00:06I've been married to D.A.R.E. for 30 years, so we love each other.
00:09We see each other all day, every day.
00:13I think even on our off day, we are together.
00:18But we do not get along at work.
00:22For over 30 years, John Tapper has traveled the country,
00:26saving hundreds of bars from failure and ruin.
00:30Now, he's heading to Ashland City, Tennessee, to attempt to rescue Main Street Hideaway.
00:37Either you're an asshole or you're one lazy son of a bitch.
00:40In 2022, former police officer Darren Kaplan and his wife Kiki moved from Chicago
00:48and opened Main Street Hideaway in Ashland City, Tennessee.
00:52I was getting ready to retire.
00:54My wife and I came up with the idea of buying a bar, and of course, our retirement.
00:58Some were warmer than where we came from, which is pretty much anywhere.
01:03Well, we wanted something completely different for our retirement.
01:07And we really loved the town, the people, and the bar.
01:11Darren and Kiki enlisted the help of their daughters, Belle and Dakota, to help run their new business.
01:16It was very exciting.
01:17It was a new adventure for us.
01:19We were building something, all of us together, and it seemed like it was going to be an enjoyable endeavor.
01:28But we had no idea what we were doing.
01:32Despite an initial few months of interest, Main Street Hideaway struggled to retain customers.
01:38Our whole goal was to get people in here, and it went well the first couple months.
01:44And then it just kind of petered out.
01:47There's still people who don't know we're here.
01:50Yeah.
01:50We don't have a job.
01:51And as interest from the community waved, the couple's lack of bar experience became obvious,
01:57leaving the family and staff with competing ideas on how the bar should be run.
02:02So, what, we changed the price of food, like, over a year ago?
02:06She wants to come in and tell me how to run the kitchen, how to run the bar.
02:09And I'm like, you're my daughter.
02:11Don't talk to me like you're the third owner.
02:17Usually when Darren's cooking, it's probably going to take you about 30, 40 minutes to get your food.
02:21Sometimes he's out taking a smoke break, so we have to go tell him, like, we have tickets in.
02:25Tuesday, I have no choice.
02:28I have to get up very early.
02:29It's very difficult working with your spouse.
02:33Things don't get done as quickly as they should, and it can be quite frustrating.
02:37That oil could have been changed before you even came home.
02:40If you're constantly saying everything I'm doing is negative, how do you expect me to put 100% in?
02:46I think he does kind of the bare minimum, and then everything else is on my mom.
02:51Now, Main Street Hideaway is losing up to $3,000 a month, with Darren and Kiki sinking into almost $200
02:59,000 of debt.
03:01Within the next six months, if something doesn't change, it closes its doors.
03:05Not only are we tired, we are burning out terribly.
03:10If the bar closes, we lose everything.
03:12With just six months left before closing, and their entire life savings on the line, Darren and Kiki have decided
03:21to pull back the doors, bust open the books, and make a call for help to bar rescue.
03:27I feel that John Tafford is the only one that Darren actually might listen to.
03:38I'm in a bar called Main Street Hideaway in Ashland City, Tennessee, just outside of Nashville.
03:44This is a family-owned bar that was opened by an ex-police officer from the Chicago area and his
03:50wife who worked for the Red Cross.
03:51This bar has caused a lot of family drama, and I want to hear it directly from Bella, their daughter.
03:57Bella can tell me about the struggles that this bar has caused for their family and for her parents.
04:03Okay, so there's your bar.
04:05Yes.
04:06Wait, so is that your dad?
04:07Mm-hmm.
04:08And your dad's name is?
04:09Darren.
04:09Darren.
04:10And is that your mom?
04:12Yes.
04:12And your mom is Kiki?
04:13Yep.
04:14I must say, I've been in this business 40 years, and this is the first time I've ever seen a
04:17chair in the kitchen.
04:18Um, is he as unhappy as he looks right now?
04:22I would say so, yeah.
04:24So this business has taken him down.
04:26Wow.
04:27Obviously, your dad's a good guy, and you love your dad, but the businessman, your dad.
04:31Yes.
04:31Does he run a good bar?
04:33Um, I would say no.
04:35Okay.
04:37So your parents moved down here.
04:39Three years ago.
04:40Three years ago.
04:40Three and a half years ago, yeah.
04:41To open this bar.
04:42Mm-hmm.
04:43So they've never been in the bar business, right?
04:44My mom used to bartend a long, long time ago.
04:47Gotcha.
04:47So that's their only experience.
04:49Yeah.
04:49Has this business affected their relationship?
04:52I would say so.
04:54Before, they used to spend a lot of time together, and now there isn't really a lot of time for
04:58them to really be together by themselves.
05:01So they've become a working partnership more than a married couple.
05:04Yeah.
05:06Let's talk about the staff.
05:08Okay.
05:08There's Dustin.
05:09Do you have any mango?
05:10Like mango what?
05:11And Dustin is a bartender?
05:13Yes.
05:13And how long has he been there?
05:14Maybe a year, maybe a little longer.
05:16Okay.
05:16Good bartender?
05:17Yes.
05:18Okay.
05:18He knows his stuff.
05:19Yeah.
05:20He was a manager before.
05:21Okay.
05:22And does your dad know how to tend bar?
05:24Um, no.
05:25Okay.
05:26Do you have any friction?
05:28With my dad?
05:29Yeah.
05:30When he messes up an order, I get upset, or he does tend to go outside and smoke a lot.
05:34So we have orders in the kitchen.
05:36I need him to be in there.
05:37And he's outside smoking?
05:38So at times, I'm guessing you're thinking, where's his commitment?
05:41Yeah.
05:41Yep.
05:42Yep.
05:42And there he is smoking.
05:45So I've asked three of my friends to come in.
05:48I'm going to have them order food, order drinks, and let's watch it together.
05:51Okay.
05:51And let's see what we see.
05:52Hi, guys.
05:53Hello.
05:54Hi.
05:54Hello.
05:55Hello.
05:56How are you?
05:56So these three friends of mine are three restaurant professionals.
06:00I wanted to bring my A-team here to get the best feedback that we could.
06:05So let's see how long they're sitting there.
06:07Is there going to be a waitress who serves them?
06:09We don't have a waitress.
06:11So how long are they going to let them sit there?
06:15Oh, here comes.
06:16What's up, guys?
06:17Hey, how are you?
06:18I'm doing well.
06:19How are y'all?
06:19Very good.
06:20Good.
06:20Is this y'all the first time here?
06:21Yes, it is.
06:22It is.
06:22All right.
06:22So we usually take all the orders over at the bar.
06:25Oh, okay.
06:25Yes.
06:26So whatever y'all need, just let me know.
06:28You're going to come talk to me, but then I have to go to talk to you to order the
06:31food.
06:32And if the bartender isn't busy, why wouldn't he walk up there and take their order?
06:36Yes, sir.
06:37All right.
06:38Can I do an old-fashioned place?
06:39Yes.
06:40Same with a bullet.
06:41With a bullet?
06:41All right.
06:42And what can I get for you?
06:42Can I get a margarita?
06:43Yeah.
06:46What?
06:47Look at how disinterested your parents are.
06:49Three people just came in.
06:51You think they would go say hello?
06:56Okay, so what's going on here?
06:58He's trying to find the muddler, I think.
07:01Damn.
07:04That was stupid.
07:10So he doesn't have a muddler, so he's using a zester, which you're supposed to be using
07:15to peel fruit.
07:17Yeah.
07:22And all-fashioned shouldn't be shaking.
07:24That was you.
07:25Can you pull it?
07:29Here we go.
07:32Ooh.
07:34He's not eagerly going for that next set, is he?
07:36We're going to have some wings.
07:38All right.
07:38And then we're going to go with your burger.
07:41Gotcha.
07:42All right.
07:42What else did we do?
07:42We wanted the nachos, right?
07:44The Irish nachos.
07:45And the Irish nachos.
07:46What makes them Irish nachos?
07:47We use French fries instead of nacho chips.
07:50Okay.
07:51Look at your dad.
07:52He looks like a broken man to me.
07:54It's got to break your heart, Bella.
07:56It does.
08:00Okay, now here goes your father.
08:02Didn't wash his hands.
08:05What is that?
08:06Cheese.
08:07How old is that?
08:09All right.
08:10That's a no.
08:12It's disgusting.
08:14Why didn't he do this before when he opened?
08:19He's opening a new can of fake cheese.
08:22You know there's no cheese in that can, right?
08:24So he's going to take that cheese and that paper cup.
08:27He's going to put it in the microwave.
08:28And now the wax from the inside of that is going to melt into the cheese.
08:32That's not made for microwaving, is it?
08:34It's made for serving.
08:35All right, guys.
08:36Here's those Irish nachos.
08:38Okay.
08:39Do you have a couple plates or something?
08:40Yeah.
08:41I'll be right back.
08:41I got some more boats.
08:44I'll let you guys sample.
08:45Don't f***.
08:48All right.
08:48Here's you a couple extra boats, guys.
08:50No problem.
08:52All I taste is that movie theater cheese.
08:55Yeah.
08:56They loaded it with cheese and forgot to salt it.
09:01Look at that burger that he's taking.
09:02Look at that.
09:03That freezer.
09:04Look at this.
09:05Has he washed his hands?
09:07So now that raw meat is on the bag, isn't it?
09:10Mm-hmm.
09:10The raw burger meat is now on the bun.
09:12It's called cross-contamination.
09:13Right, Bella?
09:14Yes.
09:15Now he's going to put the buns next to the raw burger, which he touched with his hand.
09:18You can see his thumbprint on the burger.
09:20See it?
09:21Mm-hmm.
09:21So now touching the spices with the hand that had the raw burger on it.
09:25So now the spices have raw meat on them, correct?
09:27Look at that.
09:28Would you want to eat that?
09:30Mm-mm.
09:33You realize that's somebody who just doesn't care, right?
09:36I've got a problem, Bella.
09:38I've got to challenge your father.
09:39Why is he doing this?
09:40Why doesn't he care?
09:41Look at him.
09:43We've got to go in and see what's going on in there.
09:45And I can't let my friends eat that food, can I?
09:47Mm-mm.
09:48Would you let your friends eat that?
09:49No.
09:50Okay.
09:50Let's go in.
10:04Greg, I stop in the food.
10:06I'm not letting it come to the table.
10:08No.
10:12Good evening.
10:13Good evening.
10:14When was the last time you washed your hands?
10:19Uh...
10:20I don't want any food coming out of this kitchen.
10:22First of all, come over here for a minute.
10:28Do you want to eat that?
10:29I do not.
10:30Do you want to eat that?
10:31I do not, sir.
10:32Do you want to eat that?
10:33Look at the filth.
10:35Now, here's what really got me.
10:37That's your thumbprint on this hamburger.
10:40You went outside.
10:41You had a cigarette.
10:42You didn't wash your hands.
10:43That's against the law.
10:45Then you came in here without gloves.
10:46He takes a raw hamburger, puts it down there.
10:49His thumbprint is on a hamburger.
10:51Then you come up here and you grab a bun.
10:53Now the burger's all over this, too, isn't it?
10:56Yes, sir.
10:56Then you pull out those spices.
10:58Then you pull out this.
11:02Is this clean at all?
11:03No.
11:04How about this?
11:05That's the burger you took.
11:09Look at these.
11:11They're not even wrapped.
11:14How about the ones on the bottom, Kiki?
11:17How are those?
11:18They're brown.
11:19They're brown.
11:20You didn't even wrap them.
11:23And you serve it to your customers.
11:26You lazy piece of shit.
11:36You're one of three things.
11:37Either you're an asshole who doesn't care about his family and doesn't even try,
11:43you're incredibly ignorant, or you're one lazy son of a bitch.
11:48How long have you owned this place?
11:50Three years.
11:51Three years.
11:52Does he know how to make any drinks?
11:53Tell me the truth, Kiki.
11:55Did he learn the bar?
11:56No.
11:57He didn't even try to learn it, did he?
12:00Well.
12:01So, how much more money you got?
12:03Not much.
12:05How about I just keep going?
12:06Look at it, man.
12:07Every freaking one of these.
12:08Look at this freaking place.
12:11Look at you.
12:12This is what you did to your family.
12:17If you have any self-respect left, then you're an idiot, too.
12:23A good husband doesn't do this.
12:25A good father doesn't do this.
12:28And a responsible business person doesn't do this.
12:32So, why do you do it?
12:36I don't know any different.
12:38You're full of shit.
12:40You know it should be wrapped.
12:42Would you leave a hamburger unwrapped in your refrigerator at home?
12:46Of course not!
12:48But here, you don't give a shit.
12:51Where's your dignity now?
12:55I'm on the floor with the rest of the crap.
12:57That's right.
12:58So, I think you should get down on the floor and clean this freaking mess up.
13:01And if you don't, I won't come back tomorrow.
13:04Because I'm going to tell you something, Kiki.
13:05I got a checkbook in my pocket.
13:07I will help you.
13:09And I'll turn this around.
13:10But you better do something to help your freaking self.
13:13If you won't do it for you, do it for her.
13:16This place better be clean when I come here tomorrow.
13:23The kitchen is closed.
13:28I'm going to go have a cigarette.
13:30And then I'll start cleaning.
13:33I disagree with his description.
13:36I thought we were doing it okay.
13:38You know, our hamburgers come in a box like that.
13:42But anyway.
13:43Anyway.
13:58I don't think I've ever heard anybody talk to Darren in that respect.
14:02He will listen to things, but he just doesn't hear it.
14:06After last night, I'm concerned.
14:08Does Darren even care about this place?
14:10Is he willing to step up for his family?
14:12Hello, hello.
14:13Hello, family meeting?
14:15Yes.
14:15Is he willing to step up for himself?
14:17Because if I don't change his attitude, I don't see how I rescue anything here.
14:21A little tough meeting last night.
14:23Yes, sir.
14:23But maybe you had it coming?
14:25It was an awakening.
14:27It was an awakening.
14:27Okay.
14:28Well, I want you awake while I'm here, so we had a good start then.
14:31Hi, Kiki.
14:33Hello.
14:33What's your name?
14:34Dakota.
14:35Dakota.
14:35And you are?
14:36Their other daughter.
14:37And I'm guessing you're her husband?
14:38Yes, sir.
14:39And your name is?
14:40Corey.
14:40Corey.
14:41Hi.
14:41Hi.
14:42How are you?
14:42I'm Dustin.
14:43Dustin, and you were behind the bar last night?
14:45Yes, sir.
14:45And are you the only non-family member here?
14:47Yeah.
14:48Gotcha.
14:48And how long have you been here?
14:49A little over a year.
14:51How is it to work with a family like this?
14:53It's up and down.
14:54You know, they kind of love each other.
14:55They kind of hate each other.
14:56I hear you.
14:56That's a normal family.
14:57So there's a little resentment going on, maybe?
14:59Maybe.
15:00So are you losing money?
15:02Absolutely, 100%.
15:03We are losing money.
15:04How much a month?
15:05Anywhere from $3,000 to $7,000, $8,000 a month.
15:10So, Darren, if I wasn't here today, what would you be doing differently tomorrow to stop losing
15:16that money other than sitting on your ass in the kitchen?
15:20I don't know how to answer that.
15:22Is the word nothing appropriate?
15:24No, it's not appropriate.
15:25Have we launched any promotions?
15:27No.
15:28No.
15:28Drink specials?
15:29No.
15:30Have we done anything to increase revenues in this past few months?
15:34No.
15:34No.
15:35Have you guys presented any ideas?
15:37Yeah.
15:37We have.
15:38We've presented plenty.
15:40And are they received?
15:41No.
15:42They get talked about and then usually ends up dying.
15:45Give me an example of one.
15:47Sunday fun day.
15:49Poker night.
15:50Poker night, yeah.
15:51Trivia night.
15:52What happened?
15:53What I do know is that, like, Sunday fun day, I was all about that, and I thought that
15:57was a great idea.
15:58Cooking out on the back.
16:00Making steaks.
16:01All we needed was the okay from the city to be able to block off the parking lot for
16:06that day.
16:06And it just was never, we didn't get that.
16:10How come?
16:12Um.
16:13No follow through.
16:16It was my fault.
16:18I got a feeling I'm going to hear that a lot today.
16:21So think about this.
16:22If you're surrounded by an energetic family that's trying to save your ass, so they come
16:29to you and they say, I want to do this, I want to do this, and your wife looks at
16:33you
16:33and says, I want to do this, and I want to do this, and then you don't.
16:37First, I have to ask you this question, are you an idiot to reject that type of input and
16:45cause them to feel so rejected by it that they don't come to you anymore?
16:50I mean, is that what a father would want?
16:52If every business has a blockage to success, you're it.
16:58And I think it's fair to say, and I know, I'm not challenging your husband as a man.
17:02I'm challenging him as a business person.
17:04Okay?
17:04I'm challenging him as a bar operator.
17:06Okay.
17:07I'm challenging him as somebody who has watched a family lose $200,000 and is sitting on his
17:12ass in the kitchen about it.
17:14Why did you walk down this path and commit yourself and your wife and then take this
17:20approach?
17:21Why?
17:22I want to understand, are you an individual who is seeking to fail?
17:28No.
17:29Kiki's shaking her head.
17:30Is he scared to succeed?
17:32I think he self-sabotages.
17:35So here's your family telling you that you're so used to failing that you almost want to fail
17:40now.
17:41I think after 30 years of doing what I did and being out of my element and not understand,
17:50I'm just saying, I don't...
17:51So why'd you do this then?
17:53You're going to give me excuses?
17:54Oh my gosh, it's hot out there and you know, I used to do this, now I do that.
17:58And I worked hard for 30 years and I was a police officer and I was scared and I got
18:03this and I got that.
18:04So I've been doing this a long time and I've been doing it with a lot of cops.
18:07Yeah.
18:07I know cops well.
18:09That's bullshit.
18:09Why don't you want to succeed?
18:12Here's your chance to be a hero to your family.
18:16To move faster.
18:18Not sit in the kitchen like this.
18:21You'd think the world was ending because somebody ordered some chicken wings.
18:26The building was coming down.
18:28Life was over for you.
18:31It was a one order.
18:34You want the truth?
18:35Yeah.
18:35Because I've had four back surgeries and I couldn't stand up at that point.
18:39And I can handle being in the kitchen when it is busy.
18:44So somehow your body just unbelievably just is better when you're busy than when you're not?
18:50No.
18:50I'm just...
18:52Kiki, is he full of shit?
18:55I do think he is fully capable of being in the kitchen.
18:58And I think he just needs to be motivated.
19:00How the hell do we motivate him?
19:03What happens when this place closes?
19:05What happens to your home?
19:06What happens to your cars?
19:07What happens to your future then?
19:10Kiki, tell him.
19:11I have told him.
19:13Tell him again.
19:14We have nothing.
19:15We have nothing.
19:24Kiki, tell him.
19:26I have told him.
19:27Tell him again.
19:28We have nothing.
19:30We have nothing.
19:38You have tears in your eyes.
19:41You have tears in your eyes.
19:44You have tears in your eyes.
19:46But your husband?
19:49How come he doesn't have tears in his eyes?
19:52They need to hear you look at them and say, I'm sorry.
19:57I'm sorry.
19:59And I'm going to step up and make a difference because I love you, my family.
20:03Can you do that for them?
20:04Yes.
20:05Come stand here and do it.
20:06I want to see it.
20:10It's breaking my heart to look in your faces and see the pain and anguish.
20:17And it is causing me great pain to do this to you.
20:21And I accept all responsibility.
20:25And I want to make it right.
20:27Is this a start?
20:28I hope so.
20:30Yeah.
20:30Good.
20:30Go sit down.
20:31I want you to know I'm starting to believe in you, Darren.
20:34So you guys ready to get to work?
20:35Yes, sir.
20:36Okay.
20:36Let me bring my experts in.
20:38Hello, everyone.
20:38Hello.
20:39One of my favorite mixologists in the country, Diana Small.
20:42This guy here I can't say enough about.
20:44We've been working together close to 15 years.
20:46Yes, sir.
20:46Yes, sir.
20:47Kevin Bledsoe, he understands barbecue.
20:49He understands bar food unlike anyone.
20:51So I've put in two great disciplines to work with you guys.
20:56Okay, you ready to do this?
20:57Yeah.
20:57Okay, let's go to work.
20:58Darren was a bit emotional.
21:00Maybe I'm getting to him.
21:01Maybe he's starting to take responsibility for the failure that's cost his family over $200,000.
21:08Tonight, we'll see.
21:16John did inform me the things that we need to focus on this week, including the bar tools.
21:20They were mishandling bar tools with certain cocktails.
21:23So I need to correct that immediately and show them the proper tools that are needed for the bar.
21:27Hello, everyone.
21:29Hello.
21:30We had a mixture of bar tools that we used yesterday that were not supposed to be for that specific
21:36drink.
21:37What do you use to muddle?
21:39A muddler.
21:40Where is that?
21:40I don't know.
21:41Okay.
21:42This was used last night?
21:43Yes, ma'am.
21:43What is this, though?
21:45It's what you use whenever you're just trying to, like, zest a lemon.
21:48Okay.
21:48It is a zester.
21:49Absolutely.
21:50You're right.
21:50But this is not to be used for muddling.
21:52I know I panicked.
21:53Okay.
21:54I'm so sorry.
21:55Okay.
21:55So to muddle, you want an actual muddler.
21:58You want the rigid end right here because this will break up if you're muddling mint, limes, oranges.
22:05So what were you muddling yesterday?
22:07I was trying to make an old-fashioned with just an orange, and I put grenadine and simple syrup.
22:12Okay.
22:12It does not get any of those things.
22:14Oh, wow.
22:14So correct.
22:15You're not muddling anything in this cocktail.
22:17Okay.
22:18Well, I got a little more practice to do.
22:19I don't want to get yelled at next.
22:20I'm terrified that it's going to be my turn tonight.
22:23Like, I'm doing something wrong.
22:25Hopefully, we can get some training and make the bar even better.
22:28All right.
22:28We have a lot of training to do.
22:30We are going to train all the way up to stress tests.
22:32We provided really good bar tools for you guys to use, so they're all proper, and you'll be able to
22:36make great drinks.
22:37And I'm ready to get started.
22:39Are you?
22:39Yeah.
22:44What's up, y'all?
22:44How are you?
22:45I heard last night was crazy.
22:47Yeah.
22:48Was it real bad?
22:49Yeah.
22:49Have you got some cheese that's been in there since the 76 Olympics?
22:53About the burger patties, you can use them as ice cubes.
22:56Is that true?
22:57That's all good.
22:58See, that's what I want in the kitchen.
22:59I want some fun, because I heard you are, like, burned out, and we got to bring some kind of
23:04fun.
23:05Any kitchen I've worked at, I crack jokes.
23:07We have a good time.
23:08Okay?
23:09So, one thing about a kitchen, you got to have a leader in the kitchen.
23:12So, I need to know who's in charge of the kitchen.
23:24I think, look at the bigger picture, her responsibility is the bar.
23:37So, you the kitchen guy?
23:38Yeah.
23:38Okay, that's good.
23:39And then, so, when she comes to help out in the kitchen, she has to listen to what you're saying.
23:43Okay?
23:43And you need to know, however you come in every morning, with your attitude, that dictates how everybody's going to
23:49be the whole day.
23:50Because attitude reflects leadership.
23:51I will support Darren by letting him lead and just giving him the reins and allowing him to really take
23:59over the kitchen.
23:59Okay, we're just going to get into a few things.
24:02All we're doing tonight is a different flair on your burger.
24:04It's going to be more like a smash burger.
24:06A smash burger is way more efficient to cook at a bar, and hopefully less than four minutes.
24:13Tonight's stress test is not designed for you to fail.
24:15It is designed for you to get better.
24:17Good luck tonight, man.
24:35Hi.
24:36Welcome to Main Street Hideaway.
24:37Come on in.
24:44Welcome in.
24:47How's it going, guys?
24:48Good. How are you?
24:49Good. What can I get started for you?
24:50Two old fashions.
24:52Two old fashions?
24:54Yeah.
24:54I want the margarita.
24:56Um, so you're going to the bar.
24:58The order.
24:59I believe.
25:00Oh, they told you not to get up.
25:02Oh.
25:03Oh, okay.
25:04Then let me deal with something real quick.
25:06Two old fashions.
25:07All right, guys.
25:09Which one's simple syrup?
25:11This one?
25:11Simple is that one, yes.
25:12All right.
25:12Apparently we're doing orders this way, but...
25:17What?
25:20Give me one second.
25:21I'm gonna set your card back right there.
25:22Hey, Bella.
25:25It won't send on the burger.
25:26It won't send?
25:28What do you mean it won't send?
25:29None of the food's sending to the kitchen.
25:32You okay?
25:33Yeah, it's just not working.
25:35Your system's not working?
25:36Yeah, it won't send it.
25:38Who knows that system best?
25:40Mom.
25:41Okay, let's get her out here.
25:42I'll tell her.
25:43Okay.
25:43Kiki, they're having a problem with the POS system.
25:48So what do we have?
25:50Rescue?
25:50Yes, six wings.
25:51Six wings.
25:52Nope, can't do that.
25:53Okay.
25:54So you need to go manual then, right?
25:56Yes, yes.
25:57Bring the kids in.
25:58So coordinate that, okay?
25:59Yep, yep.
25:59The POS system is down.
26:01It won't send to the kitchen.
26:02This is a big deal.
26:03So we're just gonna have to go back to the old other way.
26:05They're trying to catch up now, but everything is on paper tickets.
26:09What do you mean the old way?
26:10I don't know what you're talking about.
26:11Do it the old way.
26:12So when they catch up, the kitchen is gonna get 25 orders at the same time.
26:16So guys, they're loading in the POS system now.
26:19Kiki's, you guys are gonna get slammed when all these tickets go in.
26:22So try to get ahead of whatever you can.
26:24This is gonna go bad real fast.
26:27All right, tell me what I am not getting.
26:30Two six wings.
26:31Okay, put it on a piece of paper and just put it back here then.
26:33Barbecue or cake.
26:34Or buffalo.
26:36Shit.
26:37I don't know if it's changing.
26:37What's going on?
26:38Talk to me, Diana.
26:39We have a major ice issue.
26:41All the ice is over here.
26:42So we have to go all the way across every type of ice.
26:44So we have no ice station in the middle.
26:45We have no ice station.
26:46And no wells, really.
26:48So we don't have the setups back here to succeed.
26:50Not at all.
26:51Okay.
26:53That's the, well, no, that, I don't know.
26:55It came in on a piece of paper.
26:56I don't know where the paper is.
26:57Okay.
27:01So what, how many quesadillas?
27:03Uh, so one, two, three quesadillas.
27:05Oh, shoot.
27:06I gotta tell you, Darren, he's standing upright.
27:09He's not hunched over.
27:10He's got three, four orders going at the same time.
27:12He's got a positive attitude.
27:13He's communicating.
27:14I might've gotten through.
27:16Hurry on this one.
27:17Your drinks are dying in the ice.
27:19What whore is that?
27:20What, how many ounces is this?
27:22Oh, I have no idea.
27:24All right.
27:25Guys, we gotta go faster.
27:26We gotta start making them three, four, five at a time.
27:28We're never gonna dig out.
27:30Go ahead.
27:30I'm so sorry.
27:31Number 12.
27:33Bam.
27:37Keep going.
27:37Let's go.
27:39All right.
27:39Okay.
27:40Food's starting to come out of the window.
27:41Before you do that, just slide right here.
27:43Hit the bell again.
27:44Tell them order up, cause it's gonna, it's gonna get cold on you.
27:47What's up, man?
27:48We're unraveling.
27:49Fact of the matter is, we've been open now 25 minutes.
27:52Nobody's been served drinks.
27:54Look at them back there.
27:54They're all staring at me, cause they're all waiting for their cocktails.
27:58They're not coming out from the bar fast enough.
27:59There's no way mathematically we're gonna be able to serve this room at that rate.
28:04So either they gotta speed it up, or we're gonna crash.
28:09This has been here forever, so let's knock this out.
28:12Two old fashions, two margaritas.
28:13Okay.
28:13Right now.
28:14So we gotta do this right now.
28:15Okay.
28:16Four, 10 in, D.
28:17This ain't red in the meat.
28:19I don't wanna take it off.
28:20Okay, well, the next time you do a burger, smash it just a little thinner.
28:23Guys, we got drinks in the well that go out.
28:26Is it?
28:28Yeah, it's right here.
28:29Tabitha, Tabitha.
28:30Tabitha?
28:31I didn't know where it's going.
28:32Uh, that one I actually know, but no table number on it.
28:35So if you didn't know the person, we'd be in trouble.
28:37Yes, sir.
28:38Mom.
28:39What?
28:40Is this with Crystal's order, or is this a different order?
28:43I don't know who this is.
28:44I only needed one quesadilla.
28:46We can't get orders coming out from the kitchen or at the bar.
28:49This is absurd.
28:50You're using liquor first.
28:52Dump it out.
28:52Can I have a margarita, please?
28:54Yeah.
28:56Are we just thinking?
28:58Hey, if I could order two.
28:59Shit.
29:00The way this is going, you're gonna be lucky to get warm.
29:07Mom.
29:08What?
29:08I only needed one quesadilla.
29:12Yeah, hold on.
29:13Let's figure out where we're at.
29:15We can't get orders coming out from the kitchen or at the bar.
29:18This is absurd.
29:19You're using liquor first.
29:20Dump it out.
29:22Kiki?
29:23Yes.
29:23Come talk to me for a minute.
29:24Yes, sir.
29:25Right now, none of these people have been served.
29:28Okay.
29:28The bar is doing worse than the kitchen.
29:30I want to close this down.
29:32I've seen what I need to see.
29:33Let me go to work and remodel this place.
29:35So do you want to walk around and tell everybody that we're gonna close down and invite them back Friday
29:39night?
29:39Yes, I will.
29:40You got it.
29:41Thank you so much.
29:42Diana, we're gonna shut down.
29:43I think we need to really work on our teamwork and building a bar together, a business together, instead of
29:52individually.
29:53I am so sorry, but we have to close this down tonight, and hopefully we can improve there.
29:58We want to make this right for all of you guys.
30:00So if you could come back Friday night, we're gonna do it right for you.
30:03All right?
30:04Sound good?
30:04Yep.
30:05All right, thank you.
30:18You know what's interesting?
30:20Almost 10% of any neighborhood in Nashville is from Chicago.
30:25There's a lot of country bars in Nashville.
30:26How many Chicago bars are there in Nashville?
30:29Hi, everyone.
30:30Hi.
30:30We're gonna do a riff on an old fashion that John and I came up with.
30:34You can do high seating here.
30:36Low.
30:36And low over there.
30:38And we're sort of creating a lounge area and a dining area.
30:41What's up, y'all?
30:42You guys already have a quesadilla.
30:43We're just upping that a little bit more.
30:45And it's the Polish sausage quesadilla.
30:47Then bar.
30:49It's a real problem this week.
30:50We have no plumbing on the front bar.
30:53All your plumbing is coming from the back kitchen here.
30:55And it's just a matter of our plumbing guys can do it and if they can do it in our
31:00timeframe.
31:00We're gonna do three dashes of chicory pecans.
31:04One bitters.
31:05Three quarters of an ounce of pure maple syrup.
31:08And then we're going in with Nashville Barrel Company's rye and an ounce and a half.
31:14Only a few ingredients.
31:15Got your polis sauce.
31:16You already have this prepped and cut already.
31:18Get my tortilla on.
31:21Pepper Jack cheese.
31:24Not rocket science.
31:25Just want to spin.
31:27But you really want to blend it really well because that syrup needs to break up.
31:31Hold it.
31:32And then right on in.
31:33Just like that.
31:34And then we take our cherry right there on top.
31:39There you go.
31:40That is your polis sauce.
31:41Just quesadilla.
31:44Okay.
31:45We'll get on it.
31:45Yeah.
31:46Let's go to work.
31:46All right.
31:47Thanks, John.
31:58Last night, operations were not good.
32:00But the fact of the matter is Darren really performed in the kitchen.
32:03Yeah, we made a mistake or two.
32:05But he stepped up, I'm guessing, unlike he's ever stepped up.
32:08And I sense something has happened in him that there's a change.
32:11I want to talk about that today.
32:13Boy, you were something last night.
32:15I'm proud of you.
32:16Yeah.
32:16I feel like there was a lot of mistakes made.
32:18No, but you're different, aren't you?
32:21Absolutely.
32:22Yeah.
32:22I know I am.
32:24Yeah.
32:24I think I reached your dad, don't you?
32:26I think so.
32:27Tiki, you're proud of him?
32:29I am proud of him.
32:31Going forward, it's going to be a big change.
32:35I just want to reiterate something.
32:38Up until we started this process, I was probably the darkest place I've ever been in my life.
32:45And because of this, I can see the clipper of light coming through.
32:52I just ask you to give me a chance.
32:54And we all support you.
32:56And I think it's going to be a great experience for all of us.
32:59Something that we have needed so bad for the last three years.
33:05I believe in him.
33:07I believe that your dad is going to do this for him.
33:10And he's going to do this for you.
33:12Yes, I am.
33:13And these are just tiny little baby steps that I'll ask you.
33:22It's for the opportunity to prove to you that my actions will speak louder than words.
33:29And you have our full support.
33:30You really do.
33:32This was never about a bar.
33:34This was about a family, isn't it?
33:35Mm-hmm.
33:36And if we fix this bar, we can set this family up to heal some of the problems that have
33:40existed before and put us on a wonderful path, right?
33:44Right.
33:44Okay, well, I got to go get your bar built.
33:47I have to step up.
33:48I have to be involved.
33:52It cannot fall on my family with me just going, huh, I'm going to go in the kitchen.
33:57No, I have to take the pressure off of them.
34:00If I don't keep going forward, this was all for nothing.
34:09Hey, everybody.
34:13I knew this was a great town.
34:17How are you feeling, Darren?
34:18I'm feeling great.
34:20So, you know, when I got here, I found a great family, a really good family in trouble.
34:26And this bar is pulling you down in debt, almost $200,000.
34:30Can you imagine?
34:31When that happens, we lose our fire.
34:33We lose our gut.
34:34We stop fighting for it.
34:36Right, Dakota?
34:36And that's exactly what happened.
34:38So, you got that fire back?
34:40It's back.
34:41I bet you do.
34:42Kiki, he's a different guy than he was four days ago, isn't he?
34:45Yes, he was.
34:45Yes, he is.
34:46He really is.
34:47I'm motivated and ready to go.
34:49Wow, so here we go, guys.
34:50Okay, when I went to name this bar, I wanted to name it something that meant probably more
34:55to you than anything else in the world.
34:57Because I wanted it to really inspire you.
35:00You ready to see it, Darren?
35:01Yes.
35:02Here we go, guys.
35:03You ready?
35:03Here we go.
35:05One, two, three.
35:14One, two, three.
35:32Come here, buddy.
35:36You're a good man who deserved this.
35:40Kiki's.
35:41Nothing has influenced your life more than Kiki's.
35:44Right?
35:45You've never had a fight for anything more than Kiki's.
35:48I wanted this to mean something.
35:51And it does.
35:53It couldn't be better.
