00:00Garlic confit and garlic oil are two of the simplest ways to level up your cooking.
00:03This is how to make them and three ways to use them.
00:06Peel our garlic, cover in neutral oil and cook in the oven at 120 degrees for around two hours
00:11or until they're completely soft.
00:12Strain to separate the garlic from the infused oil.
00:14The confit garlic can be spread directly onto toast while the oil is delicious as it is
00:18but we're going to take them a step further.
00:20To make garlic butter, start with double cream and whisk until it splits into butter and whey.
00:25Squeeze out the liquid and you're left with fresh butter.
00:27Mash in some of the garlic confit, season with salt and pepper and stir until smooth.
00:32I like to add in some fresh chives for a bit of brightness.
00:34Perfect for spreading, cooking or finishing a steak.
00:37Next, aioli.
00:38Blend egg yolks with confit garlic, a splash of its oil, vinegar and Dijon mustard.
00:42Drizzle in more oil until it emulsifies, finishing with lemon juice for a delicious garlicky sauce.
00:47Use as a dip for fries, on burgers or anywhere you would use mayo.
00:50Finally, for a quick salad upgrade, blitz confit garlic with mustard vinegar,
00:54a touch of the garlic oil and a neutral oil for a delicious vinaigrette.
00:57Use on salads, vegetables or add to marinades and sauces.
