Refer to the full description for preparing a modak cake!!!❤️✨
✅ Step 1: Prepare Coconut-Jaggery Filling 1. Heat 1 tsp ghee in a pan. 2. Add coconut and jaggery. 3. Cook on low flame till the mixture thickens and becomes sticky (about 5–7 minutes). 4. Add cardamom powder and mix well. 5. Let it cool. Set aside.
⸻
✅ Step 2: Make the Cake Batter 1. Preheat oven to 170°C (340°F). Grease a round or bundt cake pan. 2. In a bowl, mix yogurt and jaggery until smooth. 3. Add melted ghee and vanilla (if using). Mix well. 4. Sift in flour, baking powder, baking soda, salt, and cardamom powder. 5. Gently fold the dry ingredients into the wet using a spatula. 6. Add milk gradually to adjust the batter consistency — it should be thick but pourable.
⸻
✅ Step 3: Assemble the Cake
Option A – With a Filling Core: 1. Pour half the batter into the greased pan. 2. Spread the coconut-jaggery filling evenly in the center. 3. Pour the remaining batter on top and smooth it out.
Option B – Mix Everything Together: 1. Gently fold the coconut-jaggery filling directly into the batter for an all-in-one cake.
⸻
✅ Step 4: Bake 1. Bake at 170°C (340°F) for 35–40 minutes or until a toothpick comes out clean. 2. Cool in the pan for 10 mins, then transfer to a rack.
