00:00here in the stillness of spring the battle for waterfowl survival begins once teeming with
00:13nesting grounds much of North America's wetlands are under threat and with them the future of our
00:19ducks but not all is lost for nearly a century hunters have led the charge in conservation and
00:27today that work continues in the shallows we plant hope one henhouse at a time a simple structure
00:34with the power to bring generations of wild ducks into the world on this episode of the greenway
00:40outdoors we're building habitat in michigan then headed south to the legendary coca-cola woods to
00:45hunt flooded timber in the heart of arkansas and to cap it all off we bring mallard from field to flame
00:51with one of my favorite duck recipes conservation tradition and one unforgettable hunt
00:57i'm kyle green i travel the globe with my best friends hunting for wild game
01:05and dynamic conservation stories join us on our adventure as we escape the shackles of the modern
01:10world and gain a deeper understanding of where our food comes from welcome to the greenway outdoors
01:17i met up with boss's wetland property engineer mike clements to learn how to make hen houses for mallard ducks
01:27this is an awesome piece of property with these hen houses is it exclusively for mallards yeah they're
01:39exclusively for mallard ducks not not any other species use it and then what's the success rate that
01:44you're seeing out here as far as like how many do you put out how many are getting used we've put
01:49upwards of 50 out here and then concentrated it in areas where they're more productive more isolated
01:54areas that have good water good food source good cover so good hunting areas that success rates
02:01probably 75 to 100 so if someone's gonna set up a hen house on their property they should probably target
02:08areas that are good for hunting too that are not pressured the rest of the year exactly those would
02:15be perfect location location location yep housing 101
02:19i like to keep the ends on here sharp because you can roll it up on yourself and all you're looking
02:39to do is get about an eight inch diameter circle so this is just 17 gauge steel fence wire what we're
02:45going to do is just weave it back and forth along the line where it kind of like rolls in on itself
02:52and this is just going to kind of keep everything in place to keep the shape so now is the point where
02:56we're going to stuff it with straw oh yeah we got to go all the way around this thing to be honest
03:01i'm grabbing like little bits
03:04so if you look now you've got your tube here and about two-thirds of it or three-quarters of it are
03:11covered and i assume this which part goes on the bottom then this uh empty part right here the
03:16empty part is what goes on the bottom so this acts as like a shield to kind of protect the hen house
03:21correct yep the steel fence wire this is like closing everything down so we're just zigzagging
03:28because this is like the extra piece and then this is the circle so we're just cinching it down right
03:32there and we've run it through then we'll kind of pull it tight you've got it cinched down at that end
03:38i'll clip off this end wrap this around the end so now that's like what's kind of holding the
03:43integrity of everything together don't i would say don't get caught up in trying to make it perfect
03:48yeah i mean you get this and you're you're golden yeah it's budget housing this is way better than the
03:54house that they don't have currently yes the hay is softer than the straw and that's what you stuff
03:59inside there is the hay because it's like softer for them to use for nesting materials yeah and mallards
04:05don't build nests that's one of the unique properties about them is most birds will will
04:11make their own nests mallards do not so you got to give them everything they need to have so what
04:15do they do in nature then if they don't have this uh they find objects to live up in so a popular one
04:20is trees that are blown over so you see in the marsh where a tree's blown over there's a root mass
04:24sticking up right so trees laid over and it's usually got a bunch of brush or something that's
04:29or down limb that makes a little hole area but you're talking about the perfect case scenario so you can
04:34imagine how big of a difference these hen houses can make because you're offering so many opportunities
04:39for so many ducks to actually find a place to lay their eggs where otherwise they might not be able
04:43to if they can't find the right nesting habitat that's that's it or they might pick nesting habitat
04:48that makes them even you know more vulnerable to predators and so on so forth so it makes a big difference
04:53there goes some ducks a little pear we're bringing you a home
05:07perfect that gives a little bit of play too you want to try to keep it perfect perpendicular to your
05:13prevailing wind sure it may seem like nest like creating nesting habitat and stuff like this this
05:19is hyper specific for malware as a matter of fact even other ducks don't use it as you said but at
05:23the same time it's like this is not rare whether it's deer hunting turkey hunting duck hunting it
05:29always seems to me like hunters have projects like this that further help duck populations you were saying
05:35that you guys harvest far more ducks here since you've owned the property than people did in the
05:39past and that's because you're doing things like this but you're taking more off the land but there's
05:44more ducks now than there were before and that just always seems to be the prevailing point like
05:49if i had one thing to teach people it's like when hunters hunt they put in money and they do
05:55conservation work which creates habitat and better circumstances for game the numbers go up they
06:01harvest the surplus but there's bigger and healthier populations because of it yes today we're doing
06:05duck hen houses but tomorrow we might be doing something for white tail we might be doing controlled
06:09burns for wild turkeys it's like hunters are always doing something and it's because we treat
06:14this like a resource it's our resource that we want to be able to harvest to feed our families with
06:18so we work hard to do it a lot of people that are anti-hunting or against hunting in some way shape or
06:23form they're not doing the leg work to make make it so there's more game it's like because of us there's
06:28more ducks and we get to eat them it's like the perfect system follow the greenway outdoors on all social

06:59we've made our way down to arkansas right into the heart of duck country we're gearing up to hunt the
07:05legendary coca-cola woods i'm playing with fire we're joined by our friend dirk from boss shot shells
07:12and some of the great folks from delta waterfowl the conditions look promising and we're ready to see
07:17what the morning brings i'm playing with fire in a swamp flooded timber i want to do this my entire life
07:29never had the opportunity i don't even need to call i'm just going to wait for the ducks to come in
07:33and then they'll call the shot and tell us to shoot and then i'll shoot twice dirk will shoot
07:37once he'll drop more than me and that'll be that i know you're good we chose a spot where a wide gap
07:44in the canopy opened to the sky a place where passing ducks could spot our decoys from above
07:49and hopefully feel safe enough to drop in we tucked ourselves behind the trees blending into the shadows
07:55i'm so excited before shooting time even arrived one duck floated down and landed right next to us
08:03completely unaware that we were there heads up guys there's a mallard coming over there
08:08there's a mountain right there i wish we would have shot that duck but i know that we're waiting for
08:14bigger groups but when you see that one right in front of you it's like you could be in my belly in
08:18like five minutes not really but it's hard for me to wait up on singles just waiting for bigger groups
08:24it seemed as though a lot of the ducks just wanted to circle and not commit especially the big groups
08:33gotta wonder if they're seeing us from up there because even the singles that want down
08:37they're not wanting to come in for some reason finally one duck dropped down from the canopy right over
08:44the decoys oh god tell me twice i've been chomping at the bit that's probably the only one today i'll
08:55know for sure i shot you know a hen spoonie shooting spoonies that is not a mallard no it sure ain't
09:07it's barely a duck
09:07not too many folks get excited about eating a spoonbill but to be quite honest i don't think
09:15they're that bad but that spoonbill was kind of a representation of our morning we didn't see much
09:21we didn't do much but it was time to pack up so we loaded up the gear headed back for breakfast
09:26and got ready for tomorrow which would have to be better the first morning was according to everyone
09:33here the worst hunting day they have ever had in the 15 years that they've owned the copacola woods
09:41that's our luck that's okay honestly just being in flooded timber and like the different environment
09:49and getting the opportunity to see ducks it was still an awesome morning so if this is the worst
09:54case scenario then the best case scenario is going to be special

10:30we are hunting in the coca-cola woods and while our first day wasn't very fruitful the second day
10:36should be there was a tornado about 50 miles away that got all the ducks up and moving and brought
10:43fresh birds into our area now the first few groups of fresh birds were letting land in the water reason
10:52being is because if we don't shoot at them in the air they will land on the water then when we shoot
10:57ducks later on it will scare them but they'll only go about a hundred yards and stay below the tree line
11:03on our property but if we shoot at them in the air they're going to be long gone moving off to the next
11:08county
11:24i kept picking chad's brain because he hunts these birds every single day of the season
11:29he knows more about these ducks in this area than almost anybody i've ever hunted with
11:34this may sound stupid but duck hunting you always want bad weather wind rain everything like that
11:42but it seems like if you're hunting flooded timber which is something i've never done
11:46you might want it to be like a nice day because then they're coming in here to hide
11:50that's right so clear bluebird we call it bluebird days yeah it's it's as good as it can get and last
11:56night it was the recipe for this we had storms south of us they pushed a lot of birds back up
12:03up north to us it all just worked out it quit raining at just the right time cleared up right when we got
12:09here this morning it's couldn't ask for any better there's a poop right there
12:26this is unbelievable this is insane this high action exciting hunt is exactly what i was hoping for
12:37but it's hard to describe what it's like to be there to have the ducks landing right in front of you
12:43the entire experience is just epic
13:04these mallards are absolutely beautiful the head is like iridescent changes colors in the sunlight
13:10white band right there these iridescent feathers i mean green heads are like the most common most
13:17recognizable ducks in north america but you never get tired of seeing them the taste is my favorite
13:22piece of game meat on the face of the earth they're absolutely gorgeous this right here these curls so
13:29this one's got he's got two and those curls are kind of like antlers on a deer where like if you have
13:35three curls that's like the big 12 point buck this would be like uh eight point buck but even so he
13:41looks super mature thick neck gorgeous goody i think we could have gone our whole lives without
13:51experiencing something like this but all those mornings where we're out there as kids and we get
13:55one duck and celebrate duck hunting and nice weather i'm in yeah no kidding and this morning was epic

14:59these are some of the mallards that we shot in the coca-cola woods and what i noticed in their crop was
15:04they were absolutely loaded to the gills with rice so i know these ducks are going to taste good
15:10ducks don't have gills these ones did and uh what i did was i dry aged them for six days just hung them
15:17in the cooler by the neck didn't gut them didn't anything and then over that process the meat becomes
15:22more tender tastes better and it gets a lot of the uh you know swampy flavor out of the meat instead you
15:27taste the meat for what it is which is fantastic and one of my favorite game meats and if you'll notice
15:32we've got them connected here this fat is connected to the leg and that gives you both pieces of meat
15:38on this side leaving that fat on is such a smart move understand that in the country of germany they
15:44use mallard fat as a replacement for butter so it's such a great thing to use and the way we're going to
15:50cook this is we're going to be sous vide am i saying it right finally sous vide i'll get it i'll get
15:55it eventually and it's going to be at 130 degrees for roughly how long just about two hours okay so we're
16:00going to use the vacuum sealer in order to take all the air out keep them in there safe put them in
16:06the water cook them for two hours we're gonna have a treat you know jeff i noticed with this waffle
16:11contraption you've got going on here i didn't see any maple syrup i didn't see any brown sugar i didn't
16:17see any regular sugar i'm not getting waffle vibes it is a dinner waffle this is the bed upon which we are
16:23putting the duck it's got herbs it's got spices it's a dinner waffle i saw cheese and cheese you're
16:30gonna add syrup to that i can't see how i wouldn't how about this why don't you try it my way first
16:36and then you can add a maple syrup and whatever else you want after i'm done eating okay i'll grab the
16:41ketchup in the meantime all right you watch the waffles i'm gonna make the sauce for the adults
16:47now for a good savory waffle you want a savory sauce for that i'm going to start with mushrooms
16:56which are a great umami flavor and then to go with that i'm going to put in some shallots so we're
17:02going to let that cook get those shallots translucent and then to make it more of a sauce once those
17:09mushrooms start browning you want to get that brown up with a little bit of white wine and then once you've
17:15got the pan nice and deglazed we'll turn the heat down to low and we'll add some cream and that'll
17:21give it a nice velvety texture and that's going to go great with that waffle waffles are done all
17:28right i got about five more minutes now the goal with doc is to get it to medium rare so what we're
17:33looking for is to crisp up that skin and then flip it real quick but you don't want to get that
17:38internal temp above 145 i'm not sure what to call this whether it's duck duck waffle or backwoods
18:03chicken and waffles regardless of what you call it this is the ultimate showdown between sweet and
18:09savory my bite was good i was worried about the mushroom sauce i feel like the mushroom sauce with
18:14the syrup wouldn't be very good but my bite was fantastic that is good you get a look at this it is
18:20absolutely moist all the way through i will tell you the syrup on top glazed over it it made this sweet
18:28thing because you've got like that buttery flavor from the fat yet you've got the syrup and the sweet i think
18:33you're wrong if i was going to do it again i'd probably use like a sweeter waffle yeah then then
18:38the one we used but i'm going to devour this whole thing there's nothing quite like duck hunting and
18:49flooded timber the sounds the smells the way the light cuts through the trees it's one of the most
18:55iconic settings in waterfowl hunting and the coca-cola woods well it lived up to the name we were
19:01surrounded by good people folks that care about the land the birds and passing it all on and when
19:07the birds finally flew right boy did they fly well mallards cupped and committed one after another
19:14that last day was one of a kind and it was a day i've dreamed about since i was a kid back at the
19:20studio we closed out this experience the best way we know how cooking up wild game with the crew that
19:25earned it the book of psalms sums up this trip perfectly the lord has done great things for us
19:32and we are filled with joy this wasn't just a good hunt it was a dream come true
