01:03them oh no welcome to go to evolve we are a Yorkshire team we've got that Yorkshire grit
01:12about us it's number one it really is the experience the people it's fabulous

01:41good afternoon oh good how are you today good so we have the lovely Phil Dixon
01:48Francis McMay coming in pushing the boundaries on exceptional service is at the heart of the
01:54Grantly Hall ethos
01:57champagne sorted Ben's going to help me
02:02let's pop it carefully on the seat for now just lie the glasses down
02:06pulling out all the stops for some serious hotel regulars his lifestyle manager Paul
02:11it's important that we're absolutely on point still delivering exactly what the guest expects but when
02:17they come back to us on repeat occasions that relationships develop that relationship as a
02:24friend develops more and more we call it a Yorkshire five-star welcome arriving at the hall by car is
02:30it's always a memorable experience but it's not the only way to get here
02:35yep here we go
02:39amongst its 38 acre grounds is the hotel's very own helipad
02:44fortunately i don't wear a toupee yet so it stays in place pretty well
02:50it's a smooth landing for francis mcveigh and partner phil dixon who are here to celebrate four
02:56years since they first met
03:03it's a little uh anniversary
03:05thank you very much nice to be home
03:12phil dixon and francis mcveigh they come all the time i've known them for you know for three years
03:17they're absolutely fantastic they're part of our family you know we need to ensure that the staff
03:22actually are sharper than ever you know whatever they come here we have to even be in top form
03:30we come to grantly hall when we want to switch off and relax it's our switch off place
03:36come through we'll get you checked in you do feel like you're part of the family of grantly
03:43they genuinely care about us we genuinely care about them every staff member wants to do something
03:49special for you and it's it's it's lovely
03:56for their romantic escape the lovebirds are residing in the royal suite typically costing
04:02four and a half thousand pounds a night it's set across two floors
04:10i don't really know why i'm following it well i'm leading you off to your room because you
04:14you know this hotel as well as i do happy anniversary they are very pretty
04:22it's certainly a far cry from phil and francis's first date you took me for like this amazing meal
04:28um and i'm just a nottingham girl at heart so i was like oh there's this like a lettuce around
04:32the corner so we'll just go there and uh 10 jager moms later and then you ended up passed out
04:37on the floor and we can't remember anything
04:41it's just my best friend um we do everything together so we drive to work together we work
04:47together we obviously live together we just are aren't we two peas in a pod we have a gift for
04:53you as
04:53well for both of you don't forget to take them home with you as well all right happy anniversary
05:00phil and francis will be celebrating in style later attending an exclusive champagne dinner
05:06curated by culinary maestro sean rankin chef patron of the hotel's flagship restaurant
05:18we are the the mission star restaurant uh of gradley hall you know with that comes a lot of pressure
05:22morning how are you good to see you you all i guess a lot of money you know to come
05:28here you know
05:29their expectations are high and we have to deliver every night great well you'll make a start today sean
05:34and his team face an added challenge crafting a bespoke dining experience for a prestigious champagne
05:41house we have a special event tonight uh the house of crude um hopefully we're going to be the
05:47ambassador for crude champagne we're doing a dinner party for 21 guests uh um all together three from
05:53the champagne house we've created a menu round the tasting notes around the champagne but crude this year
05:59of um realized they want to do something with carrots and all things carrots so we've created a
06:04lobster dish and we've got about three or four different elements of carrots so carrot puree cooked
06:07carrots yeah you know really nice menu tonight for them really attention to detail is um is key uh you
06:15know we've run it really really strict to be recognized by such a renowned estate we position
06:20grantly as a top destination for champagne lovers so there's no margin for error
06:28we're sitting 21 down at the same time tonight so it's going to be quite pressured uh you might see
06:33a few
06:33uh spoons getting thrown around the kitchen as it were are you kidding our main ambition really is to
06:39try and get all the food out you know on point hot uh and at the table at the same
06:43time so it's going
06:43to be and it'll be it'll be a tough one tonight
06:49yeah nice sauce while grantly's guests enjoy the hotel's five-star luxury
06:55there is another side of the business hidden away from view maintaining the hall's immaculate appearance
07:04is a small army of skilled trades people responsible for the upkeep of every corner of the hotel
07:12maintenance teamwork is never ever done every day brings up a different challenge just through through
07:18natural usage things need to be repaired you never ever get to the euphoria of her saying
07:24right tools down guys everything's done we are a yorkshire team and we have yorkshire values and
07:32we've got that yorkshire grit about us but the team's work goes far beyond day-to-day repairs
07:39basic joinery work in the maintenance yard a special project is taking shape this is my first coffin
07:48i don't expect to make another one
07:50the hotel is preparing for one of the biggest events of their autumn season and one that they've
07:56never attempted before well somebody mentioned are we doing anything for halloween so sat down with
08:01the team and said well if we're going to do it we're going to really push the boat out and
08:04i think
08:04that's what we're wanting to try and deliver now is something that's that's really magical
08:08that's different and that raises the bar for the team
08:11we took the gamble despite me not really liking halloween myself it's now up to interior and
08:18ambience manager marek and right-hand woman shelley to deliver it needs to be massive must must be
08:25that we're gonna be talking about us it needs to be crazy it needs to be wild it needs to
08:30be loud
08:31a lot of colors a lot of props um obviously a lot of pumpkins and i have amazing ideas in
08:38my head
08:39colin is a little bit too light for the vampires he's got a customer once the lid goes on you
08:45won't
08:45see the sun they're looking really good colin's amazing just needs filling up now when they paint it
08:51black with a big cross on the top gently don't break it all right tomato so head that end yes
08:59i know
08:59the paper this is not my first time in the coffin get out out out out out out out quick
09:15out i need to
09:16do a repair job panicking for nothing that's okay thank you it's cosmetic to break the coffin's not
09:25the only work of art the team are creating right i'm going to put it straight back into the container
09:29mate so it's out to wear this is just a trial we'll make it tidier than this but
09:37maric always throws us challenges is it not too tall no we joke about this we've been maricked for
09:43some reason i think it's too too tall well we'll we'll we'll just check the measurements but i'm
09:48sure it'll be fine there's not a day goes by of any week where he's not got something that he's
09:53can i
09:53just tell you about we've got to unravel his his ideas and make them into feasible projects on the
09:59day if you could just address that centerpiece in we've not been beaten yet let's put it that way

10:07the latest trend is to have a champagne wall and a wedding if the crowd happened this time
10:11maui and how difficult was that when the guest rings the bell the hand comes through with the
10:17champagne flute but the hand will be dressed as a you know a horror hand oh hello finally
10:23through the human the biggest possible issue with halloween is it can look like a children's
10:30halloween party and we still want it to have some of that grantly hall magic we're going to have to
10:36try and look for a lot of things and then try and make it that it still looks classy just
10:44a few days
10:45remain to bring maric's vision to life before more than 200 guests descend on grantly halloween is a
10:52great opportunity to get the team to work together it's imperative because then people feel part of
10:57a team and there's stories out of it and i'm trying to establish a culture that you know people have
11:02collect connections between them so it's fantastic it's great great do not go be so tight
11:08we'll be tight barrett well i'm just saying i trust you you've got to have something that excites you and
11:14this sort of work is is what makes me tick my heart is going like crazy um but yeah super
11:25excited yeah i
11:25like it very well done guys time's against us now it's going to be tight but i'm confident that we'll
11:31get there in the end yeah let's have to go coming up all the plans snacks are gone bread's gone

12:09tonight chef sean rankin and his team are preparing for an intimate and exclusive champagne dinner
12:19it's a ticketed event so we invite our regular guests to enjoy the beautiful champagne with us
12:27one of the world's most celebrated champagne houses will be presenting their rare vintage
12:32cuvées alongside sean's bespoke fine dine menu
12:38my love of cooking started um well a long time ago now i used to help my mom cook in
12:43the kitchen when i
12:44was sort of 10 11 12 years old i'd make the yorkshire pudding mix and then i'd make apple
12:48pies there on an afternoon on a sunday at the ripe age of 16. i left school i went straight
12:54to london
12:54and did an apprenticeship from five-star hotels um mayfair ritz savoy having established himself as a
13:01much sought after chef and restaurateur in 2018 grantley hall managing director richard sykes offered sean
13:08the chance to bring his gastronomic talents to yorkshire richard said you know
13:14i'd like you to take over the fine dining at brantley hall we started work on on everything
13:18you see in here all the chairs were handmade in brighton the tables uh were done locally in york
13:24the attention was really on every single detail the china is the best china from france the cutlery is
13:30is hand dipped in sheffield silver we set the ethos being 30 to 40 mile radius around the area
13:37i'm trying to find producers trying to grow everything forage everything that's the philosophy of the
13:43restaurant and that's where i came up with the idea of taste of home eight years later the restaurant
13:48continues to play a pivotal role in richard's vision for the hotel's future hi richard how are you i'm
13:55very good yeah good to see you still got lobster on there doing well yeah um out of whitby local
14:01as
14:01always the michelin star is is one of our proudest you know achievements so it sets the sets the bar
14:07but
14:07like everything here we need more we want more we've invested a lot of time and effort and sean's
14:13time in particular to really look at every touch point we're wanting a second star we're striving for
14:18that go on how many ones need me a lot it's not the only accolade sean's chasing tonight the champagne
14:26brand will be judging if sean is worthy of becoming one of their coveted chef ambassadors
14:32and it's not just the food under inspection
14:38our goal is always making perfect setting they will start with the eye in the tablecloth steaming the
14:44clothes i will be very careful with the glass and and the design so they go in one four five
14:52one three
14:54where is my sketch yes please okay so we need to go from this side please
15:02imagine the guests now move that no i don't like the visual anyway sorry guys no absolutely not
15:09i'm not happy at all we discover imperfections so that way we try to cover up imperfection on the
15:15tablecloth with this draping but it's just awful we're gonna be late in a few minutes but we're gonna
15:21deliver 100 but if we want to be good we want to be the best
15:26so synthesis do the tables been measured already it's great it's gonna be measured okay perfect
15:33so i'm using this ruler to make sure the actual spacing between plate and the table is absolutely
15:38equal on every single setting each setting needs to be absolutely perfect and measure equally so the
15:45guests don't feel any difference yeah it's making sure everything's in court should be very precise okay let's
15:51practice serving
15:55and the next person perfect we're trying to synchronize to to do the elegant movements
16:03sometimes the guests actually uh mentioning it looks like a ballet in a room like like
16:09action-ranking restaurant you wanna truly enjoy and admire what what is on in front of you amazing that looks
16:18beautiful
16:27the next one yeah you'll see the signs so yeah i'm always confused i know
16:33we're gonna need a lot of pumpkins grantly's first ever halloween extravaganza is on the horizon
16:40the farms just around the corner i'm really happy that we're using them because obviously a local farm
16:44you know using the local businesses obviously is part of grantly so a family-run business like us
16:50okay here we are at the pumpkin patch fantastic hopefully lots to choose from
16:56tasked with delivering an event that's nothing short of spectacular
17:00marrick and shelley need a bumper order of pumpkins to dress the hotel yeah yeah
17:06good morning morning and this is your little puppy yeah this is jemima our little daughter
17:14james johnson runs the farm with partner emily who's brought along their baby jemima we've been
17:20farming here since 1933 as a family so the flower field opened up two years ago and it's a way
17:27of getting
17:27people down to the farm so we can talk to about how we found the produce that we do
17:33so one of the key things that we do off our is about regenerative agriculture and diversity is
17:37key we're all about making circular systems and being able to donate them is a fantastic thing
17:42and mary can eat pumpkin soup for the next six months as you can see we've got all sorts of
17:49different varieties in here we've got some great little warty ones we've got yellow ones white ones
17:53look at this unfortunately that's a monster i don't think i'll be able to for ridiculous at least oh
18:00wow gorgeous wow i wouldn't fancy carving that one one particular pumpkin has caught marrick's eye
18:07out of snowballs a lot of huge yeah is that one of those are called yes there are snowballs i

18:12the warty ones yeah i didn't like oh it's very halloweeny yeah yeah yeah i think we just need to
18:19get
18:19picking then marrick should we take you into the patch to see where they're all grown yeah absolutely
18:24in my opinion we're gonna go approach this completely organic okay so just replicate what
18:29you did on the display that look stunning beautiful so pick up what you think is the best for us

19:38guests arriving at 6 30 today i work with chef sean for past 20 years so we completely understand
19:44our dynamics understand what is needed in the restaurant the discipline the passion we know the
19:50expectation and how each other works so we're starting with a lobster following then with the
19:58turbot then venison and finish with the apple thank you good have a good night thank you thank you
20:06we are 10 minutes away from uh from the party coming in here all ready all good we hope
20:12the guests are here among them grantley regulars phil and francis celebrating four years together
20:19and all the way from france the champagne house representatives wine manager jerome gets the evening
20:26underway it's a quick intro because i will disturb you more after but i would like to welcome the chef
20:32sean and thank you very much to all of you for tonight thank you very much thank you chef
20:41the team are primed to begin service as soon as chef gives the word
20:48what i did do when i when i built this kitchen in the restaurant uh we put tv cameras in
20:54into the
20:54into the dining room it allows us ready to control uh the service in the kitchen together so um the
21:01timing is absolutely on point all the time yeah let's have to go check if you can get done now
21:06on plates
21:10let's go so we have a peepersola for you which says in spices for a week then another week in
21:19red wine
21:19and then we let it dry for six to eight weeks yeah yeah all good all to plan snacks have
21:25gone bread's
21:26gone uh next course is going to be uh lobster i'm really happy to share with you a new edition
21:32of
21:32croix rosé sean has prepared the menu around the tasting notes of the champagne i like the fact
21:39that it's traditional french style on a white tablecloth everybody together for me it's wine
21:44heaven once the guests tuck into their first course the clock starts ticking the fish gone hot i said on
21:52a tray lined up i didn't say throw it in sean and his team have one shot to deliver the
21:57lobster bisque
21:58at the exact perfect moment elliot are we going yeah we're good 20 minute timer wait can i get a
22:05wipe on this plate please wait right we need to work fast now yeah that's always a place don't you
22:11yeah start to go grab your bisque there is an amount of pressure every day it's based around you know
22:18customers expectations making sure the food the quality the consistency is is there it'll never go away
22:24but that's exciting and that's what drives you and that's what keeps you going so we paired uh the
22:29rosé um with the the simple carrot uh so we decided to combine the carrot with lobster so um lobster
22:36cooked in um smoked butter alongside you have a lobster bisque which we've made from the shells
22:41uh with some heat sea herbs and a little bit of lobster oil so please enjoy
22:45thank you well done elliot yeah yeah so far this would all going very well we're gonna have to try
22:56and get a nice spoonful onto each plate you know what i mean so about like that okay as the
23:02evening
23:02draws to a close sean hopes the team's efforts will be enough to secure him the coveted champagne
23:12ambassadorship yeah all good yeah went really smoothly uh you know as you know we try and take
23:16the risk out of everything uh to make sure that you know we're on point all the time so make
23:20us
23:20done dessert now and then that's a wrap gone also 80 good to be fair and the team did very
23:28very well
23:28i think the only mistake they did uh so they went to wrong side of the table first which obviously
23:36guests are gonna even realize however we realize i've realized so that's that's how we are coming up
23:43it's top secret a very special proposal puts the team to the test just pop it just underneath that
23:50follow me follow me and will maric's outlandish halloween plans come back to haunt him i'm absolutely
23:58stuck in words so um this is the hub of the business it's where all the magic starts and
24:11lifestyle manager paul bolton needs to channel his inner paul daniels for his next trick i've been
24:17contacted by one of our regular vip guests who has tasked me with uh putting together a proposal
24:26package for him he is proposing to his uh his partner the vip wanted to sprinkle his proposal
24:34with grantley magic he's none other than regular guest phil dixon head spinning a few ideas
24:43um my thoughts are we will do a bit of a flash mob event in the royal suite so we'll
24:50arrange private
24:51dining in the room it's very important we don't let the cat out of the bag and spoil the whole
24:56thing
24:56because that would be very embarrassing can you see everybody yes thank you
25:06paul's ambitious plan spans nearly every department we're assembling head of departments for food and
25:14beverage generally the operations team and he's called a team meeting to help organize the secret
25:20proposal i wanted to just run through what has been discussed with him dressing the room is for in
25:27room dining stakes are high we've got to get it right they both are very very important people to us
25:33we
25:33want them to be absolutely confident that if they wish to to book their wedding with us that they have
25:39confidence that we can deliver there are going to be 13 musicians all together with the string quartet it's top
25:54secret
25:55dad's 200 no some more oh my god so where are we gonna put them as the halloween party draws

26:03maric and assistant shelley have an ambitious plan to transform the hotel
26:09a lot of pumpkins all different sizes miracle have the time of his life talking to them all stroking
26:16them all and then we'll try and find homes for them the white ones they call me my favorite they're
26:24coming no balls they're coming farmer james has arrived with this special delivery
26:32this sort of order is is realized plus it's great to be able to for granted to be supporting local
26:38shelly yes it's a lot of this design i don't like it the strange ones gnarly ones no gnarly ones

29:10going for i'm gonna be a ghostly bride you can be my ghostly groom it's an unusual assignment for the
29:17spa team good job we've got the professionals doing this wowzers no i love it thank you so much
29:26do you know this is the only time that we can watch halloween welcome so you're the main figures
29:38for halloween in your bar areas my team and i have been creating some incredible spooky desserts
29:44across all departments the grantly team are working hard to ensure everything is perfect for the big
29:50night so the key is just to do kind of a
29:56there we go that's it take your hand away oh perfect smashed it yeah thanks
30:04outside it's time to spookify grantly grounds mission michael on the bridge welcoming the
30:12guest the first miniature stage in the grantly hall and despite the challenging yorkshire weather
30:19i'm absolutely soaking wet there's no dampening maric spirit spin the batteries again around the pole
30:26and press the twice you press the twice awesome yeah perfect
30:38tonight the team are helping grantly regular phil spring an elaborate surprise proposal on girlfriend
30:47francis so just pop it just underneath there just mark mark mark mark nice to meet you thank you
30:54behind the scenes a posse of singers musicians and florists are arriving in the service yard
31:01follow me follow me which signals all systems go for lifestyle manager paul and the rest of the team
31:08so if you'd like to get whatever you need and we'll sneak up there there will be florists going in
31:14and
31:15various other teams going into the room so next stage is uh is the actual run-through with the artists
31:20got to smuggle the the musicians in without anybody seeing them and the florist obviously got to crack in
31:26and really get the room set very quickly
31:32the team have less than 60 minutes to dress the two-story royal suite and position the performers
31:39that makes me proud to see the different teams working together pulling out all the stops for
31:44something like this uh it was just incredible to be part of so far everything is absolutely going to
31:51clockwork that's planned florists are here musicians are here uh silo's here that's here i'm not letting
31:58that out of my sight out of my pocket the flash mob of singers and musicians need to rehearse without
32:04disturbing the other guests there's chairs coming there's chairs coming to literally two minutes looking
32:11great just do that that moment of chaos while everything gets ready but it's fine it's all good it's all
32:19going to be in like 15 minutes it's like we're never here it's very special i think i know the
32:24guests from pretty much day one so they for me like family so she has no idea whatsoever generally
32:31so it's very very exciting moment truth my god where's the ring okay consensus of opinion yeah ladies
32:39in the house box open or box shut shut shut shut shut i'm a shot can i go yeah okay
32:45shut it is meanwhile in
32:47the bar it's imperative we get it right because this could be the biggest wedding booking that
32:57we've had at grantley hall time has come rock and roll coming up the pressure the pressure is on carla

33:13nobody will notice but i can see it and will the team's biggest surprise yet go off without a hitch

33:37ever grantley hall halloween party and then another side no it needs to be on the other side the whole
33:46team are working tirelessly to transform the reception area so guests are greeted with a spooky surprise

34:03room the set designer have done the most amazing job then it's been adding little bits of fairy dust
34:10basically in reception colin and greg's champagne wall is nearly complete well it's not a bit

34:34halloween yeah 200 people attending it's going to be an amazing event performance great show great

35:00need to go from the top bottom i don't like this cause they're driving nuts which you know this one
