00:10Hi, I'm Chef Tim, native of Berlin, and today I show you four destinations where I think we have the vibrant flavor of Berlin on the palate.
00:20This is where the chefs eat.
00:22The most important street food in Berlin, of course, is curry sausage.
00:30There is nothing like that, not one day in my life without a curry sausage.
00:34Kidding? Yeah, a bit, but come on, show you.

00:40I would like to eat two without a dog.
00:43House sauce and a chip.
00:46Good.
00:47The curry sausage, first of all, is something where you get a sausage, which is pan fried and then served normally with a curry sauce.
00:59Means it's a tomato sauce flavored with curry powder.
01:02But here, even more special, we have one layer up.
01:06That means it has a very fruity tomato sauce and then all is topped with the spicy and additional with onion cubes flavored sauce.
01:16And then the curry powder comes on top.
01:19So it's like a perfume of curry.
01:21Then you dig deeper in.
01:23You have the sweetness of the tomatoes, the spiciness of the house sauce, and it's just a dream of flavors.

01:37To me, it's part of my DNA.
01:38You know, I've grown up with that.
01:40It always feels like home.
01:46It's like 40 minutes driving through Berlin, but I get that for myself like every two to three weeks.
01:52I need it.
01:56I'm a native of Berlin, grown up in Kreuzberg, an area which was at that time in the west part of Berlin.
02:01The city is not divided anymore, but it is different because if people are raised in a communism area for more than four decades,
02:09they have a different mindset than people who come from the free western world.
02:13The funny thing is that we have so many things in common.
02:17But in the western part, we are much more raised with food from Turkish immigrants as well as Chinese and Thai.
02:27In the eastern part, there is more influences of Vietnamese people because they also came from a communist regime and they were living in the east part.
02:36The Turkish flavors, these are the ones which influenced me the most.
02:41The next spot is Mustafa's Gemüse Kebab.
02:47What is really special is the Berlin Döner.
02:49It is crispy chicken, it's fresh salad, it's of course two sauces, spicy sauce and garlic sauce and toasted bread.
02:57And you have crunchiness, freshness, it's vibrant.
03:00That is Berlin, 100%.
03:02I will never forget that classmates of mine brought food in the school and that was, to be honest, the best time I had in school because I didn't like it.
03:15And always I had the feeling that I have a roller coaster drive on my palate.
03:20Every detail is made with a perfection like your Michelin star Döner Kebab.
03:39Everything is cut by hand, the meat perfectly balanced, flavored and crispy.
03:45The sauces with the spiciness really bites you.
03:48The garlic one brings all together.
03:51Of course, it's also the homemade bread.
03:53They bake like 10, 12 times per day that it's still crispy outside and fluffy inside.
04:00This, to me, is by far the best Döner Kebab Berlin style you can get on the whole planet.

04:29If you're looking for Turkish food, go to Kreuzberg.
04:33And at least if you want to come to the best restaurants, it's always Kreuzberg.
04:37Maybe because my main restaurant is there also.
04:41Next stop, Madame Loh.
04:43The restaurant Madame Loh belongs to Duc.
04:53Chef Duc is an amazing guy with a Vietnamese heritage.
04:57And here in the Madame Loh, he is challenging his mother.
05:06I cannot have only one dish here.
05:08I need to have two.
05:10It's the Bumbo Nambo, which is a kind of a rice noodle salad.
05:13And they have three kinds of pork belly.
05:16And I'm totally addicted to it.
05:32Oh, that's the pure greed.
05:35I see this.
05:40It's like with every bite, you feel the heart, which is in every dish.
05:51It's so heartwarming.
05:52There's so much love.
05:53It's the love Madame Loh gave to Duc Noh.
06:01To me, it's always like being close to the kitchen is the best seat.
06:04And especially here in that place, you don't come for a date night or something like that.
06:08You just drop in, you eat 15-20 minutes and then you go.
06:17And now it's the last stop and we are coming to the highest level of food to fine dining.
06:21The Toulouse-Lautrec is a restaurant which is run by Ilona and Max, chef and owner.
06:31And they have a very own way how to handle people.
06:35Ilona is doing a service one of a kind.

06:38You really feel that you're at her home.
06:40And Max's cooking is amazing.
06:43It is elegant, but also spicy and intense.

07:28His dishes are always full of elegance, long lasting flavors.
07:33He loves to add clarified butter in the dishes.
07:37So it's a bit of Frenchy, but with the lightness of Asian flavors.
07:41And he creates dishes which are so good that you want to lick the plates afterwards.
07:46Lick them and lick them until no drop of sauce or butter is there anymore.
07:52And I adore it.
