01:20three unique bakers with the same goal this is it to take the top spot no
01:28time to dilly-dally Joe arrived wish me luck poised and polished lots of
01:33decorating which I love and full of surprises and it's me Joe and English
01:38yeah but now see if they live many though her bakes looked effortless this is a 10
01:43in my mind they took patience and practice that's the kind of desert you
01:48will expect in a high-end restaurants two-time star Baker always a friend
01:55are you okay is it really hurting you Joe will bring her intuition and skill all
01:59the tricks and hacks I have the old-school hacks to take home the cake
02:04plate it's such a pinch me moment like I'm actually in the finale of the great
02:08Canadian baking show go big or go home quite literally I'm gonna try my best to
02:12win it's a friendly competition but it's still a competition I'm here to prove
02:19something so let's bake tough on the job driving a crane is way easier than this but
02:25delicate in the kitchen it's a pastry garden Ryan's bakes were laced with
02:30ambition get ready for a spectacle and elegance your steam burn master though
02:36star Baker was elusive working up a little heat over here he's on a hot streak just
02:41getting ready for the photo finish with back-to-back technical wins sure
02:45taking everything he's learned here my wife saying less is more so maybe a
02:51little bit more he's ready for the ultimate test I didn't think I would get
02:55here to be honest with you what I've done in this journey the relationships I've
02:59made the bakes I've done that I didn't think I could ever do I've definitely
03:03changed we're at the point of no return now so I gotta roll with it my boys talent
03:07banks I just want them to know if you got a dream work hard and you'll
03:11accomplish it drop in enjoy the show Zoe brought Sparkle I call them disco
03:18cherries and heart my dad's pretty much the most important person in my life
03:22after playing it safe we want more than just a kiss of the rum she learned to
03:28trust herself I'm gonna put gochujang in my caramel sauce that's so unique and I'm
03:33glad you dare to do it and after finally winning her first star Zoe yeah she's
03:40ready to prove she has what it takes to win it all I have realized that I'm a lot
03:47more resilient than I ever imagined I'm going for the win today may the best
03:52bigger win but I'm hoping it's me Zoe Ryan and Joe welcome to the finale it feels like
04:07just eight weeks ago you walked into this tent for the very first time it was eight
04:13weeks ago yeah time is so weird bakers you have come a long way and now only three
04:19bakes remain until the winner takes home the cake plate so let's get to it for
04:24your final signature challenge we're going Dutch with both say bowling lie this
04:29dessert combines two popular Dutch pastries the fly a flat tart with a
04:33yeasted crust and bossa bowling profiteroles filled with whipped cream and
04:37covered in dark chocolate feel free to use any combination of toppings
04:41fillings and decorations to make this a winning bake because you have two hours and
04:4615 minutes on your marks get set big oh my goodness me welcome to the finale oh my god I
04:58just like can't mess this one up in the dream scenario I win this is such an exciting finale
05:09every success and every failure this week matters towards who wins the coveted cake plate oh yeah
05:16I'm gonna pull this off with a lot of blood sweat and tears our signature today is a Bosch bowl and
05:21fly this is a very technical bake a yeasted tart dough and then just add shoe pastry on top because why
05:29not even for the most seasoned professional like me I know it will be a challenge the more things you
05:36have to do the more things can go wrong oh my god okay what are we doing now the bakers start with
05:43the other fly a dough that needs much more work than the average tart instead of the usual short
05:48crust tart it is made with a yeasted dough so like bread essentially you wouldn't think a tart dough
05:56would have to rise normally you just set it and forget it this is a lot everything needs to be
06:02taking the rings off the dough itself will have just a hint of ginger brushed with some ginger simple
06:09syrup at the end ultra gingery Zoe's ginger fly will house spiced carrot custard and ginger cream
06:16profiteroles as a nod to carrot cake her dad's favorite treat your dad comes up in a lot of bakes yeah
06:23my dad raised me and my sister um pretty much on his own so yeah everything I do I kind of do it for him
06:29oh while the dough proofs looking good vanilla where are you bakers get to their tart fillings
06:37chop chop gonna take a couple things I like on a charcuterie board it's not gonna be what anyone's
06:43used to but it's gonna be good I got two different types of pears to see which one tastes most pear
06:48like I still have all my fingers so that's great isn't it delicious carrot juice not relying on whispers
06:55of flavors anymore I swear I'll get it there we go
07:00shaping my dough for the tart I need the perfect thinness so that it's not too much bread but enough
07:10that it fluffs up oh boy Ryan is opting to blind bake his crust going in while the others take a big
07:22risk I'm gonna bake it with my fillings I'm gonna be I know I won't know if it's cooked enough until
07:27we cut into it so okay fingers crossed for me um oh god it should be watery when you go in and it
07:35should be like jello when it comes out wow they've grown so much I don't even recognize them anymore
07:43oh well that's Ryan that's Joe that's Zoe it's a figure of speech one hour left I know what a
07:49finger of speech is close oh my gosh there's a lot that goes into a good shoe they don't puff up
07:55you just got dough balls and you can't fill dough balls you want it nice and soft you want it nice
08:00and shiny stressful normally I spend a day making shoe feel like I've won it life everything under
08:07pressure is never quite the same Joe strives to win it life with her chocolate pear pistachio fly
08:14crowned with orange cream profiteroles I'm trying to make a crown so I'm using two different shapes of
08:22shoe oh I go too small we're gonna go with it these are my Parmesan cracklins it's gonna give it a nice
08:29textural look we have two ovens otherwise everything won't be baked I need eyes in the
08:37back of my head but I'm quite good at that with all the children be big and beautiful don't do
08:43anything stupid in there bakers 30 minutes left oh my god how do we feel about time do we have
08:49enough for get everything done I think so what else have I got to do oh make the filling for my
08:53shoe almost forgot about that thank you for asking me ginger pastry cream I hope the judges
08:59don't have an aversion to ginger working on my chicken liver mousse I have to nail this one
09:05because it's a very obscure filling we're giving her today Ryan will give her with a charcuterie
09:11inspired fly filled with onion jam and cheese and topped with chicken liver mousse puffs it's a risk
09:18but you know finale you know I want you guys walking away here either saying what the heck or
09:23what the heck I gotta check on those babies tart we come out of the oven now oh hot so jiggly it
09:41doesn't look set but it will solidify as it cools it's bread right so it does puff up I just want to get
09:48it back down so I have lots of room for my fillings all right let's see run around like a madman
09:55I would like to leave it a few more minutes but I need it cold so I can get cream in it

11:32thank you the aroma from the chocolate is just intoxicating
11:41you use just the right amount of orange in that chocolate and then the pear is still firm enough
11:47and for a crust you have the outer layer a bit crunchy but inside it's still soft
11:54so it's in back perfectly

14:30this filipino treat is typically put together using store-bought ingredients
14:35sponge, graham crackers, sweet custard and a fruit cocktail encased in gelatin
14:41but today the stores are closed and you'll have to make everything by hand
14:45bakers you have two hours and 15 minutes

14:58there are so many elements I'm worried about all of them

15:13I don't think my heart can take more of this
15:16Kyla this cake screams happiness
15:21it's kind of that homey favorite made from store-bought goods usually served in a casserole dish but we've changed it up a lot
15:28I'm sure you dressed up the technical approach of it yeah the bakers will be making their own graham crackers but on top this is what it's all about they'll carve this beautiful fruit and set it with a panda and jelly
15:41so that's already a lot
15:43just wait until you see what's inside
15:45we have two layers of calamansi chiffon cake
15:48now making a chiffon cake that's hard
15:51well on top of that we've got a custard in the center
15:54it must set up inside that cake and it's a thick layer
15:57the custard is so creamy
15:59and the chiffon cake is so light
16:01you turn something simple
16:03into something that's going to give our bakers
16:05a lot of trouble
16:06I have faith in them
16:07I'm starting with the chiffon
16:11because I feel like separating eggs
16:12is easy
16:13everything else that's the hard part
16:15beating up these egg whites into a meringue
16:17getting the batter going
16:19I don't know what this fruit is
16:20never seen it before
16:22I'm just starting to incorporate the meringue into the heavy batter
16:26but you don't want to over mix it
16:27because the judges said to make sure it doesn't deflate
