00:00Morning. Oh, look, there's Liam. Let's do the old head pinch trick.
00:09He's got a tiny head.
00:12Everything OK, Harry?
00:14Yeah, Liam. Everything's fine.
00:17Welcome to Junior Bake Off.
00:20What are you doing, Liam? Wait, stop. I didn't mean anything by it.
00:24Why are you running? Stop it.
00:26Come here. Help.
00:28Last time, it was Pastry Day.
00:30Woo-hoo!
00:31Isla showed her artistic side.
00:32It looks nothing like you, OK?
00:34You're a lot more beautiful than this.
00:36Winning Starbaker for the second time.
00:38Isla! Well done, Isla.
00:40But Cole's shoe fell flat in the technical.
00:43Oh, my God, they are burnt.
00:44And his flavours failed to pack a punch in the showstopper.
00:47It needs more seasoning.
00:48So he narrowly missed out on a place in finals week.
00:51Oh, dang it.
00:53Oh, so close.
00:55This time, a new batch of bakers take on cake day.
01:00What is your big dream?
01:01Meeting Paul Hollywood.
01:02Oh, sorry to disappoint.
01:04With a lamb-bicious technical.
01:06Bleh! Bleh!
01:08And a showstopper to give you nightmares.
01:10I am making a cat cake with a knife sticking in it.
01:14Who will achieve Starbaker dreams?
01:16That's the winner for me.
01:18And who will drop...
01:19Oh, scruffles.
01:21...a cake clanger.
01:23Oh!
01:24What's a worst nightmare cake without a worst nightmare scenario?
01:32It's so exciting. It's so scary.
01:35For this new group of bakers, two cake-based challenges await.
01:39Oh, my gosh.
01:40Wow.
01:41We're actually here.
01:42I cannot believe it!
01:44I'm here!
01:45I'm here!
01:46I'm here!
01:47I'm here!
01:48I'm here!
01:49I'm here!
01:50Intense silence.
01:51I'm so excited.
01:52Mum said it's going to be a bit like a wedding.
01:54It's like you prep for years.
01:56And it just goes so quickly.
01:58Oh, my God.
01:59Good luck.
02:01You too.
02:02I've practised a lot.
02:03I cracked my fast egg when I was two.
02:05My absolute favourite thing about baking is the use of sprinkles.
02:09I'll say it once and I say it again.
02:11I adore sprinkles.
02:13Look, it's right over here!
02:18Morning, bakers.
02:20Welcome to the Junior Bake Off tent.
02:22The J-Bot.
02:23How are you all feeling?
02:24Excited.
02:25Yeah, a little bit excited.
02:26There's a lot of information to take in.
02:28I find the best way to impart a lot of information in one go
02:31is in the form of a rap.
02:33Ah, yeah!
02:35Welcome to the tent where the vibe is sweet.
02:37The sponge is light and the bakers compete.
02:39Whisk's in the air.
02:40Flour on the deck.
02:42Rav and Lee have got to earn their respect.
02:44Mixer's standing proud on the side.
02:46Piping bags ready for that buttercream ride.
02:48Starbaker dreams from the very start.
02:51So preheat your hopes.
02:52Whip up your dreams.
02:53In the Bake Off tent, you're all part of the team.
02:56Mic drop.
02:57Now, it's cake day and your technical challenge has been set by Liam.
03:06Liam, do you have any tips for the new batch of bakers?
03:09I don't want to feel fleeced with this challenge.
03:11So don't be sheepish when it comes to dipping.
03:14Well, it is a technical challenge.
03:16It's judged blind.
03:17So make like someone who insults a seaside attraction and disappear.
03:22For your first technical challenge, Liam would like you to make six of his lamingtons.
03:30This classic Australian sponge dipped in chocolate and rolled in coconut.
03:35Which, incidentally, is how Kylie Minogue prepares for a gig.
03:39Your lamingtons must be decorated to look like cute little lambs with a buttercream fleece.
03:44You have one hour in which to make Liam's lamingtons.
03:48On your marks, get set, bake!
03:53Oof.
03:54That's a lot of stuff.
03:55Oh my gosh.
03:57The bakers have each been given the same ingredients.
04:00Oof.
04:01Sour cream.
04:03And simple recipe.
04:05To make the sponge melt the butter in the microwave.
04:08To make Liam's lamingtons.
04:10A bit nervous.
04:11It's hard to do something you've never really done before as a first try.
04:16I don't know what a lamington is.
04:18I haven't a clue.
04:19Come on, Michael!
04:20Where Eve?
04:21I've heard of lamingtons before.
04:25I've tasted them lots of times.
04:27Lambs are really cute.
04:29Meeeeee!
04:30Ethan, your turn!
04:32Meeeeee!
04:33Woo!
04:34I can't believe how cute these are.
04:39These are my lamingtons, originally from Australia.
04:42But this is my take.
04:43They're very neat and very beautiful.
04:45Just a simple vanilla sponge with sour cream and oil, so it allows the cake to be very moist.
04:50But also, the mix itself will be very loose and liquidy, so when they divide in the actual mixture between the moulds, it has to be even.
04:56Because we want every cake to be the same size.
04:59Level and well baked.
05:01Mmm.
05:02The most important part when it comes to these lamingtons is the assembly.
05:05We want a neat dip of the chocolate icing.
05:08It has to be coated in desiccated coconut and decorated with buttercream.
05:11They also have to add sweets for them to look like lambs.
05:14I want to eat this, quite desperately.
05:16Take your lamb.
05:18Look at that sponge.
05:21The sponge is beautiful, it's light, and that coconut buttercream, ooh.
05:26Can you do like a lamb sound?
05:27Bah!
05:28Bah!
05:29Bah!
05:30Bah!
05:31Sounds like a burp.
05:37With their butter melted, the bakers can begin adding the rest of their sponge ingredients.
05:42In a large bowl, whisk together the melted butter, golden cast sugar, sour cream.
05:47Whoa!
05:48Never used sour cream in a cake before.
05:51Hi, Lila.
05:52Hello there.
05:53How are you?
05:54I'm good, thanks, eh?
05:55That's very kind of you to ask.
05:57I know, oh, yes.
06:00I can see we're going to have a lot of fun, Lila.
06:06Often found practising her fancy footwork, Lila lives in the idyllic Northern Irish countryside
06:11with her brother, Amos.
06:15Look, eggs!
06:16And their chickens.
06:18Perfect.
06:19Wonderful.
06:20My grandparents used to have a farm.
06:22Yes!
06:23Your grandparents?
06:24You've got a farm.
06:25What a fantastic facility.
06:29My grandparents have got a farm.
06:31E-Y-Y-Y-O.
06:32Where are you?
06:33D-d-d-d-d-d-d-d-d-d-d-d-d-d-d-d-d-d-d-d-d-d-d-d-d-d-d-d-d-d-d-d-d-d-d-d.
06:39Wonderful!
06:41Good job, Harry.
06:42Stitch.
06:43We've got a stitch.
06:44Divide the mixture evenly between the eight sections of the mould.
06:49have a distinctly loose batter
06:50due to the addition of sour cream.
06:53Wow! It's getting everywhere.
06:55So the bakers must be extra careful
06:57when pouring the batter into the moulds
06:59to ensure each cake is identical.
07:03It's not very helpful that I'm getting it all everywhere.
07:06It looks pretty smooth. Maybe it's all right.
07:09Where have you joined us from today, Harvey?
07:11So I live in Cornwall.
07:13Cornwall, of course, lovely, rugged coastline.
07:16Very macho coastline, isn't it, in many ways?
07:18Yes. Unlike Kent,
07:19which is not afraid to show its feminine side.
07:22Ah, lovely.
07:25When he's not baking, as well as having fun on the beach...
07:28Let's go.
07:33Harvey likes having a wheelie good time
07:35practising jumps and tricks at the local BMX track.
07:40Awesome.
07:41Bake for 16 to 18 minutes or until risen and golden.
07:44I've put them in for 16,
07:46but I'm probably going to track them at 15.
07:48Please, welcome.
07:51There we go.
07:52Done.
07:52Morning, Ethan.
07:53Hello.
07:54Nice to meet you.
07:55I like your rap this morning. It was good.
07:57It was good, wasn't it?
07:58Yeah.
07:58Welcome to the tent where the vibe is sweet.
08:00We've had some interest from Drake.
08:03Okay.
08:04Charlie Drake.
08:05Dr Alan Bingham here, of course, is a sheep dog,
08:15which makes it even more embarrassing
08:17that he was accused of worrying sheep.
08:19Yeah, he was caught outside their pen
08:22shouting that they hadn't put enough money aside
08:25for their old age.
08:26I think we all worry about that, don't we?
08:2930 minutes, bakers.
08:30You're halfway through.
08:32With the lamington sponges baking...
08:35They're okay.
08:36They're okay.
08:37Oh, my goodness.
08:38Penelope has realised she's missed a vital ingredient.
08:42Eggs?
08:43You okay, Penelope?
08:44Oh, I forgot to put the eggs in.
08:48Oh.
08:50I think I may start again.
08:52Are eggs that important in baking?
08:54Yes, they are.
08:55Yeah.
08:55They're fundamental.
08:56The building blocks.
08:57Hello, sorry, that's probably my mum.
09:00All right, mum, yeah.
09:01I'm at work, aren't I?
09:02Told you, yeah, junior bake-off.
09:04No, not mastership.
09:05I didn't get that job, no.
09:08With her family, Penelope likes to teach her brother, Max, origami.
09:12Get set.
09:13Go.
09:14Oh, look, there's a bat.
09:17And go on historic walks with her mum.
09:19Founders of the suffragette movement.
09:23Right, let's do this.
09:25While Penelope races to remake her batter...
09:27I'm making the cake again.
09:30The rest of the bakers move on to the chocolate coating.
09:33In a small saucepan.
09:34Heat the milk and cocoa powder.
09:36This is for the chocolate coating that I'm assuming I'm going to dip the lamingtons in
09:39and then cover with the coconut for the sheep's fleece.
09:42I've never made, like, anything like this before.
09:45It's an Australian thing, apparently.
09:48They're going to put something on the barbie and then they make themselves some lamingtons.
09:54You may be wondering what part of Australia that person's from, though.
09:57Yeah.
09:58They actually grew up in South Africa.
09:59Yeah.
10:00I've not been to Australia, but I really would like to go...
10:03Let's name some of the famous Australians, shall we?
10:05Yeah.
10:06Cali Minogue, your turn.
10:09I don't know any Australians.
10:11You don't know any Australians?
10:13Well, it's only...
10:13I think it's Cali Minogue and, um, I think that's it.
10:17Yeah.
10:19That is boiling.
10:20Once the milk comes to the boil, pour over the dark chocolate and leave to allow the chocolate
10:25to melt.
10:26It's not boiling yet.
10:28The milk mixture must be hot enough to completely melt the chocolate.
10:32If the temperature is too low, the coating will be lumpy and won't fully cover the lamington.
10:37You don't want any clumps in it.
10:39It's quite a few lumps in it.
10:41Why is it so lumpy?
10:42Yeah, I think that's good.
10:44Chocolate coating, done.
10:47Oh, good.
10:49How many minutes do you think I have?
10:55What the...?
10:56Dr Alan Bingham, is that you?
10:59Huh?
10:59I told you, stop worrying sheep.
11:02Sorry about that.
11:0415 minutes, makers.
11:06You've got 15 minutes left.
11:09Aye, aye, aye.
11:10Then I'm going to make the chocolate.
11:13Just going to check my cakes.
11:14With their sponges nearly ready.
11:16Icing sugar.
11:18The bakers can prepare for decoration and make the coconut buttercream.
11:22Very coconut-y.
11:23As well as a punchy flavour, the buttercream must be beaten until it's smooth and fluffy.
11:28That buttercream is really thick.
11:30Or it will be too solid to pipe.
11:32I am very happy.
11:34It's a bit thick, but I think everybody's thick.
11:36Hello, Harry.
11:37Hello, Uma.
11:38How lovely to meet you.
11:39Lovely to meet you as well.
11:40Almost a dream come true.
11:41Almost.
11:42What is your big dream?
11:43Meeting Paul Hollywood.
11:45Oh, sorry to disappoint.
11:47I've just loosened my buttercream up with a bit of water because it looked quite thick.
11:51So, Humphrey, a little bird told me that you like quizzes.
11:54Is that right?
11:55Yeah.
11:56What sort of pub quizzes or...?
11:58I don't normally go down to the pub, but I'm so...
12:00Oh, you're not normally allowed down pub because you get in trouble.
12:04Yeah.
12:05They're there.
12:05They're ready to come out now.
12:06Whoa.
12:07Whoa.
12:08They've risen really nicely.
12:10All cooked.
12:11I feel like I have everything under control.
12:14Oh, no, they're still jiggling.
12:16In case her second batch isn't baked in time...
12:18I could just use this.
12:20Penelope has a backup plan using her first eggless sponge.
12:23I'm going to keep this if they're not cooked.
12:26I'll just crumble it up and squish it together.
12:28What's this for?
12:34Imminent threat of nuclear war?
12:36Dr. Alan Bingham, I told you.
12:38Stop worrying cheap.
12:40Ten minutes, makers.
12:42Keep calm.
12:45Assembly.
12:46Choose the best six.
12:48Trim the top of the cooled cake so each sponge is perfectly flat.
12:51Looking good.
12:52Some are bigger than the others, but it should be fine.
12:54I'm going to put them in the chocolate and then dip them in the coconut.
12:58The lamingtons need to have an even coating around the entire cake.
13:02Don't be sheepish.
13:03Get them in.
13:04Or the effect of the lamb's fleece will be lost.
13:07You've got to drain the excess off.
13:11This is where it could all go.
13:16I'm going to ditch the fork.
13:17Oh, my God.
13:20And roll the desiccated coconut until completely covered.
13:24So, may I just roll it in?
13:25Or some sauce.
13:27Right, next one.
13:27Five minutes, bakers.
13:29Oh, no.
13:31It's not enough time to do faces.
13:35Part small stars of buttercream for the faces.
13:39It's not co-operating.
13:40It's not co-operating.
13:40Just a brew.
13:43It is not.
13:46I'm just going to decorate them as much as I can.
13:51These look horrendous.
13:52One more sheep.
13:53I've got six.
13:55Does anyone need any help?
13:56Yes, please.
13:58How long is left in your timer?
14:00Seven minutes.
14:01Just take them all.
14:01I'll be fine.
14:02Take them all.
14:03It's fine.
14:03It's fine.
14:06It's okay.
14:07It's okay.
14:08One minute, bakers.
14:10That's chaotic.
14:11I think we may need to go with these.
14:13I forgot the eggs.
14:14We'll use these and just hope that it works.
14:17No problem.
14:18It's okay.
14:18Come down.
14:19You got this.
14:19You got this.
14:20What do you want to help with?
14:21Just put the ears on, please.
14:22Thank you so much.
14:26Pressure is...
14:27I've just got to put the marshmallows on.
14:29That's it, bakers.
14:34Time's up.
14:38You did so good.
14:39Okay.
14:40That was hard.
14:41That was a mess just up in a while.
14:43Little tiny sheep.
14:45Right, if you could come and place your lamingtons behind the photographs of yourselves on the front
14:48table, that would be fantastic.
14:51I say, look at those.
14:53Mine look so hungry, look.
14:54I'm going to be last I'd know it.
14:56Mine's a little weird.
14:59Mine ones look like they've run head first into a wall.
15:01The junior bakers will now face the judges for the very first time.
15:10Nice to see them.
15:11It's Rav and Liam.
15:13Okay, so we were looking for six lamingtons made from a classic Australian sponge cake,
15:19dipped in chocolate and rolled in coconuts.
15:22They look pretty good.
15:24Rav and Liam have no idea whose is whose.
15:27First one.
15:28In terms of height, they all seem a little bit different.
15:32A little bit messy, but good attempt.
15:34We wanted some really nice faces on top, especially to make them look like lambs, but they do look
15:39quite yummy.
15:43Your sponge baked really well.
15:44The buttercream that is on top, we needed them to be even across the board.
15:48Okay, next one.
15:51Yeah, they're pretty much the same height.
15:52There's a good coating of coconut.
15:54They look very sweet and they're all even.
15:56The sponge is excellent, really good, nicely baked, good chocolate coating, and the buttercream
16:03is coconutty.
16:04It's delicious.
16:05Very, very good attempt.
16:11Whoa.
16:12These ones are a little bit rough.
16:14The lamb decoration.
16:15We wanted them to be on top, not on the side.
16:17Oh, my gosh, look at that.
16:24Great cake.
16:25Well baked, it's light, airy, it's got a great height to it.
16:28The chocolate's a nice coating, coconut's there.
16:30It's just a shame that they're just a little bit messy.
16:32It looks like there's chocolate in the mix.
16:36Yeah.
16:37Maybe the cake was baked and then reformed.
16:43The sponge is incorrect.
16:44The whole idea of this lemon tin challenge is to have the chocolate coating around the
16:48sides.
16:48It's not right.
16:49We're missing the ingredient, maybe.
16:50But the buttercream is really nice.
16:53It's lovely and coconutty.
16:54But next time we need the sponge with the chocolate coating on the outside.
17:01These look very neat, very uniform, and they're all the same size.
17:05But we needed the lamb decorations on top.
17:09The sponge is well baked.
17:11In terms of the flavour of the coconut and the chocolate, it's spot on.
17:15Daddy lamb, mummy lamb, sister lamb, brother lamb.
17:18We have a variation of sizes.
17:23The flavours are great, it's just a little bit messy.
17:26The sponge is nice, but it is a little bit tighter than some of the others.
17:29But it's still very moorish.
17:33There's been an attempt at piping the faces on top, but next time we just need a little
17:37bit extra effort.
17:38I'm not too sure if they look like labs.
17:44The sponge is baked really well.
17:46Just a little bit messy on top.
17:49Last one.
17:50We need your lambentons to be coated properly in that chocolate and desiccated coconut.
17:55But we've got a good attempt at making a face on top.
18:00Because some of them are slightly bigger than the others, the bigger one is baked really well,
18:04but the smaller one is a little bit overbaked.
18:06I love the lamb faces, just a bit rougher on the edges.
18:11Rav and Liam will now rank the lambingtons from last to first.
18:15In eighth place we have this one.
18:19Penelope, what happened?
18:21I missed eggs.
18:22Okay.
18:23I liked that you thought on your feet and still tried to deliver some lambs.
18:26Yeah.
18:27In seventh place we have this one, Lila.
18:31I really like the decoration on top, but around the edges it was just a little bit rough.
18:35Umair is sixth, Ethan is fifth, Khadija fourth, and in third place Isla, leaving Harvey and Humphrey battling for the top spot.
18:45In second place we have this one, Humphrey, really good.
18:55They were very Moorish, very neat and delicious.
18:58In first place we have this one, Harvey, well done.
19:03Your sponge was baked to perfection, it was a great height, and the lambs on top, spot on.
19:08Meh.
19:09Well done.
19:10Well done, Harvey.
19:11Come and have a look at each other's bakes, and we'll see you shortly for Showstopper Challenge.
19:18I was manifesting it there, and I ended up winning, so I'm very happy.
19:22You know what, the cake was really good across the board, you know.
19:24Yeah, really good.
19:26I think Liam and Rab were very fair, because, well, it was not that good.
19:31I mean, it's your first technical, you lot will be fine after.
19:33Yeah.
19:33Yeah?
19:33You did really well.
19:35In my Showstopper I need to make the cakes all even, properly even.
19:39Just the Showstopper remains before Rav and Liam decide who is today's star baker,
19:46and who will be leaving the competition.
19:49Welcome back, bakers.
19:50For your first Showstopper Challenge, Rav and Liam would like you to channel your inner fears and phobias
19:55with a My Worst Nightmare Cake.
19:57Your cakes must have at least two layers of sponge and one delicious filling,
20:06and be decorated to resemble your worst nightmare.
20:12Whether that's forgetting your homework or ordering a pizza, and it's got anchovies on it.
20:17Oh, Mr. Anchovy, why are you so salty?
20:20But be careful how you choose your flavours, for whilst your cake must be a nightmare to look at,
20:25it must be an absolute dream to eat.
20:28You have two hours in which to make your My Worst Nightmare Cake.
20:33On your marks!
20:34Get set.
20:36Bake!
20:37There we go.
20:40Butter.
20:41In.
20:43What's your worst nightmare?
20:45I have the same dream, that I'm in a town hall and I'm upside down and I'm walking on the ceiling
20:51and it's all a bit weird.
20:53What brings on that dream?
20:54I don't know, dodgy food.
20:56How is that restaurant of yours, Ronnie?
20:59I've had a lot of dreams recently.
21:01This is the start of my cake mix.
21:03I'm going to start sieving, because you don't want to add it all at the time,
21:06because it will just go...
21:07Whoosh!
21:11For today's Showstopper, we've asked the bakers to make their worst nightmare.
21:15In a cake.
21:16This is a really excellent way for the bakers to show off their personality,
21:19to bring a bit of flair to the competition and help us get to know them a bit more.
21:23I am making a cat cake with a knife sticking in it.
21:27The baker that will stand out today will produce a delicious sponge,
21:31great filling and the ratios have to be spot on.
21:33We want that filling to complement the overall texture and flavour of that sponge cake.
21:37Half of the raspberries.
21:39We want the bakers to go bold with their flavours and to make sure that they are really distinct.
21:44Perhaps some unique combinations, but whatever it is, it must be delicious.
21:48I am making an orange sponge with a chocolate and hazelnut buttercream.
21:54It tastes floral and a bit like grass. It's very nice.
21:59I think the main thing that could catch out the bakers today is timings.
22:02They have to make sure their cakes are well baked.
22:04After me coming seventh in the technical, I want to really up my game.
22:08We'd like the bakers to be adventurous today, to really put their mark on the showstopper
22:12and bring us something new and exciting.
22:15Worst nightmare? I'll probably do like a can of spaghetti hoops.
22:18Spaghetti hoops will give me the heebie-jeebies.
22:22Harvey.
22:23Hello.
22:23How are you?
22:24Good.
22:25All right, tell us about your worst nightmare.
22:26My worst nightmare is an egg sandwich because I absolutely hate eggs.
22:33I'm doing two Madeira sponges in like a square and then I'm going to cut them to look like bread.
22:40It's like an illusion kick almost.
22:42Yeah.
22:42Yeah, yeah, nice.
22:43Since the egg sandwich is your worst nightmare, what is your favourite sandwich?
22:47I don't like sandwiches.
22:48Oh!
22:49Harvey will bring the horrors of an egg sandwich to life by swapping bread for a Madeira sponge,
22:56filled with a mango and passion fruit curd, complete with oozing egg yolk fondant.
23:01So you've practised this one a lot?
23:03I have and I'm feeling good after winning last time.
23:06So I'm not worried about anything.
23:08Oh!
23:10Right, Harvey.
23:12Another baker exuding confidence.
23:15Coming second in the technical, it's good odds for me.
23:18It's Humphrey.
23:19Crikey, that's nice and bright.
23:21Tell me about your worst nightmare.
23:23Snake.
23:23Snake!
23:24Yeah, I just don't like the way they move.
23:26Like that?
23:27It just seems crazy.
23:29Way to get a pound.
23:30Have you ever seen a snake?
23:31Yeah, yeah, quite a lot of times.
23:33I'm walking to the Peak District or...
23:35Oh, well, I understand.
23:37They're very tasty to eat.
23:40Is that true?
23:41Um, I'm hoping that cake is tasty to eat.
23:44Sausages aren't snakes, are they?
23:46No.
23:46That part of a snake that's been cut down.
23:49Sorry, I'm getting them mixed up with sausages.
23:51You know Articast, don't you?
23:52I think so.
23:53When he's not spotting snakes out walking,
23:56Humphrey loves a spot of fishing with his older brother, Alfie.
23:59Go on.
24:01There you go.
24:03Humphrey will stack four layers of lemon sponge
24:05filled with raspberry jam and vanilla buttercream,
24:08topped with a deadly fondant snake
24:10and accompanied with lemon anti-venom.
24:12So are you using a lot of lemon zest in the cake batter?
24:15Yes.
24:15Or is it for something else?
24:16A lot in the batter.
24:17I want that really distinct flavour.
24:20Yeah.
24:20I mean, if you do well in your showstopper,
24:22you could potentially get to start a baker.
24:23Yeah, hopefully.
24:24Depends how other people do.
24:26Because Harvey's pretty confident.
24:27I know.
24:28He's very confident.
24:29I know what Harvey's like.
24:32But not all of the bakers succeeded in the technical.
24:37And Penelope will have to face her worst nightmare yet again.
24:41My worst nightmare is cutting cakes with faces on them.
24:45Oh.
24:46And if they have jam in it, blood oozes out and it really scares me.
24:51Oh.
24:51I suppose this morning they were cutting into those cakes with faces on.
24:55Oh.
24:56Now you're putting me on edge.
24:59Paying an unusual homage to her beloved cat, Hamilton,
25:03in the form of a pandan-flavoured sponge
25:05filled with white chocolate and coconut buttercream,
25:07complete with a fondant knife.
25:10Making a pandan sponge is difficult.
25:13That's if you do a chiffon cake.
25:15I'm not making a chiffon cake.
25:16I'm making a sponge cake.
25:18So it's more dense.
25:19But you can still use a pandan extra axe.
25:22It's very nice.
25:23Have you added the eggs this time?
25:25Yes.
25:26Good.
25:28The bakers will need to add more than just eggs to impress the judges.
25:32I've got all the zest and juicing of the oranges.
25:36As they're demanding distinct and perfectly balanced flavours in their sponge.
25:41I'm wanting it to be quite strong lemon flavour.
25:44That's very nice.
25:45But one baker is already having doubts.
25:48It is going to be a vanilla sponge.
25:49It sounds basic, but I'm doing a lemon buttercream with it.
25:52I'm hoping it's enough to impress you guys when you eat it.
25:55Okay, fine.
25:56So tell us about your worst nightmare.
25:58Spiders, but it's also cricket balls.
26:00I'm really scared that they'll hit my face and break my glasses.
26:03So it's going to be a cricket ball infested with spiders.
26:05Which is definitely my worst nightmare.
26:08Yeah, it would be mine too.
26:09100%.
26:09You go, hands forward slightly.
26:11Ludge, ludge.
26:13When Khadija isn't worrying about spiders riding cricket balls, she loves riding horses.
26:18There you go, all clean.
26:18Combining her two biggest fears, Khadija will create a cricket ball using two vanilla sponge
26:25hemispheres covered with fondant creepy crawly spiders.
26:28I suppose it's not beyond the bounds of possibility that a spider could ride on the back of a cricket ball.
26:35I'm never going to play cricket again now.
26:37Pop, and the spider's holding on like that.
26:39You can imagine it.
26:40I'd run screaming for miles.
26:43Like, I'm super scared of spiders.
26:46I'm terrified, actually.
26:48Isla also fears these eight-legged creatures, but her sleepless nights involve a larger conquest.
26:53So these are two hemispheres, and they're going to get put together to make a glow,
26:57and then it's going to also have spiders around it, because my worst nightmare is spiders taking over the world.
27:04Using two hemisphere cherry and chocolate sponges, sandwiched with cherry jam and whipped cream,
27:10Isla's globe will be decorated with fondant, creating the world, and the spiders conquering it.
27:16What is it about spiders that you don't like?
27:19Spiders are just so...
27:20Yuck.
27:21They've got their long legs and their hairy backs with their green eyes.
27:24Yes.
27:24Have you met our producer?
27:26It's not here to sell.
27:28Harry, that's Marty.
27:30I'm just going to put my cakes in the oven now.
27:33Go, go, go, go, go.
27:34Go, go, go, go.
27:36And you go up in with him.
27:38Let's hope they're even.
27:40They've only been for around 25 minutes.
27:43Okay, start.
27:46Cool.
27:51Parking outside my house.
27:53Absolute nightmare.
27:5560 minutes, bakers.
27:56You're halfway through.
27:57Okay, one hour, and I'm making my black Oreo buttercream.
28:04Would you like to try a bit of the buttercream?
28:06Well, I would love to.
28:08Okay.
28:10Some people say I eat in a funny way, but I don't think so.
28:13I'm going to do a vanilla buttercream.
28:16As the other bakers keep it classic with traditional flavours for their buttercream.
28:20I'm hoping it's lemony enough.
28:22It tastes quite good. I had a bit before.
28:25Umair has opted for his own concoction.
28:28Cookie dough buttercream.
28:29How have you made that?
28:30I made cookie dough and buttercream separately, then I whisk it all together.
28:35We haven't had cookie dough buttercream before.
28:37Never.
28:38Hope you get impressed then.
28:39Tell us about your worst nightmare.
28:41A science experiment gone wrong.
28:45When he's not experimenting with baking, Umair enjoys experimenting with friendly water warfare instead.
28:51Umair's cake-splosion will be created by stacking three vanilla confetti sponges layered with a filling of cookie dough buttercream, fondant decoration and chocolate drips.
29:04They say that might cause the end of the world if there's a science experiment that went wrong.
29:08Bang! A whole lot goes up.
29:10Think that's possible?
29:11Maybe if you're the one doing it, Bob.
29:14This is Harry Hill for Sky News.
29:17Are we not on Channel 4?
29:19Well, we don't know by the time this goes out, it's a channeling trouble as you know their business model is deeply flawed.
29:27While most of the baker's recipes contain buttercream.
29:30Yeah, it's definitely not many enough.
29:32Some are going the extra mile with an extra filling.
29:35Gonna blitz the passion fruit and mangoes together.
29:38I'm making caramel.
29:40I hope my caramel works.
29:41Hi, Lila.
29:42Hi!
29:43Hi!
29:44Hi!
29:45Can't do that every time we come in, can we?
29:49Tell me about your worst nightmare.
29:51Compound-o-phobia.
29:52Compound-o-phobia.
29:53Compound-o-phobia.
29:54Fear of phones.
29:55Say com.
29:56Com.
29:57Com.
29:58Pooh.
29:59Pooh.
30:00Pooh.
30:01What?
30:02What's she saying?
30:03Com.
30:04Pooh.
30:05Pooh.
30:06Pooh.
30:07Pooh.
30:08Pooh.
30:09Pooh.
30:10Can we get a breathalyser test on this?
30:12The fear of buttons.
30:15Lila's ambitious three-tiered ginger sponge will be decorated with dozens of buttons and filled with layers of cinnamon buttercream and salted caramel.
30:24As you can see here, it's bubbling but I just need to wait for it to turn an amber colour.
30:29OK.
30:30And I need to get it swirled.
30:31Careful.
30:32Go slow.
30:33Slow.
30:34Yeah, do you have any worries for today's showstopper by the caramel? I
30:39Think we should leave you at this crucial. Yeah
30:48No, I've done my drum and it needs cool
30:52This is never how it looks at home. The sugar is usually dissolved by now
30:57I
30:59Need to hurry up on a slam run like a time
31:04Oh
31:11My god, I forgot about my cake. Yeah, that's good good
31:16Already see they're not done just from the top just altering them so that they were flat both of them
31:21They will fit together perfectly hopefully with the sponges almost ready to come out of the oven maybe swirl it
31:28Lila's caramel is still not turning amber. It's working slightly better now. I'll turn up the heat
31:33I honestly don't know if I'm gonna have enough time left
31:42Tried to take something back to the shop and I can't find the receipt
31:46absolute nightmare
31:4830 minutes bakers you got 30 minutes left. Oh god. Oh
31:52Oh, it's going amber
31:54Perfect who had a little bit. It's really well. Well done my kids coming out the oven the bakers need to ensure their cakes are removed from the oven with enough time to cool
32:03It's a nice one
32:05I'm happy I took that out actually because I was able to come crispy but taken out too soon. They risk an under baked sponge
32:12They're not cooked
32:16100% not done they need to be done very quickly let that cool for a bit freeze my cakes you beautiful piece of technology
32:28Humphrey it's not cooking
32:31It needs to be out by now basically rock the temp a bit so I don't burn the top
32:35Yeah, it'll still cook the inside maybe. Oh my god. I
32:41Think I'm gonna need to put them in for another five minutes or so
32:44I'm gonna put another three minute timer on this should be done by then and if not then we have an issue
32:48I don't know how much time's left either
32:50Getting some fondant decorations out now the buttons are made from
32:55fondant
32:57fondant
32:59fondant
33:01That's the body. That's the head. That's the little om-nom-nom thing. These are the egg yolks
33:06They're supposed to like stick out on the side. This is a fondant brick because my worst nightmare is me dropping my favorite brick set on the floor
33:15Certain type of brick we don't mention we don't give undue prominence to what's the best thing you think you've ever made in Lego said it
33:21Sorry
33:23Gonna get the sack
33:25Ethan's double-layered orange sponge cake will feature a chocolate and hazelnut buttercream center decorated with fondant cascading bricks
33:34Oh
33:36My god, I'm wrestling fondant never thought I'd do that
33:42Yes, it's coming out
33:44It's a little bit overdone on the top but like we can we can work around that seem a bit jiggly again
33:50But they're better
33:52You know how long we've had was hurry
33:56Halfway through booking the holiday then the Wi-Fi goes down
34:00Absolute nightmare
34:0215 minutes bakers you got 15 minutes left. I'm very anxious right now an absolute nightmare 15 minutes. Oh
34:11I gotta hurry my little bottom-up cuz like I still have to assemble
34:14This is the no panic panic where I don't show I'm panicking on the outside on on the inside. I'm like
34:19Take leveler the best thing since sliced bread. Oh got to go spray on the bit sinking a bit
34:25It's got a lot of filling in I'm going jam then buttercream a lot of strawberries
34:32The buttercream's melting a little bit
34:34So it's kind of dripping off might be that the cakes a bit too warm perfect amount of caramel
34:39Is that straight time to feel like the big flondant anything could go wrong?
34:48Oh
34:50No
34:52Oh
34:54That's not good
34:58What's the worst nightmare cake without a worse nightmare scenario?
35:01This is the egg white. I'm gonna throw up. This is my snake. I've nicknamed him Roger
35:08I've still got quite a bit to do
35:11This looks like it's nearly finished Ethan. It is. I don't know if I'm on too simple
35:14Is there any way where you can maybe neaten it up perhaps trim it? Yeah, I was going to do that
35:19That's not a bad idea. Otherwise this floor needs a hoovering
35:23How long's left five minutes bakers?
35:32Come on either you can do it either put your back into it very egging to a game
35:36I think I've been a little bit too ambitious this week like making caramel and all crazy
35:44Yeah
35:45One side looks really like a showstop from the other side looks like my brother did it
35:49What I can do is I can try and cover it so it looks like the ball stitched together
35:54This is called thinking on your feet. Don't try this at home. I was scared buttons would stare at me when I was younger
35:59Lovely little googly eyes. Go go go. One minute bacon
36:05Oh my god, I'm actually shaking right now
36:09The mixture's ready to go in
36:12It's the fastest I've done anything in a while
36:19So you can't see the bottom bits
36:21Anti-venom
36:27One more
36:29I hate egg sandwich
36:31That's it bakers, time's up
36:37Time's up. Your worst nightmares are over
36:39I did it
36:43I'm chomping at
36:45I hope the judges think that it's egg-cellent
36:47It looks kind of scary
36:51I'm happy with that
36:52It's definitely my worst nightmare
36:59It's judgement time for the baker's worst nightmares in cake
37:03Penelope, could you please bring your my worst nightmare cake forward for judging?
37:07Okay
37:08Yeah
37:15So my worst nightmare is cutting into cakes with faces on them
37:19It just...
37:22Penelope, you've done a really good job
37:23I love how clean and effective it is
37:25The design is beautiful
37:26I can see that it's a cat with a knife in it
37:28The funny eyes are really good
37:29And that knife as well
37:31Class
37:32Very good
37:33Penelope, we're going to have to cut it
37:40Really nice colours
37:41Mmm
37:42It's a pandan cake with coconut buttercream and fresh strawberries
37:45It's simple but it's very effective
37:47Delicate flavours
37:48It's something different
37:50We haven't had a lot of pandan
37:51I really like the fresh strawberries
37:52My only note
37:53Yeah
37:54Is that I think the cake is just slightly over baked
37:56Yeah
37:57But the texture in the middle is perfect
37:58Okay, thank you
37:59Great, thanks
38:00Nice one
38:01Well done, Penelope
38:09So my worst nightmare is a science experiment gone wrong
38:12It doesn't necessarily scream that a science experiment's gone wrong
38:15It maybe looks like it kind of went right
38:17The cake is a confetti cake and it's filled with cookie dough buttercream
38:23The sponge is slightly under baked
38:24Because I can still taste the flour in it
38:26But that cookie dough filling
38:28Never tried it before
38:29I love it
38:30Just put your cake in the oven for like an extra 5-7 minutes
38:33You would have been on to a winner
38:40The marbling effect is very good
38:41It screams that it's a flaw
38:43It's quite messy but I think it's a flaw
38:45It's quite messy but I think that's what you wanted to go for
38:48Yeah
38:49You're dropping all of those bricks
38:50It's a very effective way of doing that
38:51So the sponge is a orange sponge and the buttercream is a chocolate and hazelnut buttercream
38:57Flavour-wise, it's great
38:59The hazelnut, the chocolate, the orange
39:01Your sponge, though, is just in the middle
39:03It's slightly under baked
39:04Okay
39:08Decoration-wise, it's bang on
39:09You know exactly what it is
39:10I love that spider
39:11It's very detailed
39:12Thank you
39:13Thank you
39:14It's a chocolate and cherry cake with cherry flavored jam in the middle
39:18What I would have done is put some more cream in there just to lighten it up
39:22Bake the sponge a little bit longer and cooled it down a bit more because it looks like the filling is slightly melting
39:27But the taste of that chocolate cake is very good
39:29Nice one
39:34Imagine someone threw a cricket ball at you and it was covered in spiders
39:37I'd scream and run
39:38Oof, so would I
39:39You've done a really good job at bringing out the design and it's quite chic as well
39:44Even though it's a cricket ball with spiders on it, I can't wait to try it
39:47And it's lemon, right?
39:48Lemon buttercream but a vanilla sponge
39:50Round the edges looks baked
39:53I'm just a little bit concerned for the middle
39:56Some of your sponge is baked but in the middle is slightly under baked
40:00Yeah
40:01Close
40:02The lemon buttercream isn't so lemony for me
40:04If you're focusing on the simple flavours just dial those up
40:06Okay
40:07So we get more elements of that
40:08Okay
40:09Because I can see where you're going but we just want more
40:11Thank you
40:12Thank you
40:19Pretty surprised that you managed to complete it
40:21The fact that you're so scared of buttons
40:23But I do love the eyes, the fondant work, it's pretty neat
40:27So it's a ginger cake with cinnamon buttercream and caramel
40:31The flavour of your cake is great
40:33It has that warm ginger feeling
40:35Cinnamon, great addition
40:36For your caramel, it has crystallised
40:38So your caramel is slightly grainy
40:41It's delicious but it's just quite crunchy
40:44So next time you could say
40:46And I've put crunchy bits of caramel in there
40:48And then I'd be like, bang on
40:50Okay
40:57Ooh
41:01In terms of visual, bro, it's wicked
41:03Very neat, the egg yolk oozing out
41:05It's so good
41:06It's really good
41:07It's such an effective way of making a sandwich out of cake
41:10And it looks really appetising
41:12Even though it's also something I would not want to eat
41:14Yeah
41:15Cuts like a sandwich as well
41:16Ooh
41:17Really good
41:18What's the flavours?
41:19Mango and passion fruit
41:20Inside
41:22The Madeira sponge is really nice
41:24It's baked beautifully
41:25And I love the mango and passion fruit curd
41:27That's the winner for me
41:28But I want more of it
41:30The sauce is excellent
41:31The cake is really good
41:32I think it's just a case of refining it slightly
41:34It's really good
41:35It's probably like the best tasting egg sandwich I've had
41:36It looks really effective, it's really neat
41:49I just love how the snake is sort of slithering around the cake
41:51The anti-venom on the sides
41:53Really good
41:54Look at the colours
41:55Woah
41:56Nice eh?
41:57It's fun
41:58The cake is a lemon sponge with raspberry jam and a vanilla buttercream
42:04The texture of that cake? Beautiful
42:06Baked really well
42:07You've got even cake layers compared to your icing and your fillings
42:11I love that the raspberry is quite punchy
42:13It's really moorish
42:14When you add like the anti-venom
42:16There's another like dynamical flavour as well
42:18Mmm
42:19Really good
42:20Really, really good
42:21Well done Humphrey
42:23I'm very happy and proud of myself
42:27Because I think I got quite a lot of good feedback
42:30And it sort of makes me feel a bit more confident in myself going forward
42:34I think from coming first earlier and doing well now
42:38I'm hoping for Star Beaker
42:40The caramel didn't turn out as well as I hoped
42:42But hey, that's caramel for you
42:44I think it's the first time someone leaves the competition
42:47And I do not want to be the first
42:49Feedback from the judges
42:51There's some good, some bad
42:54But, you know, it's not the worst thing in the world
42:57The cake was a bit underbaked
42:59I think everyone's in danger of going home
43:01Well, bakers, Rob and Liam have put their heads together
43:12And decided that today's Star Baker is...
43:22Harvey!
43:23Congratulations!
43:24And normally at this stage in the competition we don't send someone home on the first day, do we?
43:31But we have got to keep within Rachel Reid's fiscal rules this year
43:35So we've had to re-look at that
43:37The person leaving us is...
43:40I'm kidding
43:44Of course, you're all...
43:46Coming through to tomorrow
43:48Well done, everyone
43:50Well done, well done, Harvey
43:51I wasn't expecting it but I've been manifesting it all day
43:54And I was hoping it would happen and it did
43:56It was brilliant
43:57To be the first Star Beaker, it feels awesome
43:59Harvey, well done, bro
44:01Thanks
44:02Really good, really good, really good
44:03I think it was quite a tight race between me and Harvey
44:06I think he did deserve it, he did very well
44:09But more than anything, I'm really proud of my performance today
44:12Go again tomorrow, biscuits, yeah?
44:14Do you know what?
44:15Based off today, all the bakers did pretty well
44:17So I'm expecting more from them tomorrow
44:20Harvey had to be our Star Baker today
44:22Because he came first in the technical
44:24And when it came to the showstopper
44:25He really blew us away with that illusion-style cake
44:28Fantastic
44:29Next time
44:30Let's go, let's go
44:31It's biscuit day
44:33And the bakers go bananas
44:35These bananas are frozen
44:36In a giant of a technical
44:38Oh, it's heavy
44:39It's a giant
44:40And in a record-breaking showstopper
44:42Don't want to break anything but my record in archery
44:45Who will reach new heights?
44:47Sensational
44:48And who
44:49I got it, I got it, I got it
44:50Will snap under the pressure
44:52Oh no, no, it broke
44:54Oh, I'm dead
44:59I got it
45:06I got it
45:08I got it
45:09I got it
45:12I got it
45:13Yeah I can go
