01:21So today, I am going to give you a taste test of the main island, a sample plate if you

01:27beginning in the markets with a famous local chef who will lead me by the nose.
01:32I hope you're hungry.
01:34Sinking your teeth into all New Caledonia has to offer is easier than you think
01:39with direct flights less than three hours from Sydney or Brisbane.
01:46Local chef Alphonse Cochet has passion for homegrown ingredients,
01:53having honed his skills in the kitchens of London, Paris and Dubai.
01:58He is back and he is happy to share the culinary delights of the local markets.

02:13generally goes to the fish first, and then you start to create.

03:49which is hiding within the island cabbage
03:53that is underneath the fish.
03:58That is so fresh and so delicious.
04:00We've got a bit of the earth,
04:02we've got a bit of the sea,
04:03all mixed in on one plate.

05:56we're adventuring in WA Southwest.
05:59When it comes to natural attractions,
06:01you could say this area got a little greedy.
06:18It's home to vast stretches of national parks,
06:21some of the most epic coastline in the country.
06:23Good food, good wine, great people,
06:25and, of course, plenty of adventures.
06:29The Margaret River region is around three hours' drive from Perth.
06:34There's as many ways to explore it
06:36as there is places to explore.
06:38We've joined a passionate local Brooksy
06:40for a half-a-day e-bike tour,
06:42kicking off around Contos Beach,
06:44a rugged and remote slice of the region
06:47less than half an hour's drive
06:48from the main street of Margaret River.
06:52So, mate, people can just come down here in peak season
06:55and you will barely see a soul in sight.
06:58Yeah, just get them out there,
06:59away from everybody,
07:01and, like,
07:027,500 kilometres of water on your right
07:04and 20 or 30 kilometres of Cary Forest on your left.

07:40and, I mean, they're all encrusted with salt from the ocean.
07:43We're right amongst it here, mate.
07:44It's pretty raw, isn't it?
07:46Indian Ocean, 700-million-year-old granite.
07:49Just over the hill there is the forest.
07:51Wow.
07:52There's just so much to see,
07:53and it's so close to each other, so...
07:55Yeah, I love it.
07:58In just a few minutes' ride,
07:59we go from the cliffs of the Indian Ocean
08:01to the towering trees of the forest.
08:05So, right now, we're in Varanham Forest.
08:08Home to these big carry trees, mate.
08:11Up to about 80 metres tall.
08:14They're so imposing.
08:15You feel so tiny when you're riding through it.
08:18At the moment, I feel like I'm about 20 centimetres tall.
08:22Much of the forest was milled during the timber boom of the late 1800s,
08:26but this 120-year-old regrowth is now thriving.
08:29So, this is all national park?
08:31All national park.
08:33And on e-bikes, we can fully appreciate it.
08:37It makes it ten times easier when you're cruising through on the e-bike
08:39because rather than being super tired from riding so long,
08:42yeah, you can just cruise around, enjoy the scenery.
08:45Anybody can ride these, mate.
08:47Doesn't matter how fit you are or your age,
08:49you can get out on these and just cruise around.
08:52In just a half-day tour,
08:54you can experience some of the region's top spots.
08:58Yeah, mate.
08:59We started at the coast,
09:01rode all the way through the forest
09:02and those wonderful farmlands up there
09:04and now we're in the vineyard.
09:06This is where it really happens.
09:08It's got amazing views,
09:10amazing food,
09:11amazing trails
09:12and amazing wines.
09:14Yeah.
09:15Well, I mean, look where we are, mate.
09:16Fresh air,
09:17big trees,
09:19beautiful vines.
09:20The wine's going to be pretty good, eh?
09:21Oh, I can't wait.
09:22I think after all this bike ride,
09:23I've gotten a bit thirsty.
09:25Lewin Estate began wine production back in the 1970s
09:29and is now one of the oldest
09:30and best-known producers in the region.
09:33It's also the finish point

19:24the closest thing
19:25to going to outer space.
19:26You get on your ship,
19:27you're underway
19:28for a couple days
19:29and then you arrive
19:30to an unworldly place.
19:33Otherworldly
19:34is a very accurate description
19:36of this surreal
19:37and spectacular landscape.
19:39Well, this iceberg
19:41is basically frozen, right?
19:43Obviously,
19:44but it's snow
19:44that's fallen hundreds
19:46if not thousands
19:48of years ago.
19:49But once it's broken off
19:50the glacier face,
19:51it could be out here
19:53for years
19:53and sometimes even decades
19:55depending on the size
19:56of the iceberg.
19:59You know,
20:00the one animal
20:01that I really,
20:02really wanted to see here
20:03is a leopard seal.
20:05And this is just day one.
20:08It's just having a nice snooze
20:10right in front of the cliffs.
20:12Incredible.
20:16And the pinch me moments
20:18just keep coming.

20:24it couldn't get any better,

20:26to a humpback
20:27and a baby.
