01:22the finalists have just two challenges remaining before one of them is crowned junior bake-off
01:39champion one of us is taking this three of us on i'm in the finals yes i'm so happy
01:47why is it a laminator a laminator maybe it's like space food i'm quite nervous about being in the
01:53final but i've been practicing loads no we have a dough attachment there's a dough like danishers
01:58or something i've loved baking ever since i was like little and little me would not believe that
02:03i'm here right now three two one finals i think if you have a really good technical i'll have that
02:10sort of confidence that i have a pretty strong position to win morning bakers well done you made
02:17it to the final of junior bake-off oh wow and today's technical challenge has been said by rav rav do you
02:28have any words for the bakers even though it's the final remember to chill well it is a technical
02:36challenge it is judged blind so uh look just go will you you should know by now i mean i shouldn't
02:42really have to say it every day should i for your technical challenge rav would like you to make
02:47her strawberry and clotted cream danish pastries denmark of course famous for lego as in lego my
02:55danish or i'll tell my mom your six buttery danishes must be topped with an elderflower and strawberry
03:00jam and a clotted cream creme musseline you have three hours in which to make rav's clotted cream
03:07and strawberry danish pastries on your marks get set bake
03:13oh fun the bakers have all been given the same ingredients oh we have a vanilla bean pod i've never
03:23seen one and recipe literally borderline a book to make rav's strawberry and clotted cream danish
03:29pastries add the flour yeast sugar and salt drizzle in the melted butter i'm dropping it everywhere and
03:36then the water continue to mix until the dough starts to form i've never made danishes before it should be
03:41fine it bounces back so now i'm just gonna cover it with my cling film i'm just gonna let it prove for
03:4740 minutes now rav the final technical what do we have today liam we have these six beautiful
03:58strawberry and clotted cream danishes sounds so good the magic of this challenge is all in the dough
04:04once they've made their dough they're gonna rest it for a little bit before adding in their butter when
04:09they add in their butter they have to make a series of turns we want three turns in total we want these
04:14beautiful defined layers and then after that are they making a cream the bakers will be making
04:19a creme mousseline they have to also make an elderflower and strawberry jam and they have to
04:24compress some strawberries which is very chefy in three hours that is very difficult ravneet it's
04:30the final liam charles i'm gonna take this one oh that crunch was great oh the layers the pastry is
04:43light it's flaky the creme mousseline is creamy the jam packs loads of flavor it's not too sweet
04:50this is the best technical ever i can imagine today rav that you want these pastries to be shop
04:56worthy exactly i want them fit for a king fit for me fit for a king like you king charles
05:03to make the crown musseline heat the milk to just below boiling point in a small saucepan
05:14and then in a separate bowl whiskey egg yolks sugar salt and corn flour together to make smooth paste
05:19hey mika hi harry so i've actually never heard of um cream musselini so it's my first time musselini sounds
05:29italian does it yeah to me i don't know this seems hot now once the milk is just below boiling pour the
05:36milk over the egg yolk mixture or whisking constantly nope i mean there's all these different creams
05:41cream pat creme diplomat creme and then we've got this new one are you a baker am i a baker who do you
05:48think does all the examples when they talk about them in that separate area return mixture to the pan
05:54then heat over gentle heat until the mixture begins to thicken come on thicken when they're happy
06:00with its consistency some of the bottom has just scrambled but it's fine now the bakers must take
06:07the step that will transform their custard mixture this is the clotted cream it looks kind of odd to be
06:12honest into a luxurious creme musseline oh so the butter is going to go in slowly
06:23so i'm just going to check the consistency of it hmm quite thin i think it will sap so i'm not sure
06:30it needs to be liquid enough to pipe it's nice and smooth but not so loose that it leaks out of
06:35the danish pastries that is why i won't worry it seems very thin have you made danish pastries before nope
06:41my mum loves them is your mum coming to the um big dude later my mum my dad my three aunties
06:50how old are the aunties 50 one of them is okay all right yeah she's got a good pension
06:57sorry i'm happy with it once they're satisfied with their filling the alpacas are they back this year
07:03maybe hopefully are they one of them ended up on the barbecue last year no it needs to chill in the fridge
07:10okay fridge fridge fridge how thin was your mousseline oh mine was a bit thicker but i think this allows
07:17the bakers time to crack on with their pastry turn the dough out then with a rolling pin roll the
07:22dough out to a square measuring 20 by 20. to achieve the layers that so delighted liam butter the butter
07:29needs to be locked into the dough we have to fold the four corners in and over the butter you don't need to
07:36be my friend and i need to be the dough's friend pinch pinch pinch pinch otherwise the butter will leak
07:42out we don't want that roll it out to rectangle approximately 45 centimeters long rolling is a
07:49deceptively delicate operation kind of breaking the butter up so it's a bit easier to roll any tears
07:58will allow the butter to seep out my dough is starting to split while a heavy-handed approach
08:05i'm basically beating this up not that violent usually we'll crush the butter and dough together
08:11then it won't puff up later just gotta get those layers in
08:17pull this over there we go now i need to chill it for 20 minutes
08:22in the fridge fancy vanilla for the compressed strawberry garnish slice the vanilla pod in half
08:30hey the room air hello harry what are you doing to that stick insect getting the eggs out it's not

08:40vanilla sugar into the backpack and shake it so it coats up all the strawberries use the backpack

08:49contraption yeah okay vacuum seal whoa we actually had my nan vacuum packed when she passed sorry for
08:59your loss we thought it was one of the options at the undertaker's but it was actually one of the
09:04options that they caterers we got those two mixed up cannot okay interesting how long do we have left
09:13i wonder if when i eat a danish i can then speak danish
09:22how them's minuters back here do a halvage ignom what the heck that's 90 minutes bakers

09:35remove the pastry from the fridge then with a seam on the left hand side roll the dough into rectangle
09:39approximately 45 centimeters long seam on the left is this the seam to achieve a maximally flaky pastry
09:48oh no it's burst it's burst it's burst the bakers must roll fold and chill it two more times this
09:54is actually working beautifully for me hey kita we're doing a junior bake off talent focus group

10:14it reaches 104 degrees they must also make their jam some of them look a bit big out of the whole recipe

10:25something here we met and we had something special 104 degrees but it needs a little bit of thickening up

11:11the bakers now face the trickiest part of their final technical to assemble cut six squares measuring
11:1910 centimeters by 10 centimeters does anybody know what a danish looks like because i don't know
11:25fortunately raps provided a drawing oh my goodness look at the instructions what on earth fold a square
11:34and half diagonally so you make a triangle like this with a knife make two cuts starting from the longer
11:39edge going towards the point but stop before the cut meets let's make sure the edges are nice and neat
11:44hi isla who is the least entertaining and why a lot of them have said liam i would say liam take one
11:51of the corners of the pastry and fold it all the way over to the opposite corner fold the other side over
11:55the top so you have a diamond shape with two loops at the end oh yeah my loops there it is these look so
12:01bad that's fantastic and you're happy to be entered into the prize draw yes please the prize is a stack of
12:08liam and raps books again oh yes okay that's mommy danish daddy danish baby danish debbie danish
12:17where's the postman danish it's debbie's father the shaping isn't the best but most of it's getting
12:24covered fill the small square in the middle of each danish with a teaspoon of creme mousseline
12:29it seems extremely thin actually i'm not sure i cooked it for long enough
12:32oh no the custard is getting everywhere once filled the danish pastries need to briefly prove
12:39at room temperature everyone's creme mousseline is really thick so i might restart mine it doesn't
12:43matter for the actual filling when i'm piping on top i want that lovely ripple shape now it's just
12:48waiting and waiting and waiting come on mousseline thicken up come on mousseline
12:56do you want to do the game where you have to not open your eyes at the same time oh yeah
13:01pulse you just have your eyes open the whole time yeah cheetah look sicker than last time done
13:11how do we help so far i've found i can speak danish after i've eaten a danish and mandarin after i've
13:18eaten a mandarin so uh what once we place a teaspoon of the strawberry elderflower jam on top of the
13:31cream mousseline i'm gonna make sure the egg wash is everywhere okay let's go now i need to bake
13:37for 20 to 22 minutes good luck all of the butter is basically leaking out right now so they kind of
13:45dropped to the side it's so annoying it can't be danish looking a bit lopsided oh my god miko
13:51yours are great thank you they look so good oh look at that they look fantastic i'd never had a
13:58danish that high no but danish people are quite tall aren't they they are yes how long do we have

14:26like the fillings kind of oozed out one minute bakers here we go time for a bit of a panic
14:32uh-huh pipe a thin delicate ribbon still over this one well these are probably gonna melt i think it's
14:40a ribbon she didn't really specify i am happy oh don't i've got jam i'm very pleased actually
14:48get them on i don't know if that's delicate though that's it bakers time's up
14:53up done step away from your bakes bakers if you could please bring your pastries forward and
15:02place them behind the photographs of yourselves ready for judging well done everyone everyone's
15:06elimination looked great how was it bakers all right yeah good ish that one's actually quite fun to make
15:13last technical ever
15:25the baker's final technicals will now be judged nice to see him it's rave and liam
15:33we were looking for six buttery danishes filled with a strawberry and elderflower jam
15:39and topped with a clotted cream creme mousseline should we start there let's do it
15:46they look well baked gorgeous amounts of lamination as well some of them aren't as well
15:51shaped as the others but overall they look pretty good oh it's delicious it's buttery but with some of
16:02the pastry it hasn't risen up completely so you have a layer that's quite dense
16:09some of them look good but this one there the shape looks more like a crossword
16:17inside it's a little bit dense the taste of the jam is beautiful and the creme mousseline is gorgeous
16:23okay next one
16:27these look very pretty we have even bakes and we can see the lovely layering across the side
16:32creme mousseline is gorgeous jam is lovely and i love the flakiness you get in the middle of your
16:39danish pastry last one some of them look slightly tight so i wonder if they were proved for long enough
16:49your creme mousseline great texture but the jam for me is a little bit too sweet you might have
16:53cooked it out for way too long there is quite a heavy dough layer at the bottom they haven't grown as much as
16:58they could have but yeah good attempt okay last technical finito
17:06rav and liam will now rank the danish pastries from last to first
17:12in fourth place we have this one keto the texture of your creme mousseline was really good but your jam
17:18was a little bit too sweet and your pastry was slightly under baked okay in third place we have
17:23this one miko they were very neat but the dough is a bit doughy in second place we have this one
17:35the male this one here is a bit of a mess but the rest they were neat they were baked really well and
17:41the flavors were spot on thank you which means in first place we have isla
17:47the dough was baked perfectly really light really flaky and we really liked your creme mousseline well
17:54done well done bakers come and have a look at each other's danish pastries and we'll see you
17:59shortly for the showstopper challenge it all tasted really nicely with her on the final technical
18:05i got first base like what did you see the results of the survey haric we haven't gone through

18:13i got second so i'm quite happy with it i can almost feel the trophy now i'm obviously a bit
18:19disappointed with the result coming last but all up to the showstopper now

18:37welcome back bakers it's your last ever bake in the tent and for an awe-inspiring jaw-dropping and
18:49potentially junior bake-off winning showstopper challenge rav and liam would like you to bake
18:55a three-tier cake inspired by your very best summer's day out your cake must have at least three tiers and each
19:04tier must consist of two layers of sponge and one filling the flavors are entirely up to you but
19:10must be inspired by your favorite picnic treats and seaside snacks welk buttercream anyone you have
19:18three hours in which to make your my best summer's day out cake on your marks get set bake
19:26so who do you think she's gonna win it's too close to call it's all about the final showstopper i'm
19:36making a california inspired beach day out cake today is my perfect summer day out because we get to see
19:44who will be crowned the winner of junior bake-off i am starting with caramel and the raspberry coolie
19:49there's no room for error oh geez everything has to be perfect the bake the decoration the overall
20:00aesthetic it has to be spot on oh my god i was forgetting to stir this i want to see tall structures
20:07and most importantly i want to eat very well baked cake i'm using the juice of a lemon we'd like to see
20:14some classics but they should be dialed up whipped egg whites for my zebra cake by adding things in
20:19like zest i think i dropped the seed in different types of fruits i found it what i do want is for
20:25every tear to be a different flavor i don't want to be bored lemon shawries sweets stacking cakes can
20:32be very risky so they have to make sure that all of their cakes are the right texture this texture is
20:37very fluffy i'm really happy with how it's looking because what we don't want for it to fall apart
20:42sorry this is kind of crystallizing right oh no oh no oh no it has to scream summer i mean look at
20:50the sun today man it's nice i'm gonna restart it it's just annoying because it's a bit of a waste of time
21:00isla tell us about your summer day out teared cake the top layer is going to be a circus tent nice and
21:06then the middle layer is going to be a zebra cake with caramel sauce for my buttercream caramel drizzle and
21:11popcorn and then the bottom layer is going to be a black cocoa cake with cookies and creams just
21:16around buttercream wow no pressure but that's really ambitious today is the day where i'm going
21:20to bring it all out isla's big top will be a quadruple layer confetti cake kept moist with sour cream
21:28while the black cocoa cake will mimic a famous chocolate biscuit snack but hopefully without
21:33the brittle biscuity texture and when you stacked your cakes were they stable yeah yeah they were
21:39stable i hope you've got enough time to pull it all together yeah decorate it because i'm excited
21:44about eating it good luck thank you let's put it in now let's put it in we don't know if there's a
21:48zebra stripes yet until we cut into it isla's zebra cakes revenue will be the first to see aren't the
21:55only ones that will reveal their secret pattern so the bottoms here is going to be an american flag

22:07looks a bit top heavy oh wrong way around wrong way round of course it is so you've got a what is it

22:30miko hopes to trump the other bakers through sheer scale the base will be red white and blue velvet cake
22:36pecan pie flavors will fill the middle and chocolate and lime the third tier three stacked chocolate lava
22:43cakes will provide even more vertical real estate but the whole idea of molten lava cake is that it
22:50will melt yeah so if you put something on top it will just that is true so i'm gonna see what happens
22:56have you practiced i've only practiced it once and i haven't practiced any decoration okay you've got a lot
23:03to do yeah yeah i do but you have a plan of action so if you stick to it you'll be fine yeah it looks

26:21day out cake is inspired by a day out last year when we went bosnia with my family and cousins i've never
26:29been to bosnia what's that like it's quite nice actually we went rafting so i just thought i might
26:33as well bring it to life in a cake umair will liberally cover his cake in fondant to depict the
26:39mountains and river that featured in his rafting adventure a chocolate and hazelnut cake will sit on
26:45top of two lemon and blueberry cakes so how come you've decided to make two tiers of lemon and blueberry it's
26:51just easier yeah of course lemon and blueberry is the colors of the flags of bosnia as well but because
26:57it's the final maybe the third could have been a different flavor um i think i would yeah but because
27:05of time it seems chill yeah keep calm and carry on thank you like it nice one bro thank you that's the
27:12batter for the chocolate and hazelnut cake oh it's leaking while juggling their batters and cakes done
27:20oh phew the bakers also need to make headway i just need to make a jam and loads of buttercream
27:27on everything else cherry jam lime cream cheese swiss buttercream molten lava cake and more starting with
27:33the sumptuous fillings they're complaining that i'm doing two tiers of lemon and blueberry cake
27:38so mean and silky smooth buttercreams so i'm just making my swiss meringue buttercream at the moment
27:44that they hope oh i always have to crack one of them will elevate their showstoppers
27:49needs to get to 60 degrees so it's food safe
27:55multitasking again i'm gonna whip it up now there's so much going on
28:03well it's the last challenge of the final and who better to entertain us than my son gary from my

28:15my first wife what you're talking about gary you're only 12 how they joke daddy i see yes she came
28:20around about tea time and i got a delivery from international parcel delivery service based in the
28:26states feddix no i only gave her a cup of tea 90 minutes bakers oh my gosh you're halfway through
28:34i need that to hurry up though a lot we need to work on that don't we gary i think so take that rav
28:43it is ravin liam have demanded perfectly baked cakes test it maybe when the bakers are confident
28:51they've achieved this oh right in the freezer you go they must chill them quickly so they don't melt the
28:57fillings during assembly have you seen harry anywhere no i haven't nowhere had problems with
29:07under-bakenness before so i sort of wanted to redeem myself in the final hello hi ayla what are you
29:17doing behind a tree just got an interest in horsey culture the lemon and blueberry sponge it's looking
29:25quite good the cake's not gone according to plan it's really dense oh my god i want to cry it see
29:33it's so dense in the middle it needed the sour cream basically i feel like my chances of winning
29:40are slipping away from me i'm going to start sucking these on now onto the cake board as the grand final
29:53approaches its climax i'm running out of time and i'm not having that happen to me isla has no choice
30:00it's really dense other than to make the best of her sponge it's a bit slanty and she's not the only
30:07one they're coming up brown but i don't know if that's because of the color of the cake with cake

30:28rodent but because it was a v-neck at the bottom half of my face was cold chinchilla no terrible

32:40fondant i'm gonna put some of the decorations i've already made just to bring it to life a bit more

38:07i think it's some of your neatest work you've ever produced in the tent thank you
38:17i like the different textures the different techniques that you showed off slightly low
38:21sided though yeah just a little bit very top it is a mint chip cake with a mint buttercream
38:27beautiful looks baked it's a raspberry apple cake with a raspberry jam and then there's a
38:33salted caramel cake with a salted caramel buttercream
38:41okay your mint chocolate chip i love that sponge it has a really deep chocolatey flavor
38:46your raspberry ripple it's well baked and nothing's too sweet which i really like
38:51the flavor of your caramel cake i love but for me the sponge is just slightly over baked
38:58but i think it's a really good spread of three different cakes all together because every single
39:02one tastes really unique so overall you've done very well thank you thank you nice one

39:18i like the contrasting colors textures and the way that you've managed to give it more height with
39:23these molten cakes on top overall it's a great design
39:26so the top one chocolate cake with lime cream cheese frosting great it's a nice little cute cake
39:35yeah the middle tier is pecan pie inspired cake with pecan filling really nice layers there the bottom
39:42tier is red velvet blue velvet and vanilla yeah i really like how you've constructed this american flag in
39:49the cake the chocolate cake is like a lovely chocolate lime cloud gorgeous and the pecan is my favorite
39:59there's so much pecan texture in there thank you i think the velvet cake is my favorite with the

40:20the fondant work is so neat it tells a story thank you the top tier is a chocolate hazelnut cake with
40:27chocolate buttercream they look pretty fudgy there and there's two layers of lemon and blueberry cake
40:35filled with lemon buttercream and blueberry jam i really like the lemon and blueberry i like how punchy
40:41that blueberry is one of them is slightly under compared to the other but they're really good cakes
40:46and your chocolate hazelnut even though i love how rich it is it's borderline raw

41:01i think it's a lot of your latest work but it's so fun it screams funfair thank you oh that's
41:08gigantic great layers though thank you the middle layer you have a zebra cake with a caramel swiss
41:13lemon buttercream caramel and popcorn look at that wow look at the zebra stripes that's really cool and the
41:19top layer is a confetti cake with a whipped lemon masquerone filling and masquerade strawberries
41:23whoa let's say whoa look at that it might look slightly messy and a little bit disorganized on the
41:30outside but the inside is really triumphant the zebra cake is gorgeous i'm obsessed with
41:36this thank you and the chocolate one looks hefty okay i like every single cake there is something there for
41:46everyone your chocolate sponge it's fudgy it's rich if anything i think it could have just done with
41:50a bit of salt or something just to like lift it and then you have your zebra cake the flavor profile
41:55is really good the confetti cake is maybe my favorite one it's not your like standard confetti cake that's
42:01like really sweet and sickly i think you've done such a good job in all three hours thank you
