00:04:29I do love myself a good cocktail, really, any time of year.
00:04:32And vodka is definitely my cocktail of choice.
00:04:34I like getting where I need to get pretty fast.
00:04:36So, vodkas, I'm a pretty big fan of.
00:04:37So, I'm happy with what I got.
00:04:39So, what I'm thinking for this dessert is an enchemin in the shape of a snowball composed of a mascarpone with ganache.
00:04:46A fig ginger insert.
00:04:48So, I'm decorating my dessert.
00:04:49It's going to be inspired by a snowball fight.
00:04:51I have a pretty great memory of being a kid and having snowball fights and being the mischievous little kids we were in school.
00:04:57My decorations are going to be the little gingerbread man throwing the snowball sitting atop a vodka mascarpone sauce with some white chocolate snow.
00:05:06Working with alcohol can be very tricky.
00:05:09You have to find a really nice balance of not killing the judges' palates.
00:05:13But then you also want to have enough where they can actually taste it.

00:06:24I'm making an entremé today because it's something that I'm very familiar with.

00:06:28So I'm thinking a lime and pomegranate infused jolet for the inside.
00:06:34A mint mousse with a little bit of lime zest in there to brighten that up a little bit.
00:06:39A sugar cookie on the bottom.
00:06:40And then I'm thinking, like, snowflakes and gold.
00:06:43You know, I'm imagining a Christmas ornament.
00:06:46So, we'll see.

00:09:11And I will have coconut and rum as well in my whipped ganache on top.
00:09:15My decorating plan to go a little more naughty with my decor, I'm going to have a nice little
00:09:21gingerbread lady, but on vacation with her coconut bra out to tie into my coconut theme.
00:09:25I know they love a crust, so I want to get thick enough.
00:09:30I'm here to impress the judges, so that's what we're going to do.

00:16:46So that's my inspiration for this dessert.
00:16:49So today I grabbed the Yule Mule because Giancarlo's happily switched.
00:16:54My favorite flavor is ginger like for everything.
00:16:57So I'm excited about this.
00:16:58I'm doing a little like kind of small little naked cakes.
00:17:02It's lime and ginger cake.
00:17:05I'm doing a cranberry buttercream and then a lime ginger curd.
00:17:10I think it will show my cute decorating skills.

00:17:19I still do feel like I have to redeem myself from the first embarrassment that I did make.

00:17:38because I'm so young but I've been baking for seven years.
