00:00Hey, what's happening? It's Rob Ruba from Oyster Oyster, and today we're going to give you three
00:03tips for your mushroom journey. You're at the market, you're trying to buy some mushrooms.
00:08I suggest buying mushrooms that are loose packed. Often they can be waterlogged, a little old or
00:12smelly, and if they're packed in plastic, you're not going to be able to identify those things.
00:16When going to cook your mushrooms, I suggest brining them. Unlike when you do poultry,
00:20I want you to pour a hot brine over the mushrooms. It's going to make them a lot more pliable,
00:25so when you go to bread them or grill them, they're more pliable and they don't fall apart
00:29and become brittle. Save your trim. You're going to cut these up. You're going to have some
00:33substrate left over, extra mushrooms. Save that trim. Make a stop. All right,
