00:04Risotto is truly one of my favorite dishes.
00:06I used to request it as a part of my birthday dinner
00:07growing up, but even I'll admit,
00:09cooking risotto can be a pain in the ass.
00:11You need to stir and babysit the pot the whole time.
00:13I always splash broth all over the stove top.
00:16I'm kind of a messy cook.
00:16So let me introduce you to Risi Abisi,
00:18risotto's much simpler cousin.
00:20Once the broth hits a boil, you can lower it to a simmer.
00:23It takes about a third of the time,
00:24and this spring version purees peas
00:26to blend into the final dish,
00:27plus it stirs in even more fresh peas in the end.
00:30Finish it with butter, cheese, and lots of lemon.
