00:00All right, pork rib membrane does not have to be that complicated to pull off.

00:04I do find it easier to pull off of a baby back than a spare rib.

00:07These are baby backs.

00:08If you can get your finger down the center underneath that membrane,

00:11which is very easy, and pull straight up,

00:14you will get that off just about every time on one pull.

00:18So here I'm actually putting the membrane back on.

00:20I want to show you why it's important to pull it off.

00:22At the end of the day, it can stay on.

00:24People will leave it on for textural reasons.

00:27It just gives it a different bite.

00:29But the rub will not penetrate through that membrane.

00:32It's very thick.

00:33It's like leather.

00:34So as you can see here, I'm pulling that membrane back off.

00:38You can see the rub is not soaking through it, and it will not soak through it.

00:41And it's like just trying to pull apart leather.

00:43So this is the reason why most of us pull this membrane off.
