mirror
00:35:31inside this cabinet
00:35:33which means I need to now
00:35:35continue a frame
00:35:36around this inside perimeter.
00:35:38To do that,
00:35:38I'll be using this 19x19 baton.
00:36:00With our battens on,
00:36:02the last step is simply
00:36:03to add these rails
00:36:05at the top and the bottom.
00:36:06I'll insert them inside our cabinet
00:36:08and basically that's going to help
00:36:09strengthen everything up.
00:36:28With our cabinet complete,
00:36:30it is now time to get onto the front
00:36:32and that is going to be a door.
00:36:33But this isn't just any old door.
00:36:35There's going to be a door
00:36:36that then doubles up as a bar top
00:36:38because when it's open,
00:36:39you can sit around it.
00:36:41So make it.
00:36:41I'll be using some more dress pine.
00:36:43I've got my 140x19.
00:36:45Now the first thing I'm going to do
00:36:47is take these sharp edges off
00:36:49by going around with my planer
00:36:50and arrasing the edges.
00:36:52Now if you don't have one of these,
00:36:53you can use sandpaper
00:36:54or you can use a hand planer.
00:36:57It's just going to be
00:36:58a nice design feature.
00:36:59Once all these pieces are done,
00:37:00I'll lay them out.
00:37:01I'll put two rails across
00:37:03and screw them all together.
00:37:06From your love, from your love,
00:37:08so it's turning itself
00:37:09From your love, from your love.
00:37:11I'll be here on the floor
00:37:13but here for anything more.
00:37:15Baby, you took it all.
00:37:18I'm going through the worst round.
00:37:25With all our pieces prepared
00:37:27and before I bring them all together,
00:37:29I'm going to go over the outside
00:37:31of this cabinet with a charcoal stain
00:37:33and then I'll keep the inside clear.
00:37:35It's going to look fantastic.
00:37:37I don't want to go up too fast
00:37:40Then spend every day
00:37:41Trying to get back in touch
00:37:43So I want to do dumb things for you
00:37:47While we can still paint it on you
00:37:51With everything dry,
00:37:52it's now time to turn this cabinet
00:37:54into a real bar.
00:37:55How are we going to do that?
00:37:56Well, we are going to be adding in the mirror.
00:37:59And remember,
00:37:59that's why we created this 5mm step-down.
00:38:02So the mirror will sit in here
00:38:03which will bring us flush with our frame
00:38:07and then I'm going to use this plywood on top
00:38:09which will sandwich it together
00:38:11and get screwed to our outside perimeter.
00:38:32And the wait is finally over.
00:38:34I know you've been sitting there
00:38:35trying to think
00:38:36how are we going to make this work
00:38:37as a door and a bench at the same time.
00:38:39Well, it is super simple.
00:38:40I've just attached a piano hinge to our cabinet
00:38:43and that's what's going to allow it
00:38:44to go up and down as a door.
00:38:46And then these two chains here,
00:38:47well, that will hold it in place
00:38:49when it's open like a bench.
00:39:08All right, now we're ready to fix this to the wall.
00:39:11Now, because it's a brick wall,
00:39:12I'm going to be using some masonry plugs
00:39:14to hold it in place.
00:39:46and i've just added some finishing touches i put a hook on this side great place to hang a towel
00:39:50and a bottle opener on the other side but i tell you what there is a lot to love about
00:39:55this build
00:39:56whether the door's shut and it's tucked away or it's opened up like this ready for entertaining
00:40:01i mean we use basic building materials simple carpentry skills no crazy tools needed and it
00:40:08looks absolutely stunning the end result speaks for itself and there's only one thing left for
00:40:14me today and that's to enjoy a refreshing beverage cheers
00:40:34how about a yuzu meringue pie it is absolutely delicious
00:40:41this garden makes a massive impact on an achievable scale

00:41:22kind in the world so we've gathered at the stunning moan of our surf life saving club on sydney's
00:41:27northern beaches to meet some of those volunteers so here he is hello ollie i've been told you're the
00:41:35man to speak to you about everything to do with this club and surf life saving oh i guess so
00:41:39well
00:41:39you've been a member here for a long time haven't you i have i've been here for 15 years or
00:41:43so so i
00:41:43started out as a little nipper on the beach and now i'm a patrol captain on the beach tell me
00:41:48what it
00:41:48is that you actually love about volunteering for surf life saving i think what i love is the
00:41:52community it's like i get to come down to the beach and i have so many different mates from a
00:41:56variety
00:41:56of backgrounds it's not your schoolmates you grew up with it's people that are all walks of life from
00:42:00all over sydney there is a serious side to what you have to do though as well there's a lot
00:42:04of training
00:42:04that goes on behind the scenes that people don't realize as well and lots of retraining you've got to
00:42:08keep it fresh don't you 100 so annually we all have to do our annual proficiency in skills
00:42:12maintenance so i did mine about a month ago and then three days later i helped with the cpr and
00:42:17a member of
00:42:17the public in newport so it's really valuable
00:42:25you actually get out and about into the community a fair bit as well 100 yeah so um yeah through
00:42:30our
00:42:30work i get to go out and chat to people members of the public yeah we're trying to educate them
00:42:35and talk about where's safe to be on the beach so a really big one we've been pushing is stop
00:42:39look
00:42:40and stay alive so stop before you go on the water look and see if the conditions around you are
00:42:45safe so seeing if there's rips or other hazards and looking for the red and yellow flags and then
00:42:49staying alive so going in only if you feel comfortable to go into the ocean like today is
00:42:54a perfect day to go on the water so if there are ways that people want to get involved what
00:42:58would
00:42:58you suggest for them and obviously they can volunteer 100 and i think that's the beauty of
00:43:02surf lifesaving there's so many different ways now so if you're not comfortable in the water you
00:43:06could be going and flying drones from the beach and you can always donate money and that's another way to
00:43:10actually support it is fully volunteer we always appreciate it it's what funds us and keeps us
00:43:14buying boards like this keeping our flags up on the beach ollie i love the passion you were definitely
00:43:19the right person to chat thank you
00:43:28when i heard that the team was gathering at the beach for a picnic i decided i want to make
00:43:34a meringue pie
00:43:35now not just your lemon or lime meringue pie i'm gonna make a yuzu meringue pie
00:43:46it all starts off with a biscuit base here i've got 250 grams of digestive biscuits which i have
00:43:53processed in a food processor to a sand-like consistency with that 100 grams of melted butter
00:44:06if you're using salted butter you just use less salt but if you're using unsalted butter i would
00:44:14definitely suggest a good pinch of salt
00:44:22mix it till it all combines together and until you get a wet sort of paste
00:44:33mix it until you get a wet sort of paste
00:44:34and in it goes to a removable base tart tin
00:44:42once you get it all evenly distributed using a bottom of a glass and pressing it to compact
00:44:51it as much as you can step one three ingredients tick
00:45:05so i'm going to separate six egg yolks from the egg whites
00:45:10i use the egg yolks for the filling and i use the egg whites for the meringue
00:45:16so nothing here gets wasted
00:45:33150 ml of yuzu it comes usually from china or japan it tastes in between lime
00:45:43and a lemon but it does have a very floral smell to this it smells almost that you can drink
00:45:52it but
00:45:53it's very very tart give it a bit of a whisk
00:46:02we're using one and a half cans of condensed milk a tiny bit more okay that looks like half a
00:46:11can
00:46:12so that's the consistency of the filling that's all you need so all we have to do now is pour
00:46:20the filling
00:46:21on top of the base preheat your oven at 180 and it goes in for about 15 to 20 minutes
00:46:31or until it's set
00:46:39now while that's cooking in the oven we're going to start off with our meringue
00:46:45the six egg whites into a stand mixer
00:46:55let it beat till it becomes a little bit frothy
00:47:04and here is when i want to add the cream of tartar
00:47:16okay now it's time to add 150 grams of sugar a little bit at a time
00:47:34i'm going to check to see if the sugar has dissolved and how you check it is there's no
00:47:40grittiness between your fingers the sugar's dissolved and that's perfect
00:47:47the pie has been cooked and i let it cool down completely the next part is the fun part putting
00:47:55the meringue on the pie can make it look a bit rustic
00:48:02just slap it on like that and then sort of make swirls so you get a bit of
00:48:09height how's that doesn't that look impressive as it is now you can serve it like this or you can
00:48:17zhoosh it up and make it a little bit more impressive you can use your oven heat up the grill
00:48:24at 220 to 230
00:48:27put your pie tin as high as you can but not touching the grill put it in for 30 seconds
00:48:34and that should
00:48:34brown the top of your meringue but i have got today a blow torch
00:48:45wow i am really proud of myself with this one for someone who doesn't really like sweets this is a
00:48:52pretty good looking piece of pie

00:50:13got such an amazing structural form to it which really pulls you in and off the circular pattern
00:50:18well there's all these different garden rooms but i have to say as you enter the garden
00:50:22it's just such a wonderful experience you've got water houses which close you in
00:50:26with this fantastic archway with boston ivy going over which is going to give great autumn color but it's the
00:50:31level of detail that really sets the tone take this step for example we could have easily just had
00:50:36recycled bricks but instead there's a recycled sleeper here and the way it's been cut into this
00:50:41metal work is absolutely divine i cannot wait to check out the rest of the space
00:50:52the garden is split into various garden rooms each one with a distinct purpose and this one
00:50:57is all about cut flowers the planting scheme for the remainder of the garden is predominantly native
00:51:02so this space is all about growing things that might look a little bit out of place there but
00:51:06what the owner really wanted things like buddleia we've got some echium and even foxgloves as you
00:51:11walk through it's flanked by two acacias a variety called sterling silver which is looking absolutely
00:51:16spectacular but it's this fence that helps to pull the whole garden together it works around the outside
00:51:22and it meanders through the different spaces now this is actually copper pipe just plumbing pipe
00:51:27and hardwood timber each one individually drilled and tapped on this would have taken absolutely ages
00:51:33to do but it's well worth the effort
00:51:44mitch and josh how are you guys how you going how are you buddy you well yeah very good jolly
00:51:48good
00:51:48so landscape designer landscape builder and brothers as well that's right yeah combination
00:51:53that seems to work this garden is absolutely stunning how big is it uh it's about 600 squares
00:51:58okay so it's like a standard old garden yeah that's right most people would normally have a lawn
00:52:02in there with maybe a hedge around the outside why have you guys gone for for different garden
00:52:06rooms uh we're trying to create a garden one that'd create a sense of intrigue one that would kind
00:52:10of draw you to walk around and explore and then by you having avenue plannings and larger
00:52:14established trees would really block it off so your point of view you need to walk around and explore
00:52:18i guess by having those rooms as well it makes the space feel larger because you don't see it all
00:52:21at once yeah that's right being more of an open space too we're trying to make it feel a bit
00:52:24more
00:52:25intimate and private so by kind of closing in the spaces it creates that um yeah sense of
00:52:30safety yeah yeah great and there's a lot of recycled materials was that difficult to to build it can
00:52:35be difficult at times they they all have their own tendencies how they want to react when you cut them
00:52:40they split this and that so just like a person that has a bit of character to them they can
00:52:45be a bit
00:52:46hard to work with that first but once you figure them out it can turn into something a lot more
00:52:50beautiful than what was just manufactured out of something new so what was the inspiration behind
00:52:55the garden because there is a lot of recycled materials here isn't there uh the client loved
00:52:59like an inner city cafe and that was a one of the big ones um and then too something like
00:53:04the glass
00:53:05house and a fireplace she really wanted to incorporate aspects of them into the garden okay yeah
00:53:10and the planting scheme is mainly native isn't it yeah but it feels very contemporary the way
00:53:15it's been put together how have you achieved that um just by having like a mixture of kind
00:53:19of wildness to have plants encroaching on the pathways to soften them but then having like
00:53:23clipped spheres like the western just kind of give it a bit more um structure as well yeah they give
00:53:27a great formal shape don't they fantastic well i cannot wait to have a little bit more of a look
00:53:32around i'll catch up with you guys a bit later on okay good well if you are after a destination
00:53:47in
00:53:47the garden you really can't beat a glass house like this i absolutely love the way there's no ridge beam
00:53:52so when you look up all you can see are the lovely gum trees it is quite a cold area
00:53:57here in winter so
00:53:58having a glass house like this is just going to extend the growing period the garden beds well
00:54:02actually raised plastic wicking beds hidden behind a facade of recycled bricks so they always
00:54:07get the moisture that they need as you go down the tiles they're recycled from the owner's previous
00:54:13bathroom it really is spectacular all the timber is recycled the finishing touch well every glass house
00:54:19needs a chandelier
00:54:29recycled materials and veggie patches go hand in hand and here they've used the recycled sleepers again
00:54:35to raise the beds up and like the step that we looked at we've actually used the same metal here
00:54:40now this is the tracks from the railway and the way they've cut in that timber is absolutely delightful
00:54:46to tie all the gardens together though they've got repeat planting you can see these balls of
00:54:49westringer like where i met the guys and that just makes the whole garden feel cohesive

00:55:12materials meet up all those junctions things like even though the way the the lighting cables are
00:55:18hidden in a copper cable there is that done at the design stage or is it done a construction stage
00:55:23bit of a blend sometimes we're big on flexibility as we go along and some things you'll have to adapt
00:55:29and and find some creative solution to make it work so how is it working together as brothers do you
00:55:34fight a lot do you pretty good we're normally pretty good you know i stick to design and josh sticks

00:55:38we build okay we have an argument we just have a bit of wrestle on the grass and that's all

00:56:59fantastic place to be so tell me a bit about the range of programs you offer absolutely we do
00:57:04rock fishing programs we do junior first aid beach to bush mental health first aid but cpr and first
00:57:10aid's where we spend most of our time a lot of people would have done first aid courses before but
00:57:14what is the difference between a traditional first aid course and what you do yeah we've just rolled out
00:57:19a national program to all of our volunteers called life-saving cpr really targeting our volunteers whether
00:57:24they're in bateman's bay or broom that the response doesn't really change everyone is trained the same
00:57:29way now when it comes to cpr we want to make sure that the ambulance obviously is on the way
00:57:34making sure that everyone's nice and safe but when it comes to our cpr we find the middle of the
00:57:38chest
00:57:39arms nice and straight we're on a table today but let's get them on the floor yeah pushing
00:57:43down nice and hard full release we want to make sure we want that heart to fill back up
00:57:48and it's quite fast isn't it two per second so we want to do 30 compressions followed by our two
00:57:53rescue breaths 26 27 28 29 30 we tilt the head back grab the chin two quick breaths and then
00:58:04get back
00:58:04into it we want to maximize our time on the chest by minimizing our time off the chest and would
00:58:10you
00:58:10keep doing this until the ambulance arrived absolutely with nearly 80 percent of cprs happening at home
00:58:15we want to make sure people are continuing to compress until those ambos walk in the door
00:58:19keep it simple call push and shock that's our key message thanks so much dan thank you
00:58:24with the season really booming along you may find that you've just got so many herbs you can't use
00:58:40them quickly enough in the kitchen well best thing is grab your herbs tie them off with a bit of
00:58:47string
00:58:51and then you can keep them for later on but the trick is is to hang them up now if
00:58:58you hang them up
00:58:59somewhere where it's very dry the laundry is too much moisture so the garage or somewhere where it's nice
00:59:05and dry and you haven't got any moisture coming in you'll find the herbs will really last for a very
00:59:11very long time
00:59:23and of course you can do the same thing with lavender and lavender is so handy because you can use
00:59:28it
00:59:28in so many different ways and you still get the aromas right the way through the house when they're
00:59:33hanging there to dry by the way when you do go to use them take them down into the kitchen
00:59:37just let
00:59:38them acclimatize in the kitchen because there'll be much more moisture there and the leaves actually
00:59:43tend to re-energize themselves strip them off and put them into your cooking and those essential oils and
00:59:48flavors will be with you for months to come
00:59:54even if you don't consider yourself crafty i guarantee you can do this

01:00:38i absolutely love hanging plants indoors not only do they purify the air but they also look so lush and
01:00:45green and gorgeous but traditional hanging baskets like this that usually go outdoors don't look so
01:00:51stylish inside the home so i'm going to show you how to make a really stylish version that won't have
01:00:56you jumping through hoops
01:01:02for this you'll need some embroidery hoops you might have some of these in your craft box
01:01:06otherwise you can buy them at the store you'll need two large ones and then one smaller one
01:01:11and you need it to fit just under the rim of your pot like that if yours is too big
01:01:17what you can do is just tie some macrame cord around it and then you'll find it'll fit snugly
01:01:26so then you take the smallest ring place it in the center the two larger ones either side
01:01:34then take a couple of cable ties and where the rings meet you'll just tie those around
01:01:48the trick here is not to tighten the cable ties too tight at this point what you want to do
01:01:53is bring
01:01:54up the larger hoops on either side use another cable tie there and then you can tighten the lower ones
01:02:01and after that i'm going to conceal the cable ties with macrame cord
01:02:07to secure the macrame cord in place i'm just using a dab of hot glue on the underside here
01:02:15and then i'm going to take the cord and just hold it in place for a second until it starts
01:02:20to set and
01:02:20i can start wrapping it around then once you've reached the end of your cord just another dab of
01:02:33glue will hold it in place
01:02:51now for the top you'll first want to work out at which height you want to hang your plant so
01:02:57that
01:02:57you can work out what length you need for your cord because this is what you're going to hang it
01:03:01from
01:03:01so you take this length and you lay it across your rings like this and then you can take more
01:03:12cord
01:03:12and just like you did at the bottom wrap that around
01:03:28now you'll see you've got those two pieces from earlier that you can use
01:03:33to hang it from i'm going to add some decorative beads to mine just to give it a little bit
01:03:38more
01:03:38flare to make the beads a little easier to thread on i'm just using some tape around the end of
01:03:44the cord
01:04:02and that is it just have to place the plant in
01:04:10i absolutely love this it's got that cool scandy vibe and i have to say i think this is the
