02:26Without doubt, one of the most iconic locations in modern cinema.
02:31You've made it to the grand final.
02:34The stage is set for one final heroic challenge.
02:39But what is it?
02:41Well, this year marks the 20th anniversary of Harry Potter and the Goblet of Fire.
02:48The fourth Harry Potter film.
02:50Okay.
02:50I know, I know.
02:51How did James and I look so youthful two decades later?
02:56Polyjuice filler.
02:58The elixir of life, you know.
03:01The Goblet of Fire is all about the contest to win the Triwizard Tournament.
03:07Eternal glory.
03:09That is what awaits the student who wins the Triwizard Tournament.
03:14But to do this, that student must survive three tasks.
03:18Three extremely dangerous tasks.
03:23Wicked.
03:24The inspiration for your final show pieces will be one of the many unforgettable scenes
03:28from the fourth Harry Potter film.

03:32And this time, to take home the trophy, your bakes must contain one delicious tasting element.

03:43You'll have eight hours for the most important bake of your lives.

04:20My favourite scene is the Yule Ball.
04:22When I was pregnant with Grace, my first child, Simon and I went to the Harry Potter studios
04:28to do the tour, and the Yule Ball was all set up.
04:31So it's a really special memory for me.
04:33So it's wintry, it's sparkly, there's loads of ice everywhere, there's lots of people dancing.
04:38And of course, the classic moment for me in the Yule Ball is when Hermione is descending
04:42that staircase.
04:43Yeah, you're right.
04:44And we'll put the staircase here.

04:55How about Ron waiting at the bottom of the stairs?

04:57The dancers, of course.

04:59So for our showpiece, we are going to have a revolving dance floor with hand-sculpted dancers.

05:08At the top, we're going to have a chocolate dome and arches.
05:11And the whole piece will be surrounded by a magical spiral.
05:15This is the last chance we have to pull out all the stops.

05:48It's my personal favorite movie.

05:52And then, of course, Cedric Diggory tells Harry to take it to the Prefect's bathroom.
05:55We have chosen the Prefect's bathroom, and it needs to feature as much sort of magic and
06:02storytelling as we can throw at it.
06:04The main thing is a bathtub.
06:05What about the taps?
06:07Yeah, with all the different color.
06:09We have that beautiful stained glass, which we could do out of sugar.
06:13Okay.
06:13At the top, you know, of the mermaid.
06:15Uh-huh.
06:16It's such a feature.
06:16It's iconic.
06:17It's very iconic.
06:18It's such a feature of that bathroom.
06:19So we'll have, like, the colorful faucets, the bathtub, and then we're also going to
06:24have a stained glass window with the mermaid in it.
06:26We're going to have the egg.
06:28We're depicting that it's going underwater.
06:30So we're going to have the mermaid tail and seaweed.
06:32This is the most complicated thing that we have ever tried to do.

06:38Okay, so we've got to do a scene from The Goblet of Fire.
06:40You know when the Bobatons arrive?
06:43Oh, yeah.
06:49The Bobatons compete in the Triwizard Tournament, and they're so glamorous and stylish.
06:54And they have quite a dramatic entrance.
06:56And I love the carriage that they come in.
06:59So carriage, nice big wheels on.
07:02Mm-hmm.
07:03The horses are amazing.
07:04The winged horses.
07:06Obviously, we want the horses to fly.
07:08And nestled on some clouds, flying over the Pyrenees Mountains.
07:13Gorgeous.
07:14Woo, she's running.
07:16All right, let's do it.
07:17I need to start stacking cake for the Christmas tree base.
07:21I want plenty of places to put little ornaments, little decorations, hidden little areas where
07:26Alex can put his tasting element.
07:28Christmas trees are, they're full of texture.
07:30At the moment, it's like a chocolate mess, but there is method to my madness.
07:34What I'm going to do now is heat up some paste, and I'm going to make all the little branch
07:38details.
07:39So I texturize as much as I possibly can, but obviously, I've got a lot of sculpting to do
07:44for this challenge.
07:45So I've decided I've got to move on.
07:47Okay, time is short, and I've got to make dances on the dance floor, which is going to
07:51take me ages.
07:53I've chosen to make eight people, which is an interesting decision.
07:58I have never rushed stuff like this so much in my life.
08:04This challenge, we want to do something we've not done before.
08:06We've had pieces where we've represented freestanding characters.
08:09We've had flushing toilets.
08:10We've had Hagrid and his beard.
08:13But when we are thinking about this one, I think we're going to do a traditional, stylized
08:18showpiece.
08:20We've not done that in the competition, and it's a risk, because other judges are going
08:24to think we're being too predictable.
08:26I'm going to be starting with the Carlota.
08:30When I was a little guy, my mother is always making Carlota on Christmas.
08:35That's why I decided to honor her.
08:37A Carlota, it's a Mexican dessert that only has three things.
08:42Lemon, condensed milk, and cookies.
08:45I'm elevating this Carlota by changing some of the elements.
08:50The condensed milk, it's going to be the honey chantilly.
08:53The lemon, I'm using yuzu.
08:56And the pistachio and lemon sponge cake, it's going to be the cookies.
09:00So it is going to be sitting on the bottom of the tree.
09:03It's going to be a Christmas bubble, so we are going to put it all around the cake.
09:07So I just glaze it with some caramelized white chocolate.

09:11And I'm just putting some silver leaf.

09:54I will be creating a stained glass window from pastillage, ice malt and royal icing.

10:04I've just noticed as I'm coloring it up that there's a little bit of a crack in the pastillage.
10:08It's making me a little nervous that it's not going to hold together.
10:11This is going to be a potential problem.
10:13We fix it the best we can with more ice and malt.
10:17I'm hoping that once it's filled with ice and malt, it should be okay.
10:21What I need to do is very carefully, with black royal icing, pipe all of the lines in the correct position
10:28so that I'm telling the story of the shape of that mer person.
10:32This is genuinely very stressful.
10:35I really don't know why we decided to do such a risky and challenging piece, because it's all a bust.

10:42I essentially start coloring in, because in the actual stained glass that you see in the movie, it's really beautiful.
10:49But, boy, it is really, really time-consuming.
10:53And it is taking longer than the 20 minutes that I allocated for it.

12:26So I'm building the carriage not with a mold, but with a blueprint like I'm an architect.
12:31And I'm feeling a little out of my element.
12:36The roof, it's made up of four triangles.
12:40I'm having to pay really close attention to the details and the order they go in.
12:46So I'm just building this thing I've never built before.
12:48And insanity has set in.

14:02So we have a standard that we want to hit and also go even above and beyond that.

14:18For the men, I've decided to keep them very simple and just go with simple black shapes.
14:23The men are definitely more basic in general.
14:29The ladies' dresses, I want them to be recognizable as the characters.
14:33So I've made Cho Chang.
14:35I'm making Pavarti.
14:36And I'm doing a sort of reputation of fleur de la queue.
14:39So Goblet of Fire, Hermione comes down the stairs.
14:42And in the movies, she's wearing a sort of a purple-y color.
14:46But actually, the fans will know who've read the books that she's actually wearing a periwinkle blue.
14:50So I'm actually celebrating the book here with her dress.
14:55I don't want to break them.

15:05And right now I'm unmolding all the isomalt.

16:17and we all were dancing salsa and some meringue music, so it was really nice.
16:23I wouldn't do any dancing, because we've worked out there's a curse of dancing on this show right now.

16:55I'm doing armature wire to create, like, a skeleton.

17:01I'm very much an animal person, and the anatomical structure of the horse is something I've looked at a lot.
17:07The muscles and the legs, I need to just make them absolutely perfect.
17:12And it's really, really difficult.

17:15I used to ride horses when I was younger.
17:18This one took a little while, but now I've done it.
17:20I can do the second one a bit faster.

17:53I'm going to work on a hazelnut single malt whiskey mousse, hazelnut sponge, hazelnut crispy layer, and a bananas foster that I'm going to flambe today.

18:06I want to play a little trick on the judges with the shape of the apple, because the flavors have nothing to do with apple, really.

18:41You pour very hot sugar, very hot ice malt, and fill the tube.
18:45And with a syringe, you inject some air inside of the tube.
18:49The air creates bubbles within the sugar.

20:21To make really big structures like this, you have to be quite physically strong.
20:24I don't really go to the gym or anything, but I think this is kind of the only reason
20:27why I've stayed relatively fit and strong.
20:29We still have a lot to do, and it is scary.

20:36Maybe it's too big.
20:38I think we potentially could have made it a little bit smaller.

21:03And so I'm putting rice paper into blue-coloured water.
21:07And then just fry the edge of it to give that kind of ruffled edge of the crust of a wave.

21:14What a fun technique to add to your cake decorating, hey?

21:26I'm going straight into my tasting element,
21:28which is inspired by a dessert that my nan always used to make, baklava.
21:33But I am layering it up into a cake.
21:36It's going to go inside the merperson tail.
21:39I have honey, lemon peel,
21:41and I'm also going to throw in a little bit of orange blossom water
21:44to really enhance that flavour.
21:46It smells really good, Zoe.
21:47What I've got here is something called kadayef.
21:50It's a phyllo dough.
21:51And I'm just going to fry it off, really, with a little bit of butter.
21:54Kadayef is something that completely reminds me of my nan and my Turkish heritage.
21:59So it just feels right.
22:01I am going to be as true to my nan's baklava as I possibly can
22:06whilst trying to present it in a different way.
22:08So this is going to be a challenge to try and translate this into cake form
22:12because the difference in the texture.

30:59At the top of our showpiece, we have the dome.
31:02And then coming down, we have Hermione, who's descending the stairs, and she's being met by Ron at the bottom.
31:07And then as we come down to this tier, we want to represent a lovely dance.
31:12Coming down, we have a full Christmas tree, because it's the Yule Ball.
31:16And the spiral, it's made out of isomalt, chocolate work, and we put some silver leaf also in it.

33:38So, we wanted to go quite big.

33:48We wanted to capture, at the moment, the winged horses fly the carriage to Hogwarts.
33:53And we've captured the Pyrenees Mountain, which is rice cereal and tempered chocolate.
33:58And then we've got fondant waves.
34:01We've actually deep fried the edges to make it look like the crest of a wave.
34:05On the top, Priya has handmade, with no moles, no templates, this beautiful chocolate carriage.
34:13And then I've made the white chocolate modeling paste of horses.
34:18I love this very dramatic scene.
34:20I think your storytelling is incredible.
34:23You really have freeze-framed a part of the movie, for me at least.
34:27I feel like this piece brings your whimsy.
34:30The colors, the shapes, I mean, the entire piece really flows.

34:36I'm a huge horse lover.
34:37We breed horses.
34:38And I'm totally blown away by them.
34:41And I can see, like, the tendons.
34:42The wind is blowing their mane, their tail.
34:44The shine, they look so, like, pearlescent.
34:48I'm really impressed that you've made the carriage and horses by hand.
34:53So, it looks really well put together.
34:56So, when the carriage door swings open, it reveals inside a golden apple.
35:01Oh, that's so sweet.
35:03We all know that horses love apples, but these are not ordinary horses.
35:06And this is not an ordinary apple.
35:09These horses consume one thing, single malt whiskey.
35:13Oh.
35:14To play on those flavors, the treat for all of you today is a single malt whiskey hazelnut mousse
35:21with a Bananas Foster flambe.
35:24And I've done a hazelnut sponge and a hazelnut crunch layer.
35:28First, you need to look out visually, the golden apple is perfect.
35:33Your flavors are fantastic.
35:35But I think, in terms of layering, they weren't evenly distributed.
35:40The whiskey comes through, like, nice and strong.
35:42There's a lot of cream going on here.
35:44There's a lot of the banana.
35:46I think there could be a little bit more crunch.
35:47A little bit more texture could have gone a long way.

37:42I've layered baklava with a pistachio cake,
37:46paired that with a rose and kefir buttercream,
37:50something that's sour,
37:51and in there is a pistachio and kadhaif crunch.
37:55The crunch of it, the way that you've made that is amazing.
37:58I love the crunch.
37:59I love the texture.
38:00You get baklava, you get the rose water in the buttercream.
38:03And I think you've really actually quite cleverly integrated baklava into cake.
