13:56Then, a group of determined locals decided, enough.

14:22They also create a thriving ecosystem for birds and fish.
14:25But back in 2002, things were very different.

14:40known as wastelands across the Bahamas and other parts of the world.

14:50trash, they dumped it in a wetland area for 23 years now, and we've taken...

15:00all 33 of the national parks across the Bahamas.

15:06It is a unique place, and they call this Bonefish Pond.
15:10But it's a Bonefish, and it's certainly not a pond.

17:45art in life it's time to get cooking I've been inspired by so
17:50much today so I need a dish that captures all those island flavors
17:55of course when you walk around the Bahamas you're surrounded by sea
18:00which means there's an abundance of fish I've got a beautiful snapper here and
18:05you can fry it up you can make it really crispy and flaky and flavorsome
18:10and I'm gonna get some cuts into it so just cut in like
18:15that create those little slits into the fish turn that over exactly the
18:20same thing just into the fish like that now
18:25we'll get a bit of lime juice in there
18:30my mum used to do a little bit but they do so much more out here is they
18:35squeeze the lime into their fish into their chicken now what about that sea
18:40seasoning you know when we think about it at home you know it's normally a sort of dry
18:44ingredient isn't it
18:45but here it's all about the herbs the onions the
18:48woodpepper and
18:50of course a bit of all the spice all those things are incorporated into a seasoning
18:55going into our food processor
