03:34boil it and reduce it down and kind of fortify it and it takes hours just basically
03:40Extract all of the umami out of the mushrooms. The work goes into making a good soup

03:50So just for context at the end of the show for the final competition the challenge is to make a Eastern cuisine monkey brains and

04:19We got molds and we just kind of pour into a mold and it basically takes a shape. Wow. There you have it. That's how monkey brains made

07:32The great looking mountain. Yeah, so this right here we have mount fuji
07:35I use these beautiful knives over here to carve out of a block of ice in a very dramatic little scene where it starts the block of ice and I
07:44Chop it massively which turns it into
07:46Sort of a pyramid shape
07:48And then I just have at it and then after about what let's go with a minute a minute of a minute of cutting
07:54We get this beautiful mountain shape here, which I will then use as my
07:59Extremely dramatic and over-the-top plate for my dish, which is octopus

08:27Alright chefs, this is the fourth round of our first cook-off. The question is if you wore a dish, what would you be?
08:33I think I'd be a pizza. What kind of toppings? Sausage. Okay pepperoni. Okay ham. Okay pepper
08:41Onion a little bit italian style. Great choice

08:47See unlike adam, I wouldn't be something as basic as a pizza
08:51I would be a pancetta and courgette linguine with a chili and white wine sauce
08:57Somebody pulled the photo up. I don't know. I have no idea what that is explain it to us
09:00It's a pancetta so a ham like substance, so if you don't have pancetta you can use bacon courgette or zucchini if you will
09:06And then you mix that in with onions a bit of chili
09:08Let that just reduce and then you add in some white wine and you add in your linguine
09:11Just a very full flavored and spicy dish because hey, I'm not spicy
09:14I'm zesty. You're zesty. Are you home cook? How do you know that dish?
09:19I have done that dish. It's one of my favorite dishes to make and it sounds fancy
09:22So I sound like I'm impressive when really it's just pasta with some
