00:04it's out one Sunday we were just coming over the little bridge and I just looked at the first
00:11sales sign straight away I just said I'm going to buy grandchildren tomorrow I want to make
00:17it into a five-star hotel and I want to put Yorkshire on the map we wanted to create something
00:28that felt unique it's like a posh guest house are you well yeah everybody's your friend in
00:39Yorkshire how are you how are you good to see you no one would expect a hotel like this in
00:52a valley
00:52in the middle of Yorkshire you see ourselves with the goddesses the the reeds the Glen Eagles we want
01:02to even be higher than them we are a Yorkshire team we've got that Yorkshire grit about us it's number
01:14one it really is the experience the people it's fabulous the feeling
01:42it's a colourful autumn at Grantley Hall and with hotels 47 rooms nearly at capacity it promises to be a
01:49busy week for general manager Nunu and his 500 staff the hotel is where dreams are made staying
01:58in one of our gorgeous superior suite hotel is where experience are shared hotel is that memories are
02:07created so every action is always thinking how can we surpass guest expectations that they come to us
02:14and they say is much better than any hotel in the world my job is to pass that to the
02:18team you could
02:19just get the guys to check the cars the six cars they're not straight at all I was always going
02:34to be not till here always I couldn't do anything else and it's not a job it's you know it's
02:39my DNA
02:40and I could actually work all the time you know I'm sure that the team have spotted and they are
02:46doing
02:46something about it but I will chase it because we can't have that I'm quite good with detail that
02:53things need to look perfect looks worse on the camera wow how I'm gonna sleep with this tonight I'm
02:58not sure I think I want to see things as the guests see them and if it's not straight it
03:06looks messy it
03:07looks disorganized I think potentially I might be on a spectrum of something I wouldn't say what but I
03:13might be one word for Nuno incredible top leader been with working with him now for about six years

03:47Nuno's last job of the morning is a check of one of the hotels most sought-after bedrooms
03:54the royal suite that I'm going to check
04:04look at that built in the halls former chapel the royal suite offers views of the formal gardens
04:18and features a show-stopping mezzanine level bedroom
04:24it's very frequent that people enter to this room and they cry when they get in because they
04:29can't believe how beautiful it is this could be a room for a king or a queen we'll love it

04:39it yeah I knew we have a picture of Alaria our founder and reminds me a bit even if she's
04:46not
04:47around she's around she's watching us love that picture
05:03Valeria's son Richard has been at the helm of the business since the Sykes family bought Granley Hall in
05:112015 and this week he greenlit a huge revamp of one of the food and drink venues the orchard bar
05:18and
05:18restaurant so we've got the orchard 24 7 place he's meant to be more of a cafe style place but
05:24more
05:24relaxed we changed the concept of it a couple of times a year but to really give our guests a
05:29different experience it's originally post-covid outside dining when you come down inside but it's
05:37become a really big part of what guests want here the orchard's transformations are designed
05:42to change with the seasons and a masterminded by the hotel's interior and ambience manager
05:48Marek Patrick action but the bottom line is it has to be better it has to be different it has
05:56to
05:56photograph well and it has to be part of the Grantley DNA which is you know the very height of
06:01luxury as you can see summer is over pink white is disappearing and we're gonna bring more warm
06:09colors gold black and red this sophisticated colors just came to me like take me take me take me work
06:17with me and yeah so I'm very excited actually about this project this year Marek has just three days to
06:25bring his vision to life before a lavish champagne launch on Friday evening no pressure no pressure
06:34yeah it's just here but outside it's like this but his ambitious plans mean adding a new entrance
06:45updated lighting we're gonna have a six yeah three different designs in the middle yeah and pots galore
06:53of metallic paint it has to be the same goal as we have across the hotel so we manage after
06:59like 40
07:00four yeah five samples and that's just for starters Marek my butterfly I love Marek when I came here
07:09he was the right man for the job which is in charge of style how it feels the smells the
07:17looks and that's
07:18what he's great at so the panels we're gonna cover with the um the analytic middle kind of tiles but
07:24there's a few rules with Marek I don't want orchard closed for any time by closing an outlet it
07:31jeopardizes the service and jeopardizes the revenue and the reputation if I had my own way would it be
07:35they they so I've been quite nice to him to give him three days actually today Grantley Hall is one
07:55of Yorkshire's most opulent hotels but back in 2015 the grade two listed country house was going to rack
08:02and ruin when Barnsley born entrepreneur Valeria Sykes spotted it on the market I'm sure God will
08:09working through me that perfect day and I just turned and I said I'm going to buy Grantville
08:16tomorrow I'm doing it for Yorkshire and I've got to do it I said it's going to be a top
08:21hotel I want
08:22to show the south what we can do in the north the first person Valeria called upon to help realize
08:31her vision with son Richard remember really well when mom called me I knew of the place it's a
08:38magical place really really is and I said well it must be crazy but I'll support you in what you
08:44want
08:44to do to embark on something like that is a massive challenge but if this is what you really want
08:50we'll
09:03make it happen
09:07good to see you okay everything okay yes it's fine and what's the plan for the day what are you
09:16doing I've
09:17got three meetings down in Norton and then in lifestyle so I'm going to leave you with mom

09:25his eyes attention to detail is just unbelievable if I'm good at attention to detail is to a different
09:31level but you can't be running this place at the level we are without being demanding in everything
09:37Valeria very different she's the mother figure she's incredible lady which is the backbone of what we do
09:43she's the one that makes sure that we have the family values I came from near Bounsley I brought
09:51up in a council house my dad was a minor I've had a fantastic life but I've had a lot
09:58of sadness as
09:59well I got divorced so that's why I could put all the money into this I left school at 16
10:05went to work
10:06for my dad's motor vehicle companies scrapyards typical tight Yorkshire man I'd certainly not got any
10:11idea of this sort of level of opulence or luxury Richard enlisted the support of his three children
10:19and together the Sykes family embarked on the challenge of a lifetime once we started looking
10:25around the grounds it was really sad to see I would have been allowed to fall into so much disrepair
10:32oh it
10:32were terrible weren't you know suspended ceilings that were just letting water in so the magnitude
10:38even of the main hall was significant but yeah proper challenge and that proper challenge didn't half
10:48grow legs the renovations took four years employing an army of local Yorkshire contractors and at a cost of
10:58more than a hundred million pounds much of which was spent on adding a whole new wing we need
11:06accommodation we needed a spa we needed a plant room and the challenge was to create something with a bit
11:11of almost Romanesque feel to feel a little bit more European we did that on purpose to have something
11:17different to the hall so it's got tradition but the DNA is quite different the fabric is fresher and newer
11:27we wanted to create something that felt unique more like a touch of Yorkshire it's like a posh guest
11:33house lady Johnson how are you where else can you get greeted at the door saying hey up love how
11:40are
11:40you welcome to got the hall let's get you all checked in let's get your bags up to the room
11:44and get
11:44you all nice and relaxed all right Glenn we're gonna give you that Yorkshire welcome why would we not you
11:50smell nice wonder what you've got why is it they use words that are very Yorkshire words and I love
11:55it you know if you have somebody welcomed by a member of staff and they go I hope I hope

12:05leave as a friend you don't just leave as a customer coming up the hotel receives a booking from a
12:12global superstar we have a super VIP coming coming from the state she'll be staying with us for a week
12:19so watch the space and can Marek stay afloat there's a well underneath there is yeah washing well with a
12:29rising tide of problems in the orchard look at this mess it looks like a bomb site at the heart

14:19one thousand and four and a half thousand pounds a night no request is too big or too small good
14:27afternoon guest experience we'll check about three or four rooms a day add any amenities the flowers
14:34champagne cakes etc and just make sure everything's all good for our guests we have been known to go out
14:42in our Bentley to collect prawn cocktail crisps for our guests we have a pillow menu and all our bed
14:48linen is made with the finest Egyptian cotton that one just needs you need to move that ribbon and then
14:55the one behind it just needs to go at the other side very young perfect with a hotel nearing capacity
15:02the pressure is going platinum for Thierry's team with a booking from a globally renowned singer we have
15:09a super VIP coming coming from the States so I'm just reading what the main requirements are
15:15the riders should be staying with us for a week so watch the space
15:26the PA looking after Thierry's high-profile guest has been in touch to say their car is only a couple
15:32of hours away
15:35we're not going to do the normal check-in we will hand them to the PA thank you escort them
15:40straight to
15:40the room Thierry has a surprise in store delicately prepared by the pastry team's senior sous chef Shannon
15:52I'm making our very special VIP photo frame for a very special ready guest we put a chocolate photo frame
16:01on a chocolate cake filled with ganache blonde chocolate fudge a salt caramel truffles crunchy
16:07chocolate pearls gold leaf so we only use the finest ingredients the best in the world everything
16:15that we use down to cream sugar chocolate is world-class it's edible gold it doesn't taste of
16:21anything but it just gives that little bit of grantly gold and finally a personal touch for a
16:28truly independent woman we have a white chocolate care hopefully the very big guests will love it
16:42back in the orchard bistro work is continuing on the three-day transformation
16:49who owns this ladder this is to go to retirement house please oh that's mine oh sorry baby but I
16:56really don't like this ladder it's like 1999 but the forecast for style guru Marek schedule is looking
17:04bleak the weather is not helping because we are working on the floor outside now so the water is going
17:11to be
17:11slightly wet helping keep things on track is Marek's trusted assistant so this is Shelly Leslie gift shop manager and
17:21my amazing helper having Shelly in house is unbelievable help and she's always willing to change her shifts she's working
17:29me very close and the connection from day one is like we are Pisces basically we are both Pisces we

17:37in Marit's married Marit's basically like a Labrador puppy show me she will always go the extra mile for his
17:43Role he is extra in every way but he's
17:47very very kind-hearted and he will try his best to do what he can to help anybody I grow
17:54up from the very young person when my mom was always telling me you have to do what does he
18:00and just keep up with positivity and amazing beautiful approach needs to be perfect if it's
18:07not perfect i'm gonna leave it i'm gonna leave it until it's gonna be done properly

19:38away from from my head and then to concentrate on something else but there's not much chance of

19:58over two days to go into launch night nearly every section of the marquee is in transition
20:06it looks like a bomb site for me it's all about the wow it's all about the first impression the

20:14that we don't have wows it's not gonna happen because then we're going downhill we have to keep
20:18going up here with everything we do the hotel staff have been briefed and are ready for the arrival of
20:30the famous pop star when celebrities are staying they'll be using a pseudonym so the staff will
20:36will have to use the pseudonym not not not the real name of course the hotel's code name is miss

20:42though the cake bears her real first initial hello shannon hi how are you is it ready for me it's
20:48absolutely ready fabulous thank you what we got here um so we've got a dashboard sponge munch up with
20:52ganache and then we have the gold leaf yes how special this is fabulous isn't it
21:01miss h is booked into the studly suite so one of thierry's final tasks is to deliver the cake
21:07and help marek check the room for the slightest imperfection oh

29:45they do go to pearly bridge to see the oldest sweet shop in the world they go to ripon to
29:50see the
29:50cathedral and that does make us special but as well as being a devoted doorman so what i'm going to
29:57do and let's take you a short 20 minute half an hour tour kev has a side hustle at the

30:03that he loves nearly as much we'll start the very beginning in 1680 and we'll end up in 1910
30:11i like history anyway i'm interested in other historical things so the suggestion was put a
30:17sign on reception and say at four o'clock your dormant cabin will take you around on a history tour
30:23so you now stood in the oldest part of the building this was completed in 1680 by thomas norton
30:30i can give you a half hour walk around i can sit down for three hours if you really want
30:34me to
30:35uh i could talk for england this was the original library quite a few of the books around the shelves
30:42are original books okay so if you were to choose a year uh we're going what we've got there 1971
30:53each book when we open it shows you on our little car is a cocktail from that era if we

31:02we go to the bar and they make you one so a pisco sour yeah three of those three of
31:08them
31:10he's wonderful isn't he he's incredible he's a walking history book uh he really knows his stuff
31:18it's the second day of the orchard bar and restaurant's big makeover it's getting there for
31:25you fantastic the board is done on the flooring so we have a gap already filled decorators literally
31:32they have like probably another two hours to finish balls are going on the olive trees it's all going
31:37together i think the colors incredible with the tiles below the bar and the tiles on the planters so
31:45win win win as they say teamwork makes the dream work you can clear all this and then it's ready

31:55the guys to come in tonight okay sometimes i can be his mum sometimes i can be um his carer
32:03the dynamic
32:04between us changes on a daily basis but we're ultimately friends thank you so much for
32:09everything that's okay his mind does work at a million miles an hour sometimes he will verbalize
32:16at a million miles an hour i think he's got easier to rein in the more we've got to know

32:22so it's quite easy to calm down now i've got him under control okay thanks that's very useful information
32:32at the other side of the restaurant there's still a large damp patch to deal with floor wow big job
32:40tomorrow cleaning well along with the prospect of more wet weather tales radio with the latest weather
32:47storm amy is set to hit the region during the afternoon bringing heavy rain and gusts of 50 to 60
32:52miles an hour in exposed areas travel delays and road and rail closures are likely

33:05are maric's plans about to short circuit two of the lights are not working as his three-day makeover

33:30for maric and his team it's the final day of operation orchard overhaul
33:36i was here seven o'clock and i set up three alarms today instead of two like always free to
33:43make sure i
33:44them on time and i hate to be late with just nine hours to go before an elite list of
33:49guests descend for
33:51the launch party there's still plenty of jobs left to juggle
34:00we're steaming the blankets cushions almost done and the covers we're doing the holly trees now
34:07um position of the floor standing lamps inside is a hive of activity but outside a storm is brewing
34:18we're always checking the weather very carefully and because obviously the structure of the venue is
34:23fragile and we need to make sure you know it's safe the weight is not going to help with the
34:29glamorous look of the guests arriving today but hey ho we're gonna deal with
34:34adding 15 evergreens to the four huge olive trees is boosting the woodland feel
34:42not very happy with the section how it's going you measured no sorry
34:48he ordered for my measurement they just need to go in gold pots
34:52to tie in with the overall theme that side down push down that side
34:59nobody but that's not how the physics works okay if i'm gonna walk out from this you can do it
35:05everything is possible it just needs a little bit of maneuver but unfortunately it's a little bit tight
35:13and we're done see everything is possible we will need some gold paint and i will need a manicure
35:25it's too low everybody's a critic
35:30with the orchard within the orchard well on its way merek has arranged a surprise finishing touch
35:41in orchard this year we have a red fiat tim sykes said what's about a car yes let's have a

35:48you know we're gonna put car inside and they said what inside yes inside and said yeah i have a

35:54fiat 500 yes can i have it and he said of course you can then i fall in love with

36:11exactly as we picture and look stunning i'm pleased and happy like wow wow

36:26manoeuvring an italian car worth 40 grand into a tight corner isn't a job to be rushed
36:41that's great effect because you know you open the door car is in the front of you then wow
36:46wow and then wow yeah we have a cherry on the top of the cake
36:54the orchard is glowing with a cozy and vibrant charm
36:59but the scene outside is far from inviting
37:03and maric's outlook has just become a lot gloomier too

37:16on the on the ceiling two of the lights are not working perfect thank you bye the lights are on

37:30especially when the hotel's founder valeria pops in to check how things are going with the makeover

38:06chandelier is being repaired the transformer that was doing them to just pull out that's all but we
38:11have got some spares in the container good where you going yeah yeah there's one man maric shelley
38:18and the rest of the team can finally complete their mammoth journey happy yes ready for a bottle of wine
38:33in the bath when the guests arrive for the launch party this evening they'll be treading in some
38:38very illustrious footsteps since it was built in the late 17th century grantley hall has been home to
38:44lords and ladies and played host to royalty doorman and history buff kevin is guardian of the hall's archives
38:55we're very fortunate that when grantley hall first opened as a hotel there were several people in
39:02the area said oh i've got some historical bits you might like and as more information comes in
39:09this gets thicker and thicker and thicker i think the appeal of the mysteries the little bits of
39:16we've got a snippet of that is i want to know that that is correct and how can i find
39:23that out
39:23it's a challenge get the old gray cells working grantley hall first built in 1680 was in the same
39:31family for 200 years one of the sort of flamboyant characters of that time was certainly the first
39:37lord grantley which was fletcher norton very much in the judiciary system and became speaker of the house
39:44by the early 20th century the norton family had sold the hall to the wealthy industrialist
39:49sir christopher furnace and his wife lady jane
