00:00The chemistry of the spices that go into pumpkin spice is just amazing because we have these
00:13wonderful natural compounds like clove. We have a compound called eugenol, which is a terpene.
00:18It's a very cooling sensation in your mouth. So you get this warm feeling in your body as
00:27your mouth is being cooled off. You have compounds like cinnamo aldehydes that are found in cinnamon,
00:32that kind of spicy flavor that you get. It's kind of biting, but it's also very seasonal.
00:37You have compounds like cardamom, which you may find in a pumpkin spice as well. And there's nice
00:43aromatic terpene. So you get this kind of citrusy note, these cooling sensations,
00:47these warm notes that you get from all the spices being blended together.
00:50And you put this into a coffee. It's just an amazing combination.
00:57There are many polyphenols. Those compounds are natural antioxidants, as well as terpenes,
01:05these flavor compounds, these volatile compounds that also have known health benefits. So these
01:10health benefits could be everywhere from cardiovascular health, to lowering inflammation,
01:15to even improving our cognitive health. So you may find that you maybe have a little serotonin boost
01:21after you drink a latte that has pumpkin spice in it because it's just firing all the neurons in your
01:27brain and giving this massive mental stimulation that goes along with the caffeine and coffee.
