A tale of culture, history and, crucially, great food, this is the extraordinary story of a small Scottish cow that came to dominate global cuisine.
Transcript
00:04It's a world-dominating breed, but there is very little known about the breed.
00:18What we have here is purebred Aberdeen Angus.
00:21The mother and the father are purebred Aberdeen Angus.
00:26354 days a year, they are outside eating grass.
00:32My great-grandfather started them because they didn't cost a lot to feed.
00:38They were very milky. They found that their beef was excellent.
00:43We're very proud to be the managers and the owners of the oldest herd of Aberdeen Angus in the world.
00:49Every clan supported their own breed and it was like a competition between the clans.
00:55It's amazing to think that these cattle have gone to Australia, New Zealand from 1860 from this little place here.
01:081970 was the change when the herd book opened up to genetics from outside the UK.
01:15Because of the continental cattle coming in, being much bigger than the short Aberdeen Angus.
01:21The breed has changed quite considerably over the last 30 years.
01:26I learnt that you must look back into the breed, way back to see what they produce.
01:32The year after we went organic, this was about reverting the grass to a proper ecological system
01:39without chemicals intervening in the ecology and that just made a difference to the immunity of the animals overnight.
01:48One of my greatest hopes is that we can turn our back on the breeding system that has been imposed
01:54upon us from Europe
01:55and we can adopt the breeding system that is popular in the States or in Australia
02:00and there is a payment for the quality of the beef, for the marbling of the beef,
02:05not the conformation and the shape of the backside and the lack of fat.
02:14An Angus for me, an Angus for me, if it's not an Angus it's no use to me.
02:22The shorthorns are raw, the hair for the no, but the Aberdeen Angus is the best of them all.
