These might be the fluffiest stack of breakfast pancakes that you’ll ever make! In this video, an Allrecipes Allstar shows you how to make soufflé-style pancakes with a whipped meringue incorporated into the batter. Unlike regular pancake recipes, the batter is steamed in a pan until completely cooked. Top with whipped cream, powdered sugar, and blueberry compote before serving.

00:00These are the lightest, jiggliest pancakes I've ever made, and they started by whipping my egg
00:04whites into a stiff meringue and folding that into my batter. Unlike most pancakes,
00:09you pipe these into tall mounds, add some water, and steam them until they're cooked all the way
00:13through. These can take a little practice, but when you get them just right, there is nothing
00:17better than this fluffy stack of pancakes with blueberry compote, whipped cream, and a little
00:21bit of powdered sugar. I could have easily eaten six of these.
