00:06kicking off a month full of events, from food tasting to lively discussions about plant-based living.
00:13This October, I am joining people in exploring the wide variety of tasty, nutritious meat-free foods.
00:21Whether you're a long-time vegetarian or just curious about plant-based cooking,
00:27when people think of Italian cuisine, pasta, pizza and prosciutto often come to mind.
00:33But there is another story, and that is one of fresh vegetables and regional dishes.
00:40Italian vegetarian food is far from an afterthought, from hearty aubergine parmigiana in the south,
00:45personal favourite of mine, to creamy risottos in the north.
00:48It's a land that celebrates seasonality really well.
00:52And it's just like this dish here, which is the red pesto and mozzarella arancini, from Gusto.

01:03If you weren't here, I wouldn't use a knife and fork.
01:07If you're making risotto at home, no matter what flavour, this is the perfect way to use up the leftovers.
01:13I'd say that with such confidence, I've never actually attempted it.
01:18But I've seen other people do it, and it looks quite easy.
01:21But not only are you eating plant-based, but you're also helping combat food waste, too.

01:34Oh, gorgeous.
01:34Parmesan is not actually vegetarian, because it includes animal rennet.
01:39Obviously, you can get veggie parmesans.
01:45Paella is one of Spain's most famous dishes, but it's not just for meat and seafood lovers.
01:52Today, we're taking a look at a delicious twist on a classic vegetarian paella,
01:57which is served up right here at Luguelita in Liverpool's corner of the albic dot.
02:01This colourful dish combines fresh vegetables, fragrant rice,
02:08perfectly cooked to create a meal that's full of flavour and completely plant-based.
02:12From red peppers to mushrooms, tender stem broccoli on top,
02:18and, of course, a good squeeze of lemon.
02:22Let's do the taste test there, love.
02:24Look at the yellowness of the rice and the pear.
02:28Some gorgeous saffron.
02:30Put it piping hot.

02:36That is absolutely delicious.
