01:17Our steak's coming up to room temperature.
01:19So with a steak this big, you can leave this out for like an hour, two hours even.

01:52So to start this, I'm going to put enough canola oil so the entire pan is filled.
01:59So now we're searing our steak.
02:05The canola oil has a higher burn level than like olive oil or any other kind of oil.
02:12So canola oil really will allow me to form a nice crust on the steak.
02:16While we're doing that, let's make a salad dressing.
02:19We're going to make my favorite salad dressing.
02:22First, get a shallot.
02:24And I just like to have little rounds.
02:27So I just slice it.
02:28I'm not going to dice it.
02:29I'm going to just slice our celery.
02:33For the olives, all you got to do is just smush them.
02:37Get out the seeds.
02:39Give them a little tap.
02:40Almost like smushing garlic.
02:42And you just work away and you pick away all the olive meat.
02:46And then we're just going to chop up our olives.
02:49I love this salad dressing so much.

04:06Sit it aside, a little salt, a little pepper for seasoning.

05:51So at this moment, you really want to pay attention to your steak.

06:09So now what we have to do is now that we got this nice, beautiful sear, I'm gonna get rid of some of that oil.
06:16Now we're gonna take a quarter pound of butter.
06:23And now we are gonna just sit here and butter baste.
06:31On each side for about five minutes.
06:33This is medium high heat.
06:35And we are literally just sitting here basting.
06:38You can see the butter starting to brown a little bit.
06:41And you can really start concentrating on different areas.
06:45You create your own kind of surface.
06:48And you brown it up with this hot butter.

06:54You just get to paint this picture.
