01:19First, the fast and frosty dessert dash.
01:22And then the batter royale, a merry match where skill,
01:26innovation, and holiday spirit collide.

01:33Battle champions.
01:34And we'll walk away with a tasty $10,000 from our friends

01:45I'm truly obsessed with the holidays.
01:49Taking stock of my decorations the other day,
01:51I realized it's time for an ornament upgrade.
01:54I brought some samples as inspiration.
01:57But I need a little help from you, bakers.

02:04of the holiday decorations.
02:05You will create four chocolate truffle ornaments,
02:08with a baked element inside, and covered in seasonal decor.

03:06And I like to put a little bit of the Asian flavor
03:08into the Western baking techniques that I'm using.
03:11And I actually became Rosalyn's employee.

03:19We are making Dak the Hall's chocolate truffle ornament with red and gold and dark green Christmas decorations.

03:32I'm currently working on the cranberry.
03:34The flavors of the truffle, we put the dark chocolate ganache with a chocolate pistachio streusel and cranberry sauce.

03:44We're going to win this because we want to show to the world that a daughter-in-law and a mother-in-law can work together.

04:49So our flavor profile is white chocolate ganache with apple butter, maple, and rosemary crumble.

05:46It embodies Christmas for us.

05:53And we still go to the nutcracker ballet every single year.

05:57I need to toast the caraway seeds.

06:00We're making white chocolate truffles with caraway and plum apricot jam and sugar cookie crumbs.
06:07The recipe was actually my grandma's truffle recipe that we kind of built off of.

06:35The key with these molds is getting an even coating.

09:41Gonna add some plum jam to really make sure our sugar plum truffles taste like plum.

09:47Just fold these in so they get the cookie crunch and the jam all in one bite.
09:52What is the trickiest part of all this?
09:54It's a sphere.
09:55So removing that thin shell out of a mold is absolutely nerve-wracking.

10:22To assemble the ornaments, we have to layer the different components so that the judges taste the different layers and texture.

10:30You can start with putting them together and decorating.
10:32To make sure the judges don't see the connection where we joined it, I have to spend a little bit more time with the candy melts to make sure I spread it evenly to hide the seams.

11:13We're going to make these truffle ornaments, almost like the old-fashioned Christmas balls that had like an indentation.

11:23So I'm trying to fix it up because the trim has to go around the seam.

11:31It kind of looks like a two-year-old made this, but it's okay.

13:02We made deck the hall chocolate truffle ornaments.
13:05We wanted to infuse the colors of the east and the west, which is the red, the gold, and the green,
13:11blending with Chinese culture for the holiday season.
13:14This is a lovely ornament.
13:16I love that mix of east meets west, the red being very good luck.
13:21Good luck, good fortune.
13:22Lovely.
13:23The only thing I would point out, it looks like you used a faceted mold.
13:27I would have loved to see more of that texture.
13:29It's a little bit covered up from the candy melts that you used in between the seam.
13:34But it looks like a real ornament.
13:37You've got the gorgeous wreath, the detail on these little bows.
13:40I thought that was a really nice touch.
13:41Great.
13:42Well, time to put the tree in treat.

13:45All right.
13:46So we chose to do dark chocolate ganache truffle with a chocolate pistachio streusel and cranberry sauce.
13:53So it has like a holiday element.
13:55This is delicious.
13:56I'm a big fan when there's acidity that's been added to chocolate just to brighten it up,
14:07give it pops of flavor to kind of combat that richness.
14:10And it was also a textural masterpiece.
14:12The ganache is perfectly set.
14:14It's not grainy and a beautiful amount of that crunchy pistachio goodness.
14:19And I think you have a perfect balance between the components.

14:26They loved our flavors and the look.

14:33We did sugar plum fairy chocolate truffle ornaments.
14:36We really wanted to tie it into something that's really close to our hearts, the nutcracker.
14:41The design on the chocolate that you have just underneath the tree, it looks fantastic.
14:46So well done there.
14:47But the belt around the ornament could have just been a little bit tighter.
14:51You used real chocolate on the exterior, which is very finicky.
14:54Perhaps if it was tempered, it would have held its shape a little bit better.
14:58Yeah.
14:59Which is why we see it's caving in a little bit at the top.
15:01But when you peer inside, you see that beautiful Christmas tree with ornaments on it,
15:06which is very sort of meta and referencing itself.
15:09So I applaud you for that.
15:12Speaking of nutcracker, it is time to get cracking.

15:16We did white chocolate truffle with caraway plum.
15:20Apricot jam and sugar cookie crumbs.
15:27I love complex flavors.
15:29It's warm.
15:30I love that there is the sugar cookie bite in there to break up that very soft interior.
15:37And then there's this underlying note of tartness because you have that apricot and plum, the sugar plum that runs through there.
15:46And I dig it.
15:47I was trying to get the individual flavors, but it's quite complex.

15:52So you married them well.

15:54Some of the caraway probably could have been blitzed up just a little bit finer because I did find myself with a little caraway seed in my tooth.

16:26We created a Winter Wonderland truffle ornament.
16:29We really wanted to get an icy, snowy kind of feel with lots of glitter and white and kind of a swirly blue and white pattern.
16:36We were inspired by your sparkles.
16:38I absolutely love the uniformity, the details on the top.
16:43This minimal design is amazing, but it would have been nice to see maybe one other design element.
16:49But you absolutely nailed taking two halves of your ornament mold and sealing them together in a way that's seamless.
16:56And it just so happens to match my outfit, so gotta give you another point for that.
17:02It's definitely giving sparkle and ice, but does it taste nice?
17:06So our inside is white chocolate ganache with apple butter, maple, and rosemary crumble.

17:29The crunch from the pecans, I think it all really, really works well together.
17:35The only thing I would say, I would have loved maybe a little fleur de sel.
17:38I love when you have a little bit of salt that breaks up the sweetness, because of course white chocolate is very, very sweet.

17:45But it's a lovely combination of flavors.
17:48So I do wish I'd put more salt in there, because it does help.
17:52We really hope that this is enough to win this challenge.

20:43gingerbread I was thinking something citrusy so orange and then I think
20:48espresso I think those two flavors blend tremendously well with gingerbread yeah
20:52let's go for the gingerbread we want to make the flavors pop by adding espresso
20:57and orange to the classic gingerbread recipe I'm starting on the gingerbread
21:02if you want to start with like maybe the wet ingredients yeah I love the solid
21:06gingerbread you should bake this when you're selling your house so I feel like
21:11we should do maybe a couple different houses I got the best idea of the North
21:16Pole sweet shop yes and then make the mailbox here we're making a North Pole
21:20sweet shop we're both kind of candy lovers and with Christmas you know it's a time
21:25to indulge we could make like a shoot like a conveyor belt then I would put
21:30starlight mint and then what if you did a Santa maybe in the front oh yeah yeah
21:33yeah okay let's go shopping you want to get to the starlight mint hey okay we're
21:40going to flavor the gingerbread with peppermint it's not a complex flavor but
21:45with all the spices in it tickles your taste buds I'm gonna make two batches of
21:49dough at once because we need it yes yes yes all right do you think as far as like
21:53the woodlands theme okay and then for the mailbox cottage style like something a
21:58little off kilter and then some type of a window maybe like a little candy cane and
22:03heart like that okay I love it okay this challenge is going to be difficult because I have not made a
22:10lot of gingerbread houses Lauren has so we're gonna both make the gingerbread get some good ones here I
22:16got limes you got limes yeah do you need limes too I got some more limes we're making coconut lime
22:21gingerbread we're gonna have to pick up the pace a little bit I think I'm gonna start rolling out
22:28the dough is this thickness okay yeah it's important to think about the thickness of the dough that way
22:33it bakes evenly in the oven and baby I start cutting too yeah perfect okay let me see you go over there
22:41Santa probably should have put your belt on before I put your arms on talking to her I'm talking to Santa
22:46he's giving me a hard time but I love him this I think okay so well that is mixing I'm going to do
22:52the gingerbread dough we didn't win round one but we're ready for round two we know the steps to
22:56follow because we're the gingerbread queens yeah we do gingerbread house replicas it's our wheelhouse
23:05yeah not they do excuse me you're done we'll get it in the oven okay obviously if I get this part
23:11right we're chilling you're right I am finally getting my pieces rolled special skills required
23:19for gingerbread knowing how structures work so a little bit of architecture you have to kind of
23:25know how things are gonna fit together I really love that texture roller I have to get that stone
23:29texture it's so fun I love that too judges it's the batter royale this is gonna be such a fun gingerbread
23:37mailbox challenge but don't you think the mailboxes need a little something special in them like gingerbread
23:46cookies oh I love that idea but let's not have to make just any cookie how about shaker cookies that's
23:55a good idea bakers we've got a little request for you in addition to your gingerbread mailboxes
24:01we'd like three gingerbread shaker cookies shaker cookies I'm so excited because I love making
24:10cookies those are our favorite that's not very nice you definitely go on the naughty list it is all nice no
24:17naughty we'll order some extra ingredients for you through Instacart oh I'm gonna start the order up

24:48make shaker cookies a shaker cookie is two cookies with a hole in the middle that you fill with isomalt
24:54and sprinkles and when you sandwich the cookie together you can shake it and see all the little
24:58sprinkles inside moving around and we're making Santa gnome cookies because we love gnomes and it's
25:06exactly perfect for our woodland design our shaker feature is gonna be a cookies in his little Tommy all
25:13right I'm gonna go in the oven those look great my shell I think it's done okay and then what was

25:53sugar that was exactly what we need sugar ah ice them all oh I can use that for my cookies yeah thanks
26:02Cam just what we needed we'd ice and for the trees oh it's time to do the shoots say yeah take your time
26:11to do those shoots what's challenging is they're freeform and you have to do it on tinfoil and you
26:18have to fit from one building to another so you have to make sure the angles are right we wanted to
26:23challenge ourselves and it we really want to add that component to stand out Haley do you need any of
26:28these measuring cups please don't talk to me I'm doing the shoot okie dokie bakers you're halfway through
26:34the challenge shake it till you make it I'm gonna start faking the shaker cookies we're already making
26:41gingerbread men so we're gonna pivot and use the gingerbread men to make the sheer cookies for the
26:47judges for the chocolate chip cookies for the center can I use the modeling chocolate or yes the gingerbread
26:53I think it's almost done there's only five minutes left just double check oh is it okay oh doesn't sound
27:03good I go to take our gingerbread out of the oven and all I see are burnt edges there's no way we can
27:11feed our judges burnt gingerbread I don't have time for this oh no all I see are burnt edges oh shoot
27:23there's no way we can feed our judges burnt gingerbread so what do you want to do I've got to make this work
27:30I have an idea I'm going to shave off the edges I'll get rid of some of the burntness and also level up
27:35the sides is it okay yeah it means you've got to watch the shaker cookies no em yeah it cannot be so
27:42long one hour left bakers let's go we can do this we can do this we can do this we got it looks good
27:51we have to build a mailbox made out of gingerbread we need to do shaker cookies as well now that the
27:58pieces of the house are baked I'll make some more cheese okay I have to assemble the shaker cookies
28:03ah do you need any help I think it's spreading let me grab a thing to pop those bubbles with
28:11perfect I think we're good check the news perfect put it here to cool tell me when you're ready for
28:22the shaker cookies our shaker cookies have a little circle on it with a little peppermint swirl also
28:27includes crushed up pieces of peppermint and I really would like to use snowflake sprinkles to really
28:32shake around so it's kind of like a winter wonderland inside of it you go girl the shaker cookies are big
28:39bit ready they're in the fridge okay great so we have to like assemble the mailbox yeah so what I'll
28:44do is I'll do the sugar first start making caramel to glue the pieces of the mailbox together done so I
28:52start with the base of the gingerbread mailbox and then I work on the back because it's the most solid
28:58piece I really hope it doesn't fall we're a little behind what I was hoping we'd be at this point but I
29:08am just ice malting the house together so it'll be nice and firm okay you need to finish your cookies
29:13right that went together pretty well so far I don't want to jinx it Ruth is the hardest part
29:18come on stay together I'm gonna have some drips it'll be little icicles coming down okay you should
29:25start decorating the gingerbread awesome what is this this is a side right Haley yeah bakers 30 minutes
29:33left you need to finish those mailboxes oh shoot I am doing the shoots but I'm bum funny how are you
29:42doing I'm doing isomalt for the shaker cookies my hands are tired to be the centerpiece on then I can
29:48start decorating to decorate the mailbox we want to create a wintry scene so to start we use royal icing
29:55to create the snow effect don't mean spread it do the front first so I can pack the flowers you spread it
30:01as fast as you can we are now officially at the fun part decorating so we're making the house look
30:10really like a woodland cottage that is so fun do you see the tree oh my gosh loves it the trunk
30:16came out cool yeah I'm so modest 20 minutes left bakers let's get this gingerbread you okay

30:34to decorate them okay where is that sugar right in front of me right in front of you doesn't get any

30:57pieces together like we know how to do the home stretch home stretch yeah exactly finish it that

31:05acting like you've never done this before are you in most of the decorations uh not yet I haven't done the
31:16flowers you where's the wafer paper to make the poinsettia I had to cut out the shape from this
31:21wafer paper and add color what else are we gonna do and uh well I'm still assembling the sugar cookie
31:27right now so okay decorate it after yeah we got our flag and I'm working on my candy canes Michelle

32:54we love each other we are feeling super proud that we are able to work together the communication went
33:07well and if we win this battle it will be a great achievement we will be so proud of ourselves we are
33:15feeling pretty happy with it but we are nervous because it's not exactly the way we would like for
33:21it to be I'm not so happy with the base I'm 85% happy with it I'll take that I thought you were
33:28gonna say less I'm loving how this looks it's definitely gonna impress the judges this is where
33:34like the underdogs come out to play and we have a lot of hope that we could win this
33:38bakers we asked you to make gingerbread mailboxes with shaker cookies inside Laura and Michelle talk
33:50to us about what you made our mailbox is called gnome sweet gnome we wanted to do something whimsical
33:56so we made a little gnome cottage in the woods mailbox it's so charming adding that gorgeous texture
34:03to the sides and then on top of that you've added this sort of white wash it almost looks like it's
34:09been in the woods forever it's just layer upon layer of beautiful details and it's giving me life
34:15thank you on the bottom here that little stack of logs you use cinnamon sticks genius the wreath on
34:22the front beautiful you guys have done a great job thank you so much tell us about the shaker cookies
34:28inside so we made this little Santa gnome cookie and we wanted to put a little cookie inside Santa's
34:35tummy because he's been eating a lot of cookies lately so there is a little cookie sprinkle inside my
34:41goodness it is the cutest shape possible beautiful piping work this royal icing it's just the perfect
34:48consistency and then let's talk about the isomalt I mean crystal clear you can see my hand right
34:54through there and there's a baby gingerbread inside it just doesn't get any cuter thank you it's cute
35:00but the real question is does it shake three two one yes I can hear it from here shake rattle gnome baby
35:10it's a coconut lime gingerbread with coconut lime royal icing it has all the traditional spices in a
35:17regular gingerbread plus the coconut and lime flavored it's a lovely cookie so the classic
35:26gingerbread flavors come first and then the coconut sort of comes as a wave afterwards and then lastly
35:34just the faintest hints of lime but it's a little too subtle those flavors may I ask you put lime into
35:42the cookie using some zest is that correct lime zest and the gingerbread sometimes with zest it's so
35:48moist after it's been zested that it doesn't evenly mix throughout the dough it's tasty it's good it's
35:54delicious thank you thank you so much I'm hoping that was good I think they liked our design they seem
35:59to so hopefully it's good enough to win Amber Rosalyn tell us about this beautiful gingerbread
36:07mailbox so this is cookies for Santa gingerbread mailbox we wanted to get the traditional wooden
36:14mailbox that Santa would have kept millions of years is so old and want to show a little bit more skill in
36:21that all the flowers are handmade and hand piped it really sells that sort of antique look I love that you
36:29use an impression mat to create an actual wood grain texture your greenery along the sides it's so
36:36nicely piped I almost think I can smell pine from here and then you've accented that with pipe flowers
36:44it's so charming thank you I love all the detail that you have on the trees I love that snow I was
36:50watching you work the snow to make it peak so it actually looks like it's a real scene but I would
36:58have liked to see a little bit more design just on the side or even anything with that being said
37:03overall great job thank you and the moment we've been waiting for the shaker cookies we make gingerbread
37:09man shaker cookies filled with chocolate chip cookies that we hand make inside the shaker so that it looks
37:15like they ate chocolate chip cookies oh my goodness the fact that you put teeny tiny chocolate chip cookies
37:21with the most minuscule chocolate chips in there is so gosh darn cute the only thing is I can see some
37:29bubbles in the isomalt that perhaps could have been popped with a very quick torching and that would
37:35have added to the clarity I can actually almost see both of you through the cookie I have to of course
37:43do the shaker test shall we three two one oh yeah we officially have a shake so we went with an
37:55espresso orange gingerbread flavor we just wanted something more punchy like a citrus and then you know
38:01Santa's tired from all of his work so what's better than espresso give him that little wake-up call
38:06the orange is really well done I thought that was really bright and lovely and fresh I could taste
38:16espresso it was a little bit bitter it that took a little bit away from some of the other warm spice
38:22notes and the orange but it's a lovely cookie I would be very happy to have this at a holiday party
38:27it's nicely baked it's got a really nice chew to it the orange flavor came through I enjoyed the
38:34cookie I could eat two three four maybe even six of them thanks hearing the comments from the judges
38:40we have a fighting chance we got this Lori Haley talk to us about this stunning fun creation it is the
38:47North Pole sweet shop Santa's little factory where he makes all the sweets for the holiday we decorated
38:55it with all different types of candy we have a shoot with the little coated candy coming out of
39:01the factory and then down below there's Santa and in the back there are naughty little elves that are
39:07having a little snowball fight this is really whimsical the presentation is busy but it's
39:12intentionally busy yeah yeah but it doesn't really look like a mailbox it looks like a couple of really
39:17awesomely made gingerbread houses I think what you've delivered here is my childhood dream gingerbread
39:24one of the things I noticed right away are your beautiful conveyor belts that go between the
39:29buildings making straight walls is hard enough out of gingerbread you've curved them into this sort
39:37of concave shape it really just looks like those starlight mints are traveling from one building to
39:42another it's so cute thank you and the shaker cookie lots of fun there are snowflake sprinkles
39:48inside of it a little peppermint swirl so it's kind of like a winter wonderland I like it it's quite
39:53rustic in a positive way it looks great the only thing I would say about it is this a little bit
39:58cloudy there's a lot of bubbles in there but I love that the image of the starlight mint is also in
40:07the cookie it makes total sense in the story that this is coming from the candy factory the big question
40:12of course is does the shaker cookie shake shake we definitely have some shake the flavor is our
40:20gingerbread with just a little peppermint that mint it hit me immediately it is a little bit spicy I
40:31would say that it might be a little bit too mint forward but it's great flavor it almost reads to
40:38me like a cinnamon heart I think because you have cinnamon I'm assuming in the dough yeah and then this
40:42mint you bring them together and it's giving me cinnamon heart I love the texture of your gingerbread
40:46as well it's really well cooked you've done a nice job thank you Lori and Haley thank you so much this
40:51has been serious eye candy and I love getting all the minty breath freshness that's coming my way thanks
40:57to you we're really happy because what we built and created was conveyed to the judges we have a lot of
41:03hope that we could win this judges you have to make this decision gingerly
41:07Bakers we asked for gingerbread mailboxes filled with shaker cookies and I think it's safe to say
41:20all of you mailed it Rosalind and Amber we loved the shimmering snow and wood grain details of your
41:28mailbox and your cookies for Santa told a flavorful story however the coffee flavor made for a slightly
41:36bitter plot twist Michelle and Lauren your woodland mailbox made us feel like we stumbled into a
41:43delectable fairy tale everything from the reef to the unbelievably detailed shaker cookies felt so
41:49intentional we only wish that your coconut and lime flavors packed a little bit more punch Lori and Haley
41:56your North Pole sweet shop filled us with wonder we adored the fun and whimsy of your design but the
42:03minty flavors were just a touch too strong you all created gingerbread mailboxes and shaker cookies that
42:10delivered on holiday joy but only one of you really shook up the competition the winners of the batter royale the
42:20$10,000 grand prize from our friends at Instacart and the big master battle champions are
42:27Michelle and Lauren congratulations we are so thrilled it's overwhelming I'm very emotional and just a dream come true
42:45oh we had fun and my biggest take-home thing from this competition is having a great daughter-in-law and we
43:01didn't fight and we didn't fight we were able to work together a little bummed a little sad would have been
43:08nice to be us because we are the gingerbread ladies but pushed ourselves way out of our comfort zone it was
43:13honestly magical because it was once a lifetime experience next time on big master battle holiday
43:21you will create three edible holiday crackers it won't stick don't crack under pressure I'm cracking
43:32and you'll be baking up some ugly holiday sweater cakes we need to get moving beautiful don't look ready
43:42it's the same Christmas oh my god fire in the kitchen this is crazy
