04:16We opened in November of 2022.
04:18We both quit our jobs and go full force into what today is
04:23one of the fastest and busiest QSRs in the state of New Jersey.
04:26We went from never owned a restaurant to not knowing what to do.
04:32But just the willingness to learn and adapt.
04:35We went from basically having to learn everything ourselves.
04:39And obviously my mom was like a tremendous help.
04:42Phenomenal help with her experience in logistics and food.
04:47Being a chef, coming up with the recipes and our background in business management.
04:52We weren't able to just like adapt, learn, listen to our customers and just grow.
04:57It's all owned by us.
04:59All the stores are managed by us on a daily basis.
05:02But we're still a small family owned business.
05:04Yeah.
05:04But we get to execute and do this at the highest level possible.
05:07Three years later, we have expanded from Hackensack, New Jersey, to Bayonne, New Jersey, to lower east side of New
05:14York City, to midtown Manhattan and opening soon in Harlem.
05:32Why fried chicken?
05:33Because it's such a comfort food.
05:35Yeah.
05:35When done the right way, elevated the right way, it's so enjoyable.
05:40Like, you know, it could be your average day to day employee, you know, working outside or whatever the case
05:46is.
05:47You come in for a lunch.
05:48You come in for a dinner.
05:49It's just going to make you happy.
05:57Everybody that currently does fried chicken, chicken comes out of the fryer, goes into a holding cabinet, waits there before
06:04an order comes in, goes out.
06:05For us, there's no holding cabinets, there's nothing. Chicken comes out of the fryer, goes onto the plate for the
06:11customer.
06:24The last Super Bowl was a very big learning experience with us knowing, hey, we can't just take all these
06:30orders without knowing that we have to get them all out right before the game starts.
06:35We did double the volume this year than we did last year, and last year we had the fire department
06:41outside doing crowd controls because there's that many people.
06:51It's been insane. It's been a crazy journey.
06:54We got to define and do things that we see fit that I would want as a consumer.
07:01They're getting amazing food, freshly made, good portions.
07:06Every time we do things as clean as possible, as fresh as possible.
07:11And it speaks to our customers because at the end of the day, I could walk in at any given
07:15time.
07:16And there are some faces in there that I've seen in November of 2022 when we opened to now, you
07:21know, and it's just those people that recognize us.
07:22And it's just like, they get a proud feeling to like what we've accomplished as well. Doesn't get any better
07:27than this.
07:29All right, let's do the chili honey.
07:31That one?
07:32Yeah.
07:33That's a chili honey glaze.
07:35But yeah, we use, we use real honey for all of this.
07:40From us, right, the biggest thing for us is we're like 100% scratch made.
07:44So everything that we serve out of here is made by us.
07:47Everything that goes in there, all the ingredients, all the spices, they're all mixed in house, made fresh every day.
08:20We didn't have the wildest thought that fluffies would turn into what it is now.
08:24Like we eat, breathe and sleep fluffies even now, you know?
08:41The banana pudding started pretty much right when we opened the restaurant as well.
08:46We're looking to add something to the dessert menu to have, you know, a little sweet bite after all that
08:51chicken.
08:51So it's just, it's huge to make this at home actually, just for us, you know?
08:55And we're like, this could be something really cool.
08:58So we like started making it in like smaller pallet containers.
09:01Made fresh every day, every day.
09:06That makes me very, very happy.
09:14You know, we made something so amazing, like this needs to be shared.
09:21We want it to be something that's original and there's no other fluffies out there but us.
