00:00So there are two different kinds of burger people out there.
00:02The ones that think American cheese is hands down the best cheese for a burger,
00:04and then there are all the other people who are completely wrong.
00:06And I'm not saying there isn't a better cheese out there,
00:08but there is nothing that melts or holds up quite like American cheese on a perfectly cooked burger.
00:12But now I think the real question is,
00:13could shredded American cheese work better than the normal sliced cheese?
00:15See, just the other week, I was asked to cook hundreds of burgers
00:17for the Lakeland Pig Fest down in Florida.
00:19And for all those burgers, we actually use the shredded American cheese
00:21from the brand new school American cheese.
00:23And there's one really cool thing we get when we're using shredded cheese,
00:25and that's this beautiful crispy cheese skirt that starts to form
00:27while the burger finishes cooking.
00:28And because I'm basically recreating the burger from that event,
00:30I'm also going to make the same sauce that we serve there.
00:32It's a really simple sauce that I came up with a few months ago,
00:34and it's actually based on the burger sauce that I put in my cookbook.
00:36And even with the sauce from the event being such a massive hit,
00:38I'm also going to try adding one new ingredient,
00:40and that's this Barron Burton's W sauce.
00:41And after we get everything mixed together,
00:43we're going to cover this up and then pop it in the fridge for at least 30 minutes,
00:45that way we can let those flavors get to know each other.
00:47And that's why I usually recommend making this first,
00:48or better yet, the night before.
00:50Now instead of pickles for this burger,
00:51I recommend using tamed or candied jalapenos by Mount Olive,
00:54which in my opinion, really pulled this burger together.
00:55Then we're going to place down two of our patties before we cover the top bun
00:58in a bunch of our burger sauce, and then cap this thing off.
01:00And when you have this many layers of texture and flavor,
01:02there's no way this burger isn't going to be incredible.
01:06That crunch from the crispy cheese is just next level.
