00:00I think I finally perfected the peanut butter smash burger, and mine's topped with a strawberry bacon jam that definitely
00:04takes it to the next level.
00:07Oh my god, that's so good.
00:10And we're going to start by cooking down some diced bacon over medium-high heat.
00:13And like I said last time, keep stirring the bacon during this step, that way everything can cook evenly.
00:17And when the bacon's nice and crispy, we're going to take it out so we can let it drain.
00:20Then we're going to get the grease out of the pan, and we're going to keep it on medium-high
00:22heat, and we're going to start to cook down our diced white onion.
00:25Just keep stirring and let it saute for two to three minutes.
00:27And once it's fragrant and smelling delicious, we're going to add in the diced strawberries.
00:30And I know the raspberries I used in my last bacon jam threw a ton of people off, but trust
00:34me, it just works.
00:35Then we can add the rest of the ingredients, starting with some black coffee or espresso, which is going to
00:39add some nice depth.
00:40Then we're going to add the apple cider vinegar and a little brown sugar.
00:43And just give that a stir before we toss the bacon back in.
00:45And after we get everything mixed well, all we have to do is season it up with some fresh cracked
00:49pepper and a little bit of salt.
00:50Then we can drop the heat down to about medium-low and let it simmer for 45 to 50 minutes.
00:54And when it's done, it should look a little something like this.
00:57Then we can set it aside and we're going to move on to making our smash burgers.
01:00And like always, we're going to start with four-ounce balls of 75-25 ground beef and smash it right
01:04into our cast iron griddle.
01:05And for the seasoning, I like to keep it simple and just use some seasoned salt.
01:08And we're going to let it cook about 80 to 90% of the way through on the first side.
01:11And today we're using the hands-down best cheese for a burger, American.
01:15And after it's nice and melted, we can get the patties off.
01:17Then we can quickly toast up our brioche buns and start putting this thing together.
01:20Now the bottom bun gets a little bit of peanut butter, then we can place down two of our patties.
01:23And then we're going to put a generous amount of that strawberry bacon jam right on top
01:27before we cover the top bun in more peanut butter.
01:29Then after we place down that top bun, we're ready to enjoy.
