06:10The other thing that I've been trying to do, I have an idea.
06:13I know that we ship cakes, right?
06:16I want to ship, like, two-tiered cakes.
06:20And I've been thinking about engineering a box.
06:23You see how they handle these packages?

06:28I've actually seen a delivery guy take a light box
06:31and literally kick it like it was a soccer ball to the front door.

07:16Different lavenders and purple hydranias.

07:22So you're looking for a lot of flowers, then?

07:27We know that this is gonna be a lot of work.
07:30Maybe tedious work, not heavy work,
07:32but it's gonna be very, very long hours
07:35making all kinds of flowers.
07:37Buddy said he wants roses, ranunculus, hydrangeas.
07:40You know, when we hear those things, we, like, quiver a little bit.
07:43We have those rings that we never used.
07:45Yeah, no, those are amazing.
07:47And the original plan for those was to enhance the gravity-defying effect
07:53by wrapping flowers around them,
07:55and this sounds like the perfect cake for that.
07:57How many tiers-damn-real cake do you want to do?
07:59It's gonna be big. It's gotta be, like, five, six tiers.
08:06So for Neil's 50th birthday,
08:08we're doing a six-tier cake,
08:10and it's gonna be covered in beautiful sugar flowers.
08:13It's gonna have some magic tricks on it.
08:15So we're gonna ice the cake in great fondant,
08:17but then we're gonna adorn it in jewel-colored flowers everywhere.
08:22Anna's gonna sculpt a rabbit, some magic cards,
08:26and these little crystals that we're gonna kind of, like, put all in the cake.
08:30Then we're gonna separate this cake with these metal rings
08:33to give it, like, a floating illusion.
08:35It's gonna be like a magic trick.
08:37Start with the flowers, all right?
08:39Let's go.
08:49For me, this is my kind of cake.
08:51I think they're gonna be wowed by when they see this.
08:53We're putting a lot of flowers on this cake.
08:55Certain people are gonna roll them out.
08:57Certain people are gonna cut them.
08:58Certain people are gonna shape them and mold them.
09:01This cake, we're doing gum paste flowers.
09:03Now, with gum paste, it gets hard.
09:05So you can get, like, a perfect flower the way you want it to bloom,
09:10but then if it gets hit, it cracks.

09:16This summer, I am back here at the factory helping,
09:20and I wanna really show my dad that I can be of use to help everyone.
09:28You mix a color, cut it in half to see that it all went in.
09:32Yep.

09:34Working with Sophia, it touches my heart.
09:36It reminds me of the days of me and my dad working side-by-side on a bench,
09:40you know, rolling pasta chutz.
09:42Pasta chutz is a little cream-filled Italian pastry.
09:45We would just make pasta chutz.
09:48You're gonna take this, man,
09:50and you're gonna kinda squish it around, okay?
09:54I need 40 like that.
09:56So every flower is different.
09:58It starts by petals and petals.
09:59A ranunculus starts by, like, a four-petal cutter.
10:03And I try to get the edge really, really fine,
10:06and then it has, like, this greenish-conish center.
10:10When using gum-paste petals,
10:12you have to keep them under, like, like a little mat,
10:15and then we put, like, a damp rag so that it doesn't dry up.
10:18Once you form it, it sets and it stays.
10:21And it's just so many layers and layers of petals
10:26that really make a ranunculus go over the top.
10:29We need 140 of these,
10:31and this is only one kind of flower
10:33we're putting on this cake.
10:35Good?
10:36Yep.
10:37You know that when I make flowers, I'm happy?
10:40Yes.
10:41It calms me. It soothes the beast.
10:43Yes.
10:44When I make a flower,
10:45all of a sudden I can hear that, like,
10:47beautiful melody in my head,
10:49and I forget about my problems,
10:51and I'm just like,
10:52look at how gorgeous this is.
10:56I could say I've done a lot of hard things
10:58at the bakery,
10:59but this is definitely the worst thing
11:00I've ever done at the bakery.
11:01I wouldn't wish this on my worst enemy.
11:03I hate it.
11:04Whatever it is, I don't know.
11:05I hate it.
11:12Flower-making ranks on my list
11:16as the worst possible thing for me.
11:18I love actual flowers.
11:20Me making them, not so much.
11:23Making gum paste flowers makes me stop
11:27and literally smell the roses.
11:32Doing a really heavy floral cake
11:34is always a little concerning.
11:37Besides the roses and the peonies,
11:39we are also making hydrangea,
11:42which are a wonderful filler flower
11:44and the bane of my existence,
11:45which is why I'm trying not to get too involved
11:47in the flower making.
11:48So I'm making my gummy crystals.
11:52It's a mixture of seaweed powder
11:55and a whole lot of sugar
11:57and a little bit of water.
11:58And as it sets up,
11:59you get these beautiful crystal surfaces
12:03that you can carve with a knife.
12:05Do we have enough flowers?
12:06Do you think we have enough flowers?
12:07I don't know how they're gonna put in the top.
12:10That is my question.
12:12Who wants to send it like that?
12:14Together?
12:15He's gonna crack.
12:19So the top one we gotta do in three
12:21because he wants it high.
12:23The middle one we gotta do regular, just two.
12:26We talked about trying to incorporate
12:28an actual magic illusion into the cake.
12:31So our nod is a white rabbit
12:34where it looks like it's leaping in midair.
12:37So I've had to structure all the weight
12:40to flow through the breastbone
12:42and the two front feet.
12:43Let's put that cake together again.
12:45So what I'd like to do with that bottom tier then
12:47is have it fondanted
12:49and then I'm gonna carve it out
12:51after it's been fondanted.
12:53While the rest of the team
12:54is working on the flowers,
12:56I gotta get this cake started.
12:58Okay.
12:59The gummy crystals are going to add
13:05a real feeling of light to the cake.
13:09So I'm carving away parts of the cake tier
13:12so that I can put both LED lights
13:15and my gummy crystals into it.
13:18Wait a second.
13:28The 12 is supposed to be this tier
13:32and the 14 is supposed to be that tier.
13:37You told me to make the middle tier taller than the rest.
13:39I know, but I get the way it would logically work,
13:42but carve this down.
13:44We're gonna lose the whole shape of our cake.
13:47We gotta pop this off.
13:49Usually you go from fat to skinny straight up,
13:53but because we're trying to, like, defy gravity,
13:56he didn't realize it.
13:58And he's stacking it out of order.
14:00And he ain't got time for it.
14:02This cake is already in bad shape.
14:08I love Neil and David, right?
14:10And I want to make a great cake for them
14:11because they're friends.
14:13But there's gonna be a lot of other people there
14:16who are gonna see this cake,
14:18and I want this to be the right representation
14:20of what I do.

14:26So we're gonna take the fondant off the tiers,
14:29and we're gonna recover them.
14:31I'm gonna switch the tiers and stack them therein
14:34so that they're in the order that I want them,
14:36and we're gonna get through this cake.
14:38I'm not the kind of guy to say, ah, it's fine.
14:40I'm the kind of guy that says, no, I want to fix it.
14:43It's gotta be perfect.
14:44I'm about perfection.
14:45Sick.
14:46It's gonna be a little good look.
14:47It's gonna be perfect is what it's gonna be.
14:49When you're sculpting something out of a rigid material,
14:56in this case chocolate,
14:58you have to take a little bit of extra care in the details
15:01so that it doesn't look too smooth or have too many hard edges.
15:06And so I have a fingering tool,
15:09and it's just a little curved stylus
15:11that allows you to create a pleasant texture.
15:14Get some brushes and get a parchment paper.
15:18So to finish the flowers,
15:19they need a little bit of airbrush
15:21to give it a little bit of vibrancy.
15:23This is Hawaiian blue.
15:24This is regular blue.
15:25We spray with edible food color.
15:27I mean, I think you gotta go heavier with it.
15:30There's two ways of coloring a flower.
15:33You could use a petal dust, or you can airbrush it with it.
15:36I like a combo.
15:37Certain things look better with the petal dust.
15:40Other things look better with the airbrush.
15:43The airbrush is definitely faster.
15:45I think that that looks good.
15:47Like it's really rich in jewel tones.
15:50Okay.
15:51You know, that's done.
15:52I have a palette that I kind of like, so I'm pretty happy.

16:46I'd say it's got to be 10 to 20 pounds.
16:51But if I can't deliver on the cake being exactly like if you picked it up at a bakery, it ain't gonna work.
16:59This box is one of the most important parts of it.
17:02A two-tiered cake is a lot more visual.
17:05You could charge more money for it.
17:07The transaction size from a one-tiered cake could be like 50 bucks.
17:11You make that a two-tier, it could be like 150 bucks.
17:15You can make the outside of the box fit nice and snug in here.
17:19And then on the sides, we're gonna put a piece of dry ice on this side and this side,
17:23so it'll really keep everything nice and cold.
17:25We're gonna have a quarter of an inch play on both sides.

31:08so i have some concerns about the truck because this thing wobbles a lot i don't think it's gonna go

31:57to go the other way and there's gonna be dowels on that side it's basically just how we structurally
32:02support a cake i feel like we always run into this problem of stability here that top did not
