03:37So, bakers, your semi-final challenge is all about fantastic beasts.
03:43And how to bake them.
03:46And in honor of the famous Gringotts dragon, your tasting element needs to be either smoky or fiery.

03:56And we want your incredible baked beasts to come to life.

04:07For this challenge, we may have started here on this beautiful, pristine set.
04:13But you'll be presenting your showpieces to the judges on the set of the destroyed Gringotts.

06:47For this fire tasting element that goes inside of his body, I'll be doing a coffee cake with
06:53a smoke whipped dark chocolate ganache.
06:56And that is going to add a lot of flavor to the cake itself.

07:05It's a blend of chiles with some cacao, and it brings this umami flavor that everybody loves
07:11in Mexico.

07:58Just like the festerole, our tasting element will be very elegant.
08:01To find the fiery note, I will be creating an entremet that has a chocolate chili cake,
08:06a black currant, and chili mousse.
08:09In the middle of that, there's going to be a tamarind marshmallow.
08:12The marshmallow is in there because it's really to represent the bone marrow within the spine
08:16of the festerole.
08:17And then we're going to finish it off with a pink peppercorn chocolate sablé.
08:22I've been an athlete my whole life.
08:23I played baseball in college.
08:24I have won four out of the five competitions I've done on the network.
08:27I've also been nominated for a Forbes 30 under 30.
08:30I love competition.
08:31And you know what?
08:32That's maybe another reason why we're doing this again.

08:36Buckbeak is a hippogriff, which means he is half horse and half eagle.
08:42And it's a really big piece.
08:44And we have to cut thousands of feathers.

08:51We feel like we're bringing a lot to the table, always pushing ourselves.

16:39It applies like a layer of elasticity, so it literally turns from paper into fabric.

20:15And to amp that up, I'm going to put in some cayenne pepper and chipotle for a little bit of smokiness.

20:53I will be doing an ode to Buckbeak and the Pumpkin Patch by making the layered pumpkin entremet.

21:02I chose scotch because Hogwarts is in Scotland, and scotch has a really nice smoky flavor.
21:08And then for our smoky element, I'm making smoked caramel.
21:11The fats and the cream will absorb the flavor of the smoke.
21:14We smoke a lot of foods at home.
21:15I live in the South.
21:16Smoking is, like, just, that's part of life.
21:19I mold my caramels into mini domes.
21:21These are going to go into the blast, and they will pop out.
21:24And they'll be chewy caramel.
21:25Also inside of the Pumpkin Entremet, we are going to do caramelized bacon brushed with brown sugar and maple syrup.

21:33Once the tasting elements are inside of our entremet, I can dust them with some edible paint.
21:37These flavors together, pumpkin, caramel, bacon, they are really, like, going to really love the jojas.

23:09so we're going to have a couple trees in the back,

23:12I casted the chocolate, and then I'm going to wrap it,
23:15roll it around the PVC.

23:19we need to thrive.

23:47Her angles and her ribs, the detail in her beak.
23:50She's a beautiful creature, but very anatomically complicated.
23:56If I get an airbrush on it, it's going to homogenize,
23:59and it's just going to fit better than it does at the moment.

24:05Seeing you do this reminds me of walking into the creature shop on the films
24:08and seeing them create the real hippogriff,
24:11in which they did lay in individual feathers, thousands of them.

28:30The tasting element is an entremet built around fire.
28:33And we decided to hide the entremet in the vertebrae of the Thestral.
28:38Which saddens me because it means you're cutting into this, aren't you?
28:41Well, we did it in a good way.
28:43There's a layer of a chili chocolate cake, and then we have the freshness of a blackcurrant mousse with some fresh jalapenos, a little bit of scotch bonnet in there.
28:50And then in the middle, there's a tamarind marshmallow, and then at the base, there's a pink peppercorn chocolate sublee.
28:55I'm a little concerned about the combination of flavors because, as you may remember from series one, I'm not particularly exotic in my taste.
29:04I think you might be pleasantly surprised with this.

34:31The feathers were laid on and went against each other.
34:34I feel like he just looks a little bit scruffy, and that takes away from the elegance of the creature.

34:45It is pumpkin and scotch for the mousse on the exterior, and then it has a layer of caramelized bacon on the inside.
