00:00For this month, for our lunch special, we have one of the most iconic sandwiches from Portugal.
00:06We have the bifana sandwich.
00:08One we do is a northern style.
00:10We have a soft roll, a calcasa.
00:14A major component is the braised pork poached in a sauce made with plenty of fermented peppers.
00:22There's a lot of garlic, a lot of wine as well.
00:26So the pork is thinly sliced.
00:29Then on the bun, what we'll do, we'll go with the mustard mayo first.
00:38Just light on the mustard mayo.
00:41We'll follow with the poached pork.
00:44We want some of that sauce as well.
00:46Soak the bread.
00:49We will double up with a bit of the mustard.
00:52So this is a salvoada mustard, widely used in Portugal.
00:55It's a mild mustard, quite savory.
