00:40I have not been to Halloween Wars in 12 years.
00:42So this is kind of personal.

00:45I want to show everybody I can do this.
00:47Sugar artists step up to the very first skill spotlight
00:50and push themselves to the breaking point.
00:53This is a really risky piece because if it breaks, there is no plan B.
00:57Who will survive to continue the fight for $25,000?

01:11Teams, here you are all together for the first time.
01:24Wondering who is gonna be the next victim.
01:28Of course, that's all up to our judges.

01:39Now it's time for our biggest challenge yet.
01:41We want you to imagine what might happen when Halloween's scariest monsters face off against each other.
01:48To match that mayhem, the flavors of your tasting elements will be in conflict too.
01:54You'll find assignments for your characters and the incongruent ingredients posted back at your stations.
02:02But that's not all.
02:03We're upping the stakes in this challenge with the skill spotlight.
02:08Each battle, one specialty.
02:10Cake, sugar, or pumpkin will have to put their creations front and center in your overall design.
02:17First up, the sugar artist.
02:23Every display must contain a major story element made entirely out of sugar.

03:12Last year, I was eliminated on the sugar spotlight, so I'm not taking this lightly at all.
03:18Okay, and we have a werewolf.
03:20And a mummy.
03:21Okay.
03:22It's a dance-off.
03:23Oh, my God.
03:24Oh, that's so fun.
03:25Our cake artist is Serena, and our pumpkin carver is Rebecca.

03:30I think with a werewolf, we need to have a moon.
03:32What if we did something that looks like a moon but isn't?

03:36I do need to do a lot of ice them all, so maybe like...
03:39How about a disco ball?

03:41Like, he thinks it's a full moon.

03:45We land on the perfect dance floor at a nightclub, and the disco ball is transforming the werewolf.
03:52So, we have to make a swamp.

03:57I'm David Smith, full-time pumpkin carver.
03:59I'm a multi-time world champion in ice carving.

04:10You know how the swamp has that depth look in it?
04:13Yeah.
04:14How about I do some isomal, like, back here with some trees back here?
04:18Can you do a target out of sugar?
04:20I could do the target, the whole thing.
04:22The story's axe throwing, but we want to put a twist on it.
04:24So, we're definitely going to nail a bullseye, and then the witch nailing the swamp monster as her bullseye.

04:34Our team is the terrifying trio.
04:36This is our first time on Halloween Wars, and it means so much to us to be here.
04:42My name is Kylie Holt, and I am the cake artist.
04:45Kelly Shivery is a self-taught sugar artist, and Michael Valoroso is our pumpkin carver.
04:50Vampires, like, eat bloods.
04:52But then what would the goblin be eating?
04:54Insect.
04:55Oh yeah, insects.
04:56Like bugs, and centipedes, and beetles.
04:59We're going to make an eating contest between a vampire and a goblin.
05:05Can you do all these bugs out of Isomalt, though?
05:07Yeah, for sure.
05:08Yeah?
05:09We made a lot of mistakes last week.
05:10We are ready to prove to the judges that we belong here.
05:13We cannot be in the bottom.
05:14No, we cannot.
05:15Absolutely not.

05:17All right, let's go.
05:18So, we're doing MMA, Troll, and Reaper.
05:20Well, I think out of this, the Reaper has to win because he's death, right?

05:25So, okay.
05:26Our team is the Under Cakers.
05:28I'm originally from Guyana, but I live in New Jersey.
05:32I am a cake sculptor.
05:33Marguerite is the pumpkin carver, and Nails is the sugar artist.
05:36And since we gotta do sugar, let's make the weapon, let's make the big weapon sugar.
05:40And it's gotta be at the front.
05:41The big side can be the sugar, right?
05:43In our design, the Grim Reaper is on top of the troll, basically pulling him back with his side.
05:50We gotta get proportion right on this time.
05:51Like, our characters were too big, got away from us a little bit.
05:54Let's try to make sure it's really nice and tight.

06:04My name's Paulina Stovall, and I'm a professional pumpkin carver.
06:07Corrine is our cake sculptor, and Jamie is our sugar artist.
06:11She has made it to the finale twice, and she wants the third time to be the charm.
06:16So we've got our two main characters, but it's the sugar spotlight.
06:18Should I try making the net out of sugar?
06:21It's gonna be super risky, but I wanna make the net.

06:25So we are making Frankenstein and a zombie facing off at pickleball.
06:30Perfect.

06:40We're doing a swamp monster versus a witch.
06:43I'm really excited about the swamp monster in particular.
06:46So this butternut squash should be perfect to mount on his shoulders, get something really creepy.
06:50I competed on Halloween Wars 12 years ago, so it means more than anything for me to get to the next round.
06:55This time, I'm going all out.
06:58That looks like my face every morning when I'm with my kids.
07:00I'm gonna start with my tasting element right away.
07:03Natalie is doing a lot.
07:05She's doing our tasting element, and she's also got to do this entire witch.
07:08The black licorice and then pairing it with the white chocolate is gonna be a challenge, but I'm super excited about it because I love black licorice.
07:15And I worked in restaurants as pastry chef, working with different flavors and being able to really create something unique.
07:22So our tasting element is going to be a swamp rock.
07:27We are going to incorporate black rice, and then we're gonna make it into rice pudding, and we're gonna add caramelized white chocolate.
07:33And I'm gonna incorporate some other flavors that taste like licorice, like fennel, and star anise.
07:39Almost looks like chocolate.
07:41I'm actually making the rock shell out of white chocolate.
07:44So when I unmold it, I'll just peel it off, and it's gonna look like a swamp rock.
07:48So I'm pouring, like, a backdrop here where it looks like perspective.
07:52And I'm making an isomole background.
07:55It goes deep into the swamp.
07:56With my sugar this week, I want to show some different techniques that no one else does.
08:00I like to paint and pour layers and show depth in my sugar.
08:04And this is a really risky piece because if it breaks, there is no plan B.
08:08Hopefully it hardens and it works.
08:13Okay, so we got chocolate and olive, which is really unique.
08:18I hate olives.
08:20But we have to not shy away from that.
08:22It's not my taste palette.
08:23It's the judges.
08:24So we're gonna have chopped up olives in a shortbread.
08:27As a pastry chef, it's really important for me to show people what I can do.
08:32I have over 60 food allergies.
08:34I can't eat most of what I make, and yet I learned to really take other people's taste palettes into consideration.
08:41I still make these amazing desserts.
08:44Because we have olives and we're also in a bar scene, I want to have a martini-inspired dessert.
08:50So I'm gonna be adding vermouth to the chocolate ganache.
08:54It's a sugar spotlight, so I gotta work on that as well.
08:57So I really need to get this shortbread out of the way.

09:01Rebecca and Serena are tag teaming the characters.
09:05The last time, I got so bogged down with the detail of the character.
09:09So this time, we're actually gonna collaborate on a lot of different pieces and elements.
09:15I'm gonna be using the meat of the pumpkin to build out the legs of our werewolf.
09:20Last week, we won the competition, so this week, we're coming in hot.
09:24He, like, is a beast.
09:29Judges, I'm getting warmed up because this is a monster bash.
09:33Gotta get loose because this is the first time these teams are all together.
09:38Right? Like, I'm seeing bigger pumpkins, bigger pieces of sugar.
09:42And then the sugar spotlight.
09:43And then the sugar spotlight on top of that.
09:45Yeah.
09:46I'm getting big fight energy from everybody on this floor tonight.
09:49There we go.
09:50Could you go baller with a giant pumpkin?
09:53For our pickleball face-off, I'm gonna get started on the Frankenstein out of pumpkin.
09:58So I'm using a very large pumpkin so that I can make the back of Frankenstein's jacket and body.
10:05We're looking decently solid so long as I can get my Frankenstein put together in a timely manner.
10:10Nice.
10:11You're gonna use that for the zombie?
10:13Yeah.
10:14He already have a sinking skull.
10:17No zombie has a complete skull.
10:20Karine is building our zombie at a rice cereal tree and modeling chocolate because it'll allow the zombie to have more motion,
10:26and that's definitely what we want to contrast our Frankenstein.
10:29Buddy, I'm gonna give you a little butt.
10:32Oh, my God, I love him so much.
10:34I've never really seen any pickleball paddle molds out there in the world, so I'm gonna create custom-shaped, like, bat-wing pickleball paddles out of poured sugar.
10:44Today's challenge is the sugar spotlight, so all eyes are gonna be on me.
10:50I've made it to the finals as a cake artist.
10:52We've lost twice.
10:53I really need to show them that I'm not just a cake sculptor.
10:58I can come in here and I can get some sugar done.
11:02In school, I was always the artist.
11:05I was never really in sports, so this is probably the closest that I'm ever going to get to really playing sports at any point in time.
11:13Got some beautiful wings.

11:19What's our vampire's name?
11:21The Spang Freddy.

11:24We have a vampire versus a goblin in an eating contest.
11:28I'm starting on covering the pillars in modeling chocolate, and I'm going to give them a nice wooden texture.
11:35I am creating a structure that is towering over all of the characters, and our vampire will be hanging down from the top.
11:44The airbrush color seeps down into all of the cracks and really brings out the texture of the wood grain.
11:50I used to want to be an astronaut, and then I was a math teacher.
11:54I may not have made it to space yet, but my cakes defy gravity.
12:00He's starting as a vampire.
12:02The vampire and the goblin's face are both made out of pumpkin.
12:07So right now, I'm doing the vampire head.
12:10Michael is a helicopter mechanic.
12:13He believes himself to be the fastest carver in the world.
12:16So, Michael.
12:17Yeah?
12:18Where did you learn from pumpkin carving?
12:19Salt thought.
12:20That's amazing.
12:21Kelly, have you seen this face?
12:23He's so believable.
12:24He's just like a real vampire.
12:26They're so cute.
12:27Got little legs.
12:29I'm going to make the table that's holding all the bugs they're eating.
12:33The eyes for our characters out of isomalt.
12:35It's the sugar spotlight, so we have to have sugar everywhere on our piece.
12:39Somebody's got to go home, and I just don't want it to be us.
12:42I love being a paralegal, but sugar is my passion.
12:46I'd like to show them that I have some versatility in the different kinds of techniques I can use.
12:52Right now, I'm making the glasses for the vampire to drink his blood out of.
12:59I think this will work.
13:01Got to make the red for the inside.
13:04And then I'll pour some red isomalt in it after it dries to make it look like a little good wine.
13:11Just a little too.
13:14Oh, we're having issues now.
13:17My glass is melting.
13:18Ouch.

13:25Definitely don't have time for this, but it's a key piece of our story, so I've got to make it work.

13:41I just want to, you know, show everybody that I can do this.

13:50But we absolutely do not have any more time to do things a second or a third time.

14:12I'm trying to make him look creepy and troll-like.
14:15We have the Grim Reaper and a troll MMA fighting.
14:18Margaery is going to be making the troll completely out of pumpkin.
14:21She's putting a first layer of color on this guy.
14:25I'm building the Grim Reaper out of cake and rice cereal.
14:29OK, I'm going to go ahead and start covering this in chocolate.
14:32Last challenge, we were not on point with our proportions.
14:35We were at the bottom two.
14:37Those characters are too big, which makes the story hard to follow.

14:41Yes.
14:42That's how big the head of your thing is going to be?
14:44Yes.
14:45There's a lot of anxiety because we had so much to prove based on our last challenge.
14:50Hopefully, the judges will appreciate the progress we've made.

15:06We plan on making the weapons that the MMA fighters, the troll, and the Grim Reaper are using.
15:12I'm about to pour the Grim Reaper's scythe blade.
15:15I've been doing pastry for 19 years.
15:18I've done Halloween Wars twice.
15:20We had come in second, which was the best I had done.
15:24I'm going to do everything I can to win.
15:26I really want to show the judges that I can do some fine detail work with some really intricate
15:30pulling, and I want to show them that we can do a big piece front and center of this
15:33to show catcher.
15:34Okay.
15:35For the handle, we're going to pull some brown isomalt so it feels like a little bit of a
15:40gnarly piece of wood.
15:41Okay.

15:51I need all that bacon grease.
15:53Jamie is making the peanut butter mousse stuffed with a bacon caramel and covered in milk chocolate
15:59and wafer cookie pieces.
16:01Peanut butter can come off as salty, and bacon is really salty, so I've got to make sure that
16:06things are going to be balanced.
16:08Even my caramel smells like bacon, and it's delicious.
16:11I'm putting my dessert in my chocolate coating.
16:14I am unmolding my chocolate pickle balls.
16:17And what better place to put our tasting element than in the pickle balls?

16:32I'm creating some furry texture for our werewolf's legs by layering up strips of pumpkin, and it's
16:40giving me this, like, nice furry effect.
16:42I try to keep things fresh and new by just always challenging myself, incorporating new techniques
16:48that other people aren't used to seeing.
16:50I went to school to be an art teacher, but stopped teaching about a year ago, and I work as a tattoo artist.
16:55The pumpkin fur, you can almost see it, you know, swaying in the breeze.

17:04I love that these characters are literally half pumpkin for legs and then rice cereal for head and body, and they're just blending so well.

17:54So I'm hoping to do the same.

18:02And I love that you added the texture in right there.

18:06Okay, now I'm going to start on Goblin Head.
18:08I want my team to stand out by showing our gravity-defying designs and our attention to detail.
18:15I'm using, again, body nut squash because the thickness that I'm looking for.

18:25Those two faces are so developed already.
18:27I will say I'm hoping that we get some storytelling happening.
18:31They're not static characters standing next to this massive pile of insects.
18:36We need to make sure we convey it's an eating competition other than a banner that says,

18:43I'm going to be making a 3D disco ball that's going to light up on the top of our piece.
18:49But I need all the individual tiles.
18:52Last year, I was eliminated on the sugar spotlight.
18:56It's really important that I bring something the judges have never seen before.

19:11I'm going to create a disco ball attached to a mirror backdrop.

19:18Once I pour it on the backboard, it is not coming off and there is no backup plan.

19:27So I'm going to start working on her body.

19:32I work very well under pressure, especially out here in Vegas where I work for people with
19:37all the money that want something in 12 hours.
19:40I've done stuff most cake artists would think is impossible to do.
19:43I'm not going to take a ton of time to do it, but I'm going to make it look like it's like the puffy ruffle.
19:47She's a fashion witch.

19:50This will be the tree.
19:51I've got to put another layer of dark on top.
19:53And then when it dries, I can dust it up and then we can attach it.

19:58We're not only both artists, but we're old school rockers.

20:03I just spent all my time in the art room, just hung out there.
20:06I never talked to anyone.
20:07It was really quiet.
20:08Three years ago, I joined a band.
20:10My husband like beat percussion.
20:12So I go, okay, now I'm half lead singer.
20:15And we rock the house.
20:17The amount of ding dang time him has put into this backdrop layer upon layer to make it feel like woods.
20:25It's a lot of time just for the backdrop.
20:28I'm kind of freaking out inside.
20:30Just wondering if it's going to work because if it breaks, it's totally over.

21:17We are going to make a black pepper cake, and then we're going to make an Italian buttercream,
21:21which we will also hit with some black pepper.
21:24The trick is going to be have enough black pepper, but not enough to choke you.
21:27So black pepper and a dessert definitely sounds weird to me.
21:30And we're going to pour the blackberry compote in there.
21:33It is the goo bucket for the troll and grim reaper.
21:38Oh, it looks delicious.

21:44I am chopping these pecans for my tasting element.
21:46Our challenge was feta and honey.
21:49I decide to make baklava bites.
21:52Cut them into the shape of cute little bug carcasses in our eating contest.
21:57How much feta do you think I should add?
21:59It needs to taste like a lot of feta when we add the honey, so it needs to be really strong.
22:04My baklava recipe, it's a recipe I make all the time at home with my kids.
22:09Every stage of my baking, my kids will be in the kitchen begging for samples, and I want to incorporate feta into it.
22:16So you want a thin layer in between each of those sheets of phyllo dough and more butter.
22:22I'm cutting it into a teardrop shape and then cutting it in half so they look like discarded wing parts of the bugs.
22:29I hope the judges can taste that feta.
22:33How are you doing?
22:35Uh, I think I'm doing really good, so I'm about to pipe the net.
22:39Jamie is casting a net for our Frankenstein versus zombie pickleball court.

22:48Artie and Shinman have definitely seen me doing all my cake sculpting work, but they've never seen me as a sugar artist before.

22:57It can be a more dangerous technique.
22:59I think you have to be super careful working with it, but I have to do it this way to get this lattice look of a net.

23:17Every dance floor needs a disco ball, so I'm going to create a domed disco ball with a light inside and really light up our scene.
23:25Okay, so I'm going to take my balloon with a little bit of water and some air in here, and we're just going to dip it to that hot, fresh ice malt.
23:34Emerly has gone to town with the sugar work, the disco ball.
23:38She has a ton of little isomalt squares that she's going to be piecing on there and painting them different colors.
23:44So hopefully it's going to read like a disco ball.
23:46This is the most important piece for my sugar spotlight.
23:49It cannot break because I don't have the time to do this again.

23:54Okay, guys, you ready for this?

24:02I'm doing the target now.
24:07We have to have this target because this is the story.
24:10This story is a swamp and axe throwing.
24:13So what I'm going to do is I'm going to put the one ring in, and I have to pour really careful and just get white just up to the level of the red that I already have that's about this deep.
24:22And hopefully that works.
24:24We got a target.
24:25Whoo-hoo!
24:26I'm going to build the axe on it and then hang it.
24:30First, I'm taking the hot isomalt and kind of cooling it down, and then it turns into a clay.
24:35Because this axe is the monster from the swamp, it's going to be kind of primitive.
24:41I don't want it to be like, you know, you went to a store and bought it.
24:45It doesn't look like it is yet, but these are going to be tiny people.
24:49Now we have the Grim Reaper and a Trill MMA fighting.
24:52Our backboard is going to look like the audience watching the fight.
24:55I'm painting the people out of buttercream, and Nails will be constructing the cage wires out of isomalt.

32:22Black licorice and white chocolate were our ingredients.

32:29It is layered with a black licorice forbidden rice rice pudding with a caramelized white chocolate ganache.
32:36And then a brown butter sponge cake.
32:39I really love that you use the forbidden rice in here.
32:42Because it added this interesting chewy texture.
32:45And I can taste the licorice loud and clear.
32:48You caramelize your white chocolate, which gives it this sort of nuttiness that's also echoed in your brown butter cake.
32:54So this is a very intelligent dessert.

33:09The sugar work, the amazing net that Jamie made, as well as the paddles and the pickleball is chocolate.

33:46The ingredients that we got were peanut butter and bacon.
33:50Inside of the pickleballs, we have peanut butter mousse with a chewy caramel made with bacon fat,
33:56surrounded with crispy, salty bacon, and rolled in milk chocolate and crispy wafer pieces.
34:02I think this is a very balanced bite.
34:05I get salt.
34:06I get sweet.
34:07The teeny, tiniest little bacon bits I've ever had in my life.
34:12They sort of pop.
34:13And so you get these teeny little explosions of salt as you take bites.
34:17I love that the peanut butter is so smooth and silky because peanut butter is also really thick.
34:23It gives you that sort of smack-a-roo sensation to the mousse.
34:27These flavors are well-rounded.

34:39Walking into the club, seeing the disco ball drop, Winston confuses it as the moon and transforms.
34:47The pumpkin components are Winston's legs and Murgatroyd's face and ribs.

34:57And sugar components are the martini glasses as well as the disco ball and the mirror behind the bar.

35:52It was chocolate and olive.
35:54So what I have here is a vermouth noir shortbread frizz.
36:00The vermouth to me is so inspired.
36:04It gives it this sort of minerality that makes the olive make sense and for some reason makes the chocolate make sense.

36:15This shortbread is so airy.
36:18When you bite into it, it just crumbles apart immediately.
36:21It's leaning very savory, but I really like that.

36:42We've created our characters out of cake, rice cereal treats with a pumpkin head.
36:47This table up here is made completely from isomalt, as are all of the bugs on the table and the sugar glasses up front.
36:55Kelly, I know today is the sugar spotlight and you definitely gave us a lot of sugar, but they're very small pieces.
37:02And when you're using a mole to form all these bugs, think about cleaning the edges for us to really read the shape of the bugs.
37:10I commend you for seeing a problem that there was too much orange and trying to fix it.
37:15The thing to me is I don't think we're getting the sense that these guys are competing against each other by eating as much as possible.
37:21Some sense of movement I think would have really served your piece.

37:28Today we have for you a mini baklava bite layered with chopped pecans and feta and then topped with a honey sauce.

37:45You managed to get a really light, crispy baklava made in such a teeny tiny bite without overwhelming it with that honey syrup.

39:15I love that this cake is super moist.
39:17I think that it's the addition of the blackberry that really helps pull in some of the savoriness of the cracked pepper that you have in there as well.
39:25When I first took a bite of this cake, I was like, nope, don't taste it.
39:28And then I felt the heat very gently start to tickle the back of my throat.
