00:06What a beautiful part of the world!
00:09Hit it, hit it, hit it!
00:13You gorgeous thing.
00:16This is Right Outdoors.
00:25It's not every country's national animal you want this close.
00:30Bengal tiger, the bear.
00:32But the opportunity to have a majestic falcon atop your forearm is one I couldn't refuse.
00:39These noble birds are small but striking.
00:43So this is training.
00:47As the national emblem of the United Arab Emirates, falcons symbolise pride, honour and status.
00:56Our grandfathers, they used falcons in the past to live, to hunt and eat.
01:01They lived their life by easy way.
01:04This is the sport of falconry.
01:09A remote control aeroplane.
01:10Yeah.
01:11This is now a new way.
01:14That was fast.
01:16And a special way to be welcomed to the UAE's largest city.
01:21Ah, thank you.
01:24Shimmering in the hazy heat, Dubai is the world's most rapidly built metropolis.
01:30Bigger.
01:31Taller.
01:32Longer.
01:33Faster.
01:33Dubai.
01:36Literally built on desert sand, Dubai proudly lays claim to many Guinness World Records.
01:42A record breaking, super charged city that's unparalleled.
01:48And dominating Dubai's skyline is the world's tallest building, Burj Khalifa.
01:54We're travelling at 36 kilometres per hour.
01:58That's three floors every second.
02:01Oh, your ears do pop.
02:04Shooting more than 800 metres skyward, the lift delivers you to your pick of two observation decks,
02:10both over 100 storeys high.
02:14It's like being in a helicopter.
02:17And while up in the clouds, you'll find the planet's loftiest lap pool.
02:23Dubbed Dubai's best, Aura sky pool is suspended 200 metres above sea level.
02:29Join the world's highest pool party and soak, sip and even cycle until the sun comes up.
02:36This is better than the screen at the gym.
02:39Yep.
02:40This is the full Dubai experience.
02:42Incredible skyline views from a futuristic infinity pool.
02:47Spectacular architecture is what Dubai is famous for.
02:52So, it seems appropriate that in the centre of the city stands a glistening picture frame through which to see
02:58everything.
02:59And it is, of course, the world's largest.
03:02Look through that way and you're looking at New Dubai.
03:06And on that side is Old Dubai.
03:09And Old Dubai is where you'll find this labyrinth of ancient laneways.
03:14Al Fahidi Historical Neighbourhood is a charming pocket of the city where you really get a sense of Dubai's rich
03:22heritage.
03:23You can see just how close the buildings are together.
03:26And that's so that you're almost always in shade.
03:30I don't think we're back in a fit through here.
03:32No, we're not.
03:33We're going to have to go sideways.
03:36Hang on, breathe in.
03:39Dubai welcomes a steady 17 million tourists annually.
03:43It oozes culture, doesn't it?
03:45Yeah.
03:46Les are lucky to call themselves locals.
03:48But Ant Middleton is now one of them.
03:51This is how you kick start your morning in Dubai.
03:55Arabic coffee and it's strong.
03:58Okay.
03:58Hold it like this.
04:00And you sip like this.
04:03Taste the bitterness.
04:04A lot of cardamom.
04:05And if you want to counter the bitterness, you've got a local delicacy here.
04:09Dates.
04:10I like the date.
04:11Very tasty.
04:11I really like the coffee.
04:12As its name suggests, Arabian Tea House is not just for coffee lovers.
04:18We share everything together.
04:20So you see the small of everything.
04:22And then you eat, you talk and you enjoy everything together.
04:25So let's dig in.
04:29Mmm.
04:31Ali's special eggs.
04:32They're delicious.
04:33Ali, these are good.
04:35There's a basic humble eggs and tomato.
04:37But if you make it as simple as possible with a bit of tamaric, you have it.
04:43Spices and herbs are the foundation of all Middle Eastern cooking.
04:48Oh, I can smell that, can you?
04:49Yeah.
04:50Look at all the colour.
04:50These aromatic alleys are in Deera, Dubai's famous spice souk.
04:56A sensory experience for the open-minded.
04:59Natural viagra.
05:00Really?
05:01The ancient art of haggling is welcome at this massive open-air market.
05:07And you'll need it for the world's most expensive spice, saffron.
05:12And if your pockets aren't empty, well, there's real bling here too.
05:16Every single shop is just pure gold.
05:19Gold, gold, gold.
05:20It is for as far as the eye can see.
05:23It's very sparkly.
05:25You've got gold, diamonds, emeralds, sapphires, watches.
05:30Absolutely everything that you want is here.
05:33Everything you want and need, and plenty that you don't.
05:38What are you getting me?
05:39What are you getting me?
05:40I'm just wondering what your budget is.
05:44Hmm.
05:45As for mine, you can't leave the gold souk empty-handed.
05:49And here, for ten dirhams or just under five bucks, you get your own gold coin.
05:53Not real gold.
05:57Hey!
06:01Okay, that's enough.
06:02Come on.
06:02Let's go.
06:04Marmalade.
06:05One more drink and that's it.
06:10I am Greek.
06:12Very Greek.
06:14Our dishes will be a smash.
06:17Whooppa!
06:18Whooppa!
06:19Food just means family.
06:20I'm cooking for mum.
06:22She wrote all her recipes in this beautiful cookbook.
06:27It's ancient.
06:28Got her little finger, mum.
06:30Mum would be so proud.
06:32She'd be so proud.
06:33Oh, my God.
06:35I don't want to let my mum down.
06:37This could ruin our dish.
06:39You did not let me down, okay?
06:41I did.
06:42You didn't disappoint, okay?
06:44Enough.
06:45My mum's recipe.
06:47I want to do her proud.
06:49Oh, God.
06:51This was banging.
06:52Well done.
06:54Yaya's looking down on this.
06:56And this is seasoned with love.
06:58Oh, mum.
06:59We both did that.
07:01That's it, mum.
07:02The gourmet Greeks are here.
07:05They're beautiful.
07:06On all new NKR.
07:08And the .com.au.
07:13If you've grown up in Australia,
07:16the sensations of a trip to the coast
07:18can bring waves of joyful memories.
07:21And on the New South Wales central coast,
07:24nostalgia radiates from the blue waters
07:27to the pristine sands
07:29and high atop the towering cliffs.
07:33But the region extends far beyond the coastline
07:36into lush hinterland where new memories can be forged.
07:42Second ever throw of an axe.
07:45We won't talk about the first one,
07:47but second ever throw of an axe.
07:50Awesome.
07:55Adventure echoes through the wilderness of Glenworth Valley.
08:00The most prominent sound?
08:03Thundering hooves.
08:04I feel like I'm on the set of the man from Snowy River right now.
08:08I just think it's pretty cool that we can connect so much with an animal.
08:11We can actually sit on their backs and train them
08:13and then they listen to us and we listen to them
08:15and then off you go, you know, you kind of collect it as one.
08:19Horses have long been part of the valley,
08:21making it one of our top riding destinations.
08:28Wow, what a gorgeous place this is.
08:30This will definitely do me for tonight.
08:33High above in the mountains are eco-cabins,
08:37a secluded slice of nature.
08:39The serenity here isn't the only gold found in these hills.
08:45And there is an art,
08:47choreography even, to picking an orange.
08:50Ah, look at that.
08:51No, it's too, there's too much branch.
08:53Too much branch, too dangly.
08:55It's a dance orange farmer Tim knows very well.
08:59The trick is, it's a one-handed job.
09:01You might think so.
09:02So you're going at the back, over and then just twist.
09:05Oh, easy.
09:06A little bit of water.
09:07We've had a bit of rain.
09:08So I had enough rain.
09:10That's it.
09:12Got the water in here.
09:13I got it.
09:15Meliora.
09:16It's a Latin word meaning better or best.
09:19And in the Central Coast's cooler months,
09:21the better citrus fruit can be found on Meliora farm.
09:25Most of it, the best you're likely to have.
09:28We love having people up here because they can do this,
09:31wander down, have an orange that is straight off the tree.
09:34And I'll tell you, if you don't pick a difference,
09:37there's something wrong with it.
09:38You can literally walk along and just eat as you pick fruit.
09:40Yeah, yeah.
09:41One of the things I've always thought about doing
09:44is actually getting the knife out and peeling it on the tree.
09:47I reckon you should give it a go.
09:48You got your knife on you?
09:49Yeah, all this.
09:49I've never done it before.
09:50I've always talked about doing it.
09:54There we go.
09:55One orange ready to eat.
09:57Straight on the tree.
09:58Does it get any fresher than that?
09:59No.
10:02Oh, the freshest orange I've ever tasted.
10:07There's plenty of picking to be done on Meliora farm,
10:10including selecting the perfect picnic spot
10:13to enjoy the literal fruits of your labour.
10:16But the Central Coast comes in many flavours.
10:22The perfect mix of sweet and salty.
10:24That is absolutely delicious.
10:31How did I even get here?
10:34For Sydney oyster farm tours,
10:37it all began 15 years ago
10:39in the waters of the mighty Hawkesbury River.
10:42As for me...
10:44Hit it, hit it, hit it.
10:45Go.
10:45My drug.
10:47Alright, there we go.
10:50Sheridan owns this oyster lease.
10:52She sets the dress code here.
10:54This is going to be interesting.
10:57Now, of course, yeah,
10:59the number one go-to with oysters, champagne.
11:03Cheers.
11:06The thrill of the journey,
11:07the absurd yet elegant dining environment,
11:10and a massive bowl of fresh oysters.
11:13There was only one thing on my mind.
11:16Shocking.
11:17Firm pressure on a 45.
11:18There we go.
11:19And once you get in about a centimetre, that's it.
11:21At that point, you kind of pry it down and twist and it pops.
11:24There we go.
11:25As you shimmy across, point the knife up.
11:29Beautiful.
11:30Look at that.
11:32You want to cut the underside.
11:33Underneath, cut.
11:34Rotate.
11:36Perfect.
11:37There it is.
11:38And I took a little bit of that ocean liqueur out just because there is a lot.
11:43Especially when you've just harvested it.
11:45Highly recommend the sauce because I made it.
11:46And if you notice, we've got some brim here.
11:48Oh, look at that.
11:51They know what's coming.
11:53Cheers.
11:59Coming straight out of the water and straight into your mouth is the way to do it.
12:04Chopping a burger like a cake smells amazing.
12:10He killed four children.
12:12Do you think about those children?
12:14All the time.
12:15All the time.
12:16Now, the father comes face to face with the killer.
12:20I have a very special message for him.
12:22In a 7 News Spotlight exclusive, the extraordinary meeting.
12:26You'd be pretty nervous.
12:27Inside maximum security prison.
12:30This is home.
12:30And up there, that's where I live.
12:32This is your actual cell.
12:33And the moment that no one saw coming.
12:46The Outback has a soundtrack of its own.
12:51Birds singing.
12:53Choruses of cicadas.
12:57Stretches of silence.
13:01It's a natural symphony.
13:04But that's just the overture.
13:12Orchestrated journeys on the open road.
13:19With concerts at every turn.
13:24That's Queensland Music Trail.
13:26If there's a party, I'm the first and all.
13:28Tonight I'm playing, I'm a hero.
13:31I'll stand there before you explode.
13:34First stop, Nindigully.
13:37On the banks of the Moonee River in Queensland's southwest, Nindigully has a population of nine.
13:44About two gates and dungeons and I scroll there.
13:49The pub is the tiny town's heart and host of the Gully Sessions.
13:54Just one of the stops along the Outback Music Trail.
13:59This beats playing on a big stage.
14:02Any day of the week.
14:02Does it really?
14:03Absolutely.
14:03Yeah.
14:04I mean, look, everyone's out here with their chairs.
14:06They've got their beers and they're ready to enjoy a full afternoon music.
14:09I feel like any country town is like a big warm hug.
14:13Songs about rural life harmonised in a fitting setting.
14:24The quintessential Queensland watering hole manages to draw a crowd in its own right for its country hospitality and enormous
14:32food.
14:33Here you go, Kim.
14:34Here is our road train.
14:36A road train indeed.
14:37You're going to need a road train to get me out of here.
14:40We have stretches for that.
14:43Yep.
14:43That's a five and a half kilo burger.
14:46I'm chopping a burger like a cake.
14:48It smells amazing.
14:51I have to eat it sideways.
14:54The locally brewed Mooney Mud pairs perfectly.
14:59Good mud, eh?
15:00Oh, crisp.
15:02No?
15:02Nectar of the gods.
15:05Cheers to that.
15:09The multi-day self-drive Queensland Music Trails link one unique music event to another.
15:15And on the Outback Trail, the intervals between gigs are a chance to explore this remote corner of Queensland.
15:23The Great Artesian Basin flows deep underneath the red dirt and its healing powers are harnessed at our next stop,
15:32Kanamala.
15:40The mineral rich water can be therapeutic for the body and mind, but it's also the lifeblood of the Outback.
15:49Just outside of town, Charlotte Plains is a family-run station sustained by boars since the 1800s.
15:57This is a working sheep and cattle property.
15:59Every day we've got other activities happening, whether it's sheep coming through the yards or doing cattle work, mustering.
16:04This is the proper Outback, so you've got to get out here.
16:07Yes, you do.
16:09And while here, you simply must indulge in a rustic private bath.
16:15Steaming under the sunrise, it's an operatic way to greet the day.
16:20Good morning, Outback.
16:22You gorgeous thing.
16:26The property is also the true blue location for our next concert.
16:35Bush yarns and ballads.
16:39This setting really lends itself to country music, wouldn't you say?
16:43Oh, certainly.
16:44It's what we write about.
16:45It's everything.
16:46It's country Australia.
16:47It's our history.
16:48It's heritage.
16:48It's family and friends out here.
16:51It's the best of Australia, I think.
16:58Gathering round the stage under a star-lit sky, artists like Brad Butcher are connecting country, travel, music and those
17:07who love them all.
17:10If the backing track of the bush isn't your jam, then you'll be pleased to know that there are music
17:15trails peppered throughout this great state of Queensland.
17:18From the reef to the rainforest and pop to rock.
17:22But I'm right at home on a dusty dance floor.
17:27Now I'm on the track, I'm on the train.
17:42Can you believe a voice like that hasn't been heard?
17:46The best is yet to...
17:49We have seen some incredible people, but we've seen nothing like this.
17:53Any actual singers in the crowd.
17:55An unexpected discovery...
17:58He's really good.
17:59...leads to a massive voice first.
18:01I want her to do a blind audition.
18:03That's not possible.
18:03I don't know if we're allowed to, though.
18:06A massive week of The Voice, Sunday, 7 o'clock on 7.
18:11The Voice, proudly brought to you by Shark Flex Style.
18:17Thank you for being a friend.
18:20Travel down the road and back again.
18:23Your heart is true, you're a pal and a confidant.
18:26Thank you for being a friend.
18:30IKEA.
18:32Inside your head with Telfast during rush hour.
18:35Allergy?
18:35Traffic?
18:36What's next?
18:37Drowsiness?
18:38No way, we had Telfast.
18:39Take Telfast for fast, non-drowsy allergy relief with no impact on concentration.
18:44It's a no-brainer.
18:51Millions of years ago, we were an island of rainforest.
18:55Greenness all around.
18:56The nature reserves started forming naturally on their own.
19:00Nature always finds a way.
19:02The Emerald Isle.
19:04Wow.
19:05By name and by nature.
19:07What a beautiful part of the world.
19:09Its lush landscapes make for a living, breathing tapestry dyed in island's favourite colour.
19:18Ha ha.
19:19Incredible.
19:21But be warned, its beauty is easy to get lost in.
19:33No polo?
19:38Castle Wellen's peace maze symbolises Northern Ireland's path to a peaceful future.
19:43But what it hasn't symbolised for me is a pathway out.
19:48I think it's this way.
19:50Hang on.
19:526,000 trees and more than three kilometres of twists, turns and dead ends.
19:59Until...
19:59I think...
20:00I think...
20:01I hope...
20:04I didn't think I was ever going to get out of that.
20:07We've made it!
20:08Yes!
20:10But there is another type of green where I don't mind feeling trapped.
20:16Ardglass Golf Course is equally manicured.
20:19It's pretty right.
20:20Yeah.
20:21It's definitely not in the water anyway.
20:23And like a labyrinth itself, this lynx course hugs the rugged Irish coastline.
20:30Right on the east coast here, you can see over there, that's the Isle of Man.
20:34So it just shows how close to the east we actually are.
20:36It doesn't get any closer than this.
20:39Ah, yes!
20:41Flynn!
20:43We can't take all the credit obviously with Scotland and the history with St Andrews inventing golf.
20:48Yes.
20:49But I think Ireland's just, without being biased, it's boosted it that wee bit more.
20:53It's got some of the best golf courses in the world and we're trying hard to show what we have
20:57to offer here.
20:58You're allowed to be biased.
20:59Thanks.
21:02Straight down the middle.
21:04Is this the most beautiful hole in the course?
21:06It's my personal favourite anyway.
21:08It certainly gets the attention of the golfers.
21:12And so does the final putt on the 18th hole called Cowd's Castle.
21:18Lovely.
21:20Well, Flint, the course record is safe for another day.
21:23Thank you very much sir.
21:24It was a real pleasure.
21:24Enjoyed it.
21:25To the clubhouse.
21:26Absolutely the best bit.
21:28Artglass Clubhouse is the world's oldest, standing for over 600 years.
21:34It's seen and served a plethora of pros.
21:38Probably some Rory McRae memorabilia, of course, in the cabinet.
21:43It feels right to finish it off with an Irish whiskey.
21:46Cheers to that.
21:47Sláinte.
21:49Does that sound right?
21:50Mm-hm.
21:51Close enough.
21:57That...
21:58That's my palate right there.
21:59Yeah.
22:00It's delicious, isn't it?
22:01Culloan.
22:02Ireland's smallest, most remote distillery.
22:10We're so lucky to be in this area.
22:12We've got the Irish Sea right there.
22:13So it's a really unique little ecosystem that we're in here, which is fantastic.
22:17It does give us kind of a nice DNA for our spirit that can't be replicated anywhere else.
22:22This is the flavour of the Mourne Mountains.
22:24Exactly.
22:29Officially protected as an area of outstanding natural beauty,
22:33the Mourne Mountains has the highest rainfall in all of Ireland.
22:37And Culloan uses what the mountains generously give.
22:40The water from the Mournes, you're not going to find it better anywhere else.
22:44There's a very famous wall that runs across the Mournes.
22:47It's 22 miles long.
22:50It took almost 18 years to build the Mourne Wall.
22:52And all the techniques that are employed in that,
22:54dry stone walling techniques, are still employed today.
22:57A 5,000-year-old craft Mark has carried on.
23:03How's he back?
23:04It's been better.
23:07Luckily today, he's got a helper.
23:09Oh, you've come armed.
23:11I've come repaired anyway.
23:13I wasn't sure what to bring.
23:15Or at least a willing learner.
23:18So you're looking at something that's going to rest between those two.
23:20And you may need to turn it to find those three points of contact.
23:25Well, that could be improved upon.
23:29What would we have done today? About 50 metres?
23:34That's wishful thinking, James.
23:37As the tallest mountain range in Northern Ireland,
23:41the Mournes tower over towns and imaginary tales.
23:44So we're about to enter Narnia.
23:46We're out there, yeah, yeah.
23:47Shall we hold hands?
23:48And jump?
23:51Jump, hop, skip, in the footsteps of magical movies.
