00:33pakistan today we are going to dive deep into the pakistani cuisine and are going to do
00:40a food tour around this chaotic city starting at burns road named after james burns an old scottish
00:50doctor that was based here back in colonial times but then after partition this road became famous
00:57for one thing and one thing only that is food because people came from india from bangladesh
01:04and all across pakistan and started their restaurants here which is why you get such
01:10a diverse range of cuisines and today we are not going to be alone we are very lucky we have

01:18a local showing us around from karachi food adventure i've skipped breakfast i'm hungry
01:25let's try some delicious pakistani street food
01:33so this is zulekha from karachi food adventure and she's going to be our food expert so burns road
01:41the best place yes the best place for street food you will love it really yeah so uh it's got

01:46rich history it was by sir burns um who was with it and now it's developed in one road
01:52um there's a lot of street food you can have it in the afternoon there's more at night as well

01:57get dessert you'll get savory things um and a lot of chefs from uh delhi in india came into pakistan

02:04established it so what are we going to try first uh first uh since you all have not had breakfast

02:14breakfast if you're ever come into a place like this you really do need a local expert because
02:20this whole street is just lined with restaurant after restaurant and we really wouldn't know where
02:26to go it's almost almost organized chaos our first stop of the day is going to be halwa
02:35curry is like the little bread and what is this this is the halwa the sweet yes it's made out

05:26well i find this like pakistani chai is actually really strong tea
05:31it is like it's like a strong tea it's almost very english yes yes but do you have like condensed
05:37milk inside i know they cook the milk so it tastes like condensed milk because they cook the milk in
05:42sugar so that's the difference with our tea we would just use like normal cold milk because they cook
05:48the milk it's thicker yeah and therefore that makes it more exactly it becomes like a dessert maybe
05:55it's so true it's very dessert like it's lovely i love the fact that it's really strong tea tasting

06:38passed down through generations and in family runs so you know that the food is going to be really really
06:43good what have we got uh so we are going to try the famous nihari with garam garam hot naan
06:49and we're
06:50going to have their um dhaga kebab so dhaga is basically the bread uh the kebab the beef kebab is
06:55wrapped in a thread it's both delicious mashed in the mouth you will have and what is nihari
06:59nihari is slow cooked meat so you cook it over many hours maybe a day and um it it's like
07:07a soup made
07:07and would you have that for breakfast uh they used to have it for breakfast during the mobile era
07:12so it is a dish that has come from the mobile in india and now you have it whenever now

07:17whenever just like biryani everything has become common and it used to be a dish for the royals

07:44what is the process how do they do it uh so they slow cook they slow cook the nihari for

07:50hours um it's beef that is so tender it melts in your mouth and it's delicious it's like a soup
07:56it's really good for you as well and it's from the mobile times you will love it yeah amazing you

08:32we're really excited about this special nihari i'm a little bit nervous about it just because it
08:39looks quite daunting having a big piece of meat in a soup but we have our beautiful warm bread yeah

08:44we have brain right i'm not sure i can try it guys before eating you must uh add these condiments
08:52to your
08:52nihari okay yeah let's do it do you want to do it no you can do it okay ginger you
08:57sprinkle some ginger
08:58we're going to sprinkle some uh chili chili and then some lemons oh i hope you can eat this
09:05first she's like oh we're having chili i'm putting it according to my spice
09:10and then we've got some lemon uh this will bring out the flavor uh even more
09:17the chili is so good now let's dig in okay here we go together together okay let's break bread

10:24merge in the mouth into like a minced meat kebab wow that was almost a show watching him take the
10:38string out and mince up the daga kebab i'm gonna grab a little piece of my naan a bit of

10:49it's our favorite type of kebab isn't it
10:55i love minced meat i'm not the biggest fan of huge pieces of meat but if you give me something
11:00minced like that especially beef it's nice it feels like i'm in the middle east or something like this
11:07sort of kebab you might find in dubai or in istanbul it's good especially that naan it's piping hot
11:17our first time trying spicy pakistani nihari here in karachi i'll be honest at first i was a little bit
11:25nervous i'm not the most confident with big pieces of meat especially lamb mutton but it was good it
11:33was so spicy so fragrant with the ginger the chilis and it sort of just melts away in your mouth
11:42and
11:42just you know what a setting what a place to try pakistani food really properly for the first time
11:53all of that food came to 2000 pakistani rukis which is about six english pounds it's insane and
12:00but right opposite what he's about is i don't know the name of this but they are making sweet i
12:06think
12:06they're making gullab jamun so this is called mithai it's famous to pakistan uh it's made out of it's
12:20basically sugar right
12:21sugar and this is the pig so you know these are things you have at special occasions when you have
12:36a baby you get people gullab jamun when you get married you give people gullab jamun it's to make
12:40your mouth sweet in the winter this is a speciality it's another type of halwa it's made out of makhana
12:47so look at this oh yeah what is that lotus seed lotus seed yeah so it's very healthy it's this
12:55food actually so they made halwa out of it we can make a halwa out of it

13:19as well i'm excited why is everything so sweet you've never had a gullab jamun i think we've had
13:24before in india once i'm sure you did yeah but like i never know how to explain it yeah it's

13:39what that is so delicious it's like a tiny little ball of cake yeah and i i could only describe
13:45it as
13:45warm cake drizzled in like maple syrup and honey type sauce and it's like a perfect little pocket of
13:52sugar yeah so the sauce is called sheera it's made out of sugar yeah like you have caramel we have
13:59sheera yeah it's just yeah perfect going in for the baby gullab jamun oh you know what it tastes like
14:11a ball of cake that's what i said is that what you said it's like a little mini circular pocket

14:19get like a bag of them yeah around with a bag and just pop them in all day we also
14:24have more sweets
14:25okay so which one is this uh so this is uh what you call halwa um this is hafshi halwa
14:32so it's named
14:33after a part in africa yeah so you said you can make halwa out of anything you can make we
14:37can make halwa
14:38out of anything literally anything we have egg halwa also yeah okay here goes yeah oh that's nice
14:47it has a weird consistency like crushed nuts okay a bit like snickers but not chocolate yeah so it's
14:55it's made with nuts and milk and uh asli ghee which is um the fat from the milk i was
15:01gonna say yeah it
15:02does taste quite fatty in a sweet way yeah it's not healthy it's uh please don't you say please
15:09he's saying it's my love please brother this is pakistan this is charas and this is the most famous
15:22he's asking did you like everything it was delicious the lotus halwa was so good like delicious
15:31it's very much it's only in the winters you came at the right time right time this is the problem
15:39though they no one lets you pay yeah i want to pay to spend money here in pakistan they're too

16:03crossing the road in karachi pakistan is not for the faint-hearted we're trying to get our
16:12we're trying to get across to our next stop to eve but just look at this intersection

16:28absolute chaos we've made it we've survived look at the buses and we're going to this place fresco for
16:34some more sweets this is what i love about sweet food is that you can just put up and they're

16:40doing something so we have jalebi he's just started frying it now it looks so good it smells amazing
16:48how would you describe jalebi is mainly just sugar which is fried and you make beautiful designs out of
16:56it and i prefer the thinner ones but the ones you get here are excellent yeah he has like a
17:02cloth with
17:03the mixture and it's got a hole in the bottom and he squeezes and that's how he makes the shape
17:10it's very cool
17:30so here we go though you just love the shape of them they're so aesthetically pleasing ah so hot
17:44oh wow crispy sweet anything crispy looks hot and sweet it's good for me it's so tasty and watching
17:53them cook it as well it's like an art and right next door to fresco is this place fascico and

18:02specialize in samosas you can see the gentleman here freshly preparing them in front of me he's put them in
18:08to the hot oil freshly made all different types but i think we're going to go for aloo potato yeah

18:16and i just i love this that's the best thing when you come to street food places watch them cook

19:01so this place has actually been going since 1980 making the freshest samosas here in

19:20you know what when you walk on the street like this you look at it from outside you think no

19:27but you come and it tastes delicious they just keep bringing us uh pastries we've got a pasta
19:34control how crazy how crazy is that it has pasta and Chinese madness

19:45it's like half overload okay it's like pastries
19:48like noodles noodles noodles inside yeah it's kind of strange that right
19:53it's something fusion between italian and pakistan yeah i don't not like it it's quite cool
20:15so we've left burns road we just jumped into a taxi and we've headed to pakistan
20:22and this has got to be the busiest road i've seen so far in the country
20:32it's it's absolute bloody chaos but we've come here to try the famous bun kebab the pakistani burger
20:58that's what i said it's been here since 1976 and there is a big queue so you know what whenever
21:05there's a queue you know it's gonna be good so what exactly is the bun kebab okay so the bun
21:10kebab
21:10is made out of lentils and it's made out of eggs so it's got an egg lentil patty and it
21:16has two buns
21:16and it's fried with butter and uh with onions and green chutney delicious yeah this is quite the
21:23operation you can see what they do there they get the egg they wrap it around the lentil patty
21:28and then they add the bun and you can see there are so many different orders going on the guy

21:34right now he's about to add the egg you've got the buns going over here
21:52this is so cool just to observe them doing it the gentleman's now adding the chutney you've got the
21:58lentils and the egg mixed together he's whisking up the fresh mix onions are going in
22:05it smells delicious we've actually tried this in like a high-end version but we've never had this
22:12on the streets of pakistan
22:19i love this we're heading up
22:23into the attic while we wait for our bun kebabs to cook i love this it's been here for 45
22:33years
22:34everyone's so shocked they're like look at us we've walked upstairs into the family section
22:40and every single head was like down
22:44thank you very much i actually cannot believe this
22:48the hospitality is insane
22:51this restaurant has just brought us out a lot of dishes
23:18so we've already tried this in a restaurant and it is very different the texture of this is
23:24the burger is soft it's almost creamy the egg is so fresh you saw when he whipped it it was
23:29like
23:29fluffy and the onions just had a little bit of a crunch to it that's really nice
23:34how much is one of these 20 pence 20 pence world's cheapest burger
23:40and we've got the world famous biryani honestly they just brought this over to us like for you
23:59um so fine so generous and it's actually really nice because it means that we get to try more
24:05than what we thought we were gonna try so let's go biryani i love the colored rice yeah i think

24:10probably the most aesthetic of the key pleasing part
24:18it smells like what is the flavor is it like cardamom
24:28it has a really fragrant taste a little bit spicy the rice is very soft the meat is just absolutely
24:37like breaks off the bone it's like butter and then you've got potatoes in it as well
24:41biryani is never my favorite dish i will be honest however the taste is nice and it's always good to
24:48try
24:48something new when you're traveling to a new destination honestly all we came in here for
24:53was the burger but we have had so many different dishes thrown at us this is the haleem so it's
24:59four different types of lentils blended with uh beef so like pulled beef this probably isn't
25:05appropriate oh are you going to do it there can you do it i feel like it's right
25:10what's the favorite is unusual food combination different burger in your haleem
25:18it works okay wow interesting this is good yeah i love it so much protein right
25:23and even this one also yeah pick up this one they grew awesome
25:27coffee yeah so now we have to eat it

27:20throw the money because they will not accept it they bring you over dishes that you don't order
27:24they just want your experience in the country to be a positive one and honestly i've never experienced
27:30this anywhere else in the world i'm very full now i feel like we've had about 10 different dishes
27:36and we're just taking a rickshaw back to the dha area what a city
27:44honestly i'm so stuffed that uh rickshaw ride wasn't the best because my stomach was going left

28:44there but they're historic they have so many different layers of history passed down from
28:49generation to generation we've eaten like 10 dishes 10 blooming dishes i'm gonna get fat in this country
28:56but we have so many more things to see and do throughout karachi and the rest of this country
