Garlic confit and garlic oil are two of the simplest ways to level up your cooking.

Peel our garlic, cover in neutral oil and cook in the oven at 120 degrees for around two hours

The confit garlic can be spread directly onto toast while the oil is delicious as it is

but we're going to take them a step further.

To make garlic butter, start with double cream and whisk until it splits into butter and whey.

Squeeze out the liquid and you're left with fresh butter.

Mash in some of the garlic confit, season with salt and pepper and stir until smooth.
