00:00Around the world, cruise ships are getting bigger, bolder
00:05Cheers, bye bye England
00:06And busier. These vast floating cities run 24 hours a day
00:11We go back to back with cruises. We don't take a break at all
00:15Carrying thousands of passengers and crew
00:18That's a big job
00:19Wow
00:20And offering everything from fine dining
00:22Teast explosion, I like that
00:24To full-scale theatres
00:27They're built for adventure
00:29And designed for luxury
00:31I could get used to this
00:33Cheers
00:34This year, a world-leading cruise line is back sailing a full season from the UK
00:39For the first time in a decade
00:42Meet the MS Neustadtendam
00:45Weighing 100,000 tonnes
00:48With 12 passenger decks
00:50Well ready for this
00:5112 restaurants curated by world-renowned chefs
00:54That's what I'm talking about
00:56Ooh, it's a buzz
00:57And a full program of entertainment
00:59We are expected to do everything perfectly at all times
01:02And excursions day and night
01:05At the same time, her sister ship, the MS Rotterdam, is cruising through the Americas
01:10Nearly 4,000 people on board
01:13Who's excited?
01:14A 760 seat theatre
01:16Ten minutes mic check, please
01:17Mic checks
01:18Ten minutes
01:19And all the onboard amenities you'd expect for a perfect holiday at sea
01:23Let's go
01:24Oh, it's gorgeous
01:25Lovely
01:26Yes, let's go
01:27Over the course of the cruising season, we'll be following both ships
01:31As they travel around the Americas
01:33North Africa
01:35North Africa
01:36And Europe
01:37This time, the Rotterdam drops anchor in Jamaica
01:43And you turn the heat down just a little bit
01:46And with the new Stadendam docked in Porto, there's a quirky city tour
01:50Okay, here are our tuk tuk
01:53The flagship of the cruise line's fleet is enjoying calm waters and sunny skies on a 12-day voyage around the Caribbean
02:12You've got to get that one
02:15That was me trying
02:17Over two and a half thousand passengers are experiencing a little taste of luxury
02:24As their every need is catered for from relaxation to tempting food
02:31The ship's route around the Caribbean includes ports in the Bahamas, Aruba, Colombia, Costa Rica and Jamaica
02:39Good evening, everybody
02:42In between excursions at these destinations, there's a glittering program of entertainment on board
02:47I'd like to do a lot more of the shows
02:49Yeah
02:50I'm excited about that
02:52The undoubted highlights are four glamorous musical extravaganzas featuring the talents of three singers and six dancers
03:00The newest recruit to the dance troupe is 22-year-old Summer Allen from Milton Keynes
03:05Hi, ready whenever you are
03:14People kind of, you know, have the story of like dancing from the age of four and then never stopping
03:19But once I got to secondary school, I stopped dance completely
03:23And then I got to like 16, didn't know what I wanted to do
03:26I went to go and watch a musical and I was like, that's what I want to do
03:29This is my first professional contract
03:33My entire cast have done a lot of cruise ships before, so I'm the baby of the group
03:37And definitely learning day by day
03:41Essentially, we're kind of the celebrities on board, you could say
03:45You always have to be very willing to stop and chat to people
03:49Shall we be able to do tonight?
03:50Yes
03:51Yes
03:52We look forward to it
03:53You guys are really proud
03:54Thank you so much
03:55We really appreciate it
03:56Thank you
03:57Since a month in New York learning the routines, Summer has spent a further four months on the ship
04:03Being away from home for a long time, I've actually found more challenging than I thought I would
04:08Everyone's like, oh my god, you must be having the best time ever
04:11I'm like, well I am, but I also just really want Anandos
04:22While the stage crew installed the set for tonight's big show
04:25Summer can compare notes with her more experienced colleague
04:28Dance captain Hayley Harina from New Jersey
04:33Have you spoken to your parents?
04:34Actually, I did, I talked to my mom today
04:36My mom wants to like, plan a trip for when I come home
04:38Because I haven't been, I literally haven't been home
04:41And it'll be a year and a half when I get off the ship
04:44When we get off
04:45It's crazy
04:46Within the cast there are nine members
04:49We spend every second of every day together
04:52They're some of my best friends, they'll be my friends for life
04:55And you get close really quickly
04:57Because it's your first contract, how are you doing like adjusting and not being at home?
05:01Since being here, like I've definitely missed home more than I thought I would
05:05Like I go through phases I think
05:07Yeah, definitely comes in waves
05:09Mm, yeah
05:10Everyone like makes it easy though
05:11Like it's quite nice being in a cast of people that have all experienced it before
05:16Because I know I don't, I'm not the only one that feels like that
05:20Yeah
05:21In terms of working at sea, I love it
05:24It's just a very, very different life to back home
05:27And unless you've worked at sea, you don't really get it
05:30You do definitely have ups and downs, but get each other through it
05:35That's just the small sacrifice you have to make for living an amazing life
05:39The amazing life is accompanied by a workload that can be intense at times
05:45With multiple rehearsals, technical run-throughs and performances
05:50We have four production shows
05:53And depending on the length of the cruise depends on how many shows we do
05:56In general we tend to do each show, every cruise
05:59And then that tends to be every other day
06:02We perform in the evenings
06:04We have a show at 7.30 and a show at 9
06:07So essentially I dance, I perform for everyone
06:10And then that's it, I get to be on holiday the rest of the time
06:14So I think the entire contract we might do what, a hundred and...
06:20120?
06:21120-ish?
06:22130?
06:23Yeah
06:24But then that's not including tech run, so it would be like 180
06:27Yeah, if you break that down, divide that by four
06:30God, this is maths I did not think I'd have to do since I left school
06:39On the other side of the Atlantic
06:41Another of the cruise line's newest and plushiest vessels is travelling Europe and North Africa
06:49Over the course of 14 days, the cruise's destinations range from the Canary Islands to Portugal and Morocco
06:58Amongst the treats in store for the passengers, two weeks of enjoying their meals without the effort of cooking anything themselves
07:06Okay, making sure it's crispy
07:08Okay, good job
07:09Masterminding all food on board is Philippines-born executive chef, Jundiel Marcelo
07:16Chef Norman, are we ready for the Moroccan dinner?
07:18Yes, Chef is still ongoing preparation
07:20Working on the ship is a bit pressure
07:22I'm dealing with about 3,000 guests and then about 1,000 of crew
07:27But as long as you love and you have the passion in your work, everything is possible
07:32Did you taste it?
07:33Yes, I guess it's really good
07:35Jundiel spent four years training in the culinary arts and his career has taken him around the world
07:41His responsibilities range from the simplest of snacks to fine dining in four speciality restaurants
07:47I'm handling about 200 cooks on the ship and all the restaurants including Canaletto, the tamarind, the pinnacle grill and the Saldemar restaurant
07:59The tamarind speciality restaurant usually serves Pan-Asian cuisine
08:03But tonight and once on every cruise, there's an extra special menu
08:08Good afternoon, Tim
08:10How are you?
08:11Good, sir
08:12Okay, are we ready for tonight?
08:13Ready, sir
08:14Okay, let's check
08:15We have the pop-up menu, Morimoto by Sea
08:18And it's a menu created by Chef Morimoto
08:22He has a lot of restaurants all over the world
08:25Little bit spicy, but you have to reduce a little bit more
08:29Japanese celebrity chef Masaharu Morimoto has gained acclaim for his take on fusing Japanese and Western cuisines
08:37And a partnership with the cruise line has resulted in a menu featuring some of his classic dishes
08:42Wow, great, very good
08:45Prepared by the onboard chefs
08:47Chef Dodi
08:48Yes, sir
08:49How many reservations we have?
08:5088 so far
08:5188 so far
08:52Yes
08:53Okay, good, good
08:54Overseeing operations for tonight's special menu is Dodi Ajan from Indonesia
09:00He's running a team of eight chefs and two sushi chefs who must deliver to Morimoto's exacting standards
09:07My chefs, they have a special training because we have the signature sushi dish
09:11We have the tempura roll and we have the tuna pizza
09:14And of course, one of my favourites, the buribop
09:18The ishiyaki buribop is designed to taste great and add theatre to the passenger's restaurant experience
09:25We have the hot bowl here
09:28Basically, this one is the stone, so we can cook inside this bowl actually
09:34For the rice, especially for the peas, will be put on the side of the bowl by the waiter
09:41They will do the live action
09:45Tonight's diners will be expecting a truly memorable meal
09:49But before that served, there's another challenge
09:52A taste testing by the senior chefs and waiting staff
09:55Chef daddy, I will leave it to you everything, so I will see you in two hours for our food tastings
10:02Thank you, thank you guys
10:03Thank you, thank you guys
10:14The ship sailing the Caribbean has docked at Montego Bay in Jamaica
10:19Oh, have you got everything?
10:21I think so
10:22Town
10:23Car
10:24And for the passengers, the port is the starting point for a choice of multiple different excursions into this tropical nation
10:34Jamaica lies around 90 miles south of Cuba
10:37And 500 miles from the southern tip of Florida in the Caribbean Sea
10:43Some 60% of the population lives in urban areas like the capital, Kingston
10:47But even though this island nation is less than a twentieth of the size of the UK
10:52It packs in a lot
10:54From stunning beaches to mountainous areas which give rise to over a hundred rivers
11:00Let's go
11:02Oh, it's gorgeous
11:04Lovely
11:06Amongst the passengers heading out on excursions, Robert and Linda from Milton Keynes
11:10They're in holiday mode and losing track of time
11:13Uh, what we're doing today is Jamaica for a start, you have to think of where we are
11:19Yeah
11:21The couple's cruise is to mark their birthdays
11:24It's not actually his big birthday, that's coming up next year
11:28That's the 70th
11:30That's a nasty one, isn't it, Rob?
11:31It is, yeah
11:3269 this time, 70 next time
11:34Yeah
11:3568 you
11:36Alright, alright
11:38But we will be the same age for six weeks
11:41No!
11:44How many cruises have we took?
11:48Not enough
11:50Not enough cruises
11:51No, we need to sort out for about the next ten years
11:53Yeah
11:55The first thing to sort out is more appropriate gear for a waterborne excursion
12:02And it seems waiting outside the ladies is the same the world over
12:07In Jamaica, Robert and Linda are on an excursion as part of their Caribbean cruise
12:21Oh, have a look
12:23You look great, yeah
12:24You look alright?
12:25You do?
12:26Very nice as usual
12:27Shall we go?
12:28Yeah
12:29And they're swapping a giant ship for a tiny raft
12:33Wow
12:39The rafts made of bamboo were traditionally used for transporting goods
12:44It's beautiful, isn't it?
12:46But now, floating down the stretch of the 29-mile Great River
12:52Is popular with tourists
12:55It's a relaxing way to explore one of the most biodiverse islands in the Caribbean
13:00You're the captain
13:01Yeah
13:02Good
13:03Captain Halen
13:05Guiding Robert and Linda through the tranquil waters on the hour-long trip, Halen Barnes
13:10That's cheating!
13:11Is that not cheating?
13:12I feel lucky to be here
13:13Yeah
13:14That's the bamboo they make the rafts out of
13:15Wow
13:16Oh, that's warm
13:17Yeah
13:18Can you turn the heat down just a little bit?
13:19Turn the heat down just a little bit?
13:20Turn the heat down just a little bit
13:21Turn the heat down just a little bit
13:24Yeah
13:25Yeah
13:26Yeah
13:27Where is this from?
13:28UK
13:29Yeah
13:30Yeah
13:31Yeah
13:32It's very cold now
13:33It is very cold
13:34It is very cold
13:35When is summer?
13:36Maybe one month of the year
13:37No
13:38No
13:39No
13:40No
13:41No
13:42No
13:43No
13:44No
13:45No
13:46No
13:47No
13:48No
13:49No
13:50No
13:51No
13:52No
13:53No
13:54No
13:55The trade-off for the scorching heat is a pampering session included in the trip
14:00Wow
14:01Limestone massage
14:02Yeah, limestone massage you say?
14:05Crushed limestone has been used for centuries to exfoliate dead skin and given 85% of Jamaica's surface geology is limestone, there's plenty available for these trips
14:16Yeah
14:17Yeah, actually, as long as it doesn't rub my... no, because it might rub my fake tan off
14:21Oh
14:24So this is going to dry?
14:26Yeah, it's going to dry
14:27Yeah?
14:28And later on you wash it down
14:29Once the white powder is smeared on, the effect is known as jungle socks
14:34Is it going to take off some of your hairs as well?
14:37There's not many on there
14:39No
14:40It's really nice
14:41Yeah
14:42Thank you
14:43It only takes a few minutes in the Jamaican heat for the limestone to dry before the next phase of the pampering
14:51My legs are... oh
14:57I feel the best they've felt for ages
15:00Wow
15:01Really soft
15:02Wholesome oil as well
15:03Yeah
15:04Oh, wow
15:05We might slide off the bum next day
15:07How many years we've been together?
15:19I don't know now, I keep forgetting
15:22Well you was young, 15
15:25What?
15:26What?
15:27Why?
15:28Because you were the best girl in the school
15:30That's a bit jerry, isn't it?
15:32That's a bit ODD
15:34That's true though
15:35Yeah
15:40Fifty years, two years time, three years time
15:44Anyway, you haven't changed since I first see you
15:47There's a few more wrinkles
15:50Still as lovely as ever
15:51Look at that
15:52Some chubby, some love handles
16:00Oh, it's going to finish
16:02I don't really want it to
16:04No, it's lovely
16:05We'll have to come back, you know
16:07We'll have to do this again
16:08We will, I've enjoyed it
16:09Yeah
16:10It's beautiful
16:11I think we should have a birthday every day of the year, you know
16:16Well, you can
16:17I'll be too old
16:18Cheers
16:20Cheers
16:21That's a good way
16:22Yeah
16:23It's a good trip
16:24Wow, that's strong
16:25That is strong
16:26Back at the ship in Montego Bay
16:28It's less than four hours until Sunday
16:29It's a good trip
16:30It's a good trip
16:31It's a good trip
16:32It's a good trip
16:33It's a good trip
16:34It's a good trip
16:35It's a good trip
16:36I'm going to get my feet down there all nice and soft now
16:39Finished with a nice run punch
16:40That's strong
16:43Cheers
16:44Bombs up
16:51Back at the ship in Montego Bay
16:53It's less than four hours until Summer and the other dancers take to the stage
16:58And the new girl is determined to get everything right
17:02Each show has a different set
17:04So right at the front of the stage, we've got numbers going from zero all the way to 16
17:09These are so that we can make sure that we're always stood in the right space
17:13So that every show is consistent
17:15So that if something's happening, you're not getting in someone else's way
17:18And that is because for each position we are stood in, we are on a specific number
17:22So every dancer has hundreds of numbers for each, like across all four of the shows
17:27Because every single time you move, you move to a number
17:30This is what we call the wing
17:33This is kind of the entrance to all of the quick change madness that's going on back here
17:39So our costumes are set on the floor, they're set in the dressing room, everything
17:42There are 800 costume pieces for the nine members of the cast across four shows, which is a lot
17:51All of the costumes are made especially, and we have a wardrobe team that come on board during our install process
18:00And they fit everything to us
18:02Grayson Cole from Pennsylvania is also a dancer
18:05But he has another huge responsibility
18:08I'm the wardrobe supervisor, along with Ellie, one of the other dancers
18:12So between the two of us, we are in charge of the maintenance, repairs, and washing of costumes
18:22There's a lot that happens behind the scenes that people have no idea about
18:26Everyone thinks it's this really glamorous life, and it's absolutely not
18:30If you could see the state of how sweaty we are, that kind of sums it up
18:34So we use a mixture of vodka and water in a spray bottle
18:41And the reason we use that is because we can't wash the costumes every single day
18:46So this helps to get rid of the smell
18:49Or kind of disinfect it after the show
18:53And that way when they dry, they don't get stinky
18:56And then about once a month, those costumes are getting properly laundered
19:01But in the meantime, this helps us keep them fresh and clean in between shows
19:07On average, the dancers change costumes six or seven times during one 45-minute show
19:13So managing the changes is key
19:16So I'm presetting my costumes in reverse order
19:19So that as we go through the show, I can grab them from my stack and put them on
19:23For a lot of the changes that we have, we don't have a lot of time in between them
19:28So what we do is we have things like snaps, buttons, magnets, things like that
19:34To make the garment look like it's a standard garment
19:38But it's made that way so we can put it on really quickly and take it off really quickly
19:42The costume changes go wrong all the time
19:45All it takes is for you to be frustrated or your hair get caught
19:49Or for you to have like a sleeve inside out and then it messes everything up
20:014,000 miles away across the Atlantic
20:04The European cruise is at sea en route to its next port
20:09It's giving Danny and Peter from the Netherlands
20:13Cheers
20:14Cheers
20:15A chance to relax in one of the ship's eight lounges
20:18They've been together 14 years and cruise fans for almost as long
20:23I think we sailed now 11 years
20:2611 years?
20:27Yeah, we started in 2014
20:29So we have been cruising like for more than 20 cruises
20:33Yeah, much more, yeah
20:35The couple who are holidaying with their teenage nephews love cruising so much
20:40They started their own log
20:42And it's attracted quite a following
20:44When we came back from Hawaii, we started the page
20:48And now we have 13,500
20:50And it's still growing
20:52And it's really nice to connect people around the world
20:55The cruising community also stays connected by partaking in a rather unusual custom
21:00A form of hide-and-seek
21:02A form of hide-and-seek
21:03Played with rubber ducks
21:05They have a label
21:06With the people who hide it
21:09And all the other people
21:10They, oh, I found a duck
21:12And they could just keep it
21:15Or we hide it back
21:16Yeah
21:18The game started in 2018
21:19And is played all over the world
21:22With many posting their finds on social media
21:24But Danny and Peter have their own spin on it
21:29We are from Holland
21:30We have wooden shoe
21:32With tulips
21:33Typical Dutch
21:34And what we also have is a label with the QR code
21:38And it's going to our social media page
21:41So you can hide this
21:42Yes, I will hide it
21:46First rule of hide-and-seek is find a good hiding place
21:50When you're on a super ship with restaurants, bars, a theatre, sports court, spa, library and casino
21:57There's plenty to choose from
22:00Let's turn up a place where everybody can see
22:04An elevator?
22:05Everybody use the elevator
22:07Tip number two
22:09Okay
22:12Don't let anybody see you
22:15Fake
22:16We take the next one
22:18Thank you
22:21Uh, here
22:22Okay
22:23Yes
22:25Tip three
22:26Hide up high
22:27Yes, yes, yes
22:29Tip four
22:30Find a focal point
22:32This is the one that we are looking for
22:33Yeah, okay
22:34You can hide one
22:35Yes
22:36Public space
22:37Anyone can find it
22:38And lastly, tip five
22:40Pick a place plenty of people visit
22:43This is probably the nicest place to be
22:46This is the biggest place to be
22:48And so quiet
22:50No one is here, so this will be a perfect spot, I think
22:53I think it's a good place
22:55That? Okay
22:58You know now, nobody's here, so it's my time to shine
23:03Oh, you can sing, like in the shower
23:05I don't sing in the shower, but I can dance
23:08Okay, I'm the audience
23:10I can sit here
23:12Actually...
23:14Nobody see, so you can come also
23:16I've seen better
23:18No
23:20You can come, you can come, you can come
23:23Now it's not, I have my three seconds of fame
23:26Yeah?
23:27So, let's have a lunch, because I'm hungry
23:28Yeah, okay
23:29Okay
23:35In the Caribbean, the ship has left Jamaica
23:38As passengers lap up the sunshine
23:41Dancer Summer on her first professional contract
23:43Has a little time to herself
23:46Before final preparations for the big show ramp up
23:49Being away for eight months at a time
23:53It's really important to stay connected to home
23:56Like I've got young siblings, so it's nice to still be able to talk to them
23:59And watch them grow up virtually, even though you're not physically there
24:03You feel really guilty missing that time
24:05But when you're able to call them, it does make a huge difference
24:08Hi
24:10Hi
24:12Hi, you okay?
24:14It's a little bit windy
24:16Just a little bit
24:18Yeah
24:20I'm just on the outside deck
24:22It's nice and sunny
24:24What are you having?
24:26What are you having?
24:28She's got a burger
24:30I hope it's vegetarian
24:32Of course it's a veggie burger, yeah, obviously
24:34I was going to say, not that much has changed since I've been away, has it?
24:38No, you haven't missed that much, she's still vegetarian
24:40Okay
24:42So I was looking at our up-to-date on the countdown
24:45So now we're at 99 days, it's gone into double digits
24:48Ninety-nine, shall we come?
24:50Yeah!
24:51Good to come and see your shiny hips
24:54Yeah, nice to see you
24:56Bye, love you, see you soon
24:58Bye, bye
25:00So I've got 99 days till my parents and my sisters come on board
25:04So they're staying for a cruise, which is really exciting, I can't wait
25:08Those, like, little checkpoints, they make, like, such a huge difference
25:13None of them have done anything like this before
25:16So for them this is me taking a risk and doing something different
25:19And I think they're really proud of that and, yeah, it really excites them that they can come on and see it for themselves as well
25:28But yeah, they're super proud
25:30On the other side of the Atlantic, the cruise ship travelling the European route is making good time to its next destination
25:46In the galley, Dodi is keeping a hawkish eye on standards to ensure everything's top-notch for the gourmet dinner
25:51Okay, guys, just checking, yeah? Everybody ready for tonight?
25:57Yes, Chef
25:59With a menu including ten varieties of fish and seafood, the fusion of Eastern and Western traditions is intended to be a very special experience for a select handful of diners
26:10How many so far do you have? For the... For now, we have allowed 200 already
26:15200? 200
26:16Okay, continue
26:18But first, the pressure is on
26:20As soon there'll be a taste test by the senior chefs and waiting staff
26:2530 minutes more
26:27Please, everybody
26:28As the Caribbean crews cut through the ocean, Summer and the other dancers are having a final run-through before the first of tonight's two performances
26:48So tonight we've got our show, All That On, which is a musical variety performance
26:54A little bit apprehensive, we haven't done the show in a couple weeks because of the way that the cruises work
26:59So apprehensive that I want everything to run smoothly, but I'm excited to do it again because it's been, it's been a while
27:08Hi guys
27:10Oh, show looks good
27:12Yeah, it looks really good
27:13I have no notes for Lazy River
27:14Lazy River
27:16Our dance captain, Hayley, she gives us notes
27:19So her job is to meticulously watch each of us, slow it down, zoom in, check that we're all doing the same thing
27:26So that from the day we put the show on the ship, to the day we leave, it looks the same
27:31Um, rubber band
27:33When we do these, when we do these poses, these ones
27:36Uh, just don't move out of them early
27:39Hit, hit, down
27:41Yeah, like sharp, hold
27:42Uh, great, make sure you're on five
27:45I think you started on five, and when you moved, you moved in, then you moved back out to five
27:49But I think you're travelling a lot on these
27:52You have really long legs, so just make sure you stay, because you ended up in front of Summer
27:56Yeah, it looks really nice when all of our bodies are together
27:59Okay, um, yeah, that's it, great job
28:03Thank you
28:04So, have a good show
28:06Have a good show
28:08I have been part of this company for four and a half months now
28:13Five months if I'm including rehearsals
28:15I feel a little bit of extra pressure because I'm a newer member of the team
28:19I don't want people to feel that I'm underqualified to do the job just because I'm younger
28:23Or just because I'm not as experienced, so as much as the team would never ever make me feel like that
28:30I want to be perfect in every way because I want to prove that I'm just as capable as someone that has been doing this for years
28:38Over in Europe, perfection is also the ambition
28:51Before tonight's special menu event for passengers, Chef Dodie and his team must impress their colleagues
28:57Hey guys, everybody, let's go start for the food tasting
29:02We can do first the beef, we can do now
29:05Then after that the fish
29:08I need the noodles
29:11Every time that we have the marimoto
29:14During that day, we will be preparing and then we will be having the tasting
29:19To check the consistency of everything
29:23And then we need to taste based on according to the recipe and the presentations
29:29This is a very special dinner for us
29:31Only one night pop up
29:34It's like more challenge for me
29:36A little bit pressure
29:40There are less than 10 minutes until the taste test
29:43And 22 different dishes to complete
29:46From a lobster pad thai
29:48And tempura calamari with quinoa and white miso dressing
29:52To beef tenderloin steak with Japanese style mushroom sauce
29:55So this one will be the noodle for the, we call it a shrimp three-way
29:59One is the tempura, the other one is with the bread crumb
30:03Then the last one is the teriyaki, grilled skewer
30:07Put more this one
30:08I need more bambu
30:09Okay, let's go
30:11Right away, the calamari
30:13Finish it up
30:15Then gyo-sa
30:16Yeah, gyo-sa will be ready
30:1720 seconds
30:18Then after that, you will stand by for the
30:20And then after that, you will stand by for the
30:22And then the last one is the teriyaki, grilled skewer
30:24And then the last one is the teriyaki, grilled skewer
30:25Right away, the calamari
30:30Finish it up
30:32Then gyo-sa
30:33Yeah, gyo-sa will be ready
30:3420 seconds
30:35Then after that, you will stand by for
30:37Fire the booty bob yeah
30:43Let's watch every detail
30:52Good job guys, and I would like to thank you all
30:54to make sure everything is hot,
30:56maintain the quality, maintain the presentation.
30:59Okay, let's start tasting, guys.
31:00Yeah, all right.
31:02This is Hamad Issyaki Buribok, the yellow-tailed fish.
31:07Wow, very good, very fresh.
31:09It is very fresh.
31:11Then we have this one, it's a crispy sea bass
31:15with the sweet sour sauce.
31:17We have a good, very good, fresh sea bass.
31:21You can taste the sweetness.
31:23Yes, maintain the crispiness, very good, very crispy.
31:26And, you know, you feel already the freshness of the fish.
31:29Very good, Dodi.
31:31Chef Dodi, everything is good.
31:32Everything is nice, so thank you so much.
31:34So, let's go.
31:35Let's have a taste-all.
31:36All right, guys, feast!
31:40All the stuff, including the restaurant stuff,
31:43the kitchen stuff, everybody will taste.
31:45The waiter tastes it because they need to understand
31:48and the flavor profile of every dish.
31:51So, when they're going to serve to the guest,
31:53they can express themselves how it tastes it.
32:01Controlling the quality of food, service, and amenities offered by the cruise line
32:05is demanding but doable.
32:08Unfortunately, controlling the weather is beyond its ability.
32:12The ship has docked at Porto in Portugal, which is experiencing an unusually rainy month.
32:18Undeterred, Dani, Peter, and nephew Sven and Liam are taking to it like ducks to water,
32:25and they're off on an excursion.
32:27Oh, thank you!
32:28Oh!
32:29That's good!
32:30Today, we are going to do a tic-tuc tour.
32:34We go to the central historical portal.
32:37We're going to see the bridge.
32:38Do you know?
32:39What bridge?
32:40I told you the itinerary.
32:41I didn't know.
32:42Danny is a meticulous planner and has already mapped out the day,
32:47with his camera poised to take photos for their blog.
32:49You do the research.
32:50I do the research.
32:51You just go in Porto.
32:53Okay.
32:54Who's going to ride with who?
32:56I'm going to ride with Danny.
32:57Why?
32:58Because of the pictures.
32:59Oh.
33:00And he does know the research.
33:01Okay.
33:02Well, we just have fun, eh?
33:05Yes.
33:09Porto is Portugal's second largest city and is located 170 miles north of the capital of Lisbon,
33:17along with being the birthplace of Port Wine.
33:20Porto is also known for its historic architecture, vibrant culture and charming narrow streets.
33:28Navigating the city's steep, cobblestone roads can be challenging by car or on foot.
33:33But there is a fun way to explore the city.
33:38Okay.
33:39Here are our tic-tacs.
33:40Yes.
33:41Here they are.
33:42Tic-tacs originated in Japan in the early 20th century, but have since become popular
33:48with tourists in several European cities.
33:51So, let Danny do the research and we enjoy the show.
33:55Yes.
33:56I think it's really hard to plan everything through the whole day.
34:01It is.
34:02I don't think that's something for me to do.
34:04I know, actually, because you guys, they are not the best planner, but I'm happy to do the planning
34:12because you have free time to do your stuff.
34:14You just have to go with me and just have fun.
34:17First stop is the Dom Luis I bridge, one of Porto's most iconic landmarks.
34:29Completed in 1886, it's known for its striking iron architecture and sweeping views over the Douro River.
34:37But only on a clear day.
34:39I don't go anywhere without a photo.
34:42But we have to hide the umbrella.
34:45Or hide the umbrella.
34:46One, two, three.
34:47Hop.
34:53Okay, let's go.
34:54Training cats and dogs.
34:59So, guys, are we enjoying so far?
35:01Yes?
35:02Yes, absolutely.
35:03Besides the rain, it's fantastic.
35:05In a way, you get the true experience of Porto, because it doesn't happen as much as
35:08in summer, obviously.
35:09Okay.
35:10But in Porto is a city that rains a lot.
35:12And then it's kind of unpredictable.
35:14The fog is also on the top of the river.
35:18It's something that it's very typical of Porto, giving it like a mystic vibe to it.
35:25And it's something that it's very much sang in songs about the city.
35:30So, yeah.
35:31Do you know any of the songs?
35:33I do, actually.
35:34One of the main ones is by a local musician, which is called Rui Veloso.
35:40And it would be something like...
35:41I think we're having more fun.
35:42The song better than Danny in the shower.
35:44Another key landmark is Porto Cathedral.
35:45Dating back to the 12th century…
35:50and they are going they are having fun and we do of i think we're having more fun
36:03you sound better than danny in the shower
36:10another key landmark is porto cathedral dating back to the 12th century it's one of the city's
36:16oldest monuments what do you think about discussion i think it's very nice i see a lot of wet people
36:23and we're sitting inside the tuk-tuk there's no problem at all yeah for us we are still dry a
36:27little bit and we're having fun i mean we don't have to wear a poncho we don't no and you choose
36:34the right uncle right i think yes no i'm not talking about you i'm talking about you
36:40while there's still scoop for humor the weather is beyond a joke it's time to head back to the ship
36:54what a lovely day
37:00back in the caribbean the weather is also less than ideal
37:04oh it could create a problem with tonight's big dance performances the ships are rocking
37:12so it is quite rocky um this tends to happen for the show
37:20there's now a distinct swell to the waves
37:27the most challenging part of this job for me is the rockiness because that's something i've never
37:32had to experience before a it's never the same you know you don't know what direction these waves
37:38are going to throw you but also b i just wasn't prepared for it so your muscles have to be really
37:45strong you have to be constantly switched on constantly engaged prepared at any moment for the
37:50stage to just move to the other side and you know for the floor to meet you halfway
37:56this is a little bit irregular which is kind of annoying when it's like steady you can kind of
38:03tell which way you're gonna go but this is just throwing us all over the place so it should be
38:07interesting we'll see how it goes but yeah hopefully we'll all stay upright
38:12tonight passengers on the europe and north africa cruise can opt for a special menu devised by japanese
38:29celebrity chef masaharu morimoto chef dody and his team are midway through service
38:34for morimoto we do like almost 90 table at night never stop it's never ending
38:56welcome to morimoto so i have our cocktail menu here and here's our dinner menu thank you very much
39:04anticipating a culinary treat danny and peter with their nephews sven and liam so how was your day so
39:10far yeah it was nice yeah really good did you go outside yeah all day okay let's have a look shrimp
39:21this is interesting it says cooked cook table side and hot stone ball i think i do that one of the menu's
39:28signature dishes includes rice yellowtail a fish species prized amongst sushi chefs and a raw egg yolk
39:37but assembling the ingredients is just the start here you go peter i have our signature shiakiburi
39:45bob one of the signature dish is the shiakiburi bob we are going to sear the yellowtail on the
39:51side of the side of the hot stone bowl so that stone bowl has been heated up to 230 degrees celsius
39:59then we need to mix everything because there's a vegetable inside the bowl
40:02that's so nice it's probably yeah yes very nice thank you every good tasting this is the dish that we are
40:12looking forward thank you very much please enjoy everyone thank you thank you thank you
40:19my fish is also really nice this it's still hot i think it's gonna be hot for the whole day
40:38the heat is still on in the galley with more main courses and four different desserts on offer
40:43from a white chocolate lime ganache to a baked tofu cheesecake look like another five six table last
40:52one what a day here go liam i have your dark chocolate spear and i have the hot caramel sauce
41:05here and i'm going to pour over the top so inside you will see uh marshmallow cream there's also a
41:10whipped vanilla cream and the dark chocolate sorbet oh that's nice they both look good yeah
41:17mong appetit yeah
41:26i can eat this every day it's a big thumbs up at the table and behind the scenes
41:32bye guys guys listen up yeah really appreciate what you did everybody as a team tonight thank you
41:40um
41:47on the ship cruising the caribbean there's no applause just yet
41:51but the audience for tonight's first show is ready to be entertained
41:55and the performers are psyched up
42:01i do definitely still get that like i want to peek through and see how many people are in the audience
42:09and if it's really busy like you do get a little bit of a buzz
42:14something goes wrong in our work it's very obvious to an untrained eye to everybody and so there's
42:21that little bit of extra pressure because we are expected to do everything perfectly at all times because there's constantly eyes
42:27we're coming out of the commercial in four three two
42:34it doesn't feel like a job because i want to do it i love doing it i love performing
42:53i get to leave my heart and soul on the stage every night
43:08i still get that nervous feeling because not like it's not like i can't do it but i want to do a good job
43:19i absolutely love that my responsibility is to entertain everybody it's
43:23what i believe i was born to do all of that cringy stuff
43:29it's a great responsibility to have
43:45behind the scenes of the show the only way i can describe it is like
43:48we're swans and you know on top it's very calm it's very glamorous and backstage it's like all crazy
43:56the quick changes you know the speed we're getting changed is more exhausting than the
44:01actual dance the once we step out of that curtain that's the easy bit that's the bit we've trained
44:06forever to do but the backstage ends up being choreography that you have to kind of sink in as well
44:13the costumes break all the time because especially if you are in a hurry and you
44:18rip something off and it gets caught on your heel or you know you pull at the wrong thing it breaks
44:23all the time yeah it's quite rocky so a few of us have been kind of thrown to the side a couple
44:30times but hopefully no one's noticed apart from that everything's going well um yeah no costume
44:38malfunctions apart from the shoe
44:55dance is something that
44:57is that it is my form of therapy in every way in life and it's it isn't work it's what i love to do
45:07and the feeling of you know being able to express myself through an art form a physical art form at
45:16that it's just incredible it's something that unless you do it you don't really know how it feels
45:25the missing home that's is worth every second
45:36it's just a little bit of rockiness here and there but it's fine now time to rest and do it all again
45:59again next time in the caribbean there's a fancy feast for formal night 50 more calories so that's
46:13that's it oh yes and in the dominican republic one a fun trick is hard to swallow
46:20well only one thing can get dibble sees george clooney and julia roberts to team up that's
46:29trying to break up their daughter's wedding film four's got a ticket to paradise next tonight but
46:34tomorrow night it's bob mortimer versus richard iowardi again and this time no one's keeping a
46:38straight face a new series of eight out of ten cats does countdown begins friday night at nine here on
