00:00:26So we thought the best way to kick-start a new year
00:00:28was to say thank you to the army of surf lifesavers
00:00:32all around this island nation.

00:01:11Today I'm elevating all my recipes with a new ingredient.
00:01:14It's called a Graham.
00:01:18This stunning home on Bribie Island is sure to get more than just tongues wagging.
00:01:24I do have it on good authority that this one has gone to the dogs.
00:01:30As they say in the classics, you've got to fight for your right to make this.
00:01:35It doesn't matter if you've got no space, your place can still be the life of the party.

00:01:55I'm going to make a Yuzu meringue pie.
00:01:59And Dr. Harry's horsing around at Australia's biggest Stockman's competition.

00:02:14Couldn't think of a better place to be.
00:02:20Thinking of where we are.

00:02:24We're going to do a sausage.
00:02:27Rather than sausage in a bun, I'm just going to do like a smashed patty.
00:02:31You know the way burgers are trendy at the minute?
00:02:33Smashed patties.
00:02:34Very, very.
00:02:34With a little bit of a sauce of a chilli number.
00:02:38So the first thing to do, I've preheated the pot.
00:02:41So in here, I have got six bird's eye chillies chopped.
00:02:45A rather large five centimetre block of ginger, which I've grated.
00:02:50And about two cloves of garlic chopped.
00:02:53That's garlic.
00:02:54Garlic.
00:02:54You like that?
00:02:55Yeah.
00:02:56That's worse than my joke.
00:02:58So it's not garlic, it's garlic.
00:03:00And what I'm going to do is very lightly give that a quick sweat.
00:03:04So if you want to pour some olive oil into the pan.
00:03:06So just a little drizzle, just to get it moving.
00:03:09All ingredients into the pan.
00:03:11Will you smell this?
00:03:14Whoo!
00:03:16That'll clear your lungs out mate.
00:03:19It's a match made in heaven, it's like you and me.
00:03:23You're right.
00:03:23It's kicking in now.
00:03:25So if you stir that, and I'll chop some capsicums.
00:03:28I can do this.
00:03:29So four capsicums, roughly chopped.
00:03:33So we get our capsicums in.
00:03:35If you want to add the 500 mils of white wine vinegar.
00:03:40Yep.
00:03:40So what we're doing is we're adding the vinegar to the chilli, garlic and the ginger and we're forming a
00:03:44very acidic base.
00:03:46So it's full of vinegar.
00:03:47Then we're going to sweeten that up with the sugar.
00:03:49So that's where the jam starts to come into play.
00:03:52So we're going to need 800 grams of sugar.
00:03:58So stir that in.
00:04:02So that's good.
00:04:03We let that tick along.
00:04:04You can add the lime now.
00:04:05So what you do is, you just microplane the zest in.
00:04:10So once you zest it, smell that.
00:04:12Yeah.
00:04:13Yeah, it's beautiful.
00:04:14So rather than waste the actual zest, if you want to do that.
00:04:18So what's the tips to growing limes?
00:04:21Well, you can have a pee on them at night.
00:04:23Lots of fertiliser.
00:04:25And watch out for all the different bugs that come in.
00:04:27Spray them with a horticultural oil on a regular basis.
00:04:31Certainly during this time of the year and right through to the end of autumn.
00:04:35And that'll keep the bugs at bay and you'll have beautiful citrus.
00:04:38What I took away from the whole conversation was you pee on your trees at night time.
00:04:44So we'll keep the juice for when we've finished cooking the actual jam.
00:04:48So obviously to make the putty, we need the mince.
00:04:51So the pork mince, about 500-600 grams.
00:04:55So to that, I'm going to flavour the pork.
00:04:57So think of a herb that goes really well with pork.
00:04:59Sage.
00:05:00Correct.
00:05:01Give the man a prize.
00:05:02Yeah.
00:05:03So a bunch of sage, sage, pork.
00:05:05Goes really well together.
00:05:12Into our pork mince.
00:05:16A little bit of salt and pepper.
00:05:24Then I'm going to add...
00:05:26Oh, yes.
00:05:27I love capers on a whole heap of things.
00:05:30In a sandwich, but in a bun.
00:05:32Even better.
00:05:33Yeah.
00:05:34And I'm just going to chop the capers.
00:05:36So the capers are going to add that little saltiness, a little bit of acidity.
00:05:40Yeah.
00:05:41All right, roughly chopped capers into the bowl.
00:05:44Yep.
00:05:45So what I'm going to do is I'm going to mix that.
00:05:47But if you want to fry some garlic, which is here.
00:05:51Oh, yeah.
00:05:51I've pre-chopped a few because I'm helping you out today.
00:05:53Yeah, cool, man. Thank you.
00:05:54So you're just going to fry it on the edge of the barbecue.
00:05:57You don't want not too much colour because we're going to add the garlic to the mix.
00:06:01Oh, okay.
00:06:04I'll just pick out the black bits.
00:06:06I'll do the mixing bit.
00:06:08So basically incorporate all our ingredients.
00:06:15This has been on all that time where we've been prepping.
00:06:19So have a look at the consistency of that now.
00:06:22Oh, yeah.
00:06:22It's reduced by half and it's got really jammy.
00:06:25I'll just have a little...
00:06:27Good.
00:06:28Concentrate in flavour.
00:06:29So I think all it needs now is a little blast of lime juice.
00:06:32So if you want to cut the limes in half there.
00:06:35And we'll add the lime juice to the mix.
00:06:38When it gets reduced down.
00:06:39Yeah.
00:06:40It loses some of that heat, doesn't it?
00:06:41Oh, a little bit.

00:06:43Oh, not a lot. Okay.
00:06:45Let's get on to our patties.
00:06:47So what I'm thinking is,
00:06:49onions obviously go really well with that piece of meat.
00:06:52So what I'm going to do is put them on the grill,
00:06:54smash the burger on top of it,
00:06:55so it sort of indents into the meat.
00:06:57Beautiful. Okay.
00:07:00Sort of cover it.
00:07:04And what I'm going to do now is get the burger,
00:07:07start smashing them on.
00:07:09I'll add a little bit of paper.
00:07:16Like that?
00:07:18Yes.
00:07:23That's just oven paper, is it?
00:07:25Yeah, just a non-stick.

00:07:32Move that to there.
00:07:35Keep going on our onions.
00:07:38And these cook in seconds.

00:08:41So if you want to grab that iceberg lettuce,
00:08:42a little bit of parsley in there.

00:08:44A little splash of mayonnaise,
00:08:46just to moisten it up.
00:08:48So I've got some brioche buns,
00:08:49any buns you want.
00:08:50Milk buns, brioche buns,
00:08:52bread buns.
00:08:53I'm just going to gently warm these.
00:09:03All right, so these are just softened up a little bit.
00:09:06And now it's basically just time to build.

00:09:16You can see the way the onion, like it's not overly cooked.

00:09:19Some's cooked, some's a little bit caramelised,

00:09:48So we've elevated the humble sausage in a bun to a smashed sausage patty with a chilli jam,

00:12:14And then with your strokes, make sure you've got like long, smooth strokes one at a time.

00:15:03Churches, pubs, some wonderful old buildings.
00:15:05Normal population, only about 900 people.
00:15:08But come showtime, it swells to well over 5,000.

00:15:36And it's having quite a big area right out the back of the showground and part way up the hill

00:15:48And a lot of the youngsters too.

00:15:52That's what it's all about.

00:16:21It's about a four-day pack for a stockman or a boundary fence rider for him to go out.
00:16:26He's got his shoeing gear.
00:16:27He's got his traps if you need something to catch to eat.

00:16:31And he's got his horse feed and he's got his little bed roll and he's awake.
00:16:35And it's not just the blokes either.
00:16:37Rebecca has 16 minutes to pack, run the course, then unpack.

00:16:46So as she's coming up to those tyres, she's got to stand in between the two big tractor tyres.

00:16:51Then she has to send her horse around 360 degrees going over each tyre without her riding horse moving.
00:16:57It's very unnatural, but it's showing what your horse can do.
00:17:01And they're coming up to this ramp, yeah.
00:17:02Okay, this ramp, it's replicating hollow ground.

00:17:09She'll go back, she'll start again.
00:17:10Her riding horse is wanting to go off the hollow ground, but she's holding him back.

00:18:16So, this is the stock whip competition.
00:18:18So, what's involved?
00:18:20Well, any stockman uses the stock whip all the time.
00:18:23What's he use it for?
00:18:24Two things.
00:18:25One, the cracker at the end of the whip actually makes this sound.
00:18:28And it's the sound that helps control the animals he's working, usually cattle.
00:18:35So, it's all about using the stock whip properly while you're still riding the horse.
00:18:39This competition, there's all little obstacles all around the arena.
00:18:43You get points from everyone, you cut, and it's all about time as well.
00:18:52And that's a great round.
00:19:01And here at the Rundle this weekend, we are celebrating the Australian stockmen and the stock women.

00:25:38inside i want
00:25:39you to have a look inside get in there i've got some guests special friends coming for you to see
00:25:44shortly that's what we call a tease in the biz
00:25:59not surprisingly the first room that i have come to check out is the kitchen i love being in the
00:26:05kitchen i love cooking and entertaining and this is pretty much entertainers paradise
00:26:11i think i like you like that i just might like you like that
00:26:17we have seen some seriously impressive primary suites in martyr prized homes and this one
00:26:23definitely fits the bill
00:26:34and then what about this walk-in road if i'm being really honest this is actually bigger than
00:26:40my bedroom at home
00:26:47how do you actually say that you're living in a home that is full of just complete luxury
00:26:52without saying the words out loud well i would suggest it would be sitting in a room like this
00:26:57enjoying a movie surround sound a 90-inch projection screen
00:27:02my goodness kendall this home is so stunning spectacular i'm a little bit distracted by what's going on
00:27:14behind yes joe because we know that martha prize home helps fund vital medical research patient care
00:27:20and equipment but this is another program that we support our martyr pet therapy program so i've
00:27:26brought lynn kat and gina here to introduce you to some special friends so tell me why you guys
00:27:31actually got involved with the pet therapy program uh so this is tilly she's uh turning seven in a
00:27:37couple of weeks time and she's been at the martyr hospital for four and a half years now so she
00:27:42started just when she was about two it's a source of joy for for us as humans but i think
00:27:46as the
00:27:47dogs they they really enjoyed as well this is hunter he's um my border collie he'll be three in
00:27:53january and we started in june i guess my journey with martyr goes back to when my daughter was
00:27:58diagnosed i was a newly single mum and found out she had a rare condition she had the rarest form
00:28:03of
00:28:04it which would require surgery at the martyr we weren't living in brisbane at the time but
00:28:07um yeah it it involved basically having her skull removed and replaced and it was just something
00:28:14that was the most daunting thing to be going through um by myself as well but knowing that i was
00:28:20going
00:28:20through it with the martyr it's a hospital that doesn't just treat you it actually takes genuine
00:28:24care of you and she was just this tiny baby completely covered in tubes and there was one
00:28:29patch of skin i was able to touch and just said to her stay danny i need you and she
00:28:34had to go off to
00:28:35the ct scan and i just had to hope she would come back and she did the martyr literally saved
00:28:40my
00:28:40daughter's life do you think the dogs themselves know as well oh 100 like she she picks up on people
00:28:45yeah she will know which ones want to see her which don't um which ones need more love she can
00:28:51reach
00:28:52the ones that can't reach her she'll always get a little bit closer she backs into people so that
00:28:57they can reach her just right it's just amazing
00:29:00well kendall this has been such a special day to see where some of the funds raised from this

00:31:14wrong this is a drone right this is a drone it's a uav or an uncrewed aerial vehicle wow that's
00:31:20a
00:31:20mouthful isn't it so what do you do with this in particular at surf life savvy new south wales we
00:31:24use
00:31:24it to patrol off the break of the waves for marine wildlife out there okay so i guess the main
00:31:29thing
00:31:29is looking for sharks and things like that is it that is the core of what we do yes we
00:31:33work with new
00:31:33south wales government and they fund a program across the whole new south wales coastline at 50
00:31:37locations two flights every hour every single day to patrol mainly for sharks and those target
00:31:42species so it does a lot of other things it can do a range of things it's got a speaker
00:31:46on top there
00:31:47so we can alert the swimmers to any particular hazards that are out there and it carries really
00:31:50well across the water uh it can have thermal imagery these drones as well uh the camera and
00:31:55gimbal moves around and you can get different levels of these drones that they're exceptional little
00:31:58tools we use it for search and rescues with the new south wales police uh they're very good at
00:32:02detecting heat signatures you know for koala spotting in the in the wilderness as well there's all sorts
00:32:06of things there's not too many koalas going swimming though are they not out here no but there's a
00:32:10whole a whole lot of marine wildlife that's for sure there's whales and dolphins and we saw a penguin
00:32:14the other day which was interesting you're pretty excited about this i love this stuff and i could talk
00:32:18all day about it about there then we can do a bit of a control check back and forth making
00:32:33sure it's all
00:32:33responsive yeah we'll go left and right a little bit forward and backwards we'll go up higher
00:32:42and then off we can kind of go you can see at the moment we're up at about 50 meters
00:32:46see the hawk
00:32:47flying out yeah just sussing out his backyard who else is up there in the airspace with him
00:32:53what about the wind that you get a lot of question how does that handle on it being on the
00:32:57coast we're
00:32:57exposed to a lot of salt and wind and those kind of harsh environments but these drones for to their
00:33:02credit do very well to hold up you can see straight down we can see the board riders out there
00:33:07below us
00:33:07yeah so you can see straight through that water column so anything that pops up is very easy to
00:33:12detect but as you can imagine and as you can see there we see a lot of marine wildlife out
00:33:17there
00:33:17it's very easy to kind of pick things up what amazes me is that this tool can save lives in
00:33:24your hands
00:33:25at a beach in sydney fantastic what a great tool and what a good operator
00:33:33while this balcony may be little it doesn't mean that oni's party spirit matches so i'm going to
00:33:40build a drinks cabinet and an entertaining hub which will make this little balcony the hottest spot in
00:33:45town now it all starts with me removing this clothesline because i don't use this area to draw
00:33:50their clothes anymore
00:34:09the key to this drinks cabinet is to keep the design simple and achievable now i'm going to be using
00:34:15some dressed pine to make it the best thing is that's easy to work with but also affordable the
00:34:20first thing i'm going to be doing is cutting all my pieces to size
00:34:29the size of our drinks cabinet is 900 high 560 wide and 185 deep but if you want the detailed
00:34:37plans
00:34:38and all the measurements make sure you send us an email nice so this is the overall shape of our
00:34:48cabinet now to hold it together i'm going to be using some pva glue and these 50 mil screws but
00:34:53what
00:34:53i will be doing because we're screwing into this end grain i'll be pre-drilling it before i put the
00:34:58screwing and that's going to stop this timber from splitting
00:35:23now you will notice that this middle shelf is actually stepped down by five mil and that's
00:35:29because i'm going to be sitting a mirror inside this cabinet which means i need to now continue
00:35:36a frame around this inside perimeter to do that i'll be using this 19 by 19 baton
00:36:00with our batons on the last step is simply to add these rails at the top and the bottom i'll
00:36:06insert
00:36:07them inside our cabinet and basically that's going to help strengthen everything up
00:36:28with our cabinet complete it is now time to get onto the front and that is going to be a
00:36:33door but
00:36:33this isn't just any old door there's going to be a door that then doubles up as a bar top
00:36:38because when
00:36:39it's open you can sit around it so make it i'll be using some more dress pine i've got my
00:36:43140 by 19.
00:36:46now the first thing i'm going to do is take these sharp edges off by going around with my planer
00:36:50and
00:36:51arrasing the edges now if you don't have one of these you can use sandpaper or you can use a
00:36:56hand
00:36:56planer it's just going to be a nice design feature once all these pieces are done i'll lay them out
00:37:01i'll put two rails across and screw them all together
00:37:25with all our pieces prepared and before i bring them all together i'm going to go over the outside
00:37:31of this cabinet with a charcoal stain and then i'll keep the inside clear it's going to look
00:37:36fantastic
00:37:50with everything dry it's now time to turn this cabinet into a real bar how are we going to do
00:37:56that well we
00:37:57are going to be adding in the mirror and remember that's why we created this five mil step down so
00:38:02the mirror will sit in here which will bring us flush with our frame and then i'm going to use
00:38:08this
00:38:08plywood on top which will sandwich it together and get screwed to our outside perimeter
00:38:32and the wait is finally over i know you've been sitting there trying to think how we're going to
00:38:36make this work as a door and a bench at the same time well it is super simple i've just
00:38:41attached a
00:38:41piano hinge to our cabinet and that's what's going to allow it to go up and down as a door
00:38:45and then
00:38:46these two chains here well that will hold it in place when it's open like a bench
00:39:08all right now we're ready to fix this into the wall now because it's a brick wall i'm going to
00:39:12be
00:39:12using some masonry plugs to hold it in place
00:39:17oh
00:39:27oh
00:39:45and i've just added some finishing touches i put a hook on this side great place to hang a towel
00:39:50and a bottle opener on the other side but i'll tell you what there is a lot to love about
00:39:55this build
00:39:56whether the door's shut and it's tucked away or it's opened up like this ready for entertaining
00:40:01i mean we use basic building materials simple carpentry skills no crazy tools needed and it
00:40:08looks absolutely stunning the end result speaks for itself and there's only one thing left for me to do
00:40:14and that's to enjoy a refreshing beverage cheers

00:41:09a dash of red and yellow has become an iconic part of life on the beach in australia over summer
00:41:15and with 200 000 members around the country surf life saving is the largest volunteer community of its kind
00:41:22in the world so we've gathered at the stunning moan of our surf life saving club on sydney's northern
00:41:28beaches to meet some of those volunteers so here he is hello ollie i've been told you're the man to
00:41:35speak to you about everything to do with this club and surf life saving oh i guess so well you've
00:41:39been a
00:41:39member here for a long time haven't you i have i've been here for 15 years or so so i
00:41:43started out
00:41:43as a little nipper on the beach and now i'm a patrol captain on the beach tell me what it
00:41:48is that you
00:41:48actually love about volunteering for surf life saving i think what i love is the community it's
00:41:53like i had to come down to the beach and i have so many different mates from a variety of
00:41:56backgrounds
00:41:56it's not your schoolmates you grew up with it's people that are all walks of life from all over
00:42:01sydney there is a serious side to what you have to do though as well there's a lot of training
00:42:04that
00:42:05goes on behind the scenes that people don't realize as well and lots of retraining you've got
00:42:08to keep it fresh don't you 100 so annually we all have to do our annual proficiency in skills
00:42:12maintenance so i did mine about a month ago and then three days later i helped with the cpr and
00:42:17a
00:42:17member of the public in newport so it's really valuable
00:42:25you actually get out and about into the community a fair bit as well 100 yeah so i'm
00:42:30yeah through our work i get to go out and chat to people members of the public yeah we're trying
00:42:34to
00:42:35educate them and talk about where's safe to be on the beach so a really big one we've been pushing
00:42:39is
00:42:39stop look and stay alive so stop before you go on the water look and see if the conditions around
00:42:45you are safe so seeing if there's rips or other hazards and looking for the red and yellow flags
00:42:49and then staying alive so going in only if you feel comfortable to go into the ocean like today
00:42:54is a perfect day to go on the water so if there are ways that people want to get involved
00:42:57what would
00:42:58you suggest for them and obviously they can volunteer 100 and i think that's the beauty of surf
00:43:02life saving there's so many different ways now so if you're not comfortable in the water you could be
00:43:06going and flying drones from the beach and you can always donate money and that's another way to
00:43:10actually support it is fully volunteer we always appreciate it it's what funds us and keeps us
00:43:14buying boards like this keeping our flags up on the beach ollie i love the passion you were definitely
00:43:19the right person to chat thank you
00:43:28when i heard that the team was gathering at the beach for a picnic i decided i want to make
00:43:34a meringue
00:43:35pie now not just your lemon or lime meringue pie i'm gonna make a yuzu meringue pie
00:43:46it all starts off with a biscuit base here i've got 250 grams of digestive biscuits which i have
00:43:53processed in a food processor to a sand like consistency with that a hundred grams of melted butter
00:44:06salt if you're using salted butter you just use less salt but if you're using unsalted butter i would
00:44:14definitely suggest a good pinch of salt
00:44:22mix it till it all combines together and until you get a wet sort of paste
00:44:32mix it until you get a wet sort of paste okay and in it goes to a removable base tart
00:44:38tin
00:44:42once you get it all evenly distributed using a bottom of a glass and pressing it to compact it
00:44:51as much as you can step one three ingredients tick
00:45:05so i'm going to separate six egg yolks from the egg whites i use the egg yolks for the filling
00:45:13and i use the egg whites for the meringue so nothing here gets wasted
00:45:33150 mils of yuzu it comes usually from china or japan it tastes in between lime
00:45:43and a lemon but it does have a very floral smell to this it smells
00:45:51almost that you can drink it but it's very very tart give it a bit of a whisk
00:46:02we're using one and a half cans of condensed milk a tiny bit more okay that looks like half a
00:46:11can
00:46:12so that's the consistency of the filling that's all you need so all we have to do now is pour
00:46:20the filling
00:46:21on top of the base preheat your oven at 180 and it goes in for about 15 to 20 minutes
00:46:31or until it's set
00:46:33all you've got to do is make a little woman give yourself time now while that's cooking in the oven
00:46:42we're going to start off with our meringue the six egg whites into a stand mixer
00:46:54let it beat till it becomes a little bit frothy
00:47:04and here is when i want to add the cream of tartar
00:47:16okay now it's time to add 150 grams of sugar a little bit at a time
00:47:34i'm gonna check to see if the sugar has dissolved and how you check it is there's no grittiness
00:47:40between your fingers the sugar's dissolved and that's perfect
00:47:47the pie has been cooked and i let it cool down completely the next part is the fun part
00:47:55putting the meringue on the pie can make it look a bit rustic
00:48:02just slap it on like that and then sort of make swirls so you get a bit of height
00:48:10how's that doesn't that look impressive as it is now you can serve it like this or you can
00:48:17zhoosh it up and make it a little bit more impressive you can use your oven heat up the grill
00:48:24grill at 220 to 230 put your pie tin as high as you can but not touching the grill put
00:48:32it in for 30 seconds
00:48:34and that should brown the top of your meringue but i have got today a blow torch
00:48:45wow i am really proud of myself with this one for someone who doesn't really like sweets
00:48:51this is a pretty good looking piece of pie

00:50:06i'm immediately drawn into the garden by this amazing aged olive tree in this raised bed it's
00:50:13got such an amazing structural form to it which really pulls you in and off the circular pattern
00:50:18well there's all these different garden rooms but i have to say as you enter the garden it's just such
00:50:23a wonderful experience you've got water houses which close you in with this fantastic archway with boston
00:50:28ivy going over which is going to give great autumn color but it's the level of detail that really
00:50:32sets the tone take this step for example you could have easily just had recycled bricks but instead
00:50:37there's a recycled sleeper here and the way it's been cut into this metal work is absolutely divine
00:50:43i cannot wait to check out the rest of the space
00:50:52the garden is split into various garden rooms each one with a distinct purpose and this one
00:50:57is all about cut flowers the planting scheme for the remainder of the garden is predominantly native
00:51:02so this space is all about growing things that might look a little bit out of place there but what
00:51:07the owner really wanted things like buddleia we've got some echium and even fox gloves as you walk
00:51:11through it's flanked by two acacias a variety called sterling silver which is looking absolutely
00:51:16spectacular but it's this fence that helps to pull the whole garden together it works around the outside
00:51:22and it meanders through the different spaces now this is actually copper pipe just plumbing pipe
00:51:27and hardwood timber each one individually drilled and tapped on this would have taken absolutely ages
00:51:33to do but it's well worth the effort
00:51:44mitch and josh how are you guys how are you going how are you well yeah very good jolly good
00:51:48so landscape designer landscape builder and brothers as well that's right yeah combination that seems to
00:51:53work this garden is absolutely stunning how big is it uh it's about 600 squares okay so it's like a
00:51:59standard old garden yeah that's right most people would normally have a lawn in there with maybe a
00:52:03hedge around the outside why have you guys gone for for different garden rooms uh we're trying to
00:52:07create a garden one that would create a sense of intrigue one that would kind of draw you to walk
00:52:10around and explore and then by you having avenue plannings and larger established trees would really
00:52:15block it off so your point of view you need to walk around and explore i guess by having those
00:52:19rooms as well it makes the space feel larger because you don't see it all at once yeah that's
00:52:22right being more of an open space too we're trying to make it feel a bit more uh intimate and
00:52:26private
00:52:26so by kind of closing in the spaces it creates that um yeah sense of safety yeah yeah great and
00:52:32there's
00:52:33a lot of recycled materials was that difficult to to build it can be difficult at times they they all
00:52:38have their own tendencies how they want to react when you cut them they split this and that so
00:52:43just like a person that has a bit of character to them they can be a bit hard to work
00:52:46with that first but
00:52:47once you figure them out it can turn into something a lot more beautiful than what was just manufactured
00:52:52out of something new so what was the inspiration behind the garden because there is a lot of
00:52:57recycled materials here isn't there uh the client loved like an inner city cafe and that was a one of
00:53:02the big ones um and then too something like the glass house and a fireplace she really wanted to
00:53:07incorporate aspects of them into the garden okay yeah and the planting scheme is mainly native isn't it
00:53:13yeah but it feels very contemporary the way it's been put together how have you achieved that
00:53:17um just by having like a mixture of kind of wildness so have plants encroaching on the pathways to
00:53:22soften them but then having like clipped spheres like the western just kind of give it a bit more
00:53:26um structure as well yeah they give a great formal shape don't they fantastic well i cannot wait to
00:53:31have a little bit more of a look around i'll catch up with you guys a bit later on okay
00:53:34good
00:53:44well if you are after a destination in the garden you really can't beat a glass house like this
00:53:50i absolutely love the way there's no ridge beam so when you look up all you can see the lovely
00:53:55gum
00:53:55trees it is quite a cold area here in winter so having a glass house like this is just going
00:54:00to
00:54:00extend the growing period the garden beds well they're actually raised plastic wicking beds
00:54:04hidden behind a facade of recycled bricks so they always get the moisture that they need as you go
00:54:10down the tiles they're recycled from the owner's previous bathroom it really is spectacular all the
00:54:15timber is recycled the finishing touch well every glass house needs a chandelier
00:54:29recycled materials and veggie patches go hand in hand and here they've used the recycled sleepers
00:54:35again to raise the beds up and like the step that we looked at we've actually used the same metal
00:54:40here
00:54:40now this is the tracks from the railway and the way they've cut in that timber is absolutely
00:54:45delightful to tie all the gardens together though they've got repeat planting you can see these
00:54:49balls of westringer like where i met the guys and that just makes the whole garden feel cohesive
00:55:03well guys you've saved the best till last this is awesome this little spot thank you charlie
00:55:08absolutely love it this fireplace is great so there is a lot of detail in this garden like where
00:55:12materials meet up all those junctions things like even though the way the lighting cables are hidden
00:55:19in a copper cable there is that done at the design stage or is it done a construction stage bit
00:55:24of a
00:55:24blend sometimes we're big on flexibility as we go along and some things you'll have to adapt and
00:55:29and find some creative solution to make it work so how is it working together as brothers do you fight
00:55:34a lot do you pretty good we're normally pretty good you know i stick to design and josh sticks to
00:55:38how we
00:55:38build okay we have an argument we just have a bit of wrestle on the grass and that's all set
00:55:42out pretty
00:55:42cool and the clients are right with you wrestling on the grass they get the hose and just hose us
00:55:45to
00:55:45try calm us down you know i like it i like it and now this garden has won an award
00:55:49hasn't it yeah
00:55:50that's right uh best design up to 500 square meters and then also best emerging designer too nationally
00:55:54well i can say that they got it absolutely spot on because this garden is fantastic thank you so much
00:56:00for showing us around it's a great use of space it feels enormous when it's just a sort of standard
00:56:04sized block so congratulations to both of you and well done thank you charlie thanks for coming

00:56:28this is
00:56:28the easiest diy project i've ever done give it a go the amazing thing about surf lifesaving is that
00:56:47their influence extends well beyond the red and yellow flags that's exactly right they offer a range
00:56:52of training programs aimed at raising awareness and safety right along the coast so dan thank you for
00:56:57joining us what a stunning location this is absolutely fantastic place to be so tell me a bit about
00:57:02the range of programs you offer absolutely we do rock fishing programs we do junior first aid
00:57:07beach to bush mental health first aid but cpr and first aid is where we spend most of our time
00:57:12a lot of people would have done first aid courses before but what is the difference between
00:57:15a traditional first aid course and what you do yeah we've just rolled out a national program
00:57:20to all of our volunteers called life-saving cpr really targeting our volunteers whether they're in
00:57:25bateman's bay or broom that the response doesn't really change everyone is trained the same way
00:57:30now when it comes to cpr we want to make sure that the ambulance obviously is on the way making
00:57:34sure
00:57:35that everyone's nice and safe but when it comes to our cpr we find the middle of the chest arms
00:57:39nice
00:57:39and straight we're on a table today but let's get them on the floor yeah pushing down nice and hard
00:57:44full release we want to make sure we want that heart to fill back up and it's quite fast isn't
00:57:50it
00:57:50two per second so we want to do 30 compressions followed by our two rescue breaths 26 27 28 29
00:57:5730
00:57:58we tilt the head back grab the chin
00:58:02two quick breaths and then get back into it we want to maximize our time on the chest by minimizing
00:58:08our time
00:58:08off the chest and would you keep doing this until the ambulance arrived absolutely with nearly 80
00:58:13of cprs happening at home we want to make sure people are continuing to compress until those
00:58:18ambos walk in the door keep it simple call push and shock that's our key message thanks so much
00:58:36you may find that you've just got so many herbs you can't use them quickly enough in the kitchen well
00:58:43best thing is grab your herbs tie them off with a bit of string
00:58:51and then you can keep them for later on but the trick is is to hang them up now if
00:58:58you hang them up
00:58:59somewhere where it's very dry the laundry is too much moisture so the garage or somewhere where it's nice
00:59:05and dry and you haven't got any moisture coming in you'll find the herbs will really last for a
00:59:10very very long time
00:59:23and of course you can do the same thing with lavender and lavender is so handy because you can use
00:59:28it
00:59:28in so many different ways and you still get the aromas right the way through the house when they're

01:00:38i absolutely love hanging plants indoors not only do they purify the air but they also look so lush and
01:00:45green and gorgeous but traditional hanging baskets like this that usually go outdoors don't look so
01:00:51stylish inside the home so i'm going to show you how to make a really stylish version that won't have
01:00:56you jumping through hoops
01:01:02for this you'll need some embroidery hoops you might have some of these in your craft box
01:01:06otherwise you can buy them at the store you'll need two large ones and then one smaller one
01:01:11and you need it to fit just under the rim of your pot like that if yours is too big
01:01:17what you can do is just tie some macrame cord around it and then you'll find it'll fit snugly
01:01:26so then you take the smallest ring place it in the center the two larger ones either side
01:01:34then take a couple of cable ties and where the rings meet you'll just tie those around
01:01:48the trick here is not to tighten the cable ties too tight at this point what you want to do
01:01:53is bring
01:01:54up the larger hoops on either side use another cable tie there and then you can tighten the lower ones
01:02:01and after that i'm going to conceal the cable ties with macrame cord
01:02:07to secure the macrame cord in place i'm just using a dab of hot glue on the underside here
01:02:15and then i'm going to take the cord and just hold it in place for a second until it starts
01:02:20to set and
01:02:20i can start wrapping it around then once you've reached the end of your cord just another dab of
01:02:33glue will hold it in place
01:02:51now for the top you'll first want to work out at which height you want to hang your plant so
01:02:57that
01:02:57you can work out what length you need for your cord because this is what you're going to hang it
01:03:01from
01:03:01so you take this length and you lay it across your rings like this and then you can take more
01:03:12cord
01:03:12and just like you did at the bottom wrap that around
01:03:28now you'll see you've got those two pieces from earlier that you can use
01:03:33to hang it from i'm going to add some decorative beads to mine just to give it a little bit
01:03:38more
01:03:38flare to make the beads a little easier to thread on i'm just using some tape around the end of
01:03:44the cord
01:04:02and that is it just have to place the plant in
01:04:10i absolutely love this it's got that cool scandy vibe and i have to say i think this is the
01:04:15easiest
