00:27But first up, how about a little adrenaline-fueled fun at Jamboree Action Park?
00:46On the south coast of New South Wales, about 90 minutes from Sydney,
00:50is a water wonderland called Jamboree Action Park.
00:54This place was built for fun.
00:57I am just amazed at the number of water slides and activities they've got here.
01:03So I thought I'd start off with something nice and easy, just to whet the appetite.
01:07They call this the Stinger.

01:15Oh my goodness, that is unbelievable.
01:25That was a lot faster and scarier than I thought.
01:26Okay, what's next?
01:27Jamboree is the ultimate day out for families and thrill seekers ready to take on the action.
01:31The trusty bobsled and chairlift were the go-to's back in the early days.
01:37But now there's over 15 rides and attractions that twist and turn their way through the parkland.
01:43So this one is one of the new crowd favourites.
01:44It's called the Octo Racer.

01:51contenders, whoever gets to the bottom first takes glory.

03:14Otherwise, there is a massive array of food here to help you recharge your batteries.

03:39Right through to the little ones, who love nothing more than the four stories of adventure
03:44and Banjo's Billabong.
03:45But the great thing here is that for the big kids, there's big rides.
03:49And for the little kids, there's lovely little playgrounds.
03:54A unique feature of the park is that it sits right in the middle of some of Australia's best
04:03dairy country.

04:05The surrounding farmland is just beautiful and gives a totally different kind of experience
04:12to any other theme park in the country.

04:57of adventure, and take on the thrills at one of Australia's most iconic water parks.
05:08After the break, where the mountains meet the sea in the stunning little town of Kaikoura.
05:24Welcome to Kaikoura.
05:25I feel like I've been dropped into a real-life postcard, as well as epic views everywhere
05:31I look.
05:32This area is also teeming with marine life.
05:36This is Mother Nature at her absolute best.
05:41An easy two-hour drive north of the city of Christchurch is the lovely little town of
05:47Kaikoura.
05:48New Zealand is famous for its spectacular scenery, and Kaikoura is absolutely no exception.
05:56Miles, this area is so special.
05:59Does it still feel like that for you when you kayak here every single day?
06:02Yeah, I mean, it's a pretty amazing place to be.
06:04We're very lucky coming kayaking out here every day.
06:07And the amazing thing about it is every day is different.
06:10The mountains in the background there, and the sea out here, it's pretty amazing, yeah.
06:15Kaikoura Kayaks offers several guided tours, as well as a higher option for self-guided experiences.
06:25Whichever you decide, you are in for a treat.
06:32There is so many more seals here than I thought there'd be.
06:36Yeah, so this is our main seal colony here in this area.
06:39We've got loads of New Zealand fur seals all around here.
06:43All the ones that are here at the moment will be the males.
06:46And the females will be coming to this area for the breeding season, which is mid to late December.
06:52And then there's the other marine mammals Kaikoura is famous for, the hectodolphins.
06:58Oh, oh, oh my goodness.

07:08This is amazing.

07:14That was one of the best moments of my life.
07:19The dolphins came under our kayak and started just swimming along with us.
07:24Oh, that's what dreams are made of.
07:28As well as its beauty, the landscape around Kaikoura is incredibly diverse, with sheer cliff faces, mountain ranges and secluded little bays.
07:39Miles, this is absolutely remarkable.
07:42It really is a unique place in here, isn't it?
07:46It's just beautiful to be able to come in around the rocks and into these perfect little bays here.
07:52It's just such a special place to be.
07:56There's a few mandatory stops on a visit to Kaikoura, and the seafood barbecue kiosk is most definitely one of them.
08:09In Maori, Kaikoura means food or meal of crayfish, and this little spot is the best place in town to get the freshest seafood, including, of course, the famous crays.
08:19The crayfish, as well as all of the seafood at this quirky little roadside landmark, is brought in fresh every day.

08:39You can tell how fresh it is, caught just out there.
08:42With a permanent population of just a couple of thousand people, Kaikoura isn't home to big flashy hotels and five-star resorts,
08:52but in keeping with the quaint vibe of the town, it does boast some lovely B&Bs.
08:59Niqau Lodge is located just a couple of minutes' walk from the heart of town, and is the ideal home away from home.
09:07Hosts Mick and Karen are originally from the north of England, but fell in love with this little slice of paradise.
09:14It's a big change for us, but...
09:16Yeah, just really enjoy meeting the people and, you know, chatting to them while they have breakfast and listening to their stories about where they've been and, you know, where they're heading to.
09:26As well as views from all rooms, there's communal spaces and even a hot tub.
09:32After a big day out on the water, this is the perfect way to relax.
09:46Coming up, we're taking this Harley for a spin through the Avon Valley.
09:50Well, that's just perfect.
09:53One of my favourite things to do is explore Western Australia on my bike.
10:09I love the freedom it gives me to be able to just go wherever I want.
10:12So when I can combine that with a motorcycle festival, well, that's just perfect.

10:20And the voices ring like the angels singing.

10:28In the dance gone into the night...
10:3290km east of Perth in an historic region of Avon Valley
10:36is Western Australia's oldest inland town, York.
10:39And A-O-A-O-A-O-A-O-A-O-A.
10:42Sitting on the Avon River, or Woggle, it's a great place for a day trip,
10:46but it's also home to the York Motorcycle Festival.
10:51A big part of the festival is the charity ride from Midland to York.
11:05The land of the Balladong Noongar people.
11:08York was established to grow cereal crops to feed the Swan River settlement in 1829.
11:17The town is actually listed as a heritage precinct because it has so many historic buildings.
11:22But today it's all about bikes, bikes and more bikes.
11:33Denise, how good is the festival?
11:35This is fabulous. I mean, look at the town.
11:38We've got probably over 10,000 people here.
11:41It's absolutely humming.
11:42It is, it is.
11:43And it's so good for this town because, you know, we're a little wheat belt town.
11:47Three and a half thousand people.
11:50Thirteen and a half thousand people here today.
11:52Yeah, really smashing it out of the park.
11:54So it is.
11:54A visit to York is not complete without a stop-in at the York Motor Museum.
12:05It's home to an amazing collection of vintage cars and bikes.
12:08A great look back at Australia's motoring history and it's wholly owned and run by the community.
12:14The museum was started in 1979 to house the private collection of Peter Briggs, a motor enthusiast in Western Australia.
12:26This part is my favourite bit because of the vintage bikes.
12:30And they also have a nice picture of me on the wall.
12:37Well, it's a beautiful collection.
12:39And I know it's your favourite question, but what's the car?
12:41What's the crown jewel in the collection?
12:43The crown jewel would have to be the Australian Six.
12:46There's only four left in existence.
12:49They were hand-built in Australia to create employment for return diggers from World War I.
12:54The company operated from 1919 until about 1925.
12:59Oh, it's a beautiful piece.
13:01What else should we be looking out for at the museum?
13:03Oh, we have a collection of motorcycles.
13:05We have the owl art here.
13:06There's only four of these in the world.

13:26York Motorcycle Festival is a bit of an institution in Western Australia.
13:30It brings people from all walks of life.
13:32The sports bike lover, the vintage bike lovers, and the loud bike lovers, of course.
13:36And even people who don't ride.
13:39And that's the beauty of it.
13:40It's a great day out for the whole family.
13:46One of the absolute must-sees of the event are the bike stunts.
13:53It can get pretty loud, but the crowd is massive and they love it.

14:25After the break, we're hitting the local haunts of Oahu to uncover the best of Hawaiian
14:30cuisine.
14:31I'm lucky.
14:32All these other restaurants have to be cutting edge, and my job is to be exactly the same.
14:36Now, here in Hawaii, they are as chilled as you can get, but if there is one thing they
14:52take seriously, it is the food.
14:54Now, these days, they have got just about every type of cuisine, but seriously, it is
14:58worth going local.
14:59Even if it's just for one day, you've got to do it.
15:01Trust me.
15:02You've got to be grateful for what you've got.
15:06We're in Honolulu on the southern side of the island of Oahu.
15:09You've got to be grateful.
15:11Just minutes from the sands of the famous Waikiki beach is a little local haunt that
15:15has been a fixture on the Hawaiian dining scene for generations.
15:21Helena's is a humble restaurant with a huge reputation for quality local food.
15:26The restaurant's namesake matriarch has passed away, and grandson Craig has taken the helm.
15:35Hawaiian food is broken up into two different types.
15:37There's the ancient Hawaiian, and then there's the more contemporary Hawaiian food.
15:41We have, like, the charo leaves.
15:43We have kalua pig.
15:44That's very ancient Hawaiian.
15:46The Chinese showed up later, and they brought their noodles.
15:49So that's more contemporary, but we still consider it Hawaiian food.
15:52It's what we serve at all our weddings and first birthday parties.
15:56And then, of course, lastly, we have poi.
15:58Poi is the rice or the potato of the Hawaiians.
16:02It's the staple, and so it's very important to the Hawaiians.
16:05For over seven decades, Helena's has been serving up the same, no fuss, quality local food.
16:11But, of course, it all comes down to taste.
16:14The oil and the flavour kind of mixes with the pastiness of the poi.
16:18Shit.
16:19It's just biting good, yeah.
16:24Something different?
16:25Oh, my God.
16:27There's so much flavour in that.
16:29It tastes so fresh.
16:35A 20-minute drive out of the suburbs and into the countryside of Oahu is Kohana Distillers.
16:42The property is one of the only rum farms in the world using pure sugarcane rather than molasses and the distilling process.
16:50Great. This is our barrel house.
16:53Oh, you get a whiff of that aroma, don't you?
16:55Oh, yeah.
16:56You get hit with the rum smell.
16:59The rum is rested in these barrels for at least two years to infuse and soften the flavours.
17:04Now for the good bit, we're going to be tasting this glorious rum.
17:09So, what are we going to be doing?
17:11Alright, so we're going to start off with a couple unaged rums.
17:15They're both called Kea, which means white in Hawaiian.
17:21It's not bad.
17:22I don't have anything to compare it to right now.
17:24We're going to move on to our Kohol.
17:26So, this one's a little higher proof.
17:28It's 45% alcohol.
17:30It's just strong.
17:31Get a load of this.
17:32Look at the goosebumps that's just put on my arm right there.
17:33Oh, yeah.
17:34So, this is the Koha.

17:37It's so good, right?
17:38It's spicy.
17:39Yeah, it's so spicy.
17:40It's all the right notes.
17:41Oh, that's beautiful.

17:44Pop, I'm coming home with a present.
17:45Back towards Waikiki is another Hawaiian foodie icon, Waiola Shave Ice.
17:51This Nan and Pop style grocery store has been operating since the 1940s, and its reputation
18:12for the best shave ice in town has clearly spread far and wide.
18:17So, waiting in line, I've found these legends who are from California who are not only here
18:21eating this shave ice, but are trying as much shave ice as possible, right?
18:25That's right.
18:26This is the end of our trip, and we've already been here once in the beginning, but we liked
18:30it so much compared to all the other ones, we had to come back.
18:32So, do I go as far to say that this is the favourite, or...?
18:35I think this is the best one.
18:37Just the consistency of the ice and the flavours just keeps coming back.

18:58These days, you can basically get shaved ice on every street corner in Hawaii.
19:07However, this is one of the OG places.
19:09Now, fun little history fact.
19:10Back in the day, Japanese immigrants working on sugar and pineapple plantations would use
19:14their knives and scrape off shavings of ice off big, giant blocks.
19:18And they'd just cover it with sugar and fruit juice, and that is pretty much how it started.
19:22And this is where it's at today.
19:24So, I'm going to enjoy this.
