00:00I'm a food stylist, and this is how you get perfect sunny-side-up eggs.
00:03I'm going to show you two ways.
00:04For both of these, I'm going to drain off the extra white.
00:07This helps avoid the wispy little parts on your eggs,
00:09and it also will keep it nice and together so it stays in uniform cooking.
00:13First way I'm going to show you is what we like to call the culinary style.
00:16This is when you get a nice, crispy edge to it.
00:19It makes it look like a fancy chef made it for you.
00:21So I've got a bunch of olive oil in here.
00:22Drop this egg in, being careful that it stays nice and together.
00:26For this method, I like to go a medium to a medium high.
00:30If you want to try to manipulate the shape, now is the time you can do it.
00:33And if you want to be able to get crispy bits plus the yolk plus a nice white,
00:36you've got to be very strategic in your pan a little bit
00:39and splashing that hot oil onto the sides to really crisp up specific parts.
00:45All right, next we're going to do the emoji style over easy egg.
00:49Quintessential diner food.
00:50Anytime I've done a lot of advertising shoots using eggs, this is the method that I go with.
00:54You're not going to want a lot of oil in here
00:56because you don't want any of those bubbles or crispy parts,
00:59and that's what's going to cause that.
01:00Low and slow is the way to go for this method.
01:03We're trying to keep this as perfectly shaped and with zero blemishes.
01:06So at this point right now, I'm going to turn off the heat,
01:09let it sit for just another 30 seconds or so, and then we'll plate it.
