02:22I chose it because Shanghai food is one of my favourite cuisines of China.
02:27It is a very old and very sophisticated cuisine.
02:31Sally's starter of sophistication is sweet tea.
02:35I have no clue what that is.
02:36I will admit I don't know what zyu-zi is
02:42or whether I'm pronouncing it right.

02:48She begins by squelching her chicken.

02:55I've never actually trussed a chicken before,
02:57so hopefully it goes well.

03:53Onto dessert, the almost familiar-sounding manguo boudin.

05:12Moving on to the main.
05:14Mei Tai Kou Rou.
05:17I do not know what that main is, but intrigued and looking forward to it.
05:21I'm cooking Mei Tai Kou Rou, which basically translates to preserved vegetables with pork belly.
05:29Sally begins by frying garlic, ginger, Szechuan pepper, star anise and cinnamon.
05:35Then adds preserved mustard leaves.
05:38Next, the pork, which has been marinated overnight in oyster sauce, soy and sugar.
05:44It smells very porky.
05:46Not a total surprise.
05:48I think she'll be pulling out all the stops to impress tonight, so really looking forward to it.
05:52This is what makes it fancy.
05:55The meat pieces line a bowl, are packed with the preserved veg,
05:59and will be turned out later as a porky centrepiece at the table.
06:03The pork is going to be gelatinous and salty and succulent.

06:13I'm definitely thinking a bit of a rice mane.
