00:13week with a dessert and my personal favorite, figgy pudding. I can't wait for this. All right,
00:23let's get started. It's so much fun to say. As a matter of fact, why didn't I buy those figgy
00:28puddings at the hotel that were readily available? This is easy. It's so easy even I can do it.
00:34We're going to start with our dates and figs. Okay. Okay. Just throw them into. And then dry figs as well.
00:41You cut them up. Dried figs and dates. And then you're going to. Add a little water.
00:48In a little bit of water. Okay. And then your. Baking soda. Baking soda. And the recipe is on the
00:56website for the measurements. And then you're going to let it cook down. Okay. And it's going to form

01:38Ready? Yep. Look at us go. There you go. And the shells are lucky. Okay. Let's mix this
01:46first. Gonna blend this together. And then we're slowly going to add some flour.
01:54Okay. Okay. Add your dry into your wet. All right. Awesome. Is this exciting or wet, guys?

02:51And then you can either use ramekins, which I like to use, or you can just use a muffin tin.
02:56But you take your butter and you butter your ramekin dishes. That's important, right? Yeah. You want to
03:02make them all nice and buttered. I'll do the rest. Because you don't want it to stick. Okay.
03:07Okay. You got that? Yep. And then you take an ice cream scooper. Okay. And you get a healthy.
03:15Portion of that. Portion of your mixture into each ramekin. Are we doing this this holiday?
03:20Yeah. We are. Okay. And you're going to like it. And you're not going to give me nonsense
03:26about the sugar, there's carbs. No, I love. I love figgy pudding. Okay. And then we are going to put
03:32this in the oven. Just like that. Okay. And we're going to finish. We're going to finish this when we

03:54We're going to make our sauce while our figgy pudding ramekins are in the oven at 350 degrees
04:01for 20 to 25 minutes. You want to keep your eyeball on them. Don't keep opening and closing
04:07the stove. Just peer in if you can. Okay. So for the sauce that goes on top, we're going to get
04:12like two sticks of butter. Okay. Love that. And some brown sugar. This much brown sugar.
04:18That's a lot. Yep. And believe me, Gilman cut down the sugar. Oh, really? Yeah, he did. He didn't
04:25like the amount of sugar. So, you know, he's a real killjoy. And then heavy cream. Heavy cream.
04:31Yeah, heavy cream. Yeah. This is, come on. It's dessert. It's pudding. It's figgy pudding for the holidays.
04:38Can I whisk that? Yeah. Go ahead. Whisk it up. Okay. Cool.
04:42Let me know if you need a hand. No, I'm good. Okay. Yeah, I got it. Good job. So proud of
04:50you. Is this your first time whisking? It is. I can tell. I can tell just by watching.
04:57All right. What's next? All right. All right. While you're doing that, what we're going to
05:00do is we're going to take our figgy puddings out of the oven. You let them stand for 10 minutes.
05:06You don't want them to be piping hot. After about 10 minutes, you're going to take your beautiful
05:11sauce, which will look like this. Here you go. Look at that. Yeah. Okay. Yeah. These have
05:19been standing. The oven's not on. And then we take our sauce and we just drizzle the sauce
05:26on top. I like to serve them with ice cream or creme fraiche or whipped cream. A dealer's
05:37choice. It's up to you. Gellman, you would like creme fraiche because it's nice and sweet.
05:45Anyway, are you ready to try? Yes. Yes? Yep.
05:47Whip cream? Yeah. Do you want a little whipped cream? Put a little whipped cream on there for me.
