03:35It has four or five different kinds of mushrooms and you just kind of just boil it and reduce it down and kind of fortify it and it takes hours just to basically extract all of the umami out of the mushrooms.
03:48The work goes into making a good soup.
03:50Let's take a look at that monkey brain.
03:52We really want to know what that is and how are we making that.
03:55So just for context, at the end of the show, for the final competition, the challenge is to make a Eastern cuisine monkey brains.
04:02And apparently this is how we're going to achieve it.
04:04Could you tell us, are we actually using monkey brain?

04:09We have different forms of props.
04:10So you have these that are solid.

04:12That are effectively just plastic.

04:14And then you have these ones that are made out of silicone.

04:24We got molds and we just kind of pour it into a mold and it basically takes a shape.

04:29There you have it.
04:30That's how monkey brain is made.
04:31All right.
04:32So tell us about this cage.

04:38So inside this cage, we are going to have a monkey.

04:45He has a way bigger IMDB than I do.

04:49And this is the monkey that we are using in our dish.

06:17What is the dish that you were making?
06:27This is going to be the French aspic.
06:30Now this is Leon Kennedy's famous dish, but it is the white wolf heart French aspic.
06:38This is what we were shooting today.
06:39This is where the VFX comes in, where I punch through the ice.
06:43It breaks apart, and then we add the dry ice.

07:10Recently we got a new line cook, who is ridiculously good looking, annoyingly talented, but oddly quiet.

07:27So we're on Real Talk right now, and this is a show that so many people watches.
07:32People would love to know about the great looking mountain in front of you.
07:36Can you tell us a little bit about it?
07:37The great looking mountain.
07:38Yeah, so this right here, we have Mount Fuji.
07:40I use these beautiful knives over here to carve out of a block of ice in a very dramatic little scene where it starts as a block of ice and I chop it massively, which turns it into sort of a pyramid shape.
07:52And then I just have at it.
07:54And then after about what?
07:56Let's go with a minute.
07:57A minute of a minute of cutting.
07:59We get this beautiful mountain shape here, which I will then use as my extremely dramatic and over the top plate for my dish, which is octopus.

08:32Alright chefs, this is the fourth round of our first cook-off.
08:35The question is, if you wore a dish, what would you be?
08:39I think I'd be a pizza.
08:40What kind of toppings?
08:41Sausage.

08:47A little bit of Italiano style.

08:52See, unlike Adam, I wouldn't be something as basic as a pizza.
08:56I would be a pancetta and courgette linguine with a chili and white wine sauce.
09:02Somebody pulled the photo up.
09:03I don't know.
09:04I have no idea what that is.
09:05Explain it to us.
09:06It's a pancetta, so a ham-like substance.
09:08So if you don't have pancetta, you can use bacon, courgette or zucchini, if you will.
09:11And then you mix that in with onions, a bit of chili.
09:13Let that just reduce, and then you add in some white wine, and then you add in your linguine.
09:16Just a very full-flavored and spicy dish because, hey, I'm a spicy...

09:21Are you a home cook?
09:22How do you know that dish?
09:23I have done that dish.
09:24It's one of my favorite dishes to make, and it sounds fancy, so I sound like I'm impressive,
09:28when really it's just pasta with some bacon-y, whiny vegetables.
09:35You know, I thought I could start over.
09:42Have a quiet life.
09:46That king of cooking shadow just keeps following me.
09:52If only I could have shed that before it was too late.
09:58Maybe you'd still be here.
10:02I am Leon Kennedy.
10:04Now, this is sort of incognito Leon Kennedy.
10:10He is a world-famous chef, kind of famously known for a mask that he wears, a gold mask.
10:16No one really knows who he is.
10:18It doesn't really give anything away.
10:19He loses the love of his life right away, at the very beginning.
10:24And that kind of puts him into a deep, kind of dark depression.
10:30And the only thing he has left is his dog.
10:33He gives up everything else, which includes cooking.
10:36That leads him to a year later, to this restaurant, where he decides,
10:41well, maybe it's time I can get back into it, but let me just stay in the background.
10:45So he becomes a line cook.
10:47And then just the forces that I be bring him out,
10:51and he is forced to break some ice with his bare fist, show what he's known for.
10:57And everyone kind of realizes, wait a minute, are you actually the king of cooking?
11:02You are the missing king of cooking.
11:06Leon's the king of cooking?
11:09No, it's impossible.
11:11The Leon Kennedy?
11:14So the king of cooking has been working in our kitchen all this time?
11:17I never suspected it at all.
11:19But who else could make that dish?
11:22And fit check.
11:23Okay, so traditional outfit, I believe, for a line cook.
11:27Really any one of the chefs.
11:28What it depends on is the hat.
11:31The cap, the smaller the hat, I think the kind of the lower you are in the ranking.
11:36This is line cook.
11:37You will see, you know, very top, long hats.
11:41Those are the head chefs.
11:43But everyone else is kind of pretty much wearing the same thing.
11:47The entire team over here is in all white.
11:51We have the competing team in all black with like hints of red.
11:54One thing you'll see for Leon, gold.
11:57He's always got something that's gold.
11:59That's the fit check.
12:01The real key is the actual culinary team that comes from the kitchen back here.
12:13They're the ones who give me a lot of attention and they're super sweet and show me how to prep and place and plate.
12:24It looks amazing.
12:26And what they do is just incredible.

13:32Okay, so this is an underdog story about the most talented chef in the world up against the billionaires of the world who think they can just use money to destroy people's livelihood and exploit their, like, hard work.
13:45And because this is a show about cooking.
13:48And we have a lot of fancy dishes and, like, splashy cooking sequences.
