00:00All right, I'm at it again.
00:02Yes, another egg, but this time an ostrich egg weighing over 3 pounds.
00:053.2 pounds to be exact.
00:07So you've got to start off with a pot of water, cold.
00:09Put some vinegar in there.
00:10That keeps the shell from cracking during the cook.
00:13So it's recommended with an ostrich egg that you put the egg in cold water
00:17and then bring the water to boiling.
00:22So that's how you've got to start it off.
00:23You wouldn't do this with any other eggs, but it's recommended that for an ostrich egg.
00:26So get it to a boiling boil, bring it back down to, like, medium,
00:30and then it's going to cook for 110 minutes.
00:32Recommended 90 minutes.
00:34I shot to 110 minutes.
00:35Want to make sure that thing is hard-boiled.
00:38So now you want to make the transfer from the hot water right into an ice bath.
00:44The ice bath will help the shell peel away from the egg white and not damage it.

01:23But I took the spine of the knife and started going the other way.
01:26And it actually worked out pretty well.
01:28You don't want to go too hard, but just, you know, crack it.
01:31The membrane on this is pretty thick.
01:33So once it starts breaking away, it kind of has a mind of its own.
01:36And nothing was sticking.
01:37There's probably two defects on the egg white once it was all said and done.
01:41But this was exactly what I was looking for.
01:46Pretty much the most perfect ostrich egg, boiled egg, that I've seen so far on the internet.
01:53And the trick here is to put your blade into hot water.
01:57Take the water off and it will cut through that yoke without damaging it too much.
02:02So just slide that knife right through.
