When you think of cheese, it’s probably France or somewhere else on the continent, but one company in Wales wants to put Welsh cheese on the map.

00:00Wales is known for a lot of things, our musical heritage, our castles and our beautiful landscape.
00:06But when it comes to cheese, you might go elsewhere like France or somewhere else on the continent.
00:10But the Welsh Cheese Company want to change all that.
00:13They want to showcase all the fantastic cheese that Wales has to offer, from breeze to blues and even Welsh Halloumi.
00:19There's absolutely loads on offer all around the country.
00:22I'm passionate about Welsh cheese.
00:24The business has been going for eight years and really with the founding principle of championing Welsh cheese,
00:29particularly from really small producers.
00:32So we work with, you know, 17, 18 different Welsh producers from all over the country.
00:36There's a really wide distribution.
00:38And a lot of them are kind of single cheese producers, often making cheese with their own milk on the farm.
00:45Often they're organic and or unpasteurised cheeses.
00:49And Wales has just got some really fantastic cheesemakers, some amazing cheeses, really world class.
00:55And we love spreading the word about them.
01:00The shop itself serves as a traditional cheesemonger, but also doubles up as a cheese and wine bar.
01:05And Tom says it's amazing to be able to dive into the stories behind the cheeses for their customers and show all the magic behind it.
01:12Really, I suppose we perform two different functions.
01:16So we are a cheesemonger and Welsh specialist deli.
01:20So as I say, we've got about 60 different Welsh cheeses, a lot of them open here on the counter.
01:26And we've got deli goods from all over Wales as well, crackers, chutneys and all sorts of other chocolates, other bits and pieces.
01:35We've also then got the cheese and wine element.
01:38So we can sit about 20 people.
01:40We're open in the evenings or Fridays and Saturdays as well as throughout the day through the week.
01:44And we serve cheese boards, charcuterie boards and all championing Welsh cheeses.
01:49We love telling the stories behind the cheeses, championing our cheesemakers.
01:55You know, we've got images, got maps of where they come from.
01:58We love, you know, letting people taste is what it's all about as well.
02:01And that's really the way to kind of to show people the quality that we've got here in Wales.
02:07Of course, it's Christmas time and this time of year gets extra cheesy.
02:12Giving, receiving and eating cheese are all at their peak during the festive season.
02:16And the Welsh cheese company has to plan well in advance for Christmas.
02:20So this shop has only been open, what, five or six weeks.
02:23But the business, we started selling originally online and we've been trading for eight years.
02:30We've got another shop in Taftswell as well.
02:32And you're absolutely right.
02:33You know, it's all about Christmas for us.
02:35You know, we're planning and building up for it really from kind of August onwards.
02:40We sell a lot for our website.
02:42We are wholesalers as well.
02:43So we supply to restaurants and farm shops and delis.
02:46And all of these businesses are super, super busy at Christmas.
02:49It's a great time, a really fun time for us.
02:52It takes a lot of planning.
02:53Every year is something else to kind of consider or to kind of take on board.
