Not Open; Don't Come, a new speakeasy bar in Sheffield

00:00That kind of led into this idea of, well, I just had this idea to open, you know, a speakeasy
00:04style wine bar called Not Open, Don't Come, with the idea of like, you know, if we want
00:09to kind of compete against these other types of wine bars, let's kind of subvert what I
00:13think other wine bars don't necessarily do the way I like them done.
00:17And I always say there's kind of two types of wine bars, and they're both like, they're
00:23opposite ends of the spectrum, but they're both really kind of pretentious in their own
00:27bizarre way. It's like, you have traditional wine bars that are stodgy and expensive, and
00:33it's like they want to, you know, you go in and you ask for a Cabernet Sauvignon, like,
00:37oh, do you want like a, you know, a Bordeaux blend, or are you looking for something from
00:40Napa Valley, you know, and they both cost you, you know, 80 quid a glass or something.
00:45And so I think kind of the pushback against those sort of very conventional wine bars are
00:50the natural wine bars, which, you know, have a different look and feel and serve completely
00:57different products, but they have kind of their own failings, and that like, you go in there
01:01and you're like, this was, you know, made, you know, in sight of a pack of donkeys, and
01:06it drinks like pure acetone, you know.
