With fennel and thyme, it's full of flavor and won't leave you feeling guilty afterwards.

00:01Food is healthiest when you cook it yourself.
00:04And once you try my fennel and citrus whole roasted chicken,
00:07you're never going to get a rotisserie chicken at the grocery store again.
00:11All you need is a few cloves of whole garlic,
00:15the juice from two lemons,
00:17and two small oranges or clementines,
00:21a nice handful of fresh thyme,
00:24one bulb of fennel,
00:27kosher salt,
00:29fresh cracked pepper,
00:30and some good olive oil.
00:32So I combine all of the ingredients into a Ziploc bag along with a whole roasted chicken
00:37and I put it in the fridge overnight or up to 24 hours.
00:41I've already had one hanging out for a while.
00:44And let me show you how easy this is.
00:46I'm going to add a little bit more olive oil just on top
00:49to give it that gorgeous golden skin,
00:52a little sprinkling of salt,
00:54and a final crack of fresh pepper.
00:57And into the oven.
01:07It is so tender and so moist,
01:10but with so much flavor.
