00:00Being locked up, we only had access to, you know, a limited amount of stuff.
00:09So we had to eat out of cans and we had to, you know, use only a microwave and toast oven.
00:14So now that I'm home, I can, you know, switch to, like, fresh ingredients, I can use my
00:18real oven, you know what I mean, I can use olive oil instead of butter.
00:22So a lot of the stuff I can substitute, but the actual cookbook, you know, just shows
00:27what we were subjected to using, you know what I mean, the only things that were available
00:31to the inmates in the prison system, in that particular jail.
00:35My favorite recipe in Commissary Kitchen is probably the macaroni salad with apples.
00:41That was my after school meal, like, every day I come home from school, my moms wouldn't
00:46be there yet, she would have a big bowl of macaroni salad in the refrigerator, so that's
00:50something, like, close to my heart.
00:52I didn't get real serious about it until I was locked up and, like, see how, you know,
00:58you take your time, you prepare in there, you can make different things, and it's fun.
01:01We didn't have any measuring cups or measuring spoons or nothing like that, so we would just
01:05look at it and make sure, and then taste it, you know, every once in a while, taste it, make
01:10sure it's right.
01:11The little bit of time that we spent cooking, like, took our mind off of where we was at
01:14for a little while.
01:15Diet is definitely one of the main things, you know what I mean, that needs to be really, really
01:20changed in the prison system, they need, they need healthier food so people can actually
01:25get rehabilitated and be healthier, come home healthy.
